Here’s our Big Family Food and Fun: October 26-November 1, 2025 post!

We enjoy a Sabbath rest from Saturday evening through Sunday evening – so I turn off my computer on Saturday afternoons and miss posting some of these pictures. I’ll catch up on our last Saturday activities before launching into our new week!

Saturday, October 25

Matt had rented a lift and had a few days left with it before needing to turn it back in. So he worked on Saturday afternoon while Auggie napped. As he came back down and was ready to move it (our neighbor has been using it also) – all of the kids ran out to take a ride!

I made a simple – but favorite – meal of Orange Chicken for dinner that night. All the kids will eat this chicken, some with the sauce and some without. So it’s a nice night off from food struggles. We go through two Sam’s-sized boxes of this convenience food, which costs a total of around $26. What a cheap way to enjoy “eating out” without eating out!

Big Family Food and Fun: October 26-November 1, 2025

Auggie has been our “up bright and early” kiddo lately – though it’s not exactly bright out when he gets up. He started on our plate of Breakfast Cookie Bars while I got plates and food ready for Sunday Lunch.

Matt is part of our Teaching Team at Heartlands, and it was his turn to speak at church that morning. How he pulled off working on the lift for a week and a half plus putting together a sermon was quite miraculous and going into this week, we were both pretty worn out. Sunday Lunch, though, revives us. Spending time in community like this is such a gift.

I had declared a Pie Theme for our lunch that day. Our friend Cindy brought Shepherd’s Pie, and I made Chicken Pot Pie and two Quiche.

Our friend, Ingrid, made a really good Cheese Pie, and I made a No Bake Cheesecake and an Easiest Chocolate Fudge Pie. Pie Parties: Highly recommend.

Auggie loves to escape outside (an autistic trait called “eloping”) and our friend Pasha was incredibly sweet to volunteer to go outside with him and keep him safe. Auggie loved the one-on-one attention and I think Pasha loved his time with Auggie too.

Meanwhile, Pasha’s dad, Steve, was in the living room teaching Brayden and Keith to play Chess. How cool is that?!

Matt and I were blessed to spend time with our Community Group later that afternoon while the kids watched a movie with Elias and Malorie. I made three Frozen Pizzas for dinner in an effort to feed some very excited kiddos before we put on costumes and headed out for the night.

Brayden had a Heartlands Youth Ministry party that night, so he’d dressed up and headed out to enjoy Big Kid time. We managed to get the other six kids decked out in this year’s Star Wars themed costumes.

Kiya pulled off Rey amazingly well and she was so proud (as she should be!). Keith was Mandalorian, Anna: Darth Vader; Acacia: Princess Leia; Josie was Chewy and Auggie was our little Baby Yoda. The cuteness was ridiculous.

We loaded up and headed to Boo at the Zoo, which was a free and ENORMOUS event. It was well organized though, and all we had to do was wrangle kids and follow the clearly marked off path. We were very proud of how well the kids handled this (and yes there were meltdowns later, but that happens with or without outings like this).

Monday morning, Auggie started ABA therapy again with a new technician. It took a little while for him to warm up, but his therapist was here too and helped get him acclimated. I sort of hovered on the outskirts to be available if needed, but gave them space to settle Auggie in.

Also that morning, our friend Emma came for a few hours. She was one of our dear babysitters in York, and now she’s married and lives close to Lincoln! So we’ve hired her to come spend time with the girls on Monday mornings so that Matt and I have some time to catch our breath. This is such a gift!

We had a fridge full of leftovers so for dinner that night, I pulled them out along with fresh spinach, and that was our meal!

On Tuesday morning, I discovered Keith in the living room working on a big Word Search. He’s recently discovered these and is so proud when he finds a word in the puzzle!

Little Sweetheart was on her way over and our afternoon was full. So I made a crock pot full of The Easiest Chili for our dinner that night.

It was raining, so we all played in the house all morning until preschool and naptime.

Matt went to pick the kids up that afternoon and snapped this sweet picture. Keith has a special buddy who was picked up by his grandma that day. Grandma and Buddy were holding hands, then Keith joined the train.

I took Brayden and Kiya to serve at our weekly Food Distribution after school.

Matt had fed most of the kids Chili and fruit by the time we got home. Josie realized that it was her day to be Mom’s Special Helper so she eagerly loaded a few dishes into the dishwasher for me. (There are seven days in a week and we have seven little kids. Therefore, each of the kids has a “day” that belongs to them. They get to help me in the kitchen or with other chores, which somehow has turned into a privilege even though it’s work. They love the special time with us, and the fact that if it’s their special day, that means they get extra privileges, like getting to lick the spatula.)

On Wednesday, the kids discovered what Amazon had delivered the night before. A few weeks ago, our ABA therapist had suggested to us that Sensory Socks might be helpful as a calm-down tool for our kids. I forgot about them until Kelsey texted a picture of them this week and made the same suggestion. So I ordered three – one in each size – to give them a try.

Auggie put on the Brayden-sized one and wasn’t sure how he felt about it. :)

As it turned out, ordering three Sensory Socks when you have seven neurodivergent kids wasn’t going to work for us. Instead of calming them, they fought over them while I was trying to get breakfast made and get everyone out the door for school. Hoo-rah. (Later we did have some calming success with them, and also later – I ordered more so that everyone could have one at the same time.)

Meanwhile, we needed go-to snacks. I had made a huge batch of Chewy Granola Bars last week and our household had plowed through them already. So Wednesday morning, I made another huge batch. These are one of the only things Keith has been choosing to eat lately.

I also made a double batch of Banana Muffins for snacks.

I was planning French Toast and Bacon for dinner, so I got all the Bacon baked that morning to make the evening easier.

Auggie had ABA therapy that morning. Acacia and Josie found a game to play.

Arrow came over because he’d heard that Lolli had made more muffins. :)

That afternoon, I ran to Wal-Mart for a few needed items. Notice that “a few needed items” still fills an entire cart. But also!? The price of eggs is exciting now as the chicken flu situation is on the mend and eggs are not as short in supply. In celebration, I bought ten dozen. :)

When Kiya got home from school, Malachi talked her into making him a sandwich for him. They had a silly time together in the kitchen and it was fun to watch. :)

Dinner that night was French Toast, Bacon, Sausage, and Applesauce.

On Thursday I didn’t take many pictures. I had a meeting for Auggie, Little Sweetheart came over to spend the day, and in general, we just kept plugging away to get work done and needs taken care of.

For dinner that night, I had slow cooked Salsa Chicken then made a pan of Stick of Butter Rice. Everyone built a Chicken Taco Bowl based on their preferences with all kinds of topping options.

The weather wasn’t too cold, so we made sure the kids played outside all evening. When it got dark, Matt decided to treat the kids to a few minutes around the fire pit. He fired it up and the kids had a grand time. No marshmallows, only silliness!

It’s hard to see this picture, but I hope you can hear this picture. The kids were giggling and singing Happy Birthday to no one, then blowing out the flame. :)

Friday morning, I stirred together all the Chicken Taco Bowl leftovers and turned them into Burritos for our freezer. I used our favorite Tortillas from Azure Standard. I buy them by the case and freeze them to pull out and use as needed. Eva has been making her own tortillas lately for their family and it reminds me of my tortilla-making days! Someday, I’ll hopefully make tortillas again! Until then, these.

I ended up with 16 Burritos.

And then Anna, who has a lot of food trauma plus Autism, which presents its own level of food issues, grabbed one of the burritos, unwrapped it, and ate the entire contents. Cold. For breakfast. What?? If I would have offered her this, it would have been a no-go, for sure. But there she was, gobbling this right up. Matt and I just smiled, shook our heads, and praised God that she was actually eating.

After we got the other kids off to school, these three kiddos helped me make Lasagna for Sunday Lunch.

Lasagna is a favorite for sure!

Acacia only had Speech Therapy that morning without her normal Physical Therapy that typically follows. She focused and did well, and it was nice to get home and have some time before the bus came.

Malachi texted from his office that afternoon to inform us that Sonic was offering $0.50 Corn Dogs that day. With a full evening ahead, we scrapped our original menu plan and asked him to please pick up 20 of those cheap corndogs on his way home. Hahaha, we never do this kind of thing, but I’m so glad we did. That deal was hard to beat and have you ever tried getting seven special needs kids into costumes and out the door? Corndogs for the win! (Matt air fried some French fries from our freezer to go with our dogs.)

We managed to get everyone ready to go!

Our neighbor friend and his mom joined us for the evening. Brayden (I mean, Darth Vader) elected to skip trick or treating to stay on our porch and hand out candy. I feared that he would regret this and feel like he missed out. But we ended up having a million trick or treaters and he LOVED handing out candy to everyone!

 

 

 

 

 

 

 

 

 

Saturday morning was a rough one after being out and getting hyped up with trick or treating excitement. We managed to get everyone fed, dressed, and to the library for Story Time. Justus, Kelsey, and Little Sweetheart came too.

It was sweet to watch Justus play with his brothers afterward.

We spent some time inside the main library area after Story Time. Keith discovered a fun Word Search on the wall!

Back at home, Josie made a salad to go with lunch.

I put together a Spinach Cake and baked it for Sunday Lunch.

I filled a crock pot with Ham and Potato Soup to slow cook for our dinner.

Then we ate Chicken Nuggets and Salad for lunch.

The weather was chilly but sunny, so we bundled up the kids to play outside during Auggie’s naptime. Then we moved into our time of Sabbath and that was our week!

Here’s our Big Family Food and Fun: April 13-19, 2025 post!

We enjoy a Sabbath rest from Saturday evening through Sunday evening – so I turn off my computer on Saturday afternoons and miss posting some of these pictures. I’ll catch up on our last Saturday activities before launching into our new week!

Saturday, April 12

Saturday evening was spent mostly outside enjoying the heat and sunshine.

I had put some frozen meatballs into a crock pot with bbq sauce that afternoon. So that night, we had a simple Sabbath meal of meatballs (or meatball subs) with leftover broccoli and applesauce cups. We soaked all the kids in the bathtub a long time to get all the dirt off from their day’s adventure before heading to bed.

Big Family Food and Fun: April 13-19, 2025

Sunday morning, we had our traditional Breakfast Cookie Bars as we got ready for church.

A wonderful crowd joined us for lunch that day. I had grilled 42 Brats and 28 Hotdogs in preparation for our lunch, and I simply rewarmed them in big pots before serving time. I had a small crock of Chili to go with these, plus friends brought Mac and Cheese, a bowl of delicious Veggie Salad, Chips, and Watermelon.

This was extra delicious since it was our first “grill out” meal of the season!

We had five additional families join us and the time together was rich. There were 39 of us, and I realized later that I didn’t go outside to take a picture of all the kids playing and eating together, boo.

For fun, I had brewed some fruity herbal tea: Mango Passionfruit and Strawberry Mint. They were nice and chilled by lunch time so we enjoyed fun Iced Teas with our Brats and Dogs. (Do not ask about the intense mess I made while trying to strain the tea bags out of the jars. Oy.)

The dessert section of our kitchen was very fun with Cookie/Brownies some friends brought plus Flourless Peanut Butter Cookies, Sugar Cookies, and Chocolate Chip Cookies.

Anna was wearing a new outfit that day and it came with matching glasses. She was very proud of this.

The kids played and played all evening, enjoying sidewalk chalk they’d been given at church.

I gave Auggie a ride in a stroller, then he decided that he needed to give Josie a ride.

I baked five Frozen Pizzas for dinner. I love this Sunday night tradition. It’s a perfect meal after a great day filled with friends.

Monday morning, four of the kids ate Breakfast Sandwiches, and I made Chocolate Protein Mousse for the others. There were a few Banana Muffins and some Peanut Butter Honey Puffs to eat also.

Starting this week, Auggie was to begin receiving 30-hours a week of ABA therapy , split between three different RBTs (Registered Behavior Technicians) during a 3-hour morning slot and a 3-hour evening slot each weekday. This is intense, and adjusting to this is a lot for all of us. But we anticipate that in a couple of weeks we’ll be settled in to this new routine with new people in our home.

We kicked off his ABA that morning, with his BCBA (the therapist in charge of setting up his program) joining also. Matt and I are taking a crash course in all things Autism and ABA, phew!

Mondays I try to leave the house in the afternoon for a few hours to drink coffee at Panera, work without interruption, and do a little shopping as needed. This week though, I first went to see Malachi’s office space that he rents out for his Sideline Media business – which just so happens to be in the same building where Asa works for Back to the Bible. The three of us had just a few minutes together, and they were precious minutes!

From there I went to Panera for a while to sit by myself and work. I only had an hour, but it was a productive one, and the coffee was tasty! (Their Sip Club makes having a cup of coffee super cheap, by the way. Currently I pay $5/month and can get a coffee there whenever I want/can, which is pretty much only on Mondays, but still.)

Next, I went to Sam’s to get a few items we needed, then to Walmart before heading home.

For dinner that night, I had cooked Baked Potatoes in a Crock Pot all day. I warmed up leftover Chili from Sunday’s lunch to go on our potatoes, plus I steamed some peas and got out cheese and sour cream.

Tuesday morning, Josie was my Special Helper and she was very excited about the task of cleaning out the dishwasher for me.

I took Auggie to Speech Therapy. His AAC Device had arrived and his therapist walked me through more specifics of setting it up for him to use.

When we got home, Auggie moved straight into his ABA Therapy and the girls hung out with me while I made a dozen or so Breakfast Sandwiches. We go through a ton of these every week, and they are so helpful to have on hand!

I had some Salsa Chicken in the freezer leftover from a Sunday Lunch. So I had thawed that plus baked a pan of rice and turned it all into Inexpensive Burritos for our dinner later that day.

Malachi left mid-morning to go to Omaha for a video shoot with a real estate company. He grabbed two freshly made Breakfast Sandwiches for the road, but not before playing for a minute with Acacia while he texted his client. I love how she’s looking up to him here.

After school, I picked up Brayden, Kiya, and Keith and we headed over to hand out food and clean at our our weekly Food Distribution site. The boys cleaned coolers as they got emptied out, but they also joined Kiya and me at the distribution tables to help hand out food as clients came around.

When we arrived back at home at dinner time, things were a little more hectic than normal. Auggie’s newest behavior technician and his ABA therapist had arrived at 5:00 – so he was getting acclimated to them while Matt, Elias, and Malorie were getting the other kids fed. Matt had baked a pan of the Burritos I’d made earlier in the day and the grown ups were fixing plates for kids. There was general mayhem for a while during this time of transition, then everyone settled down and played outside.

I spent some time getting lots of dirty dishes under control after a full day. Then I put together two Egg and Hashbrown Casseroles to have on hand. At bedtime, the kids came inside and ate more burritos plus some bananas before we headed them upstairs for the night.

Wednesday morning, Matt stayed behind at home with Acacia, Josie, and Auggie so that Auggie could have his ABA therapy session. I took Anna with me to Aldi so that she and I could have some one-on-one time while picking up what we needed for our family.

We drove right by Hobby Lobby so it made sense that we stop and pick out some spring craft kits. The kids would be home for Easter break for a few days, and the weather was forecasted to be a little wet and chilly. So getting prepped for this with crafts was perfect. Anna wanted to buy everything in Hobby Lobby (don’t we all).

Arrow came and hung out that afternoon. :)

For dinner that night, we had breakfast: Egg and Hashbrown Casserole with a triple batch of Pancakes and Fruit. The kids gobbled this up – and so did the grown-ups.

Thursday morning, Kiya helped me bake a double batch of Breakfast Cookie Bars for upcoming Sunday breakfasts. Later, I cut them and frozen them on two plates to last us for two Sundays.

After Keith was ready for school, he built a mighty structure with magnatiles. We knew it would get destroyed while he was gone for the day, so I took a picture of him with it so he could remember it forever. ;)

After ABA therapy that morning, Auggie had an appointment that morning with his GI specialist. Because he’s made such progress with eating, he got cleared and we didn’t have to schedule a follow-up visit with them – praise God!

I had marinated three big packages of chicken thighs and late afternoon, I put them on our smoker to prepare for a big dinner.

Kiya made two kits worth of Caesar salad.

The whole family came over and we had a feast to celebrate Kelsey’s birthday!

We ate Smoked Chicken Thighs, Mashed Potatoes, Caesar Salad, and Buttered Rolls.

It’s such a gift to have everyone together!

Kelsey’s birthday dessert request was Angel Food Cake with Strawberries and Whipped Cream. Oh my goodness – this was perfect. We all loved treat this on a warm spring day!

The night was fantastic, with minimal kid behavior struggles and wonderful conversation. :)

Friday the kids were home from school. Acacia was my special helper and we made a great big batch of Mudballs for breakfast.

Acacia and Josie were playing some kind of special game on their kitchen stools and giggling – so sweet.

I baked several pans of bacon that morning to finish off a box in our fridge so we’d have cooked bacon on hand for upcoming meals.

Then we got dressed and ready to go to the indoor play area at the zoo for the morning. I made a loaf of bread worth of PBJs plus packed pears, bananas, and applesauce to snack on while we were there.

Auggie’s RBT joined us at the zoo to continue working with him during his morning session. It was quite a week of adjusting and building relationships with new people, so there was a lot of snuggle time with Mommy and Daddy to help with reassurance and consistency.

For almost two hours, the kids ran and played on the indoor play structure. They occasionally took breaks to watch the monkeys and to go into the small room off the side to see the birds, snakes, and iguana.

 

We ate through the entire container of sandwiches and almost all of the fruit. It was a good morning outing!

We got home to put Auggie down for a nap, then I took Brayden and Kiya out by themselves to shop for something special to wear on Easter. This time with them was so good – letting them learn how to be big kids and having more grown up discussions.

We picked up a Hy-vee Pick-up order before heading home.

I was fighting a migraine so the rest of the evening was pretty chill as we played outside a while then had a simple dinner of Tacos.

Saturday morning, Anna was my special helper. She opened cream cheese boxes for me – with a pretend broken arm – ha.

I made two large Cheesecakes for Easter dessert. Plus I made a pot of Cream Cheese Corn to rewarm after church.

We got jackets and hats, then loaded up the kids to drive a few blocks toward our State Capitol building. There was an event close-by that we wanted to check out, but as we did, we realized it wasn’t very kid friendly. SO, instead we simply parked our van and let the kids walk a few blocks toward the capital building as our morning outing.

Along the way, we saw a blind man who appeared to be lost. So Matt went to find out what his need might be. We found out where he was headed, and it was just a bit past the capitol building, so he joined us on our walk and Matt got him to where he had planned to be. I loved our kids’ reactions to their daddy helping this man. What a gift for them to have Matt as an example of Jesus’ love.

At the capitol building, we climbed the stairs and explored for quite a while.

We had to potty, so we walked to find a bathroom, seeing lots of doors to senator’s offices – so exciting. :)  But truly, the kids were amazed that we got to walk inside the capitol building for five whole minutes!

Back at home, we warmed up a lot of leftovers for a lot of hungry kids. Then, Matt took Anna on a one-on-one outing as prescribed by our Family Therapist. They walked just a few blocks from our house to a free event inviting kids to come paint rocks. Anna loved it!

The rest of the day was spent cleaning and getting ready for Sabbath and Easter. And that was our week!

How $10 Worth of Meat Fed My LARGE Family 5 Meals!

No doubt, sometimes my family eats $10 worth of meat in 5-minutes {gulp}. But then there is the beautiful occasion that I see high quality, spiral cut hams marked down to just $0.99/pound for quick sale. Quick sale indeed. I don’t even give it a second thought before putting the ham quickly into my cart. Sold!

Ok, fine. Let’s be real. I quickly put three hams into my cart. How could I resist? They were each $10 or less, and I have learned the beauty of how delicious spiral cut ham is, how easy it is to prepare, and how far I can stretch this large piece of meat. $10 for 5 meals’ worth of meat? Yeah, baby. There are teenage boys and college men and all of their friends to feed, plus a 5-year old ham-loving Bonus Boy and a hungry hard-working husband. Somewhere in there, this mom likes to eat too.

Is Laura excited about her $10 hams? Why yes, I guess this fact cannot be denied.

How to Cook a Spiral Cut Ham

First, let’s discuss how easy a spiral cut ham is to bake. Make it difficult if you prefer, but as for me and my house, we will:

  1. Open the package.
  2. Throw away the glaze packet that comes with it, because why?
  3. Plop the ham into a roasting pan.
  4. Put the lid on the pan.
  5. Slide the pan into the oven and bake it in a 325-degree oven for 20-minutes per pound.

Truly, doing the math to figure out the baking time takes longer than actually preparing the ham for baking. (10 pounds of ham x 20 minutes of baking time = 200 minutes divided by 60 minutes in one hour = cook my 10-pound ham for approximately 3 1/2 hours.)

Once time is up, I set the cooked ham, roasting pan and all, onto my buffet to serve it. I use a large bread knife to cut it off the bone, which takes no effort because it falls off the bone anyway, and it has already been spiral cut.

How Delicious is a Spiral Cut Ham?

Oh my dears. There is not much better. And I don’t even add any fancy topping or glaze. Mmm, it is fantastic.

How a Spiral Cut Ham Feeds My LARGE Family 5 Meals

What’s beautiful about how easy it is to stretch one ham into at least 5 meals is that it’s not even a stretch. One 10-pound ham provides a LOT of meat. Amen and amen. Here is a typical way I can use one ham to provide my family (of 7) with 5 great meals!

  1. Bake it as directed above, and serve it as a Sunday meal after church with Cheesy Hashbrown Casserole, salad, and veggies on the side.
  2. Use small leftover pieces of ham the next morning to make Ham and Cheesy Eggs in a skillet. (This actually gets them out of bed in the morning because it smells so good!)
  3. Stir pieces of leftover ham into a big batch of Creamy Mac and Cheese. I can’t tell you how delicious.
  4. Stir pieces of leftover ham into a pan of Simple Ham and Hashbrown Casserole.
  5. Use larger slices of ham to make BLTs, or rather HLTs since we are using ham instead of bacon. Or better yet, make HLT Wraps. How can anything taste any better?

We’re talking about 5 meals filled with healthy portions of meat that tastes delicious. Happy, happy, happy.

Other meals to create with your leftover ham include adding ham to:

  • Regular cold ham sandwiches
  • Simple Hashbrown and Egg Nests
  • Simple Three Cheese Spaghetti
  • Simple Waffle Omelets
  • Last Minute Creamy Bacon Spaghetti (except use ham instead of bacon)
  • Use the ham bone to make broth – which takes your purchase even farther!

By the way, finding a $10 ham isn’t a regular occurrence for me, just an incredibly exciting one! But often at Christmas or Easter time I find them for $20ish. While a $10 ham gives us 5 meals for just $2 each (!!!), a $20 ham still provides us with 5 meals at only $4 each. It’s fun to think this through when considering a purchase like this. How far with this meat stretch? How many meals can I get out of my $20 (or $10!)? The same is often true of a holiday turkey. I love it when stretching meat is easy!
