You. Me. Freezer Cooking. Let’s Do This! {Take the Challenge}

I am in freezer cooking mode for two reasons:

1. I’m out of prepared food in the freezer. All my pyrex dishes are empty and forlorn. They sit stacked and weepy in my cabinet.
2. Spring soccer season is starting, which means that our evenings and weekends will be full, and my cooking time will be very limited. I need food that is healthy, hearty, and ready to put into the oven with no effort.

I want you to join me! Think of it:  Together we cook and get ahead. We all save money. We all save time. We all drop kick the stress that comes with busy evenings, full weekends, and hungry families.

The best news:

As we do this, not only will we be making food for our freezers, we’ll be practicing the Cook Once, Eat Twice (or More) method. This means we’ll be making two of everything – one to eat the day we make it, the other for our freezer. You’ll be making tonight’s dinner (something you need to do anyway), and an additional dinner for another day. See how efficient we’ll be?

Is freezer cooking intimidating to you?  Do you have trouble being motivated to get ahead in the kitchen? No problem. I’m going to walk you through this process during the next few weeks.

Don’t have time for freezer cooking or getting ahead?  Not to worry. We’re not going to spend hours at a time on this. We’re going to break this down into small tasks. You’ll be amazed at all you can do to get ahead when you just do a little bit at a time. That means that even if you have a house full of little ones, even if you work outside the home, even if you really don’t see how you can fit anything else into your day – you can make this work.

I’m excited to walk you through this freezer cooking thing! And I believe we all know how excited I am to use my Pyrex.

I reserve the right to change my plan once I get going with this and hit it hard in the kitchen, but here’s what I’m looking at for the next few weeks of freezer cooking.

Week One ~ Filling the Freezer With Beef Dishes
Week Two ~ Filling the Freezer With Chicken Dishes
Week Three ~ Filling the Freezer With Breakfast Items
Week Four ~ Filling the Freezer With Meatless Meals

See, it just makes sense to focus on one “food group” at a time. If I’m going to brown one pound of hamburger meat, I might as well brown eight or ten. It saves loads of time and energy! That’s why we’ll focus on beef recipes during Week One. And so on.

All of the recipes we’ll use are family friendly, and use basic, real food ingredients. I will choose recipes that are either on my site or in our Let’s Do This! eCourse or {Healthy} Make-Ahead Meals and Snacks eBook. Menu Plan for the Week {31 Days of Real Food Reality ~ Day 5}

During our 31 Days of Real Food Reality, I’ll be including my normal weekly menus as part of the series. Why? Because these menus are very much a part of my family’s real food reality. I want them to show you how simple it is to put together real food meals!

None of these meals cost a lot of money. None of these meals takes much time to prepare. I rebel against difficult-to-make recipes, knowing that while I love to cook, I really only love it when it is easy and fast. And delicious, of course. :)

Here’s another part of my Real Food Reality:  I don’t always stick to my weekly menus. Sometimes what I have planned on Sunday doesn’t sound good by Thursday. Sometimes I forget to thaw the meat. Sometimes I just don’t feel like being tied down to a menu. And sometimes we have leftovers I wasn’t expecting, so we ditch the menu in order to clean out the fridge so that food doesn’t go to waste.

I consider my menu plans to be a guideline to follow…and that’s it. Feel free to use my menu plans to give you ideas, suggestions, and inspiration to make real food a reality for you!

These Raspberry Oatmeal Bars have become one of our favorite snack and breakfast foods.
I love that they can quickly be made anytime I have some spare minutes, then eaten when we need them.
They are perfect to make in the evening to serve for a ready-made breakfast!

Making Your Thanksgiving Preparations Easier

Making Holiday Preparation Easier

Sometimes I wonder why I don’t make big turkey dinners more often. After all, the food is so delicious and basic:  Meat, potatoes, veggies, rolls, dessert. But each year as I’m prepping the food, I’m reminded why I only make it once or twice a year. It’s a lot of work compared to putting together a casserole and serving it with a salad!

You’ll be glad to know that along with my every day getting ahead tricks and recipes, I’ve figured out many ways to get ahead for the big Thanksgiving meal as well. I usually start a week or two in advance, making good use of my freezer. Does our Thanksgiving meal taste like I’ve frozen and defrosted it? No way. It tastes fresh, because I’ve learned tricks to get ahead and keep the food tasting great!

First, I make my turkey ahead of time. I love getting the big chore of cooking and deboning a turkey out of the way ahead of time.

Once I’ve got the turkey cooked, I then have several jars of rich turkey broth that I can use to make Turkey Gravy for the big day. I freeze the broth to be used Thanksgiving day.

Potatoes? Well – I don’t make my mashed potatoes ahead of time. But, the day before, I wash a large amount of potatoes in the dishwasher so that they are ready to go. I also find that it works well to peel and cut the potatoes the night before Thanksgiving. I put the prepared potatoes in a pot of room-temp water. When it’s time to cook and mash them, all I have to do is move the pot of prepared potatoes to the stove and begin the cooking process. Such a Thanksgiving day time saver!

How about homemade rolls? We have two favorite recipes, one of them being these Whole Wheat Butterhorns. They can be made ahead of time, then set out to thaw in the morning and baked at meal time. Easy!

How to Make Freezer Biscuits

As with any freezer food, these freezer biscuits are going to make your life easier!

My family loves biscuits and gravy. But by the time I brown sausage and make gravy, mix together biscuits, roll them, cut them out, and bake them – I end up with a very messy kitchen and a lot of time spent trying to get breakfast on the table. Therefore, I used to only make this meal on special occasions like birthdays and Father’s Day.

But now!! I have unlocked the secret to getting a meal of biscuits and gravy on the table within just a few minutes and with very little mess. My men think I’m wonderful for working so hard when they walk into the kitchen to see the delicious breakfast feast. Little do they know that making biscuits and gravy has become easier than trying to get them to see the laundry that is waiting for them to fold and put away. How can they not see it when they have to step over it to get to their room, I’d like to know. But back to the biscuits…

Making a super fast meal of biscuits and gravy is dependent on two simple tasks:

  1. Have sausage pre-made, browned, and frozen in meal-sized portions.
  2. Make biscuits ahead of time, then freeze them to pull out and bake.

If you recall, I typically make 12 pounds of Homemade Turkey Sausage at one time. It just makes sense. I’m already getting out all of the spices. I’m already dirtying a pot. Might as well just dirty a bigger pot and make a huge batch of sausage, right? Then I freeze the cooked meat in 12 quart-sized freezer bags. The night before I’m planning to make biscuits and gravy, I get out one bag of meat and put it into the fridge to thaw. Easy!

How to Make Freezer Biscuits

Now how about the biscuits? I’ve learned to mix up a triple or quadruple batch of Quick Mix Biscuits, roll and cut, then freeze the unbaked biscuits on a parchment paper-lined cookie sheet. One mess, lots of biscuits. So easy! Once the biscuits are frozen, I transfer them to gallon-sized freezer bags. The night before I want to bake them, I place the desired number of frozen biscuits on a baking sheet, cover them with a cloth, then let them thaw on the countertop overnight.

The next morning, all I have to do is slide the biscuits into the oven to bake while I quickly make Homemade Sausage Gravy with the pre-cooked sausage. Slice some fruit, and I’ve got a favorite, hearty meal on the table within about 15 minutes.

My family will now be enjoying biscuits and gravy more often, thanks to these quick freezer methods!

Let’s Do This! Join the Getting Ahead {Dinner} Challenge

I loved reading about all that you did last week to get ahead for breakfast! When I extend a challenge, you all really do jump right in. Thanks for making this so much fun! I’m sure your family thanks you too. But who really benefits the most from getting ahead? You and I. Yes indeed. The pay off for our efforts is that we make our kitchen work so much easier. Sweet!

Feel free to continue getting ahead with breakfast foods. (Yes, you have my permission.)  Our Getting Ahead eCourse and eBook can help. Now we’re moving on to the evening meal, the Getting Ahead for Dinner Challenge. Feel free to call this a Supper Challenge if you prefer. I grew up calling it supper, but now I call it dinner, but that’s a post I already wrote a few years ago. :)

What’s involved in this challenge? Anything that will help you put a healthy meal on the table in the evening a little bit faster or with a little less effort.

Some Getting Ahead for Dinner ideas:

  • Use your crock pot (here are all of our Healthy Crock Pot recipes.)
  • Cook meat ahead of time so that you can throw it into rice or pasta later
  • Make a Cheesy Beef and Rice casserole ahead of time to warm up at meal time
  • Freeze Chicken Fried Steak Strips for easy-to-grab meals
  • Put extra casseroles in the freezer for easy meals later on
  • Start making a dinner time menu plan for the week (here are our Main Dish recipes)

And those are just a few ideas. There are so many tasks you can do ahead of time to make your dinnertimes easier. (Lesson one and two – well all the lessons really – in the Let’s Do This! eCourse will give you more guidance.)

I’m planning to get a few casseroles made this weekend to help with busy days the next couple of weeks. It is SO nice to effortlessly grab a frozen casserole out of the freezer to heat up for dinner.

Getting Ahead in the Kitchen When You Don’t Want To Heat Up the House

I love seeing how many are grabbing the Let’s Do This! Getting Ahead in Your Real Food Kitchen eCourse and {Healthy} Make Ahead Meals and Snacks eBook. It is especially great to hear how some of you are already using the techniques described in the eCourse and the recipes in the eBook to get ahead. As one person commented this morning, “Because of your course, I now already have dinner made for tonight! That’s a first for me!” Awesome. :)  It’s so exciting to me to see how many of you are saving yourselves so much time and energy in your kitchen!

Today, I wanted to share an additional tip that has helped me to get ahead this week. It’s been hot at our house the past several days – too hot to bake. In fact, I’ve hardly even wanted to cook anything on the stovetop because even that heats up the kitchen on hot days. But I still found myself with about thirty minutes of time yesterday that I could work ahead in the kitchen.

So what did I do? I mixed up items that could be frozen raw and baked later. It was the perfect solution to getting ahead without heating up the kitchen!

Here’s what I made:

Chocolate Chip Cookie Dough (a necessity, right?)

To freeze cookie dough, simply mix up the batter and scoop it out onto a cookie sheet. Place the cookie sheet in the freezer until the cookie dough is frozen. Transfer the frozen dough to a well-labeled ziplock bag. Store in the freezer for up to two months. To bake the cookies, place the frozen balls of dough onto a baking sheet, two inches apart. Bake as directed, adding a few minutes extra baking time.

Here are the details you’ll want to read to learn about freezing muffin batter. On a chilly morning someday soon, I can use these frozen muffin balls to make fresh muffins without any effort!

Quick Mix Biscuits

Don’t like the hassle of rolling out and cutting out biscuits at breakfast or dinner time? Me neither (even though it really isn’t hard). I mixed up a double batch of biscuits, rolled them, cut them, and froze them on a cookie sheet. Once they were frozen, I transferred them to a freezer bag. To bake frozen biscuits:  Place desired number of biscuits on a baking sheet to thaw for 30 minutes to one hour before baking.  Bake as directed.

Other ideas of ways to get ahead when it’s too hot to cook/bake:

  • Put together Whole Wheat Butterhorns and store them, unbaked, in the freezer.
  • Grate cheese
  • Prep veggies
  • Make salad dressing
