Simple Bran Muffin Recipe

Silly as it may be, I think this Simple Bran Muffin Recipe may be my favorite of all the muffins.

And trust, me, there are a lot of muffins. I have over 40 muffin recipes here, and many of them include chocolate chips or a cheesecake topping! So to say that these Bran Muffins are a favorite is saying something.

I believe it stems back to my college days when the cafeteria sometimes featured a muffin like this one. I didn’t love many of the cafeteria foods, but those muffins were a favorite and I always got excited when they were serving them!

These stir together easily and you can use any brand of Bran Flakes cereal you like!

Ingredients
  • 1 ½ cups whole wheat flour
  • ½ cup brown sugar or rapadura
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon sea salt
  • 1 egg
  • 1 ½ cups milk
  • 2 tablespoons melted coconut oil
  • 3 cups Bran Flakes cereal
  • ? cup raisins (optional)
Instructions
  1. Mix together flour, brown sugar, soda, cinnamon, and salt.
  2. Add egg, milk, and oil.
  3. Stir in cereal until well combined (along with raisins if you like)
  4. Scoop mixture into 12 paper-lined muffin tins.
  5. Bake in a 400 degree oven for 20-22 minutes or until muffins are golden brown.

One of my kids favorite ways to eat a muffin is if I cut them in half, smear butter on them, then warm them in our big air fryer. (We use our air fryer as a toaster oven as it works great to fill it with bread, bagels, or muffins and warm/toast them slightly. YUM!)

These taste great for breakfast, and also as a side dish with soup.

Are you an “add raisins to your muffins” kind of person or a “raisins don’t belong in muffins or cookies” kind of person? (Raisins are a no-go for me, except for snacks for the kids, ha!)

Oatmeal Cinnamon Yogurt Muffins

Hmmm, Oatmeal Cinnamon Yogurt Muffins. I’m sure you’re wondering…what’s in these muffins? ;)

Perhaps a little oatmeal? Some cinnamon? Possibly a tad of yogurt? Wow, you guys are good. How’d you figure that out?

These simple muffins are the result of an experiment on a day I needed to use up some yogurt in my fridge. Yogurt makes muffins extra moist – though the oats make them a little more hearty. So the yogurt plus the oats work well together so that these muffins don’t turn out dry and crumbly!

And the cinnamon? Well, of course, that makes these muffins taste incredible!

We prefer these straight out of the oven, slathered in butter. You can use flavored yogurt if you’d like, though if you do, I’d recommend cutting down the sugar since flavored yogurts have sugar added. I use whole milk plain yogurt when I make these.

  • 1 cup rolled oats
  • ¼ cup sucanat or brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon sea salt
  • 1 teaspoon cinnamon
  • ¾ cup whole milk plain yogurt
  • 2 eggs
  • ¼ cup melted coconut oil
Instructions
  1. Stir together dry intgredients in a large mixing bowl.
  2. Add yogurt, eggs, and oil, mixing well.
  3. Scoop batter into 12 paper-lined muffin tins.
  4. Bake in a 400 degree oven for 20-22 minutes or until muffins are golden brown.

I especially like these because they remind me of a muffin I used to enjoy in our college cafeteria wayyyyy back in the day. I have no idea what was in those, but they were hearty with a hint of sweetness and cinnamon. Mmmm.

Is it crazy that I now have sons in college? And that I have babies again? And that I can still taste those college muffins from 29ish years ago? Life is crazy. Expect God to do great things!

Simple Whole Grain Chocolate Chip Muffins

When it comes to recipes, the simpler the better right? These Simple Whole Grain Chocolate Chip Muffins are fast and easy, and probably our very favorite. No one even realizes they are made with whole grains!

First, I must give a shout-out to the Muffin Mix in our Simple Mixes to Save the Day eBook. I use this muffin mix allllll the time as it is my very favorite. It seems silly to say that “this muffin mix saves me so much time!” because what does it really save me? Five minutes per batch of muffins? That, and brain energy, which is absolutely worth saving, is it not?

But truly, having the Muffin Mix on hand means all I have to do is scoop out two cups of mix, then quickly add liquid ingredients. It makes muffins come together very quickly and easily. For me, it feels huge as every minute saved in the kitchen allows for more minutes doing other more important tasks!

Below you’ll find the recipe you can use with or without the Muffin Mix. Note that there’s sour cream in these muffins. This makes the muffins moist and amazing!

Use any whole grain flour you choose. I use freshly ground soft white wheat in these muffins. It amazes me that using this flour for baking turns out products that taste surprisingly not whole grainy!

Amazing Whole Grain Chocolate Chip Muffins

Simple Chocolate Chip Muffins

Ingredients
  • 2 cups Muffin Mix** or...
  • 1½ cups whole grain flour (I use freshly ground soft white wheat)
  • ⅓ cup brown sugar or sucanat
  • ½ teaspoon baking power
  • ½ teaspoon sea salt
  • 1 egg
  • ½ cup milk
  • ½ cup sour cream
  • ¼ cup melted butter
  • ¼ cup mini chocolate chips
Instructions
  1. Scoop Muffin Mix or measure dry ingredients together in a bowl.
  2. Add egg, sour cream, milk, and melted butter, stirring until ingredients are combined.
  3. Fold in ¼ cup chocolate chips.
  4. Scoop batter into 12-15 prepared muffin tins.
  5. Bake in a 400 degree oven for 18-22 minutes or until muffins are golden brown.

23 Great Muffin Recipes + Free Printable Zoo Animals Muffin Toppers

Now that spring is here, you’ve likely got outings at the park, school parties, trips to the zoo, feel like you live in the zoo. It’s a fun time of year. These printables can be downloaded (for free!), and used however you like.

Attach a toothpick and poke them down into a muffin or cupcake for a fun snack decoration. Attach a popsicle stick and let your kids use them as puppets. If your kids are old enough, let them do a little research on each animal, or on an animal of their choice. Use these as gift tags. What else can you think of to use these for?
