Back-to-School Breakfast Ideas

Here we are again, starting another school year. Need some back-to-school breakfast ideas?

Whether you homeschool or send your kids off for the day, they need a high protein breakfast so that they can focus and learn. But most of us don’t have time in the morning for cooking meat or flipping pancakes. For that matter, we barely have time to sit down in the mornings!

Some high protein, QUICK breakfast ideas:

Here are a few of the menu items I’ve give my kids before sending them off. Keep in mind they only have about 10-minutes to eat before leaving to meet the bus (because I let them sleep as late as possible). So the portions are small and easy to eat (and I don’t allow any chattering between bites because oh my goodness that…sloooowwwwws…themmmm…dowwwwwnnnn).

  • Fruit. Any Fruit. Then I give them something like:
  • Scrambled Cheesy Eggs
  • Apple Slices and Peanut Butter (this gives them both their fruit and their protein!)
  • Apple Slices and Cheese
  • Banana with Peanut Butter
  • Sausage Patties or Links
  • Peanut Butter Toast
  • Bagel with Cream Cheese
  • Fried Slices of Ham
  • Ham on Toast
  • Sausage Sandwich
  • Egg Sandwich
  • Summer Sausage and Cheese
  • Oatmeal with peanut butter and cinnamon

To save me from having to think too hard, I have created a basic breakdown of what I now make or serve each weekday:

The Easiest School Morning Breakfasts

I can barely get my kids dressed on school mornings. So breakfast? Good luck. School morning breakfasts have to be the easiest of the easy.

Last year I shared a basic plan for how to make breakfasts simple on school mornings (no matter if your kids school at home or away). I’m reworking these ideas and reposting them because these ideas come in so handy!

Basically, to save me from having to think too hard, I have created a basic breakdown of what I now make or serve each weekday:

Monday – Muffins
Tuesday  – Toast
Wednesday – Oatmeal
Thursday – Eggs
Friday – Granola or Cereal
WHEN ALL ELSE FAILS – Protein Bars (because some days there’s no time to stop and eat so I have to send the kids out the door with one of these)

With this skeleton plan, I can now make fun adaptations each weekday to keep our menu fresh and fun! (I save pancakes or waffles or other special breakfast ideas for Saturdays.) :) And now I will give you more specifics about how this works for us…

The Easiest School Morning Breakfasts

Monday – Muffins

I can choose from these 40 recipes so that Mondays are never boring. I shall call this “Muffin Monday” because cuteness in the kitchen is underrated.

Tuesday – Toast

Let’s hear it for “Toast Tuesday.” Though now I have to admit, my cute names for days of the week have now run out. Anyway though, we can make this Stir and Pour Bread (or buy bread from the store, can I get an amen?) and then top it however we like. Peanut butter and honey is a favorite for most of us.

Wednesday – Oatmeal

I try to keep this Homemade Instant Oatmeal on hand, but I often now splurge and buy these too. Either way, this makes for a fast breakfast!

Thursday – Eggs

We mostly prefer scrambled cheesy eggs, but occasionally we’ll fry them. I love how easy eggs are to make. And all my kids love them and eat them so well.

Friday – Granola or Cereal

We like different kinds of homemade granola like:

  • Dark Chocolate Almond Granola
  • Easy Basic Homemade Granola
  • Granola ~ 5-Minute Stop-Top Version
  • Peanut Butter Honey Granola

Or, I can make these Homemade Chewy Granola Bars for a fun change of pace. Or I buy granola or cereal at Costco to keep on hand for quick breakfasts. If I have these Giant Breakfast Cookies in the freezer, even better!

Always serve fruit

Fruit at breakfast is a given at our house. So with all of the above day-of-the-week breakfast ideas, everyone can choose what fruit they like best. I try to keep a variety on hand, depending on what is in season. Our favorites for breakfast are:

  • Applesauce
  • Blueberries
  • Apples
  • Oranges/Clementines
  • Bananas
  • Pears
  • Strawberries

How to Make Perfect French Toast

Want to know the secret ingredient that makes Perfect French Toast? How about two secret ingredients? Mhmm, these ingredients are about to become not-so-secret…

I realize that these tricks may be what you’ve been doing all along to make Perfect French Toast. Still, it’s fun to share, just in case. Nothing like taking a delicious and easy breakfast, brunch, or dinner and making it just that much better!

Here are the two tricks I use to take our French toast up a notch:

1. Add Vanilla Extract to the egg mixture.

2. Use Cinnamon Swirl Bread.

The vanilla adds a wonderful flavor to your French Toast. And using Cinnamon Swirl Bread instead of “regular ol’ bread” is a huge game-changer for the better. THIS MAKES FRENCH TOAST SO GOOD!!

I used to always make Cinnamon Swirl Bread at home. I started using:

But now that we’ve added little ones to our home again and I find myself juggling my bigs, my littles, my marriage, my home, my work, court dates, case worker visits/meetings, appointments, my own health – well…

I happily and un-guiltily buy the cinnamon swirl bread.

Does it need to be said? Ok. Let’s review:

God is bigger than store-bought bread.

Amen.

Hallelujah.

However you would like to make your Perfect French Toast, with whatever bread works best for you, go for it and enjoy! But oh making it with Cinnamon Swirl Bread does make it so much better!

How to Make Perfect French Toast

Ingredients
  • 10 slices of Cinnamon Swirl Bread
  • 3 eggs
  • 3 Tablespoons cream
  • 1 teaspoon vanilla extract
  • Butter for cooking French Toast
  • Fruit and Real Maple Syrup
Instructions
  1. In a bowl, whisk together eggs, cream, and vanilla extract.
  2. Heat butter in a skillet until melted.
  3. Dip bread into the egg mixture, coating each slice entirely.
  4. Fry each coated slice of bread in the buttered skillet until both sides are golden brown.
  5. Serve with real maple syrup and fruit

What about making homemade vanilla? Goodness I would but is the price of vanilla beans ever going to go back down?? C’mon beans. We need you. And we need you to cost less than our sons’ college tuition.

Easy Homemade Poptarts for the Freezer

Just like our Giant Breakfast Cookies, it would seem that a fresh, hot homemade poptart beats a pre-baked, room temp poptart any day.

Let’s not even talk about the kind that come out of a box. For all of the reasons, let’s just not talk about it.

Now regarding Homemade Poptarts (that are very easy to make, by the way): My family could eat the entire batch in one meal. I prefer to make them stretch though, and I prefer us to eat more balanced instead of filling up on carbs in the morning.

That’s why, just like the Giant Breakfast Cookies, I’ve been making these poptarts and freezing them before I bake them. On a day I declare to be a Poptart Morning, I pull a few out and bake enough for each person to have a couple with our eggs and fruit. They taste amazingly better this way and help my poptart making efforts stretch into several meals.

Can I tell you how delicious a warm, fresh poptart tastes with a cup of coffee? It’s one of my favorite treats (and it’s naturally very low in sugar!).

I encourage you to double this recipe so you can make a couple bags full of frozen, unbaked poptarts for quick breakfasts and snacks!

Easy Homemade Poptarts for the FreezerYum

Easy Homemade Poptarts for the Freezer

Ingredients
  • 3½ cups whole wheat flour
  • 1 teaspoon sea salt
  • 1 cup melted butter
  • 1 cup plain yogurt
  • About 5 ounces of 100% fruit jelly or jam - any flavor you like!
Instructions
  1. Begin by mixing the flour, salt, butter, and yogurt.
  2. Knead the dough just a little bit to make it nice and workable.
  3. Roll out the dough on a large, well floured surface.
  4. Use a knife to cut the dough into the desired poptart size you would like.
  5. Place about a ½ teaspoon of jelly on ½ of the dough rectangles (squares?).
  6. Spread the jelly around, leaving the edges free.
  7. Find a second square or rectangle or thingamajigger that matches closely with each jellied one.
  8. Place it on top and use a fork to seal the edges.
  9. Lay each poptart in a single layer on a baking sheet.
  10. Bake in a 350° oven for about 25 minutes or until the crust is lightly browned.
  11. TO FREEZE UNBAKED:
  12. Create poptarts as directed, but instead of baking right away, freeze them on a baking sheet for about two hours. Once frozen, transfer them to a freezer bag.
  13. At baking time, pull desired number of frozen, unbaked poptarts out of freezer and bake as directed, allowing for a few additional minutes of baking time.

Back to School Breakfast: How to Set Up a Yogurt Parfait Bar

You know I like setting up different varieties of “Build Your Own” bars. This cuts down on my work and let’s everyone build their dish to their liking. Other ideas I’ve shared here:

Today’s idea is quite simple, and great for a busy school morning. In fact, this would even work as a “breakfast on the go” option by simply building your yogurt parfait in a plastic cup or glass jar and eating it on the way out the door.

Great options to set out for a Build Your Own Yogurt Parfait Bar

  • Containers of your family’s favorite yogurt
  • Stevia, maple syrup, or honey if you haven’t already sweetened the yogurt
  • A variety of fresh berries or peaches (make the process faster in the morning by cutting the fruit ahead of time)
  • Dried fruit options
  • Coconut Flakes
  • Cinnamon Sugar Pecans or other nuts or seeds your family enjoys
  • Dark Chocolate Almond Granola, Regular Granola, or Grape Nuts Cereal

Want to save even more time? Make this 5-Minute Stop-Top Granola!

Your options are only limited by your imagination. And the ways to save money are great. For instance:

  • Typically it is less expensive to purchase larger tubs of yogurt instead of individual cups.
  • If you buy whole milk plain yogurt, you can add any sweetener you like and make it for your sweetness preference.
  • You can make Homemade Yogurt.
  • Offer berries and other fruit that is in season and thus less expensive.
  • Make your own granola as a stir-in option using one of the recipes above. (Pre-made, boxed granola can be very expensive!)

Strawberry Cream Muffin Recipe (And My Best Muffin-Making Tip)

You might remember when I posted this recipe three years ago. Now that it is strawberry season again and I am a tiny bit strawberry focused (or sure, we can call it obsessed if you prefer) – I decided to re-post this for you now.

This Strawberry Cream Muffin is so delicious, you’ll feel like you’re eating dessert for breakfast or snack. Take note that the sour cream in these muffins makes all the difference in how moist and delicious these are. Can you use milk or coconut milk (to make them dairy free) instead? Yes. But they will likely turn out just a little bit dry. Just eat them fresh out of the oven and you’re golden.

Ingredients
  • 1¾ cups whole wheat flour (I prefer freshly ground soft white wheat in these)
  • ½ cup sucanat or brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon sea salt
  • ⅓ cup coconut oil or butter, melted
  • 1 egg
  • 1 cup sour cream
  • 1 cup chopped fresh or frozen strawberries
Instructions
  1. Stir together flour, sucanat, baking powder, and salt.
  2. Add oil, egg, and sour cream, mixing well.
  3. Fold in strawberries.
  4. Scoop batter into 12 well greased or paper-lined muffin cups.
  5. Bake in a 375° oven for 18-20 minutes or until lightly browned.

Then all you have to do is grab your frozen muffin batter cups out of the freezer, put them into muffin cups the night before you want to bake the muffins, then stumble into the kitchen in the morning and put them into the oven!

Baked Apple Pancake Recipe

We all used to think that a pancake was just a pancake. But that made us all go to sleep with boredom and we all screamed for something different. Actually, none of us did that. Normal pancakes are the bomb-diggity and change is hard. Flipping regular round pancakes is nice, easy, and who doesn’t love a fresh pancake right off the griddle?

But now we can also make Easy Pancake Muffins. They’re fun and easy too. Our people love them.

To go along with our newly discovered pancake experimentational adventures (seriously, it’s just a recipe idea but here I am trying to pull out big words to make it sound impressive) – we can now add this Baked Apple Pancake to the mix.

This delicious idea came from “Busy Mom in AL” when I shared about making Easy Pancake Muffins. This long-time reader said,

“Put apples and cinnamon in the bottom of a 9×13 inch pan and then pour the pancake batter on top. Bake at 350 degrees for 20-30 minutes. Serve in squares with tons of maple syrup! :) It is called Apple Pancake Bake.”

Knowing my family would love it, a few mornings later I gave this idea a try. It earned the “take pictures and blog about it” award, so here you go!

Baked Apple Pancake Recipe

Ingredients
  • 5-6 apples, any variety
  • 1-2 Tablespoons ground cinnamon
  • 2 cups whole wheat flour (I use freshly ground hard or soft white wheat)
  • 1 teaspoon baking powder
  • ½ teaspoon sea salt
  • 2 eggs
  • 1½ cups milk
  • ¼ cup melted butter
Instructions
  1. Wash and slice apples, laying them evenly on the bottom of a 9x13 inch baking dish.
  2. Sprinkle liberally with cinnamon.
  3. Mix remaining ingredients well, then pour the mixture over the apples.
  4. Bake in a 350° oven for 20-30 minutes or until a toothpick inserted in the middle comes out clean. Slice and serve with real maple syrup.

Busy Morning Breakfasts That Can Be Made Ahead of Time

I am so messed up on breakfasts right now. Our second son started taking a college class on MWF and he has to be on campus at 8:00. Color me late to this “get your kids out the door for school on time” game, but well, that’s exactly what I am. We work from home and we’ve home-schooled forever, so getting out the door to church with combed hair on Sundays has been our only morning schedule struggle. On school days, we usually eat while beginning our Bible time and school time in our jammies a few minutes after we wake the kids. Now, if you can possibly imagine, I must actually be dressed and have breakfast on the table by 7:20.

Yes, I’m sure most of you can possibly imagine, and many of you are thinking, “Really, girl? 7:20 am is practically mid-afternoon at our house.” God bless all of you early morning head-out-the-door-to-work-and-school friends. I have some recipes to share with you. We shall all eat well together…at whatever time each of us considers to be early.

Busy Morning Breakfasts That Can Be Made Ahead of Time

My goal this week was to prep breakfast foods and put them into the freezer so that I’ll be perfectly organized and never have to think again. Scratch that. My goal this week is simply to prep some breakfast foods and put them in the freezer. I’ll never be perfectly organized and in typical mom-life fashion, I found myself having to think straight and answer difficult questions like “are my soccer socks clean?” just a few minutes ago.

Here are my favorite breakfast foods to put into the freezer. They save time, money, and brain – my favorite things to save.

1. Hashbrowns and Hashbrown Patties

I’ll be baking a few pounds of potatoes this week to shred and put into the freezer. Fry up some eggs with these, serve with fruit – done. Everyone loves these and thinks you’re wonderful when you make these. It is fun when everyone thinks you’re wonderful.

2. Muffin Batter

You knew I would say this one. I can’t help it. Making and freezing muffin batter saves so much time. Not to mention dirty dishes. Deliver me from dirty dishes.

3. Cooked Turkey Sausage and Prepared Biscuits

I can make biscuits and gravy sooooo fast when I do this. My family is always amazed. Let’s just let them keep thinking that I am incredible to pull this off. Add the above mentioned Hashbrowns to this meal and you can picture my kids breaking into a lively Mom is Our Favorite Person in the Whole World dance (not really).

4. Oatmeal Cups

You wouldn’t think that this would save time, but it truly does. At least it saves brain. That’s worth a whole lot.

Find our favorite quick bread recipes here. I usually double or triple a batch. If I allow them to cool completely, then wrap them well before freezing them, quick breads thaw and serve well. It is so very nice to pull a prepared loaf or two out of the freezer to go with breakfast in the morning.

If you freeze nothing else to save yourself time, brain, and money (while also eating healthy, because you are just that awesome) – make and freeze some of these breakfast foods. It will make your morning routine so much easier. Pick the recipe that looks the easiest to you – then go for it!

Frozen Oatmeal Cups – for a Quick, Hearty Breakfast

Making oatmeal has got to be the most difficult thing to do ever. It’s definitely the most tedious breakfast food there is – requiring time, energy, thought, and absolute sweat-dripping labor over a stove for five entire minutes (because oatmeal won’t cook properly unless someone is staring at it in expectation). Life is hard. We should probably settle for pop-tarts. It’s the only way.

Don’t worry, friends. I’ve found a way to avoid performing this grueling task (and eating pop-tarts) in the mornings – and I’m here to share. I think we can all agree that the more we can avoid the challenge of putting water in a pot to boil, the better. Gather ’round, everyone. This tip will shave at least 1.4 minutes off your morning meal prep, so listen closely. Every 1.4 minutes counts.

Here’s what you need to do: You need to cook up a double or triple batch of oatmeal (you can do it, we’re all in this together, persevere, I believe in you). Once the oatmeal is done, go ahead and feed some to your family. Here’s where it gets good: After your meal, freeze the leftovers in muffin cups, topped with whatever delicious toppings your family likes. Like this:

The result is easy-to-store cups of frozen oatmeal which are ready to pull out and re-heat at any given time – preferably on those mornings. You know the ones I’m talking about.

But seriously, in all seriousness, because I am always serious – this really is a lovely way to help your children help themselves on a busy morning, and it really does save a tiny bit of time because the cooking of the oatmeal has already been done.

Now, if you get a little bit burned out on oatmeal and you’re still struggling with the urge to buy a pre-made breakfast in a box that promises to save you time – I suggest you consider the possibility of frying an egg. If I can do it, you can do it. There are also apples – a brand new innovative idea for breakfast that I’ve heard are great to grab-and-go. Who knew?

Frozen Oatmeal Cups - a quick, hearty breakfast

The Specifics of Making Approximately 24 Frozen Oatmeal Cups

  1. Boil 6 cups of water.
  2. Stir in 3 cups of whole oats.
  3. Turn the heat down to simmer the oats/water for about 5 minutes, stirring occasionally.
  4. Remove from heat once the water has been absorbed and the oats are soft.
  5. Stir in 1-3 Tablespoons of butter and 1-4 Tablespoons of sweetener like honey or sucanat as desired.
  6. Scoop prepared oatmeal into muffin tins (no need to grease the tins).
  7. Top oatmeal cups with any variety of fruit, nuts, chocolate chips, etc.
  8. Place filled muffin pans in the freezer for 2-3 hours or until oatmeal is frozen solid.
  9. Pull frozen oatmeal out of the freezer and allow it to sit on the counter-top for about 10 minutes.
  10. Use a fork or spoon to gently pop the frozen oatmeal cups out of the tins.
  11. Place the frozen cups into a labeled freezer bag. Store in the freezer for up to three months.
  12. Re-heat by placing frozen oatmeal cup(s) in a small saucepan on medium heat until thawed and warm.

I love this idea (for so many reasons, as explained earlier) – but also because this allows for a variety of sizes of appetites. Little ones may just need one cup to fill them, whereas my sons would likely each pull out 2-4 to rewarm.

So now, go therefore and make yourself some frozen oatmeal cups. Your breakfast – and really, your entire life – is obviously going to be changed for the better because of this tip. Enjoy your extra 1.4 minutes of morning time. You are very, very welcome.

What do you think of this idea? I like the brainlessness of it. I like that the cooking is done so all that needs to be done is rewarm and serve. I love that my kids can do this themselves. Not every freezer meal is about saving time – sometimes it’s just about the comfort of having prepped food on hand for ease!
