Healthy Crock Pot Recipes: Hamburger Sauerkraut Dip

All I have to say about this recipe is:  Don’t knock it ’til you’ve tried it.

I completely understand if you read the name of this recipe and your initial reaction was to make a face of disgust. I’m with ya. I don’t like sauerkraut. I don’t like the way it smells. I don’t like the way it tastes. I don’t even like the way it looks.

But I promise you, this dip tastes so good that you really might just pass out from the delicious flavor. It doesn’t taste like sauerkraut at all – but instead is a wonderful mix of flavor that is completely addicting. The first time I tried it, I stuffed myself so full, I could barely walk out of the kitchen. It was not cute.

I got the recipe from my friend Jen, who, for the record, does not like to cook. That may tell you something about how easy this dip is to put together. We prepped all the ingredients together one evening, then I threw everything into my crock pot the next morning for us to chow on that night. And did I mention that I stuffed myself? Seriously, whether you like sauerkraut or not, you must try this dip.

Hamburger Sauerkraut Dip

1 pound ground beef
4 tomatoes, chopped
2-3 green peppers, chopped
27 ounce can of sauerkraut, drained
12 ounces sour cream

Brown ground beef until thoroughly cooked. Stir browned meat, chopped tomatoes and peppers, sauerkraut, and sour cream into a crock pot. Cook on low for 5-8 hours. Stir occasionally. Sneak bites often. Try not to eat the entire pot. Good luck.

Hamburger Sauerkraut Dip

I’m very happy to point out the fact that I have posted all kinds of different cheese dip recipes on this site, so you must surely be very impressed that I have climbed out of my cheese dip lovin’ box to post a dip that is significantly different and exciting. See, here they are:  Healthier Cheese Dip; Super Simple Chip Dip; Cream Cheese Salsa Dip; Hamburger Cream Cheese Dip. And here I am posting a dip recipe that does not include cheese – but sauerkraut. How about that?

So, are you a sauerkraut fan, or do you tend to avoid it? Any chance that if you aren’t a fan, I could convince you to try this dip anyway? I promise you won’t regret it. :)

Getting Ahead in my Kitchen

It is a fact that participating in an occasional cooking/baking marathon is very therapeutic for me. (It is also a fact that I had no idea how to spell therapeutic, which is why I am very thankful for spell check options. You should have seen how I spelled it when I sounded it out. Let’s just say that I can cook better than I can spell.)

My spelling issues aside, I receive great pleasure from mixing up four or more recipes at once, getting most of my dishes dirty all at the same time, and covering every inch of counter space with a cooking project. I failed to take a picture of the kitchen chaos. Sorry about that. ;)  But I did manage to take a few pictures of what I accomplished during my baking day. Looking at pics of chocolate chip cookies is much better than looking at pics of my crusty cookie sheets, so let’s focus on the chocolate, shall we?

I made a double batch Chocolate Chip Cookies to serve at high school huddle. Our family also did a little taste testing because quality control is our specialty. :)

While the cookies were baking, I mixed up a double batch of Honey Whole Wheat Bread.

While the bread was rising, I started cooking a double batch of Taco Corn Fritters. These refrigerate or freeze well and reheat easily in the oven or toaster oven.

And last but not least, I made a big batch of Sloppy Joe Meat and some Sloppy Cornbread Muffins.

Although we’ve already eaten a good portion of the food I made to try and get ahead for this week, I do feel much better having a few extras on hand to warm up quickly for meals. Healthy convenience foods rock. :)

Menu Plan for the Week

I really appreciated hearing from so many of you last week in regard to menu planning. Sounds like many of you have great methods of organizing your meal plans for your family. If you find my menu plan somewhat overwhelming, please read through this post to learn the method behind my madness. :)

I love using this Creamy Mac and Cheese recipe to make Tuna Casserole.
I just add two cans of tuna and it’s done. One of the easiest meals ever to put together!

Here are the meals we’re looking to have this week:

Why My Whole Foods Menu Plan Might Be Overwhelming

menuplanner1webI love planning a menu for my family. Without a menu plan, it takes me way too long to figure out what we’re eating each day. I also like sharing my menu plan with all of you each week. Many of you have mentioned how helpful you find my plan and have told me that you often “steal” many of my meal ideas. I love that!

But, I also really appreciate the perspective shared in a comment last week – the perspective that my menu plan may be overwhelming to some of you. The fact that I plan all three meals for each day of the week, and the fact that all three meals tend to be big meals – yep, I can definitely see how that could be overwhelming!

I decided to take the time to explain my menu plans just a little bit. I certainly don’t want to overwhelm anyone, nor do I think that planning all three meals for every day of the week is a necessity for everyone. It’s what works for me, but I know it doesn’t work that way for everyone. In fact, menu planning doesn’t work at all for some people. If you’re good at winging it at meal time – go for it! :)

I have found that planning all three meals each day for our family works well for me for the following reasons:

1. My family eats a boat load of food, for every meal. Having a plan for which boat load of food is going on the table really helps me keep my head above water. (Get it? Boat load? Head above water? Ha.)

2. Having a plan in place for each meal of the day helps me focus on other things so that I’m not constantly distracted by what I’m supposed to feed us next. Trust me, the boys ask all the time – “What are we eating for breakfast/lunch/dinner?”

3. Most of my boys wake up ready to eat my leg if I don’t have breakfast ready to offer them when they wake up. I need to know what I’m making for breakfast before I get out of bed. I like having two legs. It’s very handy.

So the question could still be then:  Why don’t I just feed my family cereal for breakfast and sandwiches for lunch each day, and then focus on our evening meal plan?

Well…I do feed them cereal and sandwiches every once in a while. But wow, the cost of feeding us this type of meal really adds up for us. I did the math one time on how much it costs to feed my family sandwiches. You can read about that here, but add even more to that dollar amount because we now eat probably double what I added up for a meal since my boys are older. (Did I mention that my oldest son has jumped several shoe sizes during the last year?)  Therefore, I find that it really saves our family a lot of money if I cook heartier, more nutrition packed meals if possible.

Some tricks I use to make putting three big meals on the table each day just a little bit easier:

~ Just about every meal I make for my family is simple – especially our breakfast and lunchtime meals. I really don’t find that making a “bigger” lunch for the family takes a whole lot more time than making a bunch of sandwiches.

~ Sometimes we have leftovers to eat, so I don’t have to cook something new. But I don’t always know when we’ll have them, so it’s hard for me to plan those into my menus.

~ I try to have food made and in the freezer to pull out for quick lunches.

~ I have a list of “back up meals” and all ingredients on hand to throw them together if needed.

~ While I do have a detailed menu plan, I switch it up all over the place throughout the week depending on what’s going on and what sounds good. The plan is there, but it is flexible.

~ I give myself grace. If I really just can’t get a good meal on the table, the cereal is in the background waiting to be pulled out.

We’ve had several weeks off from hosting and cooking for our “High School Huddle” group, so I’m afraid I’m out of practice. Tonight, we start back up again. I made pans and pans of Pizza Casserole, which was easy and will reheat quickly tonight before the kids get here. Funny how taking a few weeks off threw me off my game. I stood at the store forever trying to figure out how much pasta to buy. :)

Why Aren’t You Eating a Healthy Diet?! Part 1

I’m not sure if you’re aware of this, but eating healthy food is really, really expensive. It also takes too much time to prepare, and besides that, all healthy food tastes like cardboard.

Those are a few things you might want to say to me if you’re interested in picking a fight. Not that I like to fight…unless you offer me a light saber or a plastic sword, of course. ;)

Trust me, I’ve heard all of the excuses. Shucks, I used most of them myself back before we began our healthy eating journey. I hated spending money on food. And I thought eating a healthy diet meant that I had to live on rice cakes, fake sugar,  and some sort of fat-free cheese like product. (Let us all now pause for a moment of simultaneous gagging.)

Yes, I’ve used all the excuses to avoid eating healthier foods. I have had all the fears. I thought I would get fat if I ate high fat foods. I thought we would go broke if I stopped using coupons for all the “food” I typically purchased at great discount. I thought my kids would hate eating healthy food and feel deprived of their favorite snacks, meals, and treats. I thought cooking healthy would be complicated and beyond my realm of knowledge in the kitchen. Plus, I had no idea where I would find healthy food in our small mid-western town.

But as I was learning more about eating a good, balanced diet filled with whole foods, I realized that something needed to give. I needed to do this for my family.

Therefore, I did a lot of research. I sought the help of friends. I learned that good healthy food is a great investment for my family’s health. I dug deep and found that there are healthy food sources all around me – I just had to know where to look. And I learned that healthy, whole food actually tastes amazingly better than anything else that comes out of a box or a bag.

Over the next few weeks, I’ll be writing a series exploring the top ten excuses I hear from people about why they don’t eat a healthy diet. I’ll work to debunk all the myths you’ve ever heard about health food, and offer you hope if you are holding back on eating a healthy diet because of some excuses of your own.

As we begin this series, I’d love to know:  What are your biggest hang-ups with eating a healthy diet? What are the excuses you use or hear most when it comes to eating twinkies instead of broccoli? If you had to make a top ten list of reasons you can’t eat a healthy diet, what might be on your list?

Homemade Sausage Gravy

Biscuits and Gravy

Have I ever told you about the time I made a cream gravy for a special boyfriend many years ago? We had reached our six month dating anniversary, and so, to celebrate, I was making him a dinner of hamburger steak, mashed potatoes, gravy, and I can’t remember what else.

Everything was coming along pretty well. I called my mom five or twenty times while I was preparing the food, mostly so that she could walk me through the gravy making process. I thought I had it all figured out and soon, it was time for us to enjoy our meal together.

But the gravy. Somehow between hanging up the phone with mom, calling my boyfriend in for the meal, and serving the food – the gravy (if, in fact, we can call it gravy) had turned into a thick, heavy paste like substance. How could this have happened?

Never fear. My boyfriend was very kind. He simply got a butter knife and spread chunks of gravy onto his meat and potatoes. Then he proceeded to eat heartily, and even complimented me on the great flavor of the food.

Yeah, he was a nice one all right. I shouldn’t have let that one get away. Oh wait. I didn’t. A few months after I made him choke on gravy, that nice boy asked me to marry him. I guess he figured that if he could survive my gravy, we could get through anything – thick and thin. (Ha, get it? Thick and thin? The gravy was thick. Get it? Okay, it wasn’t that funny.)

I have since then perfected my gravy making skills, much to the delight of my boyfriend husband, and all of our darling offspring. Here is my sausage gravy recipe and a picture tutorial that will hopefully spare you all from making the same pasty mess that was once my “gravy”.

Homemade Sausage GravyYum

1 pound turkey sausage (I like using this homemade recipe.)
1 Tablespoon plus 3 Tablespoons butter
3 Tablespoons flour (I use freshly ground white whole wheat)
2 1/2 cups milk
Sea salt and pepper to taste

Begin by browning the sausage with one tablespoon of butter in a large skillet until it is cooked thoroughly.

Add the remaining 3 tablespoons of butter, stirring it around until is has melted.

Sprinkle in the flour. Stir it around with the meat and butter until it is absorbed.

You should now have kind of a thick, meat mixture in your skillet. Turn the heat on your burner up to “high”.

Pour in the milk, and stir constantly. I find that I must leave the burner turned to “high” in order for the gravy to thicken.

Continue to stir over high heat until gravy becomes thick and bubbly. Remove the gravy from the heat, add salt and pepper to taste, and serve.

Trouble shooting your gravy:  If your gravy turns out too thick, simply add more milk, small amounts at a time, continuing to stir, until gravy is the desired consistency.

If your gravy fails to thicken, mix a “paste” of 2 Tablespoons flour with 3 Tablespoons of water. Stir the mixture into your gravy, little bits at a time until the gravy thickens to desired consistency. Do NOT sprinkle flour directly into the gravy. That’s how lumpy gravy is made. :)

We love this gravy served over these Whole Wheat Biscuits.

Heavenly Homemakers 2011 Recipe Challenge – What Do I Have to Say for Myself?

Hi. Remember the Recipe Challenge I began back in January of this year? The challenge that I was planning to have completed by the end of 2011? Yes, that one.

Perhaps since there are still three entire days left in the year, none of you have been worried about the fact that I still have several recipes from the challenge list not yet accounted for. I told you I would do it by December 31, after all. Surely I wouldn’t let you down.

Yeah, well.

I’m all for focusing on the positive, so let’s first look at what I did accomplish from this list, shall we?

1. Tator Tots

2. White Chocolate Baking Chips

3. Butterscotch Baking Chips

4. Teriyaki Sauce

5. Onion Soup Mix

6. Chocolate Milk

7. Ketchup

Now let’s look at some of the other items on the challenge list so I can give you my pitiful excuses heart-felt explanations as to why I failed to post lovely recipes and pictures of these foods.

1. Mayonnaise

I worked my tail off on this one and ended up almost despising the very sound of the word mayonnaise by the end of my experience. Clearly, making mayonnaise isn’t my gift. However, now that I have a new immersion blender, it is possible that I will decide to revisit this idea and try again eventually. Like in eight years. (kidding, sort of, maybe, not sure)

2. Corn Tortillas

I gave my best effort on the corn tortillas, and even took pictures once as I went, in hopes that I’d have beautiful corn tortillas to share with you. The little corn tortilla dough balls are indeed lovely, don’t you think? They look like they would make wonderful tortillas.

And at first glance, this rolled out, pre-cooked version looks kind of okay. But don’t ask me how long it took to actually get that thing rolled out – and really, really don’t ask how it turned out once I tried to cook it in a skillet.

Okay, fine. I’ll tell you. It completely crumbled and fell apart and tasted a little bit like…flaky cardboard. After all that work, I was as fond of corn tortillas as I was of mayonnaise. We ate the pieces anyway, because that’s what we do around here. But I’m wondering if the secret to success in making corn tortillas is using a tortilla press. I’m not sure I’m willing to make the investment, since we don’t eat a lot of corn tortillas around here. I roll my wheat flour tortillas with a rolling pin and never have any problems. Your thoughts?

3. Angel Food Cake

My attempt at a healthier angel food cake was a bit disappointing as well. It flopped and became lop sided. I took pictures to prove it. In addition, we were not impressed with the flavor. It was okay, but not fantastic. However, there’s nothing a little fruit and a good amount of whipped cream won’t fix – so we were able to get it down without too much effort.

4. Homemade Ritz Crackers

These were sort of good and kinda tasted like a Ritz Cracker. But I ended up getting them way too salty and ultimately, we didn’t just love the taste. I’ll probably continue to experiment with these because I think I was on to something.

5. White Cake

I have tried different variations of a plain white cake, which ultimately turns brown because of the sucanat I use. The cakes are tasty enough, but usually a little dry. I have decided to simply begin using my Strawberry Shortcake Recipe when I have a need for a plain white cake. It is a little spongier than a typical cake, but it’s moist and very yummy.

The remaining items on the list:  Twinkies, Fig Newtons, Bleu Cheese Dressing, and Cereal Bars never did happen. If it counts for anything, I did give each of them some thought. I even have some figs in my fridge that will be turned into fig newtons some day. Right now, they are just a “figment” of my imagination. Get it? I am so funny.

So there you have it. The 2011 Heavenly Homemakers Recipe Challenge. I have a growing list going on for next year. Anything you’d like to add to it?

Healthy Crock Pot Recipes: Hamburger Cream Cheese Dip

When I think of New Year’s Eve, I think of chip dip. Of course, I also think of playing games, and spending time with friends and loved ones…just so long as none of those dear friends and loved ones get in the way of me and my chip dip. I have been known to greedily reach across serving lines and yank chip dip ladles out of people’s hands before.

Not really. I only picture doing that in my head. On the outside, I’m smiling sweetly and waiting patiently in line for my turn with the dip. I would never really grab a chip dip ladle from someone or push my way to the front of the line to get my dip. (Except for in my head.)

In case you need a tasty and easy chip dip recipe for a gathering this weekend, you may be interested in trying this Hamburger Cream Cheese Dip recipe. And then, you will want to take care and not invite me to your New Year’s  Eve gathering. If I see this dip at your table, there’s no telling what I might do.

Crock Pot Hamburger Cream Cheese Dip

Hamburger Cream Cheese DipYum

2 pounds ground beef
1 cup chopped onion
1/2 teaspoon garlic powder
1 can (4 ounces) mild green chili peppers
Sea salt to taste
2 cans (8 ounces each) tomato sauce
1/2 cup grated parmesan cheese
1 1/2 teaspoons chili powder
16 ounces cream cheese, softened and cubed

Brown ground beef in a skillet with the onion. Place cooked meat into a crock pot and add remaining ingredients. Set crock pot on low for two hours. Stir, taste, and add additional seasonings if desired. Serve with tortilla chips. We prefer these organic corn chips.

Do you have any exciting New Year’s Eve plans? Except for eating dip, I’m not really sure what we’ve got going on. But then again, I don’t suppose it really matters, just so long as there’s dip.

I think I need to join a chip dip support group.
