Make Your Own Frozen Hashbrowns

It’s remarkably easy to make your own frozen hashbrowns!

I’ve always had a hard time making good homemade hashbrowns. When my friend Brenda shared this little trick with me…I gave it a try and it WORKS!

Not only does this make delicious homemade hashbrowns, it is a great way to use up an abundance of potatoes before they start sprouting. Remember how I got 50 pounds for such a good price last week? I plan on putting up several pounds of them into the freezer in hashbrown form. That way, I’ve preserved some of my good organic potatoes, plus I’ve got EASY hashbrowns ready to pull out and cook up for breakfast or dinner anytime I need them!

Oh, and can you say “inexpensive”? Yes, I thought you could. These hashbrowns are so inexpensive, especially when you’ve taken advantage of a good deal on potatoes. So let’s get started, shall we?

How to Make Frozen Hashbrowns

First, scrub your potatoes…as many as you want.

Bake the potatoes. I avoid using aluminum foil if at all possible in baking, so I always just place my scrubbed potatoes into a covered dish and bake them for about 1 1/2 hours at 350°. Be sure to stab each potato with a knife before baking so you don’t have a massive potato explosion in your oven. Unless you want a massive potato explosion in your oven. Then feel free to leave them unstabbed.

Allow your baked potatoes to cool. Peel the potatoes.

Shred your potatoes with a cheese grater. They shred very easily because they are soft after baking.

At this point, you can either cook them, or freeze them. To freeze them, lay them flat on a parchment paper lined cookie sheet. Put the cookie sheet into the freezer for a couple of hours or until the potatoes are frozen, then transfer them into freezer bags to cook up when you’re ready. Oh so convenient!

I usually cook my hashbrowns in my electric skillet or in a cast iron skillet on the stove.
I use a generous amount of butter, because I love the flavor butter gives my taters.
I also use quite a bit of sea salt or onion salt.

If the hashbrowns are frozen, you can cook them the same way as if they were not frozen…it will just take a few more minutes.

Cook them on one side for 4-5 minutes, then turn. Try not to turn them too much so they don’t get mushy. Cook until the potatoes are golden brown and slightly crispy.

Yum, yum, yum! Ever since I discovered this hashbrown making trick…we have the most delicious hashbrowns. Before, I had simply shredded a raw potato, then tried to fry it. I always ended up with a mushy mess. Blech.  The trick:  Bake the potatoes first. It works so well! PLUS, the baked potato does not turn brown and ugly like a raw potato does once you shred it.

You can use this same trick to make and freeze diced potatoes or potato chunks. Fry those up in butter and you’ve got some wonderful fried potatoes!

Gratituesday: A Great Visit

I mentioned in this post that I don’t usually do much with facebook. But…when it comes to reuniting friendships…I think facebook is so awesome!

God had just put my friend Melody on my heart…and I thought, “Hmm, I should look her up on facebook to see if she has a page.” The VERY next day, I received a friend request from Melody!! Don’t you love how God works!?

We started chatting and the long and the short of it was:  I needed to see her! I needed to hug her neck! I wanted to catch up face to face!

Melody found some amazingly priced plane tickets and just a few short weeks after we “found each other” again, she and her two sweet babies are here for a visit!

We’ve had a wonderful time. Ooh, but did I mention that I have laryngitis and Melody has plugged ears? It’s made for some interesting conversation times, that’s for sure. :) 

I’ve loved meeting her kids (ages 2 and 3). I’ve loved being able to catch up on what all has been going on with her since we last saw each other several years ago. (She happened to be hanging out at my house the night my water broke when I was pregnant with Justus. Yeah, we go way back!)

Today was Melody’s birthday, so of course there was lots of celebration food!

She requested biscuits and gravy for breakfast. My family cheered.

My boys were being awfully quiet after breakfast (always reason for concern). Turns out, they were upstairs with the door closed working on a special birthday song for Melody. It was oh so goofy…and oh so sweet. (Yes, mostly it was goofy.)

We “picnicked” inside during lunchtime since the weather turned out nasty, and of course we had pretzels.

We served up some yummy cake and homemade ice cream after lunch. Don’t you love all the pictures of a sweet little girl in pink ruffles and pig tails? You don’t see many of those kind of pictures around here, do you?

I’ve loved our visit…and I’m so thankful for how God orchestrated all the details to make it possible. God is so good.

It’s National Pretzel Day! Make Some Memories!

First, I’d just like to say that I think it’s funny that there is a national ANYTHING day. You name it, there is a national day for it. While I’m not opposed to celebrating the day zippers became patented (because I happen to appreciate zippers very much), I just find it interesting that there is a day to honor this occasion.

That being said, in case you didn’t know, today (Monday April 26) is National Pretzel Day. Now this is one celebration I can get into. You know I love me some homemade soft pretzels!!

Perfectly fitting for today, Jennifer at Adventures in McQuill-land is hosting Making Memories Monday. I happen to think that making homemade whole wheat soft pretzels is a very fun way to make memories with your kids! Mixing them up, letting them rise, punching them down and shaping them – and then of course eating them together (with butter slathered all over) – what a great way to make memories! Maybe you could shape them into alphabet letters, spell out your child’s name or create some fun animals. Get creative! (Remember these fun pretzel shapes?)  Or you can of course just enjoy shaping them into regular ol’ pretzels!

We survived our nine soccer games last week. We survived the musical. In fact, games and musical were better than great! You’ve heard enough about our soccer week, but I’ll share more about the musical later…because you do want to see my boys in their costumes, right? 

Now, we are enjoying some out of town guests for a couple of days! I’ll share more on Gratituesday!

Here’s our menu for this week! Oh, and I’m happy to report that we have way less than nine soccer games this week…plus NO musical practices! Whatever shall I do with all my extra time?!

Are You Athletic? Question #64

 Malachi soccer 4-14-09

We are full swing into our spring soccer season around here. I love it…but wow does it keep us hopping. Well, that would be kicking actually.  You know what I mean.

I’ve been pushed out of my comfort zone just a little bit this season. Matt and I agreed to coach Elias’ team as the league is a little short on coaches. Of course this wouldn’t seem to be a big deal since my husband knows a thing or two about coaching soccer. However, Matt has had to work during several of the games. And you know what that means right? Yours Truly gets to coach. Somehow I’ve survived, and don’t tell anyone…but I’ve sort of even enjoyed it. You don’t really have to know what you’re doing. You just have to substitute the kids in and out and make sure everyone gets fair playing time. And you have to yell really loudly so that the players can hear you when you’re trying to tell them something like, “Buddy! You need to kick that out of there! No!  The other way!!!”  This works not at all, because while I’m yelling as loudly as I can, they still can’t hear me. It’s fun. 

Also, much like his first season of playing soccer, our youngest son Malachi still has a lot of hesitation to get out onto the field. He LOVES prepping for the game, putting on his uniform and shin guards and cleats and long socks. He talks about soccer all the way to the game, about scoring goals and about kicking the ball so hard. And then, every time his coach wants to put him into the game, the kid holds onto the bench like his bootie is glued to it and no-way-no-how are you going to make him go onto the field and play his favorite game.

Sigh.

And so, just like last year…during his games I’m out on the soccer field with my nervous five year old. Together, we follow the ball around as I try to get him used to being on the field with other four and five year olds. 

I am utterly relieved and excited to say that we finally had a break-through Thursday night. Slowly but surely, Malachi got into the swing of things and started moving on his own. And slowly but surely…I backed away until I was off the field letting him play all by himself. Hallelujah!

I’ve gotta say though that the more I’ve been on the field with him, the more I’ve realized how fun it would be to play the game of soccer. It was all I could do to keep from kicking the ball when it came to me (instead of hurrying to get out of the way before I tripped an eager four year old). Seriously. At one point the other day I almost forgot myself, and the fact that I was really just out there to encourage Malachi. All I could think of was, “Dude. I could totally take these punks.” Ooh, but I remembered who I was and where I was just in time to step out of the way and let the little guys get the ball. But not before I actually tripped a small boy on the other team and made him roll over in the grass. Good one, Laura.

Which leads me to my question today.  How athletic are you? Are you the kind of person who is natural with any kind of ball (or at least with some kinds of them)? Can you run without tripping (yourself or someone else)? When you hit a ball or throw a ball or shoot a ball…does it actually go where you want it to go?

Or are you maybe a little bit like me? Try as I might, athletic activities just don’t come very easy for me. It’s not natural for me. Balls don’t go where I want them to go. Ever. 

It’s okay. I’ve come to terms with it.

But it did feel good, if only for a moment, to know that I could have been able to run faster and kick the ball harder than the little kids on the field with my five year old son.

Whole Wheat Pie Crust

Making pie crusts has never come easy to me. In fact, if you recall…I put out an all call many months ago and used YOUR recipes to put together the free ebook, For the Love of Pie!

Since that time, I have discovered a delicious and healthy way to make whole wheat pie crust! I am SO excited!

The secret ingredient is Tropical Traditions Palm Shortening. We all know to stay away from regular shortening (like crisco) right? I’ve tried making pie crusts with butter, and that works too (especially in these Mini Apple Pies). But, since I tried using Palm Shortening from Tropical Traditions, I feel like my days of frustration with pie crust may be over. When I tried making a whole wheat crust with Palm Shortening, it formed perfectly. It rolled out like a dream. I could be heard shouting out Whooops and Woohoos from my kitchen for miles around. I’m telling you, this from the lady who never could make a pie crust.

Here’s how you make the crust…

Whole Wheat Pie CrustYum

1 1/4 cup whole wheat flour
1/4 teaspoon sea salt
1/3 cup Palm Shortening (or butter)
4-5 Tablespoons cold water

I found this recipe to work best in my food processor. If you don’t have a food processor, you can cut the shortening into the flour with a pastry blender.

Place flour, salt and shortening in food processor. Blend until shortening is cut throughout the flour and the mixture resembles crumbs.

Admire the crumbs…

Begin adding water and processing (or stirring). If your dough looks like this, it doesn’t have enough water in it yet…

Add little bits of water until your dough will form a nice round ball.

Roll out your dough  on a well floured surface. Fold it in half.

Then fold it in half again.

Place your dough in your pie dish with the folded corner in the center.

Unfold the dough, shape it into the dish and make the edges pretty.

Whole Wheat Pie Crust

Here’s a little video tutorial I made that will maybe (hopefully) give you an idea about how I shape my pie crust. There are all kinds of different ways to make it pretty…this is just the way my grandma taught me.

Poke your dough a few times with a fork to keep it from poofing up in the oven.

Bake at 450° for 10-12 minutes or until the crust is golden brown.

Mmmm…pretty dutch apple pie! (I just used this Mini Apple Pie filling and crumb topping recipe with the crust for this pie…in case you feel like you must try it right NOW!)  I must say, a glass of milk helps this pie go down real nice.

Gratituesday: Clearing out some Clutter!

Guess what I’m thankful for today? Junk! Clutter! Stuff! Boxes and boxes of stuff!

Actually, what I’m really, REALLY thankful for is that my junk, clutter and boxes and boxes of stuff are gone. Gone I tell you! Far, far away from my house and out of my life! Shew! What a relief to have hundreds of items cleared out of my house!

Over the weekend, some friends of ours were having a rummage sale to raise money for their kids to go on a mission trip to the Dominican Republic. Over the past three years, I’d been socking “stuff” we don’t use anymore down in our basement for a future yard sale. Ugh, but I really didn’t want to take the time or put forth the effort to have that yard sale. So the stuff kept accumulating in our basement. 

When I heard our friends were having a fund-raising rummage sale, I was SO EXCITED to take the contents of our basement over for them to sell. I didn’t care about the money I could get from my stuff – I just wanted the STUFF GONE!!! And this way the money would go toward something wonderful – a mission trip!

We spent all Friday afternoon lugging boxes upstairs and into our vehicles, then driving them over to our friend’s house and unloading them onto their porch. Check out all the loot that came out of my basement!

I felt like all my junk couldn’t possibly amount to much…but when I checked in after the sale, the kids said they had raised a very nice amount to help with the cost of their trip! Hoorah! I got rid of a bunch of stuff…they got money for their trip! 

Beyond all of that, the boys and I also spent several hours clearing out boxes and other recyclable items and getting them down to our recycling center. Suffice it to say that after this clean-out-day was over, we were all quite filthy. Filthy and clutter free!

Who knew you could build a fort inside a van full of cardboard!

I love that we had such a productive day. I’m so thankful that the weather cooperated, we were all healthy and we could work hard together to clear out all that clutter! Ah, it feels so good! But look out! I’m in clean-out mode now! The kids better hide their favorite toys before I throw them in the next rummage sale box!

Becoming a Better Help Meet: He Can’t Read Your Mind

I remember the first time we celebrated my birthday as a married couple. It was one of the most disappointing days. Growing up, my mom had always made my birthday all about me. I would wake up to gifts and a special breakfast. We usually went out for a lovely lunch. I got to pick what I wanted for dinner and we all celebrated with a cake.

So naturally, Matt should have known all of that. He should have thought ahead and planned ahead and baked me a big cake and planned the whole day around me because hello…it was my birthday.

I believe the day went something like this:  I did not wake up to presents or a special breakfast. Lunch? Well that would depend on what I chose to make. There was no cake. Matt didn’t even mention my birthday until late afternoon when he said something like, “I have to go out for a little while because I haven’t had a chance to shop for your present yet. What do you want for your birthday?”

What do I want? What do I WANT? I WANT you to know what I want! I want you to spend hours thinking about how to make my day special and about what would be a wonderful and romantic gift for me. And what do you mean you “haven’t had time to shop yet”? You had 364 days to shop!

Mature, wasn’t I?  Expecting a little too much from my new husband? Um, yeah. Especially since I hadn’t expressed one bit of my desires to him in the first place. I didn’t want to have to tell him what I wanted. That wouldn’t have been romantic at all. I wanted him to just KNOW what I wanted. I expected him to create a magical day for me when he had no idea what I had expected. His birthdays growing up had been much more “low key” than mine had been. He didn’t know that the world had to stop and that everything had to revolve around me on my birthday. 

That’s just a silly little example of how not sharing our needs or desires with our husbands can cause unnecessary frustration. But the big point is this:  Our husbands can NOT read our minds.  Your husband probably has no idea what you want until you tell him. 

Hey, you can’t read his mind either. This marriage thing takes communication. 

If you want your husband to help you more around the house, you need to tell him. And you need to be specific. You can’t just say, “I need you to help me more around the house.” He’s likely to look around the house, feel completely overwhelmed and not help at all. Remember, he can’t read your mind. He probably wants to help you, he just doesn’t know what it is that you need help with. While YOU see the pile of laundry that needs to be folded, don’t assume that he KNOWS that you want him to fold it. Instead of, “I need you to help me” say something along the lines of, “Hey, would you be able to get those clothes folded for me sometime this afternoon?” (And then you give him a flirty look, a smile and a wink – but that’s another post for another day.)

Don’t just sit around waiting for him to figure out what you need or desire. He doesn’t know. He’s probably not insensitive and uncaring. He just doesn’t know. Because your husband can not read your mind.

If you expect your husband to read your mind and instinctively know what you want…you are going to be constantly disappointed. Disappointment can lead to resentment. Which can lead to bitterness. Which can lead to a big sinful mess. The kind of sinful mess that rests in your heart, not in his.

Gently and lovingly share your needs with your husband. Be specific. Think about what you are going to say before you say it. Decide if it truly is a need (or just a selfish desire). Express yourself calmly. DON’T NAG. 

Which leads me to this:  Even if you share your needs with your husband in all the right ways…he still may not be able to (or willing to) meet all of them. You may be able to try talking through it with him again another time. You may be able to express yourself differently to help him understand what you need. Or, this may just be a time to shut-up and pray.

And through prayer, you will learn that there’s only One who can truly meet all of your needs sufficiently. And joy of joys…He can indeed read your mind. :)
