Menu Plan for the Week

Thanks to everyone who joined me in getting a Sourdough Starter going this week. If you want to learn to make whole wheat sourdough…check out these posts! Now we’re ready to make the Sourdough Bread! I’ll post the steps sometime on Monday. (Probably that night by the time it finishes baking!)

Our family is geared up to start school again after a three week Christmas break. Ohhh the break was nice..but ohhh a routine will be even nicer! Among other subjects, we’re excited to dive back into our history reading..start a new read-aloud, Cheaper by the Dozen…and get Asa and Justus going on their LTC projects. 

Here’s what we’ll be eating this week:

Sunday, Jan 11
Oatmeal, apples
Chicken and noodles, mashed potatoes, relish tray, chocolate cake with hot fudge and whipped cream (with guests)
Leftovers

Monday, Jan. 12
French toast
Pizza casserole, corn
Deer steak, mashed potatoes and gravy, peas

Tuesday, Jan. 13
Turkey sausage and eggs, pears
Sloppy joes on homemade buns, baked beans, carrot sticks
Chicken stir-fry with rice and veggies

Wednesday, Jan. 14
Apricot Breakfast Bars, bananas
Chicken tortilla soup, fruit salad
Shepherds Pie

Thursday, Jan. 15
Homemade honey oat crunch cereal with dried fruit
Black eyed peas and cornbread, spinach salad

I don’t know why I haven’t asked you this before (since I am ever so nosy and all of that).

What kind of music do you listen to? 

I generally listen to Christian radio…I have a radio in my kitchen and LOVE listening to Christian songs while I work. 

My favorite group (currently) is Switchfoot. Somehow we ended up with their “Beautiful Letdown” CD. (Someone accidently left it at our house a couple of years ago…is it yours?)  We keep it in the van and listen to it over and over. I love their song Twenty-Four. 

And, well..you know I like this song and this one.

But I don’t know what kind of music you like listening to! Share! What do you like?

Sourdough Starter: Day 6 and 7

I’m combining today and tomorrow because tomorrow is Sunday and it’s always hard enough getting all six of us ready and out the door for church on time without stopping to post pictures of sourdough starter. It just might push me over the edge to insanity. :)

This morning my starter didn’t have any liquid hanging around anywhere. I think it is because yesterday I started working to thicken my starter so that it wouldn’t be SO sour. If you remember, I only added 1/4 cup of water. I’m glad I did that. It’s getting to be more of the consistency I want it to be now.

Today was graduation day for us. (Oh, I couldn’t be more proud.)  My starter went from big glass jar to big glass bowl. I didn’t want sourdough overflowing all over the place.

Again today, I added a cup of flour and only 1/4 cup of liquid. Here is a picture of how thick my starter is now.

I layed a big piece of cheesecloth over my bowl without securing it with anything. 

On Day 7…just do the very same thing by adding 1 cup of flour and enough cold water to make your starter as thick (less sour) or as thin (more sour) as you want. I may try to pop back in briefly if I feel like there’s anything important I need to tell you about the Day 7 process.

And GUESS WHAT?! On Monday we can make BREAD!!! Would it surprise you to hear that the only ingredients you need to have ready to go are more flour and water…and some salt? (I use Redmonds Real Sea Salt.)

Sourdough Starter: Day 5

Whoa-oa-oa! Get back! So much for the “sweetly sour” smell of my starter from yesterday morning. 

Shew!

A few of you commented that your starter was NOT smelling sweetly sour…but more like…well none of you said exactly. Although Cindy’s husband said that it smells like some of the calls he goes on (he is a fireman/paramedic).

May I suggest a description something like a cross between a dirty gym socks and baby spit up? Okay…so sorry. DON’T let this discourage you from making sourdough!!!!!  It gets better I promise! And…the sourdough bread doesn’t taste like the above mentioned descriptions. I PROMISE!

So…Day 5…if sniffing your sourdough starter makes you want to cough, gag, and run screaming from the room with tears running down your face…it’s doing exactly what it’s supposed to be doing. Good job creating a stinky masterpiece. :)

This morning a lot of liquid had risen to the top of my starter…and it had a frothy film on the top of the liquid. The froth was darker than yesterday and there was less of it. This is normal.

So…a note about stinky…SOUR…sourdough:

The more liquidy and soupy your sourdough starter is…the more sour it is going to be/taste. Some people like their sourdough to have a very strong taste. My family and I don’t prefer it quite so sour.

Since this is Day 5 and there are only two days left before I make bread from my starter (woohoo!)…I decided today to start making my starter a little thicker to help with the over-sourness factor.

This morning I added one cup of flour as normal…but only 1/4 cup of water. I also poured off most of the liquid that had risen to the top again before adding the flour/water. As I stirred in the flour/water…it all mixed in just fine and was by no means too thick to stir. So, depending on how thick or runny your starter is at this point, you may want to adjust the amount of water you add. 

Several of you have asked if I would be sure to walk you through the sourdough bread making steps. ABSOLUTELY. I would NOT dare tell you how to make a sourdough starter and then leave you hanging about making the bread. It’s a tiny bit of a different process than making “yeast breads”…but it’s SO not hard to make. I’m getting so excited to finally be able to make my sourdough starter into bread! Yay!

So…anyone care to leave a description of how their sourdough is smelling by now?

Feeding the Family

As Matt and I were working on our 2009 budget…we were looking at all the ways we could try to cut corners…yet there were really no more corners to cut. Yes, our budget has rounded edges. 

And yet…we’re always fine. We always have way more than enough of everything we need. God is so good!!!

If there were more ways to skimp on our budget, we would. But we really do like our kids to be wearing socks without holes and well…running water is such a nice luxury.

There are all kinds of things we choose not to spend our money on. You can read about them here and here.

There is one area of our budget we refuse to skimp:  FOOD. (And yes I know I wrote about this already several months ago…but I keep hearing about people who are chopping their food budgets way down in 2009. I just hope people are cutting it because they spend too much on processed foods and want to buy better food for their buck.)

I used to be a Coupon Queen and a big time food skimper. I compromised the quality of food we ate because I wanted to save money. In the past 3 1/2 years I’ve done a complete turn around and I AM SO THANKFUL. I wrote about it here…please read it if you haven’t already…but it basically says that we NEED to take care of our bodies by eating GOOD NUTRITIOUS FOOD. I wish I could emphasize this more. (You might want to read my whole Getting Real with Food series to learn more about how we eat.)

AND ALSO…can I emphasize how YUMMY wholesome, real food is compared to all of the free or next to free “foods” I was getting with coupons? Not to mention how much better our bodies feel when we eat good food.

I get emails and comments all the time from readers wanting to know how and where I shop and how I am able to afford to feed our family of six so well.   Besides just simply stating that God provides…I came up with an idea that I hope will be fun!

For the next few weeks (or so…until you get bored, and sick of going places with me)…I’m going to take you shopping with me. I’ll take you to the farms where we get our milk and eggs…I’ll introduce you to my cow. (Okay, I don’t have a cow, but there is a particular cow I’m very fond of.)…I’ll take you to my food co-op drop off. I’d take you to the farmer’s market and to my garden…but I can’t because it’s WINTER. :) 

I’ll document for you how much I spend on everything and how we make our food budget work. I’ll share with you how I buy in bulk and how I store my food. 

I’m curious to know how some of you feel about cutting corners in your food budget? While I’m doing this series, what are some specific things you’d like to hear about?  (Like, would you like for me to take a nice picture of my 50 pound bag of oats and do an entire blog post about eating and storing oats? Kidding.)

Sourdough Starter: Day 4

Here’s what my jar of starter looked like this morning.

 It is so exciting! When I stirred my flour into it yesterday, it was right at halfway full. 24 hours later..it has risen at least an inch if not more! And there are bubbles all through it. And I have this nice layer of froth on top. Yep…the sourdough starter is starting to become sourdough.

You’ll notice in my top picture that I instead of the brown gooey liquid sitting on top of my starter like it had been on other days, it was at the bottom. I have no idea why…but it’s not a big deal. I just poured it all into a fresh jar just like that and it mixed back in. 

Jen was wondering why we need to transfer to a clean jar or bowl each day. I don’t know! My resources (Nourishing Traditions book…and my own past experiences with sourdough…and my trusty sourdough making friend, Anne)  just tell me to do it! I think the clean jar just gives your starter a fresh start as you feed it (or something like that?). If you just left it in the same container and just kept feeding it in that…all kinds of crud would build up on the sides and your jar would be all yucky. Then the sourdough would have to do it’s work around the yucky crud and it wouldn’t be as effective. Yes, I think that’s the reason why. :)

Okay, so again for Day 4…put your starter into a clean glass container, add a cup of flour and a cup of water, stir well, cover with cheesecloth and put in a warm place. 

I’m pretty sure tomorrow I’m going to need to transfer mine to my big glass bowl. It’s getting BIG! Oh, and it smells even more like sourdough today…just slightly…but I can tell it’s working.

By the way…yours might not be doing the exact thing mine is. Yours is working in YOUR air and in YOUR climate. Yours might be working faster…or slower than some of ours are working. 

I am curious what yours are looking like though. Did you have a layer of froth today? Do you see bubbles?! 

I kinda want to describe my sourdough smell as “sweetly sour”. Does that make sense? What does yours smell like?

He’s Up to Something

I apologize in advance…this is a long post. ;)

First a story:

About a month ago I had a day that involved lots of running around, which is pretty unusual for me. I’m usually home almost all the time. But this particular Tuesday was busy and it started with picking up my Azure Standard order (which we do in our Walmart parking lot).

When I got into the van to head to Walmart there was a song playing on the radio (Whatever You’re Doing by Sanctus Real) that I’ve heard a lot and liked but usually only half listened to. I knew it said something about doing something heavenly and of course I liked that line because I do have a website called Heavenly Homemakers for goodness sake.

Anyway…I picked up my Azure order then went into Walmart to get a few things while I was there. By the time I got back out and started my van…Whatever You’re Doing was playing again on the radio. Hmm, that’s weird, I thought.

I was home for a few hours then got back into the van to run another errand. Guess what song was playing when I turned on the van? Yep…Whatever You’re Doing. I was beginning to think that maybe God wanted me to hear this song.

That evening I got into the van again to head off to Bunco (my once a month girl’s night out). I could not believe it when I turned on the van and Whatever You’re Doing was playing. Seriously. OUT LOUD I said, “Okay God. I’ll listen.” And I did.

After playing Bunco…I got back into my van to come home for the night. 

THE SONG was on again. Unbelievable. You could say that my radio station overplays particular songs…but still…how is that everytime I turned on the car THAT song was playing?

I got home and looked up the lyrics on the computer and played the song on You Tube at the same time. 

Yeah….God wanted me to hear that song. I needed to hear that song. 

I was so refreshed hearing this song, knowing that God is working in me…healing me from hurts…doing something much bigger than me…working out something heavenly. And I felt like I definitely needed to share this with you…

Since that day, I’ve given more thought to ministry and how God can use us all as women for Him (keeping our families first). I hope you’ll join me as we explore this topic together over the next several weeks. My prayer is that this series will encourage you…if you already have a well defined ministry for yourself…if you’re in a new season in your life and don’t see how ministry fits into that season…if you’re searching for the best way God can use you for His kingdom…

God is up to something…something heavenly!

Sourdough Starter: Day 3

Read Day 1 and Day 2 to catch up!

This morning I didn’t have as much dark liquid on top of my starter as I did yesterday. Here’s what my jar looked like:

Have you been sniffing your jar?  I thought today mine smelled just a little tiny bit sour…just a little tiny bit. 

Today…do just like you did yesterday:  Pour off most of the liquid on top (I only had about a tablespoon today)…put your starter into a clean jar or glass bowl…add a cup of flour and a cup of water…stir it…replace the cheesecloth and put it back in it’s warm nest. Really, making sourdough takes no time at all. (Even including my jar sniffing time this process probably only took 2 minutes this morning.)

My jar is almost half full now…I may have to switch to a big glass bowl by the time these seven days are up!

And speaking of glass bowls…Jayme asked WHY it has to be glass? Can you use plastic bowls?

Sourdough should always be prepared in glass and baked in either glass or stoneware. Sourdough is acidic, therefore it will react with metal and plastic. It is very porous…so it will absorb the metalic or plastic-y tastes and qualities. For that matter…I try to always stir my sourdough with a wooden spoon.

One Room at a Time

I mentioned finding my living room again. Now I’m busy at work cleaning out and organizing every room because oh my goodness does my house ever need it.

What IS it about a new year that inspires so many of us to re-organize…re-group…re- re- realize that we have too much stuff hanging out of our drawers and THAT is why they won’t close?!

Here’s a room cleaning organizational tip that my sister-in-law Kari shared with me several years ago:

Start in one room. Stay in that room. If something belongs in another room…just throw it into that room and go back to the room you are working in to begin with.

Otherwise…you’ll start in the living room…notice a dirty plate…take the plate into the kitchen…see all the dirty dishes…start to wash them…stop to pick up some dirty socks on the kitchen floor…take the socks to the laundry room…start sorting the laundry…pick up a stuffed frog sitting on the dirty underwear…take the stuffed frog into the kid’s room to put into the toy box…notice your best scissors on your son’s dresser…take the scissors into the craft room…see the wrapping paper all over the floor…

And you’ll never get to the living room.

It’s called Organizational ADD. I have this disorder if I don’t follow the advice of my sister-in-law and work on ONE room until I finish it entirely.

This method works very well. And it is SO nice to at least have one room clean when you start to tackle the others.

Anybody else out there struggle with Organizational ADD? Anybody else out there cleaning out and re-organizing like CRAZY lately? Anybody else think that January should really come more often so we will be inspired to get organized more often? (ooh, except I don’t want it to be cold more often…

Gratituesday: All These Boys

During the time we’ve had a break from all of our normal routines to travel and see family…and during the time we’ve spent catching up at home and relaxing (relaxing?)…I have been enjoying my boys so, SO much. 

While we were in CA, we got to watch some Game Show Network. All the way home and in the days we’ve been home, the boys have been making up their own version of Lingo and Family Feud and other games. (I’ve won $25,000 several different times in the past few days because I am one amazing Lingo player, yes I am.)

What I’m really grateful for today is that our boys play so well together. 

Of course they have moments when I have to holler things like, “Heya buddy…if your brother is SCREAMING when you’re doing that…it probably means he wants you to STOP!”

But, even with the fights, they are each other’s best friends. It’s a joy to watch.

Yesterday they spent hours building and playing in a fort that took up the entire upstairs hallway. They were so excited about it and had so much fun that I didn’t even complain every time I had to get down on all fours to crawl through the fort in order to go to the bathroom or switch out laundry. ;)
