Simple Oatmeal Cookies (5-Ingredients!)

Just when you thought cookie baking couldn’t get any easier, these Simple Oatmeal Cookies came along and rocked your world.

Spoiler: All I did to create this cookie recipe was add oats to the Simple Butter Cookies. It’s too easy. And super delicious.

Simple Oatmeal Cookies

Simple Oatmeal Cookies (5-Ingredients!)

Ingredients
  • 1½ cups melted butter
  • ⅓-1/2 cup sugar (raw, white, brown, or sucanat)
  • 1 tablespoons vanilla extract
  • 1½ cups whole rolled oats
  • 3 cups whole wheat flour (I use freshly ground soft white wheat)
Instructions
  1. Cream butter and sugar together in a bowl.
  2. Stir in vanilla.
  3. Mix in flour and oats until well combined.
  4. Scoop Tablespoon-sized balls of dough onto cookie sheets.
  5. Press the dough down with your fingers or a fork.
  6. Bake in a 350 degree oven for 8-12 minutes or until cookies are golden brown.

So what’s the difference in this recipe compared to the Best Oatmeal Chocolate Chip Cookies recipe I shared a couple weeks ago? You mean besides the chocolate chips?

Well, this recipe is much lower in sugar. This one is great for a snack or on-the-go breakfast, whereas the Oatmeal Chocolate Chip Cookies are definitely a dessert. I make this Simple Oatmeal Cookie recipe as a low sugar treat for myself and my family. I make the Oatmeal Chocolate Chip Cookies to serve guests.

Super Moist Flourless Brownies

From now on, these Super Moist Flourless Brownies are the ones I will be making for my family. I’m very happy to share that there are no bananas involved in the making of this recipe. Allow me to explain how I really feel about this…

Deliver me from all recipes that are naturally sweetened with bananas. (See also: Pudding made creamy because of avocados.)

I love the idea; I think it is beautiful. What a fantastic way to sneak in fruits and veggies by adding them to our treats! But I’ve tried the banana-peanut butter-cocoa powder ice cream and I just can’t make myself like it. The same is true of the pancakes made with only bananas and eggs. Chocolate pudding made by blending avocados? I just can’t.

Am I picky? I like to think not. For goodness sake, I’m the girl who eats fresh spinach straight out of the container as a snack (basically this is me being too lazy to actually take time to get out bowl and a fork). So picky I am not. But I just can’t get into eating blended frozen bananas that are pretending to be ice cream.

Should we broach the subject of brownies made with black beans? I think this is a genius idea, but my children are less than impressed. Most of my healthy attempts at creating a low-sugar-no-flour brownie have fallen ridiculously short of, “Mom, make them this way every time!”

Until now.

The ingredients in these Super Moist Flourless Brownies won’t even shock you. There’s no secret ingredient that will cause you to cringe or question whether or not your family might actually try one.

You’ll be wonderfully amazed! These brownies actually have the taste and texture of brownies that come from a box, only of course, the real food ingredients make them even more delicious! My kids took a bite of these and couldn’t believe that these brownies were “actually healthy.” Our first pan lasted a very short time.

Look at these ingredients! How good can we feel about feeding these brownies to our kids? Good enough to serve them for breakfast? Absolutely.

Ingredients
  • 1½ cups (12-ounces) Almond Butter
  • ½ cup honey
  • ½ cup unsweetened cocoa powder
  • 2 eggs
  • ½ teaspoon baking soda
Instructions
  1. Stir all ingredients together until well combined.
  2. Spread batter into a buttered 8x8 inch baking dish.
  3. Bake in a 350 degree oven for 13-15 minutes. (Remove them from the oven when they are just slightly underdone so they come out moist!)

Can you sub out peanut butter for almond butter? I don’t know why not. In fact, I think that would create a delicious chocolate-peanut butter brownie worth writing home about.

Enjoy the simplicity of this recipe! Get excited about the nourishment and energy the brownies provide. Savor eating brownies for breakfast with your morning coffee. Delight in the fact that there are no bananas involved in the making of this treat. As for me and my house, we’ll save the bananas for creating smoothies and banana bread.

Simple Chocolate Chip Cookie Dough Treats

I’ll admit it. My family took one look at these Simple Chocolate Chip Cookie Dough Treats sitting in the fridge and asked, “Mom, what are those things that look like Poop Emojis?!”

What can I say? I whipped them up and plopped them down and this is what they turned out looking like. You don’t even want to make them now, do you?

I promise they taste delicious! I suppose if you took more time to make them pretty, you can avoid this conundrum at your house. But what’s the fun in that? Forever and always, these snacks will be called Poop Emojis at our house. I don’t even remember what the actual title of this recipe is. Chocolate Chip Cookie something or other?? Meh, the new name is much more fun.

I suppose I’ll find a little maturity here and tell you that these Poo Chocolate Chip Cookie Dough Treats are naturally grain/gluten free, full of protein, are low in sugar, are full of healthy fats, and are a very filling and delicious snack. There you go. See, I can be a grown up when I want to.

I am so sorry. I can’t even. Apparently today, I’m a nine-year old boy. Um, so uh, just whip the ingredients, fold in the chocolate chips, and then freeze the mixture into these funny looking globs and with that, I must stop writing words and just give you the recipe.

Simple Chocolate Chip Cookie Dough Treats

Simple Chocolate Chip Cookie Dough Treats (Low Sugar, Grain Free, 5 Ingredients)

Ingredients
  • 8 ounces softened cream cheese
  • 12 ounces almond butter (1½ cups)
  • ½ cup softened butter
  • 30 drops liquid stevia, 3 Tablespoons real maple syrup, or a combination of both
  • 2 Tablespoons mini chocolate chips
Instructions
  1. Combine cream cheese, almond butter, butter, and sweetener in a high power blender or in a bowl with a hand mixer, whipping until smooth.
  2. Fold in chocolate chips.
  3. Scoop mixture onto a parchment paper-lined or silicone lined cookie sheet.
  4. Freeze for 30 minutes.
  5. Transfer treats to an air tight container and store in the fridge.

The Best Oatmeal Chocolate Chip Cookies

If we had to pick a favorite cookie at our house, these Oatmeal Chocolate Chip Cookies would be the winners.

Hoping for low sugar recipe? Welllllll, this one isn’t so much low in sugar. This is the recipe I make when I have a house full of teenagers or college students. This is the recipe I make in bulk to keep in the freezer for all our cookie hospitality needs. This is the recipe that is my go-to because I can make it in my sleep. You can be sure I have definitely made these in my sleep before. What can I say?

My favorite things to do when making this recipe is 1) double it and 2) freeze cookie dough balls so I can bake them fresh as needed.

Once I’ve frozen the cookie dough balls, I transfer the balls to a gallon-sized freezer bag. When we want/need fresh cookies, we pull out a few and bake them. This saves a lot of time and dirty dishes! It also means I’m prepared for last minute guests. Need a quick dessert? All I have to do is pull out cookie dough balls and bake them. Perfect!

The Best Oatmeal Chocolate Chip Cookies

Ingredients
  • 1 cup melted butter
  • 1½ cups brown sugar or sucanat
  • 2 eggs
  • 1 teaspoon baking soda
  • ½ teaspoon sea salt
  • ½ teaspoon vanilla extract
  • 2 cups rolled oats
  • 2 - 2½ cups whole grain flour (I use freshly ground hard white wheat)
  • 2 cups chocolate chips
Instructions
  1. In a large mixing bowl, stir butter and sugar together.
  2. Add eggs, baking soda, salt, and vanilla and stir well.
  3. Mix in oats and flour (starting with 2 cups of flour and adding more until correct cookie dough consistency is reached)
  4. Fold in chocolate chips.
  5. Scoop dough onto a cookie sheet leaving 2 inches between each scoop.
  6. Bake in a 350 degree oven for 10-12 minutes or until cookies are golden brown.

Bonus: This recipe calls for whole grain flour! This doesn’t really make the cookies healthy, but at least all the ingredients are real food. That counts for something!

Sweet and Simple Butter Cookies (4 Ingredients)

If you know me at all, and I think you do, you know that if “butter” is a part of a cookie title, it must be a favorite of mine. Dear friends, allow me to introduce  you to these tasty melt-in-your-mouth delights: Sweet and Simple Butter Cookies.

Would you like to know what has been a favorite sentence of mine ever since I was a little girl reading recipes?

“Cream butter and sugar together in a bowl.”

That simple sentence always made me very happy. It still does. You want me to cream butter and sugar in a bowl?! I LOVE CREAMING BUTTER AND SUGAR IN A BOWL!!! There’s something so sweet (sure, literally, I suppose) about this simple instruction, and for some reason, it always brings up happy memories for me of times I spent baking with my mom or my grandma.

All of life would be better if we took a moment to cream butter and sugar in a bowl. Don’t you think?

The combination of butter and sugar in this recipe makes for a perfectly sweet and rich cookie that melts in your mouth. Don’t worry though. The ratio of butter to sugar is such that these are only lightly sweet, but deliciously buttery. I’d still consider these a dessert, but I think they fit in the “low sugar treat” category.

These stir together quickly and go into the oven easily. Enjoy this newest High Five Recipe, and most importantly, enjoy each time you get to “cream butter and sugar together in a bowl.”

Simple Snack Recipe: Creamy Chocolate Fruit Dip

When you eat Creamy Chocolate Fruit Dip you might find yourself pausing to say out loud, “Is there anything better than this dip with strawberries? Anything at all on this entire earth?”

Some of the children standing in the room might answer your rhetorical question and suggest that winning a soccer game, getting an A on a difficult test, or finally finishing Geometry for the rest of your life is better than the Creamy Chocolate Fruit Dip. But then he will pop a chocolate dip-covered strawberry into his mouth and remember quite clearly that indeed, this snack is better than almost anything in the entire world. It’s too easy. This Easy Cheesy Popcorn? Prepare to be amazed.

I’ve been meaning to share this Simple Snack Recipe idea with you for something like four or eighty years. Our friends often take this fun snack to share at get-togethers and it’s always a huge hit! Every time I think to myself, “I have GOT to learn their secret and share it with everyone at Heavenly Homemakers!”

And then I forget about it until the next get together that involves the Cheesy Popcorn and well, here we are four or eighty years later.

I finally did it though! Today, before every single one of us have become great-great grandparents, I finally thought of the popcorn. I finally remembered to ask and I finally learned all the tricks. Turns out, making Easy Cheesy Popcorn is as easy as adding butter, cheese, and salt to already popped corn. So you and I could have been enjoying this Cheesy Popcorn delightfulness long, long ago.

Be impressed that I got all these details from the 13-year old son of the Family of Easy Cheesy Popcorn Experts. He was at our house hanging out with my 13-year old son. (By the way, we can no longer say “the kid came over to play” because when you’re 13 that is not cool. They hang out. They do not play.) Anyway, I interrupted a game of soccer they were playing to ask a boring recipe question. God bless the teenage boys who come hang out with my kids. What can I say? I knew that if I didn’t ask about the popcorn right at that moment another eighty years will go by and we would never learn these secrets.

So here you go. Easy Cheesy Popcorn. It is a snack of champions because it is loaded with good, nourishing fat and it tastes incredible too.

Simple Snack Recipe: Easy Cheesy Popcorn (made with real cheese!)

Ingredients
  • 1 cup unpopped popcorn
  • Coconut oil
  • ½ cup butter
  • 1 cup shredded cheese (parmesan, Colby jack, or cheddar recommended)
  • Sea salt to taste
Instructions
  1. Pop 1 cup of popcorn in coconut oil or in an air popper.
  2. In a small saucepan, melt butter and cheese together, stirring until well combined.
  3. Shake a liberal amount of sea salt into the butter/cheese mixture and stir.
  4. Pour butter/cheese mixture over the popped corn and stir.
  5. Serve right away.

Simple Snack Recipe: No Bake Chocolate Chip Cookie Bars

These No Bake Chocolate Chip Cookie Bars are full of fiber and protein, naturally gluten, dairy, and grain free, and sweetened with honey. Except for the chocolate chips. Those are sweetened with sugar. Meh, let’s live a little.

I love these bars so much! They are a snack that fills the belly and satisfies the sweet tooth without being terribly sweet. They offer nourishment while still being fun. They are a perfect snack!

As you can probably see from the pictures, these No Bake Chocolate Chip Cookie Bars soften when out left out of the fridge too long. This problem is solved by grabbing a fork and right digging in. Or, you can still eat them with your hands. Simply lick your fingers after you enjoy a bar.

Simple Snack Recipe: Chocolate Cheesecake Fudge (Stevia or Honey Sweetened)

Who says we can only eat fudge during a holiday season? This Chocolate Cheesecake Fudge is so low in sugar we can eat it in the middle of February, every other Thursday, and if you’re really feeling sassy, on a Monday afternoon after you’ve washed the breakfast dishes.

Or not. I mean, you don’t have to actually wash the dishes before rewarding yourself with this fudge. I think it is enough work to have dirtied the dishes in the first place, am I right? Indeed. Fudge all around!

This Chocolate Cheesecake Fudge needs no special occasion. Though it will feel like a special occasion while you’re eating it because of the fact that it is fudge and it tastes amazing. I suppose the fact that it has the word “cheesecake” in the title also proves its greatness. You will be tempted to feel guilt over splurging on this treat since Christmas was two months ago and you’ve been doing such a good job of eating right since the first of the year. But no guilt is allowed or even warranted because this fudge isn’t full of sugar! Yep. It’s sweetened with a little honey and a little stevia. That’s it.

Of course this qualifies as a Simple Snack Recipe because you can blend all the ingredients together in just a couple of minutes. What a treat!

Chocolate Cheesecake Fudge

Simple Snack Recipe: Chocolate Cheesecake Fudge (Stevia or Honey Sweetened)

Serves: 18 pieces
Ingredients
  • ½ cup softened butter
  • 8-ounces softened cream cheese
  • 2 Tablespoons unsweetened cocoa powder
  • 2 Tablespoons honey
  • 30 drops liquid stevia (I like NuNaturals brand best)
Instructions
  1. Blend ingredients together in a high power blender.
  2. Spread mixture in an 8x8 inch dish.
  3. Chill in the fridge for at least one hour.
  4. Cut into pieces and serve.
  5. Store fudge in the refrigerator.

Simple Low Sugar Chocolate Cheesecake Fudge

This recipe is easy to adapt. Add more or less honey, stevia, and cocoa powder per your preference. You can find NuNaturals Liquid Stevia here (my affiliate link).

Simple Snack Recipe: Sweet and Salty Almonds or Pecans

We thought you might like a simple snack that is a little bit sweet, a little bit salty, and obviously, a little bit nutty. Everyone likes to be a little bit nutty sometimes. So how about some Sweet and Salty Almonds or Pecans?

When I first decided to experiment with this recipe, I planned to surprise Matt with Sweet and Salty Almonds after he’d put in a hard day’s work. So I searched the pantry. No almonds. I searched my freezer. No almonds. I searched my other freezer. No almonds. I searched my other freezer. (I have a lot of freezers.) No almonds.

What I did find was package after package after package of pecans. Apparently my desire to stock up for our Pecan Pie needs way back at Christmas time took over my brain and prevented me from ever adding almonds to a shopping list. After all, there’s no such thing as Almond Pie. At least I don’t think there is.

Anyway, Matt never knew about the Sweet and Salty Almonds because on the day of this nutty experiment, I presented him with Sweet and Salty Pecans and all was well.

Aside from the time it took for me to search through all my freezers behind all the leg of lamb, cube steak, and bags of peaches from last summer’s harvest in a futile effort to find almonds that didn’t exist, making these Sweet and Salty Pecans was super fast and easy.

So grab either almonds or pecans (or both if you’re feeling extra nutty). Make a batch or three of these Sweet and Salty Nuts. They make a great snack to enjoy when you need a pick-me-up!

Sweet and Salty Almonds or Pecans

Sweet and Salty Almonds or Pecans

Serves: 1 cup
Ingredients
  • 1 cup whole almonds or pecans
  • ¼ cup water
  • 3 Tablespoons brown sugar, maple syrup, or sucanat
  • 1 teaspoon ground cinnamon
  • Pinch of sea salt
Instructions
  1. Stir water, sugar, cinnamon, and salt together in a medium sauce pan.
  2. Bring to a boil.
  3. Pour the almonds or pecans into the boiling liquid, stirring for about one minute until the nuts are coated with the syrupy mixture.
  4. Spread prepared nuts onto a parchment paper-lined cookie sheet.
  5. Cool and serve or bag them up to give as treats!
