How to Make Cheesecake in a Crock Pot (Crustless! Low Sugar!)

You know how I eat these Fat Bombs every day? Well, I also eat one of these Low Sugar Mini Cheesecakes every day.

They are lightly sweet, filling, and full of good fat and protein.

So what’s a girl to do when she runs out of her Mini Cheesecakes on a hot day in the summer? She certainly doesn’t want to turn on the oven to bake more for herself. And I think we all know the waffle iron just won’t work for something like this (but don’t think I didn’t at least consider it for one insane moment).

How to Make Cheesecake in a Crock Pot

How to Make Cheesecake in a Crock Pot

Serves: 12
Ingredients
  • 2 8-ounce packages of cream cheese, softened
  • 2 eggs
  • 2 Tablespoons maple syrup
  • 2 full droppers of liquid stevia
  • 1 teaspoon vanilla extract
Instructions
  1. Blend all ingredients together until smooth.
  2. Pour mixture into a crock pot.
  3. Cook on low for 3- 3½ hours or until the center of the cheesecake is no longer liquid.
  4. Turn off crock pot, remove lid, and allow it to sit for 1-2 hours to cool.
  5. Transfer cheesecake to the fridge to chill for 3-4 hours before serving.
  6. Cut into 12 slices.

How to Make Cheesecake in the Crock Pot

I forgot to mention – this Crock Pot Cheesecake is crustless. (I’m so used to eating them this way, I forget cheesecakes are supposed to have crusts. Ha!)

    I’d love to try this. . . but. . . when I tried to use stevia in an icing recipe, my family was not happy. Do brands matter? Are different droppers different sizes?? We use 10-12 drops in our daily smoothies, and are fine. . .Thanks for any insight!

      I like NuNaturals brand best for stevia (liquid form). I find that the maple syrup in this trumps any bitterness caused by the stevia, so that is a nice perk! And I’d say that the two droppers full that we use equals 20-30 drops. :)

        Thanks for feeding him this week! Try to stay cool! I made banana bread in my instant pot Monday. Yummy. The recipe calls for a bundt pan but two cake pans will stack in my 8 quart. I don’t buy accessories for it. I have made do with what I have.
