More Than Anyone Else – Matt’s Thoughts

If you were anything like me when you were getting to know your future spouse, you did whatever it took to spend time with him/her. You arranged and rearranged your schedule to be together. You had difficulty going separate ways when life demanded that of you. You talked on the phone (or emailed/texted depending on what era we’re talking about) when you couldn’t be face to face. Your “sweetie” (or insert nickname here) was constantly in your thoughts and you couldn’t wait to be together again. The world revolved around that one person that made you whole. You were zealous.

Do you have zeal for your spouse today?

Who do you want to be with more than anyone else? A famous person? A person of great influence? A genius? A genie?

No! You want to be with your spouse more than anyone in the world.

After the “I Do” – Laura’s Thoughts

Clearly, the way you showed zeal toward your beloved when you were dating is going to look different than the way you show your zeal now that you’re married. I’ve heard my share of advice about how you should be sure and date your spouse once a week, or how you need to be sure and remember all the things you used to do when you were wooing each other during courtship. Don’t hear me saying that these aren’t ideas that hold some merit. Continued dating once you’re married is a valuable thing. Wooing each other after marriage is sweet and necessary.

But married zeal runs deeper than dating and sweet words.

It means that you seek to know how to best meet his/her needs, and that you lovingly and eagerly pursue ways to meet those needs. It means that you work hard to build your spouse up so that he/she can be a better servant for God’s kingdom.

Married zeal comes in the form of a selfless love and an urgent desire to lift your loved one to a seat of joy. It may mean that you need to do something you don’t want to do – but you zealously do it anyway because your love for your spouse comes before your own desires to run away from a difficult situation. (I’m talking about everything from a dirty diaper to a painful decision and beyond.)

We all have zeal toward something or someone. Where are you focusing your zeal? Is it in the work place? Is it in your desire to become successful or wealthy? Is it in having the perfect home and the most sharply dressed children?

Or are you zealous in your love for your spouse? Are you daily showing your beloved, with your eyes and your attitude, that you have chosen him/her above all else?

Heavenly Homemakers 2011 Recipe Challenge – What Do I Have to Say for Myself?

Hi. Remember the Recipe Challenge I began back in January of this year? The challenge that I was planning to have completed by the end of 2011? Yes, that one.

Perhaps since there are still three entire days left in the year, none of you have been worried about the fact that I still have several recipes from the challenge list not yet accounted for. I told you I would do it by December 31, after all. Surely I wouldn’t let you down.

Yeah, well.

I’m all for focusing on the positive, so let’s first look at what I did accomplish from this list, shall we?

1. Tator Tots

2. White Chocolate Baking Chips

3. Butterscotch Baking Chips

4. Teriyaki Sauce

5. Onion Soup Mix

6. Chocolate Milk

7. Ketchup

Now let’s look at some of the other items on the challenge list so I can give you my pitiful excuses heart-felt explanations as to why I failed to post lovely recipes and pictures of these foods.

1. Mayonnaise

I worked my tail off on this one and ended up almost despising the very sound of the word mayonnaise by the end of my experience. Clearly, making mayonnaise isn’t my gift. However, now that I have a new immersion blender, it is possible that I will decide to revisit this idea and try again eventually. Like in eight years. (kidding, sort of, maybe, not sure)

2. Corn Tortillas

I gave my best effort on the corn tortillas, and even took pictures once as I went, in hopes that I’d have beautiful corn tortillas to share with you. The little corn tortilla dough balls are indeed lovely, don’t you think? They look like they would make wonderful tortillas.

And at first glance, this rolled out, pre-cooked version looks kind of okay. But don’t ask me how long it took to actually get that thing rolled out – and really, really don’t ask how it turned out once I tried to cook it in a skillet.

Okay, fine. I’ll tell you. It completely crumbled and fell apart and tasted a little bit like…flaky cardboard. After all that work, I was as fond of corn tortillas as I was of mayonnaise. We ate the pieces anyway, because that’s what we do around here. But I’m wondering if the secret to success in making corn tortillas is using a tortilla press. I’m not sure I’m willing to make the investment, since we don’t eat a lot of corn tortillas around here. I roll my wheat flour tortillas with a rolling pin and never have any problems. Your thoughts?

3. Angel Food Cake

My attempt at a healthier angel food cake was a bit disappointing as well. It flopped and became lop sided. I took pictures to prove it. In addition, we were not impressed with the flavor. It was okay, but not fantastic. However, there’s nothing a little fruit and a good amount of whipped cream won’t fix – so we were able to get it down without too much effort.

4. Homemade Ritz Crackers

These were sort of good and kinda tasted like a Ritz Cracker. But I ended up getting them way too salty and ultimately, we didn’t just love the taste. I’ll probably continue to experiment with these because I think I was on to something.

5. White Cake

I have tried different variations of a plain white cake, which ultimately turns brown because of the sucanat I use. The cakes are tasty enough, but usually a little dry. I have decided to simply begin using my Strawberry Shortcake Recipe when I have a need for a plain white cake. It is a little spongier than a typical cake, but it’s moist and very yummy.

The remaining items on the list:  Twinkies, Fig Newtons, Bleu Cheese Dressing, and Cereal Bars never did happen. If it counts for anything, I did give each of them some thought. I even have some figs in my fridge that will be turned into fig newtons some day. Right now, they are just a “figment” of my imagination. Get it? I am so funny.

So there you have it. The 2011 Heavenly Homemakers Recipe Challenge. I have a growing list going on for next year. Anything you’d like to add to it?

My New Oster Immersion Blender

Guess what I got for Christmas?! An Oster Hand Blender with Blending Cup. This is, of course, all thanks to you. Well, you and my Dad and his wife Tacy, who were kind enough to honor my eager immersion blender request.

So many of you suggested that my life just couldn’t go on if I didn’t have an immersion blender. I don’t think you really said it that intently, but after hearing all your rave reviews about how my work in the kitchen would be easier with an immersion blender, and knowing I could trust all of your fine advice, I put this item on my wish list. It was with much excitement that I opened a package that held this fine appliance. I am like a kid with a new toy.

Maybe now I can re-work my mayonnaise recipe and find out how to actually make the stuff. Maybe.

Healthy Crock Pot Recipes: Hamburger Cream Cheese Dip

When I think of New Year’s Eve, I think of chip dip. Of course, I also think of playing games, and spending time with friends and loved ones…just so long as none of those dear friends and loved ones get in the way of me and my chip dip. I have been known to greedily reach across serving lines and yank chip dip ladles out of people’s hands before.

Not really. I only picture doing that in my head. On the outside, I’m smiling sweetly and waiting patiently in line for my turn with the dip. I would never really grab a chip dip ladle from someone or push my way to the front of the line to get my dip. (Except for in my head.)

In case you need a tasty and easy chip dip recipe for a gathering this weekend, you may be interested in trying this Hamburger Cream Cheese Dip recipe. And then, you will want to take care and not invite me to your New Year’s  Eve gathering. If I see this dip at your table, there’s no telling what I might do.

Crock Pot Hamburger Cream Cheese Dip

Hamburger Cream Cheese DipYum

2 pounds ground beef
1 cup chopped onion
1/2 teaspoon garlic powder
1 can (4 ounces) mild green chili peppers
Sea salt to taste
2 cans (8 ounces each) tomato sauce
1/2 cup grated parmesan cheese
1 1/2 teaspoons chili powder
16 ounces cream cheese, softened and cubed

Brown ground beef in a skillet with the onion. Place cooked meat into a crock pot and add remaining ingredients. Set crock pot on low for two hours. Stir, taste, and add additional seasonings if desired. Serve with tortilla chips. We prefer these organic corn chips.

Do you have any exciting New Year’s Eve plans? Except for eating dip, I’m not really sure what we’ve got going on. But then again, I don’t suppose it really matters, just so long as there’s dip.

I think I need to join a chip dip support group.

Gratituesday: Christmas Break

I love routines. I love home schooling my kids. I love staying busy and getting a lot of work done each day.

But today, I’m thankful for Christmas Break. Instead of routines and productivity, today I love pajamas, slippers, movies, and leftovers. I love saying yes to inviting friends over at all different times of the day. I love saying yes to playing an extra game of Uno Attack.

 

We’ll enjoy our routine again in a few days. This week, all schedules have been thrown under the couch. We’ll find them again when we decide to actually get out the broom and sweep this weekend. :)

I hope you had a lovely Christmas with your family. I’m a little unsure of what we’ll be eating, since all routines are out the window this week. But here is my “best guess of a menu plan” for this week!

Glorious!

We’ll wrap up our Christmas Brunch by sharing a favorite song played often at our house. Glorious, by Paul Baloche, is not necessarily considered to be a Christmas song, but I feel it is fitting nonetheless. While the phrase “my eyes have seen the glory of the Lord” is being sung, I always picture Simeon in the Temple seeing and blessing the baby Jesus. It also makes me think about what the shepherds might have been thinking when they saw him, or what Mary and Joseph may have been feeling about the night he was born.

His life was glorious. And because of Him, our future is glorious and filled with hope.

Our prayer for you this Christmas is that you experience the glory of the Lord in your families, in your home, and in all you do. We appreciate all of you and wish you a wonderful holiday.

Yielding Yields Much – Matt’s Thoughts

Too many times yellow traffic lights and yield signs end up being counterproductive. I have nothing against the signs. It’s the way people often react to them. When the light turns yellow, the driver is to take caution and extra care as they travel through the intersection or stop before the intersection. Instead, the driver puts their foot down and ends up being less careful and less precautionary. A yield sign is supposed to help traffic merge safely or make an intersection safer by clearly indicating to one party that they are to give the right of way to the other party. Quite often though, I see one or more cars punch it so they won’t have to yield.

Does that sound like you in your marriage? A situation arises where you need to take extra care and/or give up your (right of) way so that the two of you can merge and end up in the “same lane,” but you put the pedal to the metal in order to get your way.

I grew up hearing some phrases in jest from Christian teenage buddies like “those women need to submit…and be in the kitchen making my dinner…barefoot…taking care of the kids…cleaning my house…washing my clothes…” (I think the list got longer everytime it was stated and we didn’t say this when any female was around, except that once when Pete said it in a funny voice, but the girls didn’t laugh and none of us guys dared laugh either. Just so ya know, my conviction is that joking like this inappropriate and I apologize to all women for immaturity in my teen years.)

Although we teenage boys were in fact quoting from Ephesians 5:22, we had missed the verse prior that sets the tone for the section about various relationships – husbands/wives, children/parents and slaves/masters – “Submit to one another out of reverence for Christ” (Eph. 5:21). I’m hearing the apostle Paul say here that in healthy marriages both husbands and wives have yield signs. Defer your desires keeping the interests of your spouse above yours. What’s great is when both spouses are thinking of each other. Merging your wants with your spouse’s aspirations can often be seamless.

It has been my experience that yielding my will in order to merge with Laura has yielded great returns in our relationship.

Submit is Not a Four Letter Word – Laura’s Thoughts

It appears to be a sore topic. All my life I can remember hearing women of all ages talking about how they hate the word “submit”. This was often said either with a bitter chuckle, or sometimes with a roll of the eyes and a “men are dumb” attitude and tone of voice. This always confused me, and now that I have been married for 17 years, I find that talk like this is very discouraging.

What’s wrong with submission? What part of yielding my will to my husband is really so terrible? That is, unless I think this marriage thing is all about me and my happiness.

Submission does not mean that I have to give up everything I want or need. It means I need to think before I speak. It means that out of love and care, I need to put my husband’s needs before my own. Mutual submission, as mentioned in Eph. 5:21, means that my husband does the same for me.

Yield. Take caution and extra care as you make decisions with your spouse. You’re likely to find that submission makes you quite happy after all.

Quick Eggnog Muffins

If you have eggnog on hand (especially if you made this Homemade Eggnog Recipe), you’ll find that these muffins can be thrown together very quickly. They taste just like Christmas if you ask me!

Quick Eggnog MuffinsYum

2 1/4 cups whole grain flour
3/4 cup raw sugar
2 teaspoons baking powder
1/2 teaspoon sea salt
1/4 teaspoon ground nutmeg
1/2 cup melted butter
2 eggs
1 cup eggnog
2 teaspoons rum extract (optional)
1 teaspoon vanilla extract

Stir together flour, sugar, baking powder, salt, and nutmeg. Add melted butter, eggs, eggnog, and extracts. Stir until well combined. Scoop batter into 16 paper lined muffin cups. Bake in a 400° for 15-22 minutes or until muffins are golden brown.

Makes approximately 16 muffins.

The rum extract in this recipe is optional, but it sure does add some great flavor! These are a perfect addition to your Christmas brunch. And did I mention they are easy to make? :)

Sweet Pepper Fritata

I can’t decide which I like best about this dish:  looking at it…or eating it. I love that the red and green peppers make this fritata look festive for Christmas. This is very easy to make and can be put together ahead of time and baked just before serving. If you want to add a little extra protein, throw in some leftover cooked chicken or sausage.

Sweet Pepper FritataYum

1 small onion, chopped
3/4 cup chopped green pepper
3/4 cup chopped red pepper
2 Tablespoons butter
5 eggs, lightly beaten
1/2 cup chopped sun dried tomatoes
1 1/2 cups shredded cheddar cheese
1 teaspoon Worcestershire sauce
1/2 teaspoon sea salt
1/4 teaspoon black pepper

Saute onion and peppers in the butter for 5-7 minutes or until veggies are tender and your family comes running into the kitchen to see what smells so good. Meanwhile, combine remaining ingredients in a bowl. Stir sauteed vegetables into egg mixture. Pour into an ungreased pie dish. Bake in a 350° oven for 25-30 minutes or until a knife inserted in the middle of the fritata comes out clean. Serves 6-8.
