Homemade Sweet Potato Fries

It really pays to listen to your friends. (Not all of them though, because if they’re encouraging you to do things that aren’t good for you, maybe you should consider getting new friends.) Well where did that piece of parenting advice come from?

Anyway, I happen to have good friends, so I feel that it is okay to listen to them. It just so happens that I had two friends in one week tell me that I was missing out by not adding sweet potatoes to my menus more often. When the first friend said it, I kind of nodded and smiled. But when a second friend mentioned it a few days later, I sort of wondered if God was trying to tell me something. Okay, I’m pretty sure He is working in bigger ways in my life than sweet potato consumption encouragement. But still. I figured there might be something to this sweet potato thing since it came up twice in one week with two different people at two separate times. (Am I making too much of this? I mean, should I just get around to sharing the recipe already?) Why have I not been eating or feeding my family sweet potatoes very often, as in, pretty much never?

It’s very simple really. As a child, the only way I had been served sweet potatoes was in a casserole with brown sugar and marshmallows at Thanksgiving and I didn’t like it one bit. If I’m going to eat something sweet, I want it to be a dessert – not as a side dish with my turkey. But that’s just me. I’m the one who needs chocolate with my sugar. What can I say? But, per my friends’ suggestions, I decided to try making sweet potato fries. They looked and smelled great. I ate one. Hmmm, it was okay, I guess. But I kept thinking about marshmallows, and couldn’t get past it. By the way, I don’t like marshmallows. But I’m a big girl, and all grown up, so I made myself eat a second sweet potato fry. And then a third. Oh wait. They suddenly began to taste good to me. Then, before I knew it, I had to tell myself to stop eating the sweet potato fries and save some for my family. (I didn’t feel bad though, because usually it’s the other way around and I’m the one asking my family to save me some food before they inhale all of it.)

So it turns out that while I think my friends may have helped me become an addict in this regard, it does pay to give in to sweet potato peer pressure.

How to Make Sweet Potato Fries

Scrub and cut sweet potatoes into wedges or fries – as thin as you like. Toss them in olive oil or coconut oil (about 1 Tablespoon per sweet potato). Place them in a single layer on a baking pan. Sprinkle on sea salt and bake in a 400° oven for 30-40 minutes. or Deep fry the cut sweet potatoes in a fryer (we have this one, which works great) filled with Refined Coconut Oil or Palm Shortening for 3-4 minutes, remove, salt, and eat. Menu Plan for (three days of) the Week

My family is spoiling me again this Mother’s Day. I just finished a delicious lunch (made by everyone but me), and now I am listening to Matt and the boys clean the kitchen. I think I may go take a nap.

No, the boys didn’t get up at the crack of dawn to bake fresh rolls. 
I happened to have some in the freezer, 
so all the boys had to do was get them out to thaw before church. 
:)

Here are the flowers I received at church today. Each boy (including Matt) got to pick one flower to give me. I am amazed that somehow they coordinated and all picked a different color to bring to me.

Our family has some exciting days ahead of us this week and next. We take off Wednesday for a week long trip. Therefore, the menu plan? There’s no need for one.

I will share with you what the first few days of our week look like before we leave, but I’ll warn you, it is not exciting in the least:

Sunday, May 12 – Happy Mother’s Day to me in which I am not allowed to cook all day!
Scrambled eggs, fruit
Grilled BBQ Chicken, cream cheese corn, tossed salad, butterhorns
Pizza

Monday and Tuesday
Leftovers, clean out the fridge, scramble more eggs, make some smoothies, finish cleaning out the fridge

Wednesday
Pack sandwiches for the road, plus lots of fruit and water bottles

Easy Cream Cheese Fruit Dip

This Cream Cheese Fruit Dip is our very favorite dip to eat with fruit!

I’ve probably already written this sentence a time or three, but here it is again:  Cream cheese makes everything better!

Or was I talking about butter when I said that? Actually, maybe it was cream? Well, the same is true for cream cheese, butter, and cream. (Although I will draw the line at adding any of the above to my lettuce salad.)

This recipe includes both cream and cream cheese. And homemade vanilla. (Or store bought vanilla, but homemade is so YUM.)  And then there is just a bit of maple syrup to make it sweet. Last but not least – you’ll add a shot of lemon or lime juice. Here are the specifics:

Easy Cream Cheese Fruit Dip

Ingredients
  • ½ cup cream (heavy whipping cream)
  • 8 ounces cream cheese, softened
  • 2 Tablespoons real maple syrup
  • ½ teaspoon vanilla extract
  • 2 Tablespoons lemon or lime juice (fresh or bottled)
Instructions
  1. Whip the cream until it forms stiff peaks.
  2. In a separate bowl, cream together the cream cheese, maple syrup, vanilla, and lemon or lime juice.
  3. Fold cream cheese mixture into the whipped cream.
  4. Chill until ready to serve, or serve right away.

Tastes great with strawberries, grapes, and apples. Makes about two cups of dip.

Menu Plan for the Week {Which Includes Some Foreign Foods}

We have a few strawberries left from my shopping trip last week, so I think I need to make some Strawberry Shortcake. What do you think?! :)

A couple of weeks ago, we were blessed to go to a Geography Fair on our local Christian college campus. There, our boys got to “experience” and learn about many other countries in the world. It was a lot of fun, and inspired me to have our boys create a little geography fair of our own. :)

They were each in charge of choosing and researching any country in the world last week. They wrote information about it, created a flag of their country, and looked at the foods found in those countries. This week, they are each making one dish that represents their country. We’ve worked them into our menu plan this week!

Menu Plan for the Week (Where’s the Fruit?!)

As I looked over my kitchen in an effort to plan this week’s menu, I realized how low we are on fresh and frozen produce. Indeed, we are Fruitless in Seattle…er, Nebraska.

Actually, I think it just seems this way because we are so spoiled. I love having a wide variety of fresh fruits and vegetables to choose from when I plan my meals. To get us through the beginning of the week, we do have just a few apples, oranges, and bananas. There is home-canned applesauce in the pantry. I have some frozen peas, green beans, strawberries, and blueberries. There is a little lettuce in the fridge. Otherwise, I’m looking forward to a shopping trip soon! I’ll plan to snap a picture of what I get and share it with you. (To clarify, I’ll share the picture, not the produce. Sorry. My boys eat big.)

Soooo – if you look at the menu plan and think, “Wow, she just keeps putting a generic “fruit” or “vegetable” as a side dish,” that is because by those days I anticipate being completely out of whatever we currently have on hand, and I’m not sure what I’ll be blessed to find at the store. Who knows? It could be that on Thursday, we’ll have kumquats! (Because as we all know, kumquats are plentiful in Nebraska this time of year.)  ;)

Four Boys, Three Meals Each, One Happy Tired Mom

This has been one fun week! If you recall, our four boys were in charge of planning and cooking meals one day each this week. Here is their menu plan if you’d like a reminder.

I took pictures throughout the week, although you’ll likely notice that there are more pictures of food than boys. Trust me – this is not because they boys weren’t doing the cooking. It’s simply because the older my boys get, the less excited they are about having their lives documented on my blog for all the world to see. I respect that. So instead of seeing them stir their muffins, you just get to see the muffins. (With the exception of one Elias picture and several of Malachi – who is still usually okay with having his picture taken.)

We’ll begin with Monday’s meals – the day Asa, our 15 year old, did all the cooking. He actually didn’t make breakfast that day (logistical issues), and is instead making breakfast on Saturday before soccer games. 

For lunch, he worked and worked, cutting chicken and potatoes into nuggets and fries. He then used our fryer (the one Matt and the boys gave me for Christmas!) and cycled through batch after batch of fries and chicken nuggets. I was impressed with how he never stopped working until the last batch was finished. In fact, at one point, I stepped in to help and he said, “Wait. I thought I supposed to be cooking this meal?” Sweet! I promptly put down the knife and went over to eat fresh french fries.

For dinner that night, Asa and I worked together to make a double batch of fresh whole wheat tortillas for tacos. That was quite a job, and he did awesome once again! He also took the time to make Peanut Butter Brownie Cups. We devoured that meal. SO good!

Tuesday was Elias’ day – our 11 year old. He got right out of bed and made a big mountain of French Toast.

Just like his brother, he didn’t stop to eat until all of the bread and eggs had been made into French Toast. That’s saying a lot for a kid who is typically ready to eat his pillow as soon as he wakes up. This boy wakes up hungry and is a HUGE breakfast eater!

After breakfast, we cleaned up, then I taught Elias how to make pie crust. More on that later. :)  For lunch, Elias used the Corndog Maker he got for Christmas to make 40 corndogs. (They actually were 20 hotdogs cut in half.)  There was a grand total of three corndogs left after our meal. We sliced up pears and got out baby carrots to go with the corndogs. Oh, and we decided that our corndogs would be stickless. No need to go to the trouble to put a stick in the dog when we’re just going to devour it anyway, right?!

Right after lunch, Elias got busy making two Cream Cheese Lime Pies. Into the fridge they went. Then, he browned hamburger meat and put his dinner into the crock pot.

When it was dinnertime, all Elias had to do was get out bowls and chips to go with his Hamburger Cream Cheese Dip. I think we had apples with this, but for the life of me, I can’t remember. And yes, we did just put our chips on the table beside our bowls. Who needs extra dishes?

After dinner, Matt had a few buddies over to play cards. Elias served us all some of his pie. It was crazy good!!

That night, Justus, age 13, who was up next for cooking meals, got into the kitchen and made Chocolate Chocolate Chip Muffins to serve for breakfast Wednesday. That got our morning off to a great start!

Justus made us a huge lunch that day!! Chicken fried steak strips, mashed potatoes and gravy, peas – wow. I can’t believe how hard that kid worked.

It was his first time to make mashed potatoes and gravy and he did awesome! See, the gravy thickened up just perfectly…

Justus also went all out and tried a new recipe for Carrot Cake. He got fancy and decorated. To say the least, after lunch, he was exhausted. :)

Would you believe I forgot to take pictures of his dinner? :(  He made pasta with Alfredo Sauce and steamed broccoli and carrots. It was delicious, but we rushed off to church after we ate and taking a picture completely slipped my mind.

Wednesday night when we got home from church, I asked Matt if he wouldn’t mind helping Malachi (age 8) get his Breakfast Cookies made for Thursday. They went right into the kitchen and got started, Malachi’s excitement level growing the whole time they worked. I hollered in some insufficient information about which pan to use and how many cookies to put on one pan, so the cookies sort of ran together and off the pan into the oven just a bit, but hey, that’s how we learn, right? (I’m not talking about Malachi. I’m talking about old married couples. After 18 years, we’re still learning more effective ways to communicate.)

I’m debating on whether or not I should tell you about the small oven fire that resulted in this slight miscommunication. Oops, I just did. Well, let’s just say it was smaller than some I’ve started in the past, and we put it out quickly. The next day, I was easily able to scrape up charred cookie drippings from the bottom of the oven. My hair still smells strangely smokey. But the breakfast cookies sure tasted good. :)

After we ate breakfast, Malachi and I got to work on the Lasagna. Yes indeed, we used store-bought noodles. By day four of helping boys cook, I was getting tired. ;)

We ate the lasagna for lunch, since there were soccer games in the evening. It was delicious!

After lunch, Malachi made brownies because he was set on making Death by Chocolate for dessert. In the late afternoon, he and I made a double batch of Calzones so that we could have some in the freezer as well as plenty for dinner.

Sheesh, did we eat a lot of sugar this week!!! Big desserts every day of the week? Too much. But shucks, it was fun just this once.

What was I doing while my boys were cooking up a storm this week? Standing in the kitchen helping them cook, cleaning up messes with them, and offering a lot of guidance. I found that everything took at least twice if not three times as long as it normally takes me. But wow, did the boys learn a lot! 

It was wonderful having so much one-on-one time with each boy. It was super to see their excitement and willingness to work so hard all day. And I daresay, they really learned how much effort it takes to put great meals on the table three times each day. My favorite quote of the week was this:  Upon hearing that it was time to come downstairs and work on making dinner, Justus said, “Already?  I feel like I just finished cooking and cleaning up after lunch!” Uh-huh.  This is what it is to cook three meals a day for a family. I let him know that this is why I give them “the look” when they come into the kitchen asking for a snack 45 minutes after a meal. He grinned sheepishly. ;)

Menu Plan for the Week – The Four Boys Edition

I had almost forgotten about this Blueberry Coffeecake recipe. It was perfect for breakfast this morning before we headed out to church. (I baked it last night so that it would be ready to serve!)

This week, we decided to get our four boys into the kitchen for some more intense cooking experiences. They each get to take one full day, and have full responsibility for planning, cooking, and clean-up. That’s not to say that they won’t have help and guidance. But the majority of the work is up to them. It’s been lots of fun helping them plan their meals! They really had to give thought to their plans so that they would make the menu balanced throughout the day. I believe I should do this more often!

Later this week, I’ll share some pictures and tell you how it’s been going.

Menu Plan for the Week and My Trip to Trader Joes

I knew this weekend was going to be a busy one. As Matt rattled off our boys’ soccer game schedule late last week, and I decided that if we were going to eat well, I’d need to plan ahead. For each meal, we had a very small window of time before we’d need to leave the house again for another game. And so, I spent part of Friday getting ready.

This worked out perfectly. I made a Lasagna Casserole and a Hearty Green Bean Casserole to put into the oven as soon as we got home from games. I also made Chicken Salad for sandwiches or pitas on the run. I wish I was always able to make time to prep food ahead like this. It sure does make game days go more smoothly, as well as fill hungry soccer players who run several miles each day playing games!

I was excited that since we had to head to Lincoln for games on Saturday, and because we had a little bit of time to kill between games, I was able to run into Trader Joes for a few minutes. I spent a lot of time in the produce department, and as you can see, I had quite a bit of fun there!

I was able to get pears, plums, kiwi, sweet potatoes, mandarins, avocados, and sweet peppers. I love having such a yummy variety of fresh produce on hand. (We’ll see if this stash even lasts us one week…)  :)

Cooking Ahead – I Now Have Snacks!

I know it’s not entirely true, but I feel like I have been away from home for the entire month of March.

Asa had a basketball tournament the first weekend of the month. We were home for a few days, then we went to Branson and were gone for six days. The end of this week we are going to Kansas City for LTC. Phew! It’s hard to get ahead when you can’t even catch up. And it’s hard to catch up when you’re not even home. And it’s hard to be home when…well, when you are traveling. (Profound.)

Anyway, Saturday I was home. Yay for me! I had big kitchen plans. I decided that I wasn’t going to go anywhere all day, that I certainly wasn’t going to change out of my sweat pants, and that I would get caught up on some work, and spend several hours cooking. I’m so glad I did! I got my email inbox down to 82 (It had made its way up to well over 200 last week) and spent four hours cooking and baking. I now have some healthy convenience foods in the freezer, as well as several snack items that might just last two whole days around here.

First, I mixed up a double batch of Whole Wheat Butterhorns. While the dough was rising, I got my food processor whirling as I made three batches of Homemade Peanut Butter.

I put two jars of peanut butter into the fridge to have ready for later. Then I used one batch to make Healthier Rice Crispy Treats and Mudballs (thinking of my awesome cousin Jayme the whole time, since she’s the one who gave me that recipe).

I should also mention that the day before, I had made 80 Chicken Fried Steak Strips. 
I had the boys help me take them off the cookie sheets and put them into freezer bags for
easy meals in the future.
I love getting that mess out of the way in big batches!

I then made two dozen eggs worth of Easy Breakfast Casserole. I put the 9×13 dish in the freezer to thaw and bake another day. I baked the two round dishes for our lunch.

While they were baking, I began shaping 64 Butterhorns. I baked several to go with our egg casseroles for lunch – yum! – then shaped and froze the remaining butterhorns. I love having these in the freezer to pull out, thaw, and bake when I need them for company!

then popped them off the next day and put them into freezer bags.

Last, I made a double batch of Homemade Poptarts. We ate some of them for breakfast on Sunday morning, and the rest went into the freezer. These are so good when warmed in the toaster oven, served with fruit and a glass of milk!

I should also mention that I roasted two chickens and made broth for the freezer. It’s always great to have homemade chicken broth on hand!

As you can imagine, my wheat grinder, oven, and dishwasher got quite a workout that day! And I slept really well that night. :)

Menu Plan for the Week

If you haven’t already, many of you who pre-ordered Oh, For Real should be receiving it in the mail any day now! (Those of you who just ordered last week – yours will be on its way tomorrow!)  I’ve heard back from several of you who have received your book already. Thank you so much for your encouraging responses!

Jolene:  Got my Oh, For Real book today in the mail!!! Loving it already!

Patty:  Just wanted to let you know that since bringing your book home my oldest (10 years) has been cooking up a storm. I have never seen him so excited to be in the kitchen. He is preparing everything with only a little guidance. We have had a lot of messes in the kitchen, but some delicious food.

Beth:  I got my book in the mail yesterday. I enjoyed looking through it last evening even though it made me hungry. I plan to share the book with my daughter.

I have to say (and I feel a little bit giggly as I say it) – Having my own cookbook in my kitchen has already been a tremendous help to me, too. I have to keep reminding myself that it’s there. My first response when I need to check a recipe is to run to the computer to look it up here on my website. Then I remember, “Laura! Look in your book!” And there it is. I’m so thankful for it, and I’m happy to say that so far, I’ve been careful enough not to spill anything on it. (Now that I’ve said that out loud, I will probably go goober it up with a pretty combination of chicken broth, barbecue sauce, and cookie dough.)

Homemade corndogs, green beans, carrot sticks
