Easy Lemon Chicken Zucchini for Breakfast

As promised, in the What To Do with All the Zucchini post, here’s the actual recipe to one of my new favorite breakfasts. Since I have to give the thing a name, I settled on Easy Lemon Chicken Zucchini. But really we call it the “lemon zucchini thing.” Is it easy? Or is it simple? Is it simply easy? Or easily simple? No matter which way you want to look at it, it’s real food that fuels my body and gets me ready for another awesome day. Bonus: It’s paleo! Gluten free, dairy free, soy free, sugar free… but not boring or complicated.

Chicken and zucchini for breakfast?

Do you have to eat it for breakfast? Duh, no. But for some reason I do. That’s about all I have to say on that. Eat it for any old meal you like, but I needed more grain-free breakfast food ideas. The paleo diet is not at all restricting once you get the hang of it, but the western culture has this idea that breakfasts are for all the sugar and carbs, or either all the protein and fats… and as it turns out, there is no authority that says you can’t have chicken and zucchini for breakfast, therefore I do.

We used a yellow summer squash for this one!

If you’re using a cast iron skillet, remember to slowly pre-heat it so it’s ready to go. (Check out this post for tips on how to use a cast iron skillet.)Pre-heat for a few minutes and then melt 3-4 tablespoons of butter. While the skillet is heating and the butter melting, chop a summer squash—a yellow summer squash or a zucchini both work interchangeably in this recipe. OR A CUCUMBER. It sounds nuts to me, but my dear, sweet husband accidentally chopped a cucumber for this recipe instead of a zucchini and I could smell that it was a cucumber and I could see that it was a cucumber and by-golly I could taste that it was a cucumber, but it was surprisingly delicious. (He did not believe me that it was a cucumber until he tasted the final product for himself.) So we laughed and then ate our breakfast, but now we know… a cucumber fried in a bit of butter in place of squash is still yummy.

Okay, the skillet is pre-heated and the butter is melted, now toss in the squash. (I like to scrape out the middle if it’s a larger zucchini because I think it gets soggy and I don’t like it. ) Let it cook for two minutes and then flip and stir it about. When it’s right on the edge of being done add in a can of chicken. Season with salt and pepper and pour 1-2 tablespoons of lemon juice over the top. It will sizzle and smell amazing.

Lemonize at your own risk.

Ben made this recipe the first two times. (Once with the cucumber in disguise and once with a zucchini.) When I made it, he wasn’t around to ask how much lemon juice to use. Thankfully I’m a pretty smart gal and I used two tablespoons. I even measured it out on purpose to make sure I could tell you exactly how much I used. Two tablespoons was the perfect amount for me. As long as you stir it up well. If you’re scared, just start with one and see how it goes.

Why My Whole Foods Menu Plan Might Be Overwhelming

menuplanner1webI love planning a menu for my family. Without a menu plan, it takes me way too long to figure out what we’re eating each day. I also like sharing my menu plan with all of you each week. Many of you have mentioned how helpful you find my plan and have told me that you often “steal” many of my meal ideas. I love that!

But, I also really appreciate the perspective shared in a comment last week – the perspective that my menu plan may be overwhelming to some of you. The fact that I plan all three meals for each day of the week, and the fact that all three meals tend to be big meals – yep, I can definitely see how that could be overwhelming!

I decided to take the time to explain my menu plans just a little bit. I certainly don’t want to overwhelm anyone, nor do I think that planning all three meals for every day of the week is a necessity for everyone. It’s what works for me, but I know it doesn’t work that way for everyone. In fact, menu planning doesn’t work at all for some people. If you’re good at winging it at meal time – go for it! :)

I have found that planning all three meals each day for our family works well for me for the following reasons:

1. My family eats a boat load of food, for every meal. Having a plan for which boat load of food is going on the table really helps me keep my head above water. (Get it? Boat load? Head above water? Ha.)

2. Having a plan in place for each meal of the day helps me focus on other things so that I’m not constantly distracted by what I’m supposed to feed us next. Trust me, the boys ask all the time – “What are we eating for breakfast/lunch/dinner?”

3. Most of my boys wake up ready to eat my leg if I don’t have breakfast ready to offer them when they wake up. I need to know what I’m making for breakfast before I get out of bed. I like having two legs. It’s very handy.

So the question could still be then:  Why don’t I just feed my family cereal for breakfast and sandwiches for lunch each day, and then focus on our evening meal plan?

Well…I do feed them cereal and sandwiches every once in a while. But wow, the cost of feeding us this type of meal really adds up for us. I did the math one time on how much it costs to feed my family sandwiches. You can read about that here, but add even more to that dollar amount because we now eat probably double what I added up for a meal since my boys are older. (Did I mention that my oldest son has jumped several shoe sizes during the last year?)  Therefore, I find that it really saves our family a lot of money if I cook heartier, more nutrition packed meals if possible.

Some tricks I use to make putting three big meals on the table each day just a little bit easier:

~ Just about every meal I make for my family is simple – especially our breakfast and lunchtime meals. I really don’t find that making a “bigger” lunch for the family takes a whole lot more time than making a bunch of sandwiches.

~ Sometimes we have leftovers to eat, so I don’t have to cook something new. But I don’t always know when we’ll have them, so it’s hard for me to plan those into my menus.

~ I try to have food made and in the freezer to pull out for quick lunches.

~ I have a list of “back up meals” and all ingredients on hand to throw them together if needed.

~ While I do have a detailed menu plan, I switch it up all over the place throughout the week depending on what’s going on and what sounds good. The plan is there, but it is flexible.

~ I give myself grace. If I really just can’t get a good meal on the table, the cereal is in the background waiting to be pulled out.

Today’s Lunch…because I figured you’d want to see it

I decided not to wait until dinner time to make that roast I forgot to put into the crock-pot yesterday. I made it for lunch today instead because I felt the need for a Leg-o-Lamb. (Yes, we love all varieties of Legos around here.)

And then, because I was trying to make the morning easy…I skipped the potatoes and threw green beans right in the crock-pot with the meat, onions and carrots. Best. Lunch. Ever.

And also the easiest.

I just wanted to be sure you knew that we are eating quite well, Azure Standard order forgotten and all. Not that you were losing sleep over it. And really…I know that you really don’t care about seeing my luncheon roast as much as you really just want to see pictures of my scary storage room. 

Tonight. I promise.

Menu Plan for the Week

My living room is still a big, big mess…but we’re getting there. The insulation is in, now let operation drywall begin. Instead of showing you pictures of the mess, I decided to show you a more appetizing picture of Chocolate Chocolate Chip Muffins because pictures of plaster all over the floor does not inspire you to plan a lovely menu, does it? I’ll post a whole lot of living room pictures once I have more to show!

My father in law will only be here until Wednesday, so here’s hoping he and Matt get most of the drywall up in the next two days. They have been SUCH hard workers and I am just so appreciative.

Gratituesday: First Podcast!

Yes, this is the announcement I promised was coming. We have been working very hard for the past several weeks to set up several brand new features here at Heavenly Homemakers (the  Homeschool Curriculum Share Forum and the Healthy Grocery Discount Page) but what we’ve really, really been working hard on is preparing our brand new Heavenly Homemakers Q and A Podcasts!!

It was Matt’s idea. He totally rocks.  Not only is he brilliant for coming up with the idea, but he’s spent HOURS of his (spare?) time researching software, learning software, editing and putting together our very first podcast. And by editing, I mean that beyond all of the regular cutting and pasting and splicing work it takes to put a podcast together to make it flow nicely…I say “um” way too much and he has been trying to cut as many “um”s out as possible. I love him.  Here’s hoping I (um) get better at talking into the air and recording myself so that his (um) editing work becomes much easier.

Our goal with these podcasts is to offer all of you an opportunity to hear the answers to my email questions. My inbox is always overflowing and I appreciate so much the wonderful emails you all send and the questions that come with them. If we were to make a “pie graph” of all the different areas of work it takes to make this blog run smoothly, I would say that answering emails would probably be the largest slice of pie on the graph. We figured that if I’m going to take that much time to answer questions…why don’t I answer them so that ALL of you can hear it and make my time more efficient and productive!!

I can not tell you how grateful I am that all of our dreaming and planning and work has finally come together so that today, we are able to debut our very first podcast!! God is good and we hope that this can be the first of many (weekly? biweekly?) podcasts that will be an encouragement to all of you.

And now, I am excited to introduce to you…Heavenly Homemakers Podcast One! It lasts around 12 minutes – grab some laundry to fold while you listen, or simply kick back and relax. Be sure to ignore the imperfections…we’re still in the process of getting it all figured out!
