Simple Sweet and Sour Baked Chicken Legs

Everybody come get yourselves some Sweet and Sour Baked Chicken Legs.

A meal like this is one of my favorite to prepare. It goes something like this:

  1. Plop some chicken in a dish.
  2. Mix up 5 ingredients to spread over chicken.
  3. Put the chicken in the oven and walk away.
  4. Just before dinnertime, throw frozen veggies in a pot to steam.
  5. Get out salad stuff.
  6. Ring the cow bell.

If you don’t have a cow bell, I guess you can still make this chicken.

Ringing the cow bell (to alert the men in the field that dinner was ready) was one of my favorite things to do at Grandma’s house. I’ve decided that I need one for my house. My men aren’t out in the field, but they are often wearing headphones. Perhaps they could hear a cow bell better than they hear my sweet (but wimpy) voice calling them for dinner?

Simple Sweet and Sour Baked Chicken Legs

Ingredients
  • 3 pounds chicken legs (other pieces work fine too but may require more baking time)
  • 2 Tablespoons honey
  • ¼ cup soy sauce
  • ½ cup ketchup
  • 3 cloves garlic
  • Sea salt and pepper to taste
Instructions
  1. Lay chicken legs in a 9x13 inch baking dish.
  2. Mix honey, soy sauce, ketchup, and garlic in a small saucepan. Heat briefly to melt honey and to make sure ingredients are well combined.
  3. Spread mixture over chicken legs.
  4. Cover and bake in a 350 degree oven for 45 minutes. Turn chicken over in the sauce, cover, and cook for 15 minutes more.

Be sure the soy sauce is gluten free if this is a need for you!

Simple Skillet Taco Pasta

Today I have for you: comfort food in a cast iron skillet. It’s simple, it’s quick, it’s delicious. It’s Simple Skillet Taco Pasta.

First, a word about Cast Iron Skillets. I highly recommend that we all have one (or two). Mine takes the place of what used to be Teflon in my kitchen. Cast iron is crazy healthier to cook with and when oiled or buttered well, it is delightfully non-stick. I use mine at least twice every day – for eggs, for meat, for dishes like this Skillet Taco Pasta. (This one is the Cast Iron Skillet I recommend.)

So back to this new, simple recipe. (More Simple Recipes here.)

How nice is it that this entire dish can be made in one big skillet? Obviously, you will get out salad makings and steam a vegetable to go with this. Obviously. But that will be easy and take a look at how easy this main dish recipe is:

Ingredients
  • 1 pound hamburger meat
  • Sea salt and pepper to taste
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • 16-ounces salsa
  • 1½ cups water
  • 8-ounces whole grain pasta, any shape (gluten free works great too!)
  • 8-ounces shredded cheddar or Colby jack cheese
Instructions
  1. In a large skillet, brown hamburger meat until no longer pink.
  2. Drain excess grease if necessary.
  3. Season meat with salt, pepper, chili powder, and garlic powder.
  4. Stir in salsa, water, and pasta. Bring to a boil.
  5. Turn down heat to simmer, cover and cook for about 10 minutes or until pasta is tender.
  6. Turn off heat, sprinkle cheese over the mixture in the skillet, and put the lid on for 2 minutes to melt the cheese.

This recipe has been a huge hit with my family. Leftovers (if there are any) taste even better because of all the yummy flavors settling in to the pasta and meat.

This meal is practically effortless. Clean-up is a piece of cake (though not literally, bummer for that). And if you need this dish to be gluten free, simply use your favorite GF pasta.

Simple Baked Salmon and Asparagus

Some of you live in the land of fresh fish. Me? I live in Nebraska.

Now, Nebraska is wonderful and beautiful and I love it here (winters notwithstanding). We have beautiful farm land and vast fields and wonderful fruit trees and orchards, but we are missing one thing. We don’t have an ocean. Not even a little one.

So fresh fish? I see (and smell it) it sometimes at the store when I go to the city. But I know it didn’t come from our local oceans and I’m not sure how far it had to swim to get here.

All of this has caused me to shy away from buying fish very often.

Fish though. It’s a great healthy food option. So I’m trying. Even if I buy it frozen, at least I’m buying it. After all – what do I know? I have nothing to compare it with. Frozen fish tastes okay to me. (I mean. I do thaw it and cook it.)

Seeing as this Baked Salmon and Asparagus recipe tastes amazing – even with my pitiful frozen salmon (from shhhh…Wal-mart) – I can only imagine that those of you with a fresh fish source will cry happy tears of joy when you bite into this because your version will taste even better than what I experience.

Someday I’m going to visit my auntie on the east coast and eat some actual fish. Someday.

How Simple is This Meal?

  1. Put asparagus in a dish.
  2. Put salmon on top.
  3. Drizzle it with lemon juice and olive oil.
  4. Toss on some onion slices.
  5. Bake.

I sat in my chair working while I walked my 14-year old through the process of making this. It took him 5 minutes. You guys – it takes longer than that to make a sandwich! I am so sold on this recipe I think I’ll make it have my 14-year old make it every single week.

Ingredients
  • 4-5 salmon fillets
  • 1 pound (give or take) fresh asparagus
  • 2 Tablespoons olive oil
  • 2 Tablespoons lemon juice
  • Sea salt and pepper to taste
  • 1 medium onion
Instructions
  1. Lay asparagus along the bottom of a 9x13 inch baking dish.
  2. Place salmon fillets over the asparagus.
  3. Drizzle olive oil and lemon juice over salmon and asparagus, then sprinkle with salt and pepper.
  4. Slice onion, then lay the slices over the salmon.
  5. Cover and bake in a 400 degree oven for 20 minutes.

Don’t like asparagus? (Why? Why don’t you like asparagus??!) You can use any veggie you do like. Or use a combination of veggies. Green beans, carrots, broccoli, cauliflower – anything should work deliciously.

Easy Salsa Chicken Salad Recipe (Less Than 5-Minutes of Work)

Hi! It’s me. The girl without an oven.

Actually, I have an oven. It’s sitting in my living room by my couch. See? There it is:

Oh man. If you’re one of my Facebook followers, you might have witnessed my first ever Facebook Live video where I showed off my new stove and made a bad joke about having gas. “Going Live” with you was super fun, so I’ll definitely be doing that more often. Please check it out and join us!

While I type, my favorite guy is going up and down the stairs to complete the transition from electric hook-up to gas. As soon as my pretty new dream oven is hooked up, I will be making a Peach Cobbler to reward Matt for all his hard work getting this set up for me! (To catch you up on the latest, on a whim we checked to see if Craigslist had anything for us. We didn’t have our hopes up. But would you believe, we found exactly one double oven and it is exactly what we want/need – except better?! And we got it for an amazing price!! So thankful!)

During the days I’ve been without an oven I’ve been using my crock pot, my electric skillet, my cast iron griddle, my blender, and my waffle iron quite a bit. As you can see, being oven-less has not been the end of my world.

This Easy Salsa Chicken Salad recipe is actually just a simple variation of my Crock Pot Chicken Tacos. I made this last Sunday when we needed to leave for church in ten minutes but I hadn’t figured out lunch for the day. I got out frozen chicken, ran it under some hot water, plopped it into my crock pot, dumped in some salsa, and left for church.

I said, “Wow, easiest meal ever.” and my boys said, “Mom you say that every day.”

It’s true. I only make food that’s easy. Multi-step recipes are not for me. And yet here we are still eating a healthy, real food diet. Don’t forget how to put the easiest, healthiest side dishes on the table too. Fruits and veggies are the best convenience foods there are!

Speaking of healthy convenience foods – big containers of Organic Mixed Greens are my favorite fast food to get at the grocery store! Instead of making my Salsa Chicken into a taco last Sunday, I dumped a big hand-full of mixed greens into a bowl, added my tasty chicken along with some tomatoes, black beans, and corn – and I had the best salad! I didn’t even need salad dressing. (Though you can take a look at the yummy options I have listed here.)

Ingredients
  • 2 pounds boneless chicken thighs or breasts
  • 2 cups salsa
  • Your choice of greens
  • Your choice of salad fixins (I like tomatoes, corn, and black beans for this salad)
Instructions
  1. Place fresh or frozen chicken in a crock pot.
  2. Dump salsa over the chicken.
  3. Cook on low for about 4 hours.
  4. Shred the chicken and serve with your favorite salad fixins.

Stir-and-Pour Chocolate Swirl Bread

Let us not miss the irony of the timing of this post. As you know, I currently have no oven. As great as this Stir-and-Pour Chocolate Swirl Bread recipe is, I cannot bake any right now. I made this last week before my oven died and I’m just now getting around to posting about it.

You though. You probably all have ovens. On behalf of my oven-less self, won’t you please bake this bread for your family? It would make me so happy. (My request is not completely selfish. It should also make you happy. Because chocolate. And homemade bread.)

Side note: I made some measurement adjustments and tried the regular Stir-and-Pour Bread recipe in my crock pot yesterday. I figured if it works to bake quick bread in a crock pot, I could try making a yeast bread. It turned out….not great. I’m determined though. I’m gonna keep tweaking and try again. In the meantime, feel free to make fun of this way too crusty on the outside, weirdly chewy in the middle attempt at crock pot bread…

But moving on to share how to bake this Stir-and-Pour Chocolate Swirl Bread in an actual oven. This is made in a similar way to the Stir-and-Pour Cinnamon Swirl Bread. Seeing as we don’t have to knead this bread (hallelujah!) it’s a bit hard to actually roll this out and make lovely swirls. I simply layered this bread. I put one-third of the dough into the pan, then spread on 1/2 of the chocolate layer. Then I spread in another third of the bread dough, and spread on the remaining half of the chocolate. Finish by spreading on the last of the bread dough. Bake. Slice. Eat. Appreciate the fact that you have an oven. Amen.

  • 4 cups whole wheat flour (I use freshly ground hard white wheat)
  • 2 teaspoons active rise yeast
  • 2 Tablespoons sucanat or sugar or honey
  • 1 teaspoon sea salt
  • 2 cups warm water
  • 3 Tablespoons honey
  • 2 Tablespoons unsweetened cocoa powder
  • 2 Tablespoons milk or water
Instructions
  1. Stir together flour, yeast, sucanat, salt, and water.
  2. Cover and allow it to sit for 30 minutes.
  3. In a small saucepan, cook and stir together the honey, cocoa, and water until smooth.
  4. Remove from heat.
  5. Pour ? of the mixture into a well-buttered loaf pan.
  6. Spread ½ of the chocolate mixture over the dough.
  7. Spread another ? of the dough over the chocolate layer.
  8. Sprinkle remaining ½ of the chocolate mixture over the dough.
  9. Spread remaining dough over the top.
  10. Bake in a 350° for 50-60 minutes or until evenly browned.
  11. Allow it to sit in the pan for 15 minutes.
  12. Remove the loaf to let it cool completely before slicing.

Whole Wheat Stir-and-Pour Cinnamon Swirl Bread

It would appear that there is a theme this week in the Stir-and-Pour Bread category. First, a Stir-and-Pour Pizza Crust, now a Stir and Pour Cinnamon Swirl Bread. Hey, I’m just trying to make your lives easier, one recipe at a time.

Or in this case I guess I would have to say that it’s the same recipe over and over made with a few variations. This in and of itself keeps life easy because after a while, you’ll have the basic recipe memorized and the variations will come naturally.

So let’s review.Yum

Get to know this basic and incredibly easy Stir-and-Pour Sandwich Bread recipe. That recipe has forever changed my bread-making life and I will never (probably) knead bread again. Why would I when I can just stir and pour – then take a nap?

With this basic recipe, we’ve learned that we can make Stir-and-Pour Rolls and Stir-and-Pour Pizza Crust. Today we learn that we can make Stir-and-Pour Cinnamon Swirl Bread. If you want, you can add raisins to make Cinnamon Raisin Bread. Or you can add dried cranberries to make Cinnamon Cranberry Bread. Or you can add dried apples to make Cinnamon Apple Bread. Or you can add nuts to make Cinnamon Nut Bread.

Or you can add all of the above to make Cinnamon Apple Raisin Cranberry Nut Bread.

How happy are all of us right now that this recipe offers so many wonderful possibilities? We are all so, so happy.

You might notice that since originally posting the basic recipe, I have ditched the optional cream and egg. They are optional, after all. I’ve found after making the recipe so many times that the egg and cream didn’t make much difference so I skip those steps which cuts out a good 32 seconds in bread making time. Every 32 seconds counts.

  • 3 Tablespoons sucanat or brown sugar mixed with 1 Tablespoon ground cinnamon

  1. Stir together flour, yeast, sucanat, salt, and water.
  2. Cover and allow it to sit for 30 minutes.
  3. Pour ⅓ of the mixture into a well-buttered loaf pan.
  4. Sprinkle ½ of the cinnamon/sugar mixture over the dough.
  5. Spread another ⅓ of the dough over the cinnamon/sugar layer.
  6. Sprinkle remaining ½ of the cinnamon/sugar mixture over the dough.
  7. Spread remaining dough over the top.
  8. Bake in a 350° for 50-60 minutes or until evenly browned.
  9. Allow it to sit in the pan for 15 minutes.
  10. Remove the loaf to let it cool completely before slicing.

As you can see, instead of actually swirling the cinnamon-sugar, we’re actually layering it. This method works great!

Stir-and-Pour Whole Wheat Pizza Crust

Remember the Whole Wheat Stir-and-Pour Bread recipe I shared a few months ago? Not too long after I shared that, a reader Shelby, and then others, emailed to let me know they’d been using that recipe to make pizza crust.

Bless you. Bless you all. Now our homemade pizza making lives are easier than ever! Mix the dough, let it sit, spread the dough on baking sheets, let it bake. Your hands won’t even get messy. 

It took a little tweaking for me to get this crust just right. The recipe is the same as the bread, but it took a few tries for me to learn how thick or thin to spread this dough. I’m not a big fan of a thick crust, but the beauty of this recipe is that you can make it as thin or thick as you like!

I spread the dough into two large pizzas and could probably spread it into three if I tried. This recipe goes a long way toward a big pizza meal!

Serves: 2 large pizzas
Ingredients
  • 4 cups whole wheat flour (I use freshly ground hard white wheat)
  • 2 teaspoons active rise yeast
  • 2 Tablespoons sucanat or sugar or honey
  • 1 teaspoon sea salt
  • 2 cups warm water
Instructions
  1. Stir all ingredients together.
  2. Cover and allow it to sit for 30 minutes.
  3. Spread dough on two *well-buttered* large pizza pans (three if you want a thinner crust)
  4. Bake in a 375° oven for 10 minutes.
  5. Pull partially baked crust out of the oven and top it however you like.
  6. Bake for 10-15 minutes more or until cheese has melted and becomes bubbly.

Whole Wheat Stir and Pour Pizza Crust

I found that spreading the dough onto my baking pans with a rubber spatula worked best. I always use baking stones (like these) for pizza because I think they turn out the best crust. I’ve not tried them on metal baking sheets, so you may need to adjust the baking time if you don’t use stoneware.

You can definitely make these crusts ahead of time and freeze them until you are ready to bake pizza. This means that the easiness just gets easier. Amen and amen.

Easy Crustless Pizza Pie

Without a doubt, this crustless pizza pie tastes as good as it looks. Better actually.

Malachi's Pizza Pie

This recipe is simple enough for my 11-year old to make by himself, and tasty enough that we all decided to add it to the menu frequently.

The best part is: You can make this with any pizza toppings you like. Make it full of veggies, full of meat, or a combination of both.

I will say that we made one with hamburger and one with pepperoni and all of us enjoyed the hamburger pizza pie best. The day we made these for pictures, I had no peppers or mushrooms in the house. Boo. We made them with sauce, meat, and cheese and served olives and tossed salad on the side.

Once the Cream Cheese Layer was in the oven, Malachi browned the hamburger meat – while standing on the AlienBoard. Is there any other way to do it? I promise you will not catch me multi-tasking in this way. But yay for the 11-year old!

  • 8 ounces cream cheese, softened
  • 2 eggs
  • ¼ teaspoon ground black pepper
  • ½ teaspoon garlic powder
  • ¼ cup grated parmesan cheese
  • 1 cup pizza sauce
  • 1½ cups shredded mozzarella, cheddar, or colby jack cheese
  • Any meat or veggie toppings you like

Homemade Real Food Tootsie Roll Candy – Perfect for Kids to Make!

You don’t have to make this real food tootsie roll recipe into the shape of Legos, but for real. They do taste better this way.

Malachi's Lego Fudge

When I decided to be intentional about helping Malachi learn to cook, I knew I’d need to start him with something simple, sweet, and fun. Hey, Malachi! Want to put your soccer ball away and come make a boring meat and vegetable casserole all by yourself?!! You don’t?!?

My Peanut Butter Honey Fudge recipe seemed like a fun and perfect choice…except for the fact that Malachi hates peanut butter. “Hey, Malachi! Want to come make something that will make you totally gag? You don’t?!?

So I decided to go ahead and use the fudge recipe but adapt it in two ways:

  1. Use almond butter instead of peanut butter.
  2. Cut down the honey to make it less sugary.

He was on board to “try making fudge,” then he remembered his Lego Shape Molds. “Can I make this into Legos, Mom?” Well, yeah!! What a great way to make this project even more perfect for him!

Malachi made some of the mixture into Lego Bricks, some into Lego Mini-Figures, then patted the rest into a small container which we cut into squares later. When all was said and done, we decided that these actually don’t taste like fudge at all. But they do taste like an amazing homemade tootsie roll!!!! To eat a tootsie roll made with real food and shaped like a Lego – that Malachi had made by himself?! Well, it was a kids-cooking success!

Serves: 24-30 pieces
Ingredients
  • 1 cup almond butter
  • ¼ cup honey
  • ½ cup chocolate chips
Instructions
  1. Measure all ingredients into a small pan.
  2. Melt and stir them over low heat until the chocolate chips have melted and the ingredients are well combined.
  3. Spread mixture into an 8x8 inch dish or press small amounts of the mixture into fun silicone molds.
  4. Place in the refrigerator to chill for about an hour before serving.

Use my recipe and instructions for making Homemade Almond Butter if you like. You can switch out the almond butter for Peanut Butter if you prefer.

This Tootsie Roll recipe is what launched Malachi into his new world of discovering that cooking isn’t so bad!

If you’re wanting to pull your kids into the kitchen to launch them into their own journey to learning cooking skills, I recommend that you:

  • Begin with a very easy recipe – like these Homemade Tootsie Rolls!
  • Pick something fun – like these Homemade Tootsie Rolls!
  • Choose something you know your child will like to eat.
  • Be relaxed. (You can do it!)
  • Get out (or have your child help you get out) the ingredients your child will need before you start the cooking process.
  • Be open to your child’s suggestions.
  • Don’t back down. Your kids NEED to learn how to cook.

Simple No-Bake Granola Bar Bites

No-Bake Granola Bites
This is a non-recipe recipe. This means that you can sub out ingredient for ingredient as you have preferences, allergies, and stock piles. Love flax seeds? Throw ’em in. Can’t have peanut butter? Use the nut butter you like. Prefer maple syrup? Use it instead of honey. Running low on raisins? Oh well. Don’t like chocolate chips?

Wait. Who doesn’t like chocolate chips??

Here’s how this non-recipe works:

  1. Plop 1/2 cup peanut butter (or whatever butter) and 1/4 cup honey (or maple syrup) into a bowl. I really do mean plop. Just eye-ball it. An exact 1/2 cup of peanut butter is not necessary here.
  2. Stir in 1 1/3 cups total of whatever dry ingredients you want. Oats, flax, sunflower seeds, sesame seeds, raisins, chocolate chips, anything else you like.
  3. Scoop the mixture into balls and enjoy.
  4. Store them in the refrigerator.

As you can see, these Granola Bites are easy to put together in just a few minutes. They are great to take on the road or pack in a lunch. Of course, if you just want to sit right down at your kitchen table and eat them, that’s okay too. You could even make them at night and eat them for breakfast the next morning.
