Gratituesday: A Switchfoot Surprise

We’ve been to a Newsboys concert, and we’ve been to see TobyMac. The boys loved them both. (As did the parents.)  Next on the “really want to see” list was Switchfoot. But their concerts were nowhere close to us, so there wasn’t really an opportunity. After a little bit of research, the boys sort of forgot about it for a while.

But Matt and I didn’t. We checked their website every few months, just to see if taking the boys would be a possibility sometime before Asa graduated. (He’s already a junior. It’s stuff like this that we have on our “do while all the kids are still home” list. Especially since our family really enjoys music.)

Persistence pays off. While there wasn’t anything super close by, and while of course the dates of the closest Switchfoot concert hit smack in the middle of soccer season – we knew we had to make it happen.

The hardest part was keeping the plans a secret from the boys. We decided not to tell them until last minute. It was perfect!

The night before we were planning to leave, we went up to the boys’ room for prayer time. I was carrying their four lunch bags (which each included some special treats for the road and a concert ticket). We handed them their bags, and told them that before bed they needed to make sandwiches and add them to their lunch bags for a trip we were taking tomorrow. We were met with looks of confusion from all four of them – just what we were going for. :)

They started looking through their bags, excited about the food. Then one by one, they figured out what was on the piece of paper stuck inside their bags. “SWITCHFOOT!???! Are you serious??!” Yep. Tomorrow.

For the record, it’s not a great idea to spring a huge surprise on your kids if you anticipate them going to sleep anytime soon. Oh well, they could sleep on the road.

It was a great and much needed getaway. Matt was even able to visit a high school along the way to do some soccer recruiting. It’s always good to make our trips multi-purpose, right? Plus we met some friends for dinner before the show.

The concert was awesome!

Check out Malachi in the pic below. He decided that nothing less than a tie and suit coat would be good enough for Switchfoot. Yep, he traveled in formal attire all day long. :)

In case you’re wondering, Elias really does put ketchup on his ketchup. The kid loves the stuff.

It was a perfect family outing and day off from (most) responsibilities. We told the boys to enjoy their bonus day off from school – and to remember this day later in the year when they are inside doing Geometry while public school has a snow day. ;)

The Work It Takes to Teach Your Kids to Cook: Is It Worth It?!

The goopy finger reaches into the dough you asked him not to touch. The flour spills. Everyone wants a turn at the same time. The cookbook gets slopped on. The tiny hand grabbing for the spoon knocks over the glass of water. The excitement escalates. An egg gets cracked onto the floor. The smiling kid with cinnamon and honey all over his hands, face, and arms runs out of the kitchen to smear himself all over the couch….

Ah, it’s the picture of parenting bliss. These are the delightful reasons we all love letting our kids help us in the kitchen. Mmm-hmmm. 

I remember it all very well. I knew the value of getting my kids into the kitchen with me to teach them the basics – plus they always loved helping me. But wow, usually it was so much easier to do it myself. After all, I didn’t need help spilling the buttermilk. I could do that very well all by myself.

The next time you have your kids helping you in the kitchen, and you begin to feel exasperated, wondering if it’s worth all the trouble and extra work – be encouraged by this walk down memory lane in the Coppinger Household:

These are my four boys, back in 2007. I don’t recommend always having all of your kids help you at once, but hey, when it’s Monkey Bread – everyone wants to help.

Oh look, here they are making Snowflake Quesadillas. The little cuties. It’s great to look back at pictures of the kids and forget that what was really happening when I snapped the shot was that the five year old had his pants on backwards, the two year old was in the background screaming, and the other quesadillas were on the stove burning.

Why the walk down memory lane? Those pictures were all taken six years ago. See that little one in the middle of the picture above? Here he is now, making French Toast for our family brunch with very little help from me:

My encouragement to you is this:  If you continue to let your kids into the kitchen with you, teaching them basic skills and letting them do what they are able to do – your hard work WILL pay off.  Now, all I have to do is hand my 11 year old a recipe and he can make it on his own. Now all I have to do is ask my 13 year old to brown hamburger meat for lunch, and he has it done in 15 minutes. Now all I have to do is ask my 8 year old to get the eggs ready for breakfast and he knows just what to do (except for the actual cooking part – we’re still working on that one). Now I can turn parts of our meal over to our 16 year old and he’ll take care of them completely.

My kids still have a lot to learn, but they’ve spent a lot of time helping me in the kitchen through the years, which has made learning to cook come more naturally to them.

Free Printable: Caramel Apple Dip Gift Tags

What I love about so many of these free printables is that while they are cute, fun, and functional – they also encourage us to love on and serve others. Since it’s fall, and typically we can get our hands on lots of apples – I’ve been thinking that it would be fun to make Homemade Caramel Sauce, put it on a jar with a gift tag, then put it into a basket of apples to give to someone. Wouldn’t that be a fun and cute gift?

And so, I gave the idea to one of my designers, and here is what she came up with:

I love it!

These cards can be printed on white cardstock, cut and folded over. You can write an encouraging note inside to the person you plan to deliver the basket to. The tags were created with both “Homemade Caramel Sauce” on the front, and with a blank front if you’d like to do something else with it.

Menu Plan for the Week

Well, I almost burned today’s lunch – twice. First, last night when I was making the Hearty Green Bean Casseroles (one for today’s lunch and one for the freezer) – I almost scorched it in the pot as it cooked. Then, I put one of them into the oven this morning while getting ready for church and forgot to turn the oven off before I left.

I blame it on the boys. I told them to remind me. :)

Thankfully, I remembered during Bible class (yes, I was concentrating on Nicodemus too) and ran home between class and worship to turn off the oven. I’m happy to report that the casserole still tasted great. Phew!

Guilt

I’ve tried several times to write about this, only to find my fingers paralyzed at the keyboard. I’ve experienced God at work enough during this past year to understand that the lack of words meant that God was saying, “No. Not yet.” And so I stepped away, waiting for God’s timing.

I’ve gone through rough times before. I’ve been through the refining fire and been taught tough lessons that have brought me closer to God. Those times were always accompanied by an obvious difficult situation – like the illness and death of my mom, or a major job transition for Matt that gave way to confusion and discouragement.

But this. This came at a time when all was well. Better than well, in my opinion. A thriving marriage, healthy children, growing businesses, a time of living our dreams. Life was good – and I asked God to show me His power and how He could use me best. After all, we should never get to a point that we feel we’ve arrived. To whom much is given, much is expected (Luke 12:48). I believe God expected more of me. I asked Him to show me what that meant. And He said, “I can’t until you give up your self.”

I didn’t really know that was what He was asking at first. All I knew was that life as I knew it began to change. I began to have more anxiety. I was having frequent migraine headaches. I began struggling with what has always come naturally for me, like inviting people into my home, giving of myself to others – wanting to be with people at all.

Which heaped guilt onto my anxiety. Didn’t God call us to love others? To serve? To sacrifice? To give of ourselves? What was the matter with me? What kind of Christian was I anyway?

I had found myself in the midst of spiritual battle, wrestling constantly with who I was, what God required of me, how I was supposed to love people, and in the midst of it all, how I was supposed to put dinner on the table.

(And here you thought that the Getting Ahead in the Kitchen eCourse and eBook were written as a normal part of my site. Truly, they were born out of my own need, solidifying everything I’ve always shared about preparing healthy food for days you don’t have time or energy to cook. In the midst of struggling emotionally and spiritually, keeping myself physically healthy became more important than ever.)

I’m getting a little bit ahead of myself. For now, here are some of the truths He is teaching me:

  • When we ask God to show us what He wants us to do, He will show us. When we listen, He will speak.
  • Spiritual battle is exhausting. Allowing ourselves to rest in the midst of it is wise and necessary. Taking care of our physical health is very important to our emotional health.
  • God is faithful to always provide what we need.
  • Sometimes we are called to serve; sometimes we are called to be served.
  • The Holy Spirit convicts us of our guilt when we are sinning, which leads us to repentance. But the nagging, worrisome, hopeless, unhealthy guilt that torments our thoughts does not come from the Father. It comes from listening to lies from the enemy.

Are you hanging on to unhealthy guilt that you need to let go of?  Join me in drop-kicking it in the name of Jesus. Trust me when I say that hanging on to guilt keeps us focused on self instead of our Savior.

One Hour Whole Wheat Yeast Rolls (No Kneading Required)

I got this recipe idea here. Then, I experimented and remade it with more wholesome ingredients.
Here are all of my Real Food Recipe Makeovers so far.

No Knead Rolls

You know all those excuses we use for not making homemade rolls very often? This recipe smacks them all down. Here, witness the smacking:

Homemade Roll Excuse #1 – It takes too long.

Not with this recipe. These take one hour – from the time you get out the bowl until the time you serve these fresh out of the oven. I didn’t believe it myself. But now I do. Because I proved it. {Smack.}

Homemade Roll Excuse #2 – It makes a huge mess.

Not these. You mix everything in one bowl, don’t have to knead the dough, grab the dough straight from the bowl to form rolls, then put them directly onto the pan. I shed not a single tear over the fact that I didn’t have to spend several minutes after kneading dough to scrape crusty flour paste off of my countertop.

Homemade Roll Excuse #3 – I’ll eat too many.

This recipe only makes 12-16 rolls, just enough for a meal or two. Plus, the rolls freeze well if you have leftovers.

Homemade Roll Excuse #4 – It’s hard to make homemade yeast breads.

Oh please. My eleven year old could make these. Measure, stir, wait, stir, wait, stir, wait, roll dough into balls, wait, bake, wait, eat. The hardest part is waiting (and trying to figure out if you already added the salt before the phone rang and distracted you).

Are you now ready to get out a bowl and have hot, fresh rolls ready to go with your dinner? Here’s how to make it happen:

One Hour Whole Wheat Yeast RollsYum

1 cup warm water
2 Tablespoons yeast (I use dry active)
1/4 cup honey
1/3 cup melted butter, coconut oil, or palm shortening (make sure it isn’t too hot)
1 teaspoon sea salt
1 egg
3 – 3 1/2 cups whole wheat flour (I use freshly ground hard white wheat)

1. In a large bowl, mix together water, yeast, and honey. Let the mixture sit for 15 minutes.
2. Add melted butter, salt, and egg.
3. Gradually stir in the flour. The dough will be sticky but manageable. Cover the bowl of dough with a towel and let it rest for 10 minutes.
4. With your hands, shape dough into 12-16 balls. Place the balls so that they don’t touch each other on a buttered cookie sheet. Cover and let rise for 20 minutes.
5. Bake rolls in a 375° oven for 10-15 minutes.
6. If you like (and I do recommend it), brush tops of rolls with a mixture of 4 Tablespoons of butter and 1 Tablespoon honey. Perfection.

Why am I featuring these during the week of the Getting Ahead Dinner Challenge? Can you make these ahead of time to go with your dinner? Sure, if you want. But here’s where I really think it comes in handy:  If I have a simple dinner already prepared and ready to cook, but I want a quick dinner roll to go with it, these rolls are perfect! Plus, since the rest of my dinner is already prepared, I actually now have time to surprise my family with fresh rolls too!

OR, what if you need some buns to go with Sloppy Joe Meat or Barbecue Chicken that you have prepared in your freezer? These rolls are perfect.

Everyone Make Your Own Salad

Want to know one of my latest tricks as I work to keep life simple (but still healthy) in the kitchen? While I’ve been working to have main dishes prepared ahead of time – when it comes time to serve the meal, we need a salad and/or veggie to go with it. No problem. Steaming veggies or tossing a salad together is super fast and easy.

But here’s what’s even faster:  Throw down all of the salad fixings and let everyone make their own salad.

Is it just me, or does it appear that someone really should fill those empty jars of salad dressing?

Here’s what this looks like at dinner time at our house:

1. I had prepared a casserole last week and put it in the freezer.
2. At 4pm, I put the frozen casserole into the oven, turned the oven on to 250°, and let the casserole thaw/bake for two hours.
3. I wipe the sweat off my brow after that laborious twelve seconds of hard work.
4. At 5:50, I realize the casserole will soon be ready, so I decide to get out salad stuff.
5. I ask one boy to wash lettuce, another to wash tomatoes, another to get out salad dressing.
6. The casserole is taken out of the oven, the salad fixings are out, and everyone comes to the kitchen to fix a plate.
7. Each of us takes a scoop of casserole, then grabs some lettuce leaves. We all tear our lettuce onto our plates, grab tomatoes, choose our dressing, then sit down to eat together.

Even very young children can tear their own lettuce for a salad. And what kid doesn’t love being given permission to tear, rip, break, or shred their food? It’s like a salad eating privilege.

It’s not like I’ve tried to hide anything. I’m pretty sure you all know I’m as real as they come.

I post about the times I burn dinner, shoot ketchup into the living room, overflow the bathtub, don’t get around to sweeping my kitchen floor for two and a half weeks, and yell at my kids for not going to the van when I’ve asked them three or seven times. I’ve made it clear that I haven’t a clue how to fix my hair, how to decorate my living room walls, or how to layer shirts fashionably (unless we’re talking about putting a t-shirt under a hoodie, because I have mastered that one). My front closet smells worse than a boy’s locker room and looks like a used sporting goods store threw up inside.

But being real and being raw are two different things. Being real means that I admit that I’m not perfect and that I make mistakes. Being raw means that I get on my knees, expose my weaknesses, and recognize my absolute need for a Savior.

I didn’t know how much I needed to work on “self” until slowly (or quickly, depending on how it has felt on any given day), God began breaking down walls of pride, peeling away layers of selfish sin, and teaching me how to be more fully His.

I remember asking Him to help me understand His power at work in my life. I naively assumed that meant He would reveal a couple of scriptures to me, and give me some “wow God you’re so neat and powerful” moments. Right? Because God’s lessons do usually come to us come in fluffy, bright packages that are bursting with bubbles, confetti, and goose feathers. Right. 

In many ways, the past year has been very difficult for me. While I’ve mostly been able to carry on with life as normal – caring for my family, writing and sharing with you here on this site, and participating in various ministries – I’ve also been in the midst of some hard core spiritual and emotional battles. I am weary. I am worn. But because of Jesus, I am victorious.

There is great beauty in becoming broken for Christ. His healing and fulfillment can only come when we absolutely surrender ourselves and become open to what He wants us to learn. As He prunes away at the pieces of my heart and life that are unfruitful, I find myself relearning what it is to be a godly wife, mother, friend, and servant. How to love as Christ loves. How to walk my days with the Spirit as a guide.

And through it all, I find that my areas of weakness truly are glorious, because that is where Jesus can shine through me best. That is where pride dissolves and humility reigns.

While God’s lessons aren’t without pain, He has provided me a soft place to fall. I would not trade what I am experiencing to become my old self again. He is faithful to walk this journey with me and to provide who and what I need during every painful and victorious moment.

Today, I’m thankful to be broken.  To become broken is the only way to become whole.
