Giant Breakfast Cookies For the Freezer

It’s likely that many of you have been making my Giant Breakfast Cookies for years. It was one of my very first recipes I shared here. (Aww, sweet memories.)

I used to always bake big batches of these cookies (or even a double batch) and freeze them to pull out as needed. This is great! But I like this new idea better.

See, with this idea we can have hot, fresh breakfast cookies whenever we want them. I think we can all agree that a hot, fresh breakfast cookie with a glass of milk or a cup of coffee is much, much better than a room temperature cookie with a glass of milk or a cup of coffee.

So this is what I do now:

Make Giant Breakfast Cookie Dough Balls for the Freezer

I mix up the Giant Breakfast Cookie recipe as normal. I scoop out cookie dough and freeze it on a cookie sheet like this:

Once frozen, I transfer the cookie dough balls to a freezer bag.

In the morning, I get out a few cookie dough balls to bake fresh.

I put them into the oven (yep, from their frozen state) and bake them while the coffee brews.

When the family wakes up, there are hot, fresh breakfast cookies ready to go with the rest of our breakfast!

These cookies are always the star of breakfast, but I usually only make enough for two per person so the fruit and protein can get the attention they need. :)

Here’s the recipe and freezing instructions:

Giant Breakfast Cookies (with frozen cookie dough ball instructions)

Serves: 20-24
Ingredients
  • 1 cup melted butter
  • ½ cup honey
  • 2 eggs
  • 1 teaspoon sea salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • ½ cup buttermilk (the recipe will not be effected if you choose to leave this out)
  • 2 cups whole wheat flour
  • 2 cups rolled oats
  • ½ cup raisins or chocolate chips
Instructions
  1. Mix butter, honey, eggs, salt, cinnamon, baking soda, vanilla, and buttermilk.
  2. Stir in flour and oats.
  3. Fold in raisins or chocolate chips.
  4. Scoop heaping tablespoons of dough onto a cookie sheet.
  5. Bake at 350 degrees for 15-20 minutes.
  6. TO FREEZE:
  7. Mix dough and scoop side-by-side onto a cookie sheet.
  8. Freeze dough balls, then transfer them to a freezer bag.
  9. Place desired amount of frozen cookie balls onto a baking sheet while oven pre-heats.
  10. Bake at 350 degrees for 15-20 minutes.

Ever tried freezing cookie dough balls before? I’ve been doing this with regular cookies for years. Why it took me this long to do this with Breakfast Cookies is just sorta silly.

TO MAKE COOKIE BARS:

If you’d like to skip the scoop, simply spread the cookie dough into a 9×13 inch baking dish. Bake at 350 degrees for 18-22 minutes or until cookie bars are lightly browned and cooked through to the center. I like to take them out of the oven when they are barely brown so that they are gooey and moist!

Easy 5-Minute Frozen Yogurt Cups

I think I just discovered my new favorite snack. Look at these adorable Frozen Yogurt Cups!

How is it that just when I think there can’t possibly be any more great new food ideas, I come across another wonderful new way to make something delicious and fun? I love how many wonderful ways we can enjoy real food.

I am one of the biggest food geeks. Nobody loves food as much as I. Except for maybe you, which is why you and I have so much fun together here. Isn’t food so very much fun!?!?!!!!!!

At the very least, we all love to eat. It’s just that some of us like to also gawk at our groceries, get a thrill out of creating fun menus, and dream daily of new recipe ideas. Occasionally we might tear up when we look at the full shelves in our beautiful pantry. Some of us.

All this excitement over little frozen yogurt cups. Hey. You have no idea. I saw this idea and loved it, but I didn’t know that I would love it, love it. But the easiness of this idea! The endless options of what can be done to create variations that every family member will like! The deliciousness.

Because making Frozen Yogurt Cups is so very easy, this would be a great “recipe” to hand over to your kids to make. Everyone can create these with their favorite goodies (granola, berries, nuts, peanut butter, chocolate chips…).

You can buy pre-made, flavored yogurt if you like, but since many store-bought options are so loaded with sugar and other not-so-great ingredients, I much prefer to buy or make Whole Milk Plain Yogurt and add my own sweetener and vanilla. If you don’t make your own yogurt, plain store-bought yogurt works just fine for this “recipe.”

Easy 5-Minute Frozen Yogurt CupsYum

Easy 5-Minute Frozen Yogurt Cups

Serves: 10-12
Ingredients
  • 1 cup whole milk plain yogurt
  • Sweetener of choice (I used 1-2 Tablespoons real maple syrup)
  • 1 teaspoon vanilla extract
  • Toppings like fresh berries or peaches, granola, chocolate chips, etc.
Instructions
  1. Prepare muffin tins with liners (I used silicone liners which makes this very simple!)
  2. Stir together yogurt, sweetener, and vanilla until well combined.
  3. Scoop 2-3 Tablespoons of yogurt mixture into prepared muffin cups.
  4. Top with fruit if you like.
  5. Freeze for 1-2 hours until solid.
  6. Serve.
  7. Transfer leftovers to a freezer bag and pull out for snacking as needed.

1) These worked wonderfully in my Silicone Baking Cups. They popped right out once frozen and clean up was so simple!

2) You can use your Frozen Yogurt Cups to make smoothies! I mean, frozen yogurt and berries? This is what smoothies are made of. Throw some Frozen Yogurt Cups into a blender with a little milk and you’re set!

Whole Wheat Applesauce Pancakes

Funny thing about this Whole Wheat Applesauce Pancakes recipe: It’s low in fat. Crazy, right? Laura never shares “low fat” recipes. (Though she does sometimes talk about herself in third person.)

Trust me, I did not do this on purpose. I didn’t substitute the butter for applesauce in order to cut down on fat consumption. I did it to create a yummy fall recipe. I did it because applesauce makes a recipe quite moist and flavorful. I did it because as it turns out, this recipe works better without any butter or coconut oil. Who knew?

I tell you what, though. Make these pancakes, then slather them with real butter or natural peanut butter. Those are good, real fats our bodies recognizes and uses to nourish our brains and bodies. Go easy on the maple syrup though, because sugar is where many of our health problems lie. Poor fat. It gets all the blame for what sugar is doing to us. (Don’t get me started.)

Ingredients
  • 2 cups whole wheat flour (I used freshly ground hard or soft whole wheat)
  • 1 teaspoon baking powder
  • ¼ teaspoon sea salt
  • 1 teaspoon ground cinnamon
  • 1½ cups unsweetened applesauce
  • 1 egg
  • Milk or water to reach preferred batter consistency
Instructions
  1. Whisk all ingredients together until smooth.
  2. Add milk or water to make a thinner or thicker batter - however you like it.
  3. Cook pancakes on a buttered griddle, flipping once they become bubbly.
  4. These take a bit longer to cook compared to regular pancakes, so turn the heat down so the outside doesn't burn while the inside cooks fully!

Low Sugar Treats the Real Food Way

Gimme one good reason any of us should eat sugar.

Fine. It tastes good. 

But we all know that too much sugar causes big, big problems for all of us. Our bodies can’t utilize much of it for nourishment, but it does have to do something with it. Turn it to fat, perhaps? Tuck it away in our hips? Make us sluggish, achy, and depressed? Well that all sounds like fun.

What are our options here? Avoid all the sugar? Switch to fake sugars like aspertame and splenda?

No, no, NO! Never think that fake sugar is better than real sugar. But maybe we don’t have to give up on treats either. I’m not a big fan of sugar, but I sure do love me a good treat.

That’s why, about a year ago, I started creating low sugar recipes from real food ingredients. I’ve learned that most treats are unnecessarily over-sweetened. In fact, I once cut the sugar in a cake recipe from 6 cups down to 1/2 cup. The result? Amazing. Moist. Flavorful. Delicious.

41 wonderfully yummy recipes later, we can definitely conclude that we don’t have to add oodles of sugar to a recipe to make it taste good. Those 41 recipes turned into this:

  • Sucanat
  • Real Maple Syrup
  • Honey
  • Raw Sugar (in small amounts)

You can use the sweeteners of your choice, making the recipes to meet your family’s taste preferences.

Granola Bar Cups – a Brilliant Way to Make Granola Bars To-Go!

If all the brilliant people continue to share all their brilliant ideas, we will never run out of great ways to improve our lives in the kitchen and the ways we feed our family.

This time, we’re learning (from wonderful readers like you!) that we can follow my well-loved Chewy Granola Bars recipe, but instead of making them into bars as normal, we can press them into muffin cups. Need to pack them into a lunch box or be able to easily offer a single serving to cut down on the mess?

Try these Granola Bar Cups!

Recipes that work fantastically with this Granola Bar Cup idea are:

  • Coconut Fudge Bars
  • Chewy Granola Bars

These are both no-bake recipes, which makes them very fast to put together.

The beauty of both of these recipes is that you can make them according to your family’s preferences and allergy needs. The Coconut Fudge Bars are much lower in sugar than other recipes, so I stick with that one now. If you need to use gluten free oats, you can. If you need to avoid peanuts, use another nut butter or sunbutter. The recipes are very forgiving, very quick to make, and very fun.

But even more fun is that you can press the mixture into muffin cups for easy transport and lunch box packing!

Once they have chilled, you can slip one into a baggie and pack it to-go.

Homemade Taco Seasoning Mix

Save money by making your own taco seasoning mix. It is SO easy! And healthy!  And you can put it in a jar (my favorite part)! Actually, even if you don’t have a jar obsession like I do, I recommend putting this mix in a jar as the flavors are strong and will absorb into a plastic container, or mingle with other items it may be sitting beside in your pantry.

Ingredients
  • ½ cup chili powder
  • ¼ cup onion powder
  • ⅛ cup ground cumin
  • 1 Tablespoon garlic powder
  • 1 Tablespoon paprika
  • 1 Tablespoon sea salt
Instructions
  1. Put all ingredients into a jar and shake!

Um, after you put a lid on…then shake. The jar. Shake the jar. With the lid securely on the jar.

Taco Seasoing Mix

Three Tablespoons of Homemade Taco Seasoning Mix is equal to one 4-ounce package of taco seasoning mix. I would recommend adding 3 Tablespoons of mix to one pound of browned ground meat for tacos.

I would also recommend shaking again before each use to make sure the spices are well distributed throughout the mix.

The jar. Shake the jar. You can shake all you want, but if you don’t shake the jar, your spices won’t be distributed evenly.

Just wanted to be sure I made the instructions clear in regard to the shaking.

Great. I can see it now. Husbands everywhere will walk into the kitchen and see their wives shaking (boogie down).

He will look questioningly at his wife, smile and say,

“Taco night again?!”

After sharing the Ranch Dressing Mix recipe, several of you asked for different varieties of healthy salad dressing recipes. I’m excited to share my recipes for Italian Salad Dressing and Thousand Island Dressing!

What makes these salad dressing recipes better?

  • These use real food ingredients – choose to use healthy oils and other ingredients you feel good about feeding your family. I use olive oil for these.
  • These save money – they cost much less than buying them pre-made! The price of Italian Dressing Mix can add up!
  • You can make Italian Dressing Mix ahead of time so all you have to do when you need dressing is mix it up!

Ingredients
  • 1½ teaspoon garlic powder
  • 1 Tablespoon onion powder
  • 2 teaspoon oregano
  • 1 Tablespoon dried parsley
  • 2 teaspoons sea salt
  • 1 teaspoon pepper
  • ¼ teaspoon thyme
  • ½ teaspoon dried celery flakes
Instructions
  1. Shake ingredients together and store in a jar.
  2. To make Italian salad dressing: Mix 2 Tablespoons dry mix with ¼ cup vinegar (I prefer red wine vinegar), 2 teaspoons water and ½ cup olive oil.

Homemade Italian Salad Dressing

Besides salad dressing, use the Italian Dressing Mix to make:

  • Italian Roast Wraps
  • Italian Cream Cheese Chicken
  • Italian Roasted Potatoes
  • Italian Stew with Green Beans

Use Italian Dressing to marinate chicken for the best grilled chicken!!

And now for another of our favorite salad dressing recipes:

Thousand Island Dressing

1 cup mayonnaise (I use Hain Safflower)
1/3 cup ketchup
1/4 cup pickle relish
1 Tablespoon minced onion
1 hard boiled egg, chopped (optional)

Mix ingredients, cover and chill.

Over the past few years, I have had many requests for a mix recipe which will replace boxed “Bisquick”. I had never used bisquick very much before we started our healthy eating journey, therefore I didn’t know that I’d have much use for a healthier version. And so, this recipe request continued to get pushed to the bottom of my “to-do” list.

Whole Wheat Quick Mix

For shame.  I didn’t know what I’d been missing! Last summer, I finally gave this recipe a try. Once I figured out the right combination of ingredients, I learned that it takes just a few minutes to put this mixture together. And the recipes you can quickly whip up once you have this convenience food on hand? Every single one we’ve tried has been a hit! I love this!  It is inexpensive, is made with real ingredients I feel good about feeding to my family, it saves time, and the food prepared with it tastes great. Does it get any better than that?

Whole Wheat Quick Mix

Yum

10 cups whole wheat flour (I use flour made from freshly ground hard white wheat)
1/2 cup baking powder
1/4 cup sucanat (optional)
2 teaspoons sea salt (I use Redmond Real Salt)
2 cups organic palm shortening or butter

In a large mixing bowl, mix together flour, baking powder, sucanat and salt. Thoroughly cut in palm shortening until mixture resembles fine crumbs. Store Whole Wheat Quick Mix in an air tight container in the fridge or freezer.

Lookie what’s growing in my garden! Those cute little lettuce leaves will soon be cute big lettuce leaves. I can’t wait! I’ll be needing my homemade salad dressing before we know it.

I don’t actually have an exciting salad recipe for you. I’m not terribly creative like that. My salad recipes almost always look something like:

  1. Wash and tear up a bunch of lettuce or spinach and put it in a bowl.
  2. Add whatever other raw veggies you have.
  3. If you’re feeling especially crazy, throw in some dried cranberries or raisins.
  4. If you want your salad to be your main dish, add some chicken, cheese and hard boiled egg.
  5. Grab a fork.

This is why I’m so excited about the above carnivals. However, I do have a fun idea for a salad dressing that I discovered one day when I was dinking around in the kitchen. Are you ready? It’s a novel idea.

Orange juice.  The juice from an orange. Fresh squeezed orange juicy goodness.

It’s refreshingly simple. And yummy. And it contains no high fructose corn syrup or MSG.

Now that I’ve shared that enlightening salad tid-bit, I’m very excited to share another healthy homemade salad dressing idea!

Rhonda sent me a wonderful Ranch Dressing Mix recipe!! I used to use Simply Organic brand because I trust it more than other brands. But now, thanks to Rhonda, I can make a super healthy (and much, much less expensive) Ranch Dressing any time I need to!

Ingredients
  • 5 Tablespoons dried minced onions
  • 7 teaspoon parsley flakes
  • 4 teaspoon salt
  • 1 teaspoon garlic powder
Instructions
  1. Mix together and store in an air tight container.
  2. For dressing: Mix 2 Tablespoons dry mix with 1 cup mayonnaise and 1 cup buttermilk or sour cream.
  3. For dip: Mix 2 Tablespoons dry mix with 2 cups sour cream or kreme fresh.
  4. Mix up a few hours before serving, so the flavors all blend nicely.

I use Hain Safflower mayo and Homemade Buttermilk.

The jar on the right is the mix, which costs pennies compared to a packaged mix! The jar on the left is the ranch dressing all made up and ready to go on our salad.

You HAVE to try this dressing! It tastes so…so real. And fresh. And pure. It’s delicious, simple and healthy! Obviously, you eat it on lettuce and other veggies – so that gives you wonderful, healthy…healthiness. (And of course, great servings of more fruits and veggies!)

Rhonda even suggested using this ranch dressing mix in my Ranch Potato Wedges recipe. It works GREAT!

I shall never buy another ranch dressing packet again. Rhonda – you rock!

So far in this Heavenly Homemakers Recipe Challenge, we’ve come up with recipes for Homemade Tator Tots, Healthier Chocolate Milk and Teriyaki Sauce. I attempted a recipe for corn tortillas and while they tasted pretty good…they were NOT easy to make, they fell apart and looked ugly. I’m going to keep working on that one until I come up with a corn tortilla recipe that doesn’t take the whole afternoon to make. :)

This new recipe in The Challenge was super easy to put together! Vicki, one of our readers, sent me an Onion Soup Mix recipe to try and WOW is it simple! I tweaked it a teeny tiny bit, but really, this recipe is more Vicki’s than mine.

What I love about this recipe is that I didn’t have to look high and low for the ingredients. Many onion soup recipes I found call for some sort of bouillon. Almost always, bouillon has MSG. There are MSG free bouillon varieties out there, but what if they aren’t easily accessible to you? And so…I was very happy to see this recipe that contained just dried herbs and spices!

Homemade Onion Soup Mix (with No MSG!)

Ingredients
  • ⅔ cup dried, minced onion
  • 3 teaspoons parsley flakes
  • 2 teaspoons onion powder
  • 2 teaspoons turmeric (optional)
  • 1 teaspoon celery salt
  • 1 teaspoon sea salt
  • 1 teaspoon sucanat (or sugar if you prefer)
  • ½ teaspoon ground pepper
Instructions
  1. Mix all ingredients in a jar, then give the jar a good shake.
  2. I'd recommend shaking the jar to mix the ingredients well before each use.
  3. Use 4 Tablespoons Onion Soup Mix in a recipe in place of 1 packet of onion soup mix. (I actually found that 2 Tablespoons was plenty in a beef stew recipe I tried.)
  4. Store this in a dry, cool place.

SO many of you requested this recipe that I’m guessing you all must have tons of wonderful ways of using Onion Soup Mix? I would LOVE for you to share what you do with this mix!!!
