Raising Thoughtful, Hardworking, Servant-Hearted Kids

You know those kids who don’t think about others, who pout when they don’t get their way, and who sometimes are not even a little bit aware that the world does not revolve around them?

Yeah, those are my kids.

But kids nothin’. That’s me too (all 41 years of me) when I forget what I know to be true. Indeed, God made us in His image, then Satan swooped in and works to destroy all that is good. We are, our kids are, all of us are in a battle. Jesus already won the victory (shout hallelujah!) but Satan works all the harder to win anyway (ever heard the definition of crazy?).

You know those kids who speak politely when spoken to, who aren’t afraid to visit with the older folks at church, who run up ahead to get the door for the lady carrying a box, who happily join the leave-raking crew with the youth group, who sit by the one no one else seems to notice, who remember that their mama likes purple wild flowers and grabs a handful for her whenever possible?

Yeah, those are my kids.

Our boys don’t always get along (see first paragraph). They are not always excited to clean out the dishwasher (see first paragraph). They sometimes do things that make me wonder who in the world raised them and what in the world they could possibly be thinking when they did such a thing (Lord, help us).

But after lunch today, as Asa left for his college class he hollered back, “Thanks for lunch, Mom! It was really good.” After church last week, Malachi ran up and hugged one of our ministers and told him he loved him. While we picked apples recently, Justus grabbed the ladder and climbed up so his brothers and I could have the easier job. When the compost bucket overflowed this morning, spilling tomato guts all over the floor, Matt asked Elias to please clean it up before starting school – and he did it…without a complaint, even though he hates tomatoes and their guts.

Oh my dear fellow parents. Our jobs are not easy. In fact, let us, in unison, throw ourselves down onto the carpet as we sprawl out in full surrender. Raising kids is hard – harder than I ever thought, imagined, or read about in books. But we are not alone.  We have each other, and more importantly, we serve a God who loves our children like none other. God wants our kids’ hearts, and we can be sure that He is fighting for them. Isn’t that the best parenting news you’ve heard…ever? (Remember this truth the next time your child disobeys you for the 82nd time in one hour. Keep on it, Mama. God’s on your side.)

I have something for you.

See, my kids are mostly big now. Two out of four of them have man voices, and the third is working on his with an occasional crack. Our car insurance rate is growing in scary ways as more drivers of the teen boy variety are being added to our policy. This is where we are now. Car insurance rates aside, I love this place.

It’s easy for me to reflect back on when our boys were little and have regrets about what I wish I would have done differently and better. This is a wonderful way to waste time and be miserable, but do feel free to join me in this activity if you enjoy unproductive awfulness.

I have not parented perfectly, mostly because I’m clueless most of the time and because of that Satan swooping in thing I mentioned above. Welcome to being human, Laura (and everyone else). God is ever gracious and my kids are very forgiving. Here’s how I know this about my kids. While I’ve been busy crying over all my parenting imperfections, here are some recent conversations my boys have started around our dinner table:

  • “Remember those charts we used to have on the fridge? The ones with the stars or fruit? That was a good idea, Mom. I used to love those.”
  • “Oh I remember the girl you’re talking about. We took a toy to her on ‘Tt Week‘ when I was little. That was really fun.”
  • “I used to love it when we made Monkey Bread. I always wanted to be the one to punch the dough.”
  • “My favorite Blue’s Clues episode was the one where they made the banana bread, and I don’t even like bananas. I just like food. Good thing you like cooking with us, Mom.”

True story. And here I thought they’d surely be offering statements like:

  • “Mom, remember those times you yelled at me and it wasn’t even my fault?”
  • “Mom, remember how busy you were those times I wanted you to sit down and play a game with me?”
  • “Mom, remember how many times you’ve failed me and why I’m going to need counseling and be bitter toward you forever??!!?”

God is so much bigger than you and I!!! Not only that…our kids are amazing! Remember these truths as you parent your babes. You focus on loving them and being Christ-like. The rest will all fall into place. I wish I would have understood this earlier.

Apple Nachos ~ Quick and Easy!

Apple Nachos - Easy!

There aren’t even words to describe this treat. But not to worry. I can always come up with plenty of words (just ask my family full of men). Let me see if I can come up with something…

Simple, fast, deliciously sweet, a little bit tart, sticky, drippy, caramely, chocolaty, the perfect fall treat. There.

If you’re questioning whether or not caramely is a word or not, I declare that it definitely is. The dictionary just doesn’t know it yet.  Don’t trust everything you don’t read. (I don’t get paid to make sense.)  I figure, if chocolaty is a word, caramely should be too. Also, I like to say words that get my point across whether they are real or not. So don’t get all grammary and English languagey on me. After all, you really want to know how to make these Apple Nachos.

How to Make Apple NachosYum

Slice apples and lay them on a plate. If you like, you can sprinkle them with lemon juice to keep them from turning brown. Drizzle warm Homemade Caramel Sauce over the apple slices. Sprinkle mini chocolate chips over the warm caramel sauce. Serve immediately.

The result is a chocolaty, caramely plate of amazingness.

I think we can all agree that caramely should be a real adjective found in the dictionary, as should the word soccery. What? I used that word just yesterday to describe how our front closet almost made me pass out. I innocently opened the closet door to throw in a pair of shoes and was met with a blast of stink that is typical in our home during soccer season. Sweaty shin guards and wet soccer cleats, along with all the other gear – ah, the lovely scent of autumn. I threw in the shoes and quickly slammed the door closed proclaiming, “Whoa-oh, gag me. It smells completely soccery in there.” Why take time to say real words in full sentences like, “The inside of this closet appears to be thick with the aroma of unpleasant apparel associated with this particular sport season in which we are all participating.”

No.  It just smells soccery.  It’s as simple as that. When basketball season comes, the closet will become basketbally. That’s just the truth of it.

I’m suddenly very aware that this is a terrible thing to talk about when writing a food post. I apologize. Sometimes, I get a little too real lifey when I write, forgetting that good food and sweaty footware should never be discussed in the same conversation. How terribly nonproper-ish of me.

I now take your attention back to the wonderful Apple Nachos idea, whose caramely goodness brought us all here to this unlikely point of conversation. Make these Apple Nachos. They’ll make us all use the word caramely so much that the dictionary will have no choice but to include it.

Gratituesday: Women of Faith

No thanks. That’s what I told my friend Emily who, last October, was signing up ladies in our area for the Women of Faith conference that was to be in Lincoln, October of 2014.

Fall is our busiest season, I have no idea what is going on an entire year from now, I’m not really big on conferences like this…

I was full of reasons I couldn’t and shouldn’t go, and even though my reasons were legit, Emily still pushed me. “I think you need to go to this.” Okay, fine. Sign me up.

A few days before we headed out last Friday, I told another friend who was leery about going, “This better not be some fru-fru chick thing. I want meat, and I want it to be rich.” I hadn’t even looked at who the speakers were going to be, what was on the agenda, and I really had not had time to even think about it. I just planned to show up with an open heart, hoping maybe I could gain a nugget or two from what was shared.

Well. There we were, in an arena filled with 8,000 women. I laughed, I cried, I was pricked to the heart, I was fed, I was convicted, I worshipped, I found refreshment, and I’m not sure how many ways I can say this:  It was incredible.

Nichole Nordeman was there, Matthew West was there (one of the only men, bless him), and the five speakers were amazing. Nothing about the weekend was fru-fru chick stuff. All of it was scripture-filled, hard core Truth. Did I gain a nugget or two? Oh my. I don’t think I can even measure how much I gained from sitting in that arena for the weekend.

I praise God for always putting me exactly where I need to be, teaching me exactly what I need to learn, and helping me hear exactly what I need to know. We serve an amazing God.

I’ll be making these Pumpkin Pecan Pie Squares over the weekend. So good!

You know how I love cooking, love grocery shopping, love all things food? This weekend, I got a break from all of it, and it was…great! Yep, as much as I love cooking for people, I do appreciate a break sometimes. How about that? ;)

What a fabulous weekend I’ve had! I’ll tell you all about it on Gratituesday, but wow am I refreshed. Matt held down the fort (doing all the cooking with the boys’ help) while I went to a conference. Then today, we had a potluck after church, for which I had prepared food ahead of time. Tonight, the teen Bible study is at someone else’s house, so I’ll just show up and eat. Nice!

Tomorrow, I’ll be cooking again, and I look forward to it. I plan to make another big batch of applesauce this week, plus we’re having a houseful of company over the weekend. Super fun!

You Need Only to Be Still

The Israelites had finally escaped years of being enslaved and harshly treated by Pharaoh. How excited were they?! They weren’t.  Fear overwhelmed them as they turned and saw a great army of Egyptians ready to overtake them. Somehow, I guess they forgot how God had just delivered them in a mighty and miraculous way. Eh, I can relate. I forget easily too. (Forgive me, Lord!)

As the Israelites grumbled to Moses about how he had surely brought them out of Egypt just to die in the desert, I love the truth he shared with them:

Moses answered the people, “Do not be afraid. Stand firm and you will see the deliverance the Lord will bring you today. The Egyptians you see today you will never see again.  The Lord will fight for you; you need only to be still.” Exodus 14:13-14

This is so powerful! Let’s break it down:

  • Do not be afraid.
  • Stand firm.
  • You will see the deliverance the Lord will bring you today.
  • The Lord will fight for you. (!!!!)
  • You need only to be still.

Yes, yes, yes!

We’re in a battle, no doubt. But our job is easy.  We make it difficult by worrying, wallowing, and being afraid of the unknown. This helps….nothing.

Let’s be reminded of the beautiful truth that God is fighting for us. All we need to do is be still and trust. No fear, just faith. Thank you, Jesus!

Hot Chocolate Souffle ~ A Recipe That Just So Happens To Naturally Be Grain Free and Dairy Free

Elias, our 12 year old, is my cookbook buddy. Just like me, he enjoys looking through new recipes, getting food ideas, looking at the food pictures. He’s my right hand man when it comes to finding new recipe ideas to play with.

During our past few trips to the library, Elias and I have picked up different cookbooks to look through and get ideas from. This Hot Chocolate Soufflé is one he found recently. He liked the look of the dessert and figured we could adapt it with our healthier ingredients pretty easily. Obviously, he cares so much about using healthier ingredients, just like all normal 12 year old boys. Ha. Haha. Ha. Ha.  Well, at least he knows his mom cares, and he sort of understands why. Really, all he was concerned about was that this recipe looked like a yummy chocolate dessert. What else matters, right?

Here’s what’s fun about this Hot Chocolate Soufflé recipe:

  • It’s very easy to make
  • It only has 4 ingredients
  • It can be made for those who need to avoid gluten and/or dairy

Hot Chocolate SouffléYum

1/2 cup dark chocolate chips
1/3 cup sucanat powdered sugar
5 eggs, separated
pinch of sea salt

Separate eggs – whites and yolks – into two separate bowls. Stir sucanat powdered sugar into the egg yolks until smooth. In a small saucepan, melt the chocolate, stirring constantly and removing from heat immediately after chocolate has melted. Stir melted chocolate into egg yolks and sucanat mixture. Beat egg whites and sea salt until stiff peaks form. Fold chocolate mixture into the egg whites until barely mixed. Pour mixture into a 8×8 inch baking pan. Bake in a 400° oven for about 15 minutes or until done through and through.

I’m sharing two stories today since the recipes are quite similar. We’re going with a pudding theme today. Delicious comfort food in a bowl…or a mug.

I love your pudding recipes! They are so delicious and so much better than boxed instant pudding. I was never much a fan of pudding in general until I made your vanilla recipe. Great stuff! I attached a photo of our desert tonight: Layered Heavenly Homemakers vanilla and chocolate puddings with crushed oreos on top. The oreos aren’t exactly wholesome, real food so just look past that part! :)

Oreos? I don’t see any oreos. That dessert looks beautiful though! ;)  My boys saw this picture, and what do you think they’re asking for now? I may just have to give in and make this. :)

Now for the warm, drinkable version of this pudding recipe, here’s a story of how Meredith served Warm Vanilla Soother to her family:

Hi Laura !! After a 2 a.m. tummy trouble tea party with a tremendously talkative two year old and waking to a dark drizzly Seattle morning, we decided that the warm vanilla soother would be the perfect start to our day !! I enlisted my favorite 3 1/2 year old to do the stirring :) I decided to try adding a bittle lit of imitation rum extract to try to make it a warm eggnog soother. We couldn’t really taste it but it was fun to experiment :) It was a hit ! Some of us really REALLY got into it.

Lazy Dogs ~ The Make-Ahead Lunch Box

You might laugh at this recipe for several reasons. It is a little different from those I typically share.

First of all…hot dogs?

Yes, hot dogs. Remember how I’ve told you that I really love me a good, all beef hot dog? It’s true. I love sweet peppers, apples, strawberries, and asparagus better. But a good quality beef hot dog tastes really yummy to me. What can I say?

Second reason to laugh at this recipe:  This is not exactly the most inexpensive recipe I’ll ever suggest that you make. I didn’t find my hot dogs on sale, and I got the best quality dogs I could find at the store that don’t contain nitrites. So…cha-ching.  I used real cheese, not American cheese slices, which is obviously, more expensive because it’s real.

I did save by making my own whole wheat tortillas. But other than that? I’m not telling you how much each of these Lazy Dogs cost me. I’ll do it better next time by waiting for a sale on hot dogs. So if these Lazy Dogs are a little more on the pricey side, why am I sharing this recipe with you? Because these Lazy Dogs taste good. Because they are still less expensive than eating out. Because they are a fun, kid friendly (and apparently Laura friendly) food. And because you can make them ahead of time and put them in your lunch box.

I can’t take the credit for this great idea. When I posted my Taco Quesadilla recipe, “Busy Mom in AL” shared this:

Another of our “wraps” are some that we call Lazy Dogs! We boil some hot dogs to plump them up, roll them up with some cheese in a tortilla and heat them up in the oven until the cheese melts! Very good, even cold!

I loved the idea and made them for our soccer games and travel that very weekend. Once I had the tortillas made, the boys got in an assembly line to help put the Lazy Dogs together. Just like that, our to-go meal was ready.

Tortillas (I use homemade whole wheat tortillas)
Cheese Slices (I use Colby jack slices)
High Qualtity Beef or Turkey Hot Dogs (I found Oscar Meyer Angus Nitrite Free Dogs)

Boil the hot dogs just long enough for them to plump. ( <— what a weird sentence.)  Lay one slice of cheese on each tortilla, top with a hot dog, and roll it up. Bake in a 350° oven for about 10 minutes or until cheese has melted.

Make these ahead of time! Warm them in the oven, then serve.

Lazy Dogs ~ Perfect For Your Lunch Box

We found that we preferred these warm instead of cold. Still, if you want to pack them to-go, simply bake, wrap, and pack. Easy and fun!
