Menu Plan for the Week

On Thursday of last week, it was 68 degrees. The next day it snowed. This…is springtime in Nebraska. I am happy to report though that within the last week I have seen three or even four blades of green grass. And also, I heard something strange the other day and it turned out to be the beautiful chirping of a bird. I think it is so nice that the birds are kind enough to fly back and join us in the springtime. 

Our family is in the midst of lots of spring activities. We’re busy getting ready for LTC (Leadership Training for Christ), a convention for 3rd graders up through 12th graders. Asa and Justus have been studying hard for the Bible bowl, plus practicing several times a week for dramas and puppet shows and choirs. Soccer season has also started for some of our boys and will start for ALL of them in two weeks. Did I mention all the boys are in our home school musical in April? 

I’m letting you know about all this because if I forget to complete any sentences around here…it’s because my brain might be on the fried side (more than normal).

High Five Recipes: Layered Cheesy Salsa Enchiladas

Layered Cheesy Salsa Enchiladas are about to become one of your family’s favorite recipes!

This recipe can not get any easier! Typically, I have all the ingredients on hand for these Layered Cheesy Salsa Enchiladas. So that means I can throw this together at the last minute whenever we need it. Everyone in my family loves this, which is a huge score!

We prefer flour tortillas, but these enchiladas can also be made with corn tortillas if you have a gluten intolerance or if you just like corn tortillas better.

Layered Cheesy Salsa Enchiladas

High Five Recipes: Layered Cheesy Salsa Enchiladas

Serves: 4-6
Ingredients
  • 1 pound ground beef
  • sea salt to taste
  • 2 cups salsa
  • 2 cups shredded cheddar cheese, divided (I use raw white cheddar)
  • 8 whole wheat flour tortillas (or corn tortillas)
Instructions
  1. Brown meat. Stir in salsa and ½ cup of cheese.
  2. Lay 4 tortillas in the bottom of a 9x13 inch baking dish.
  3. Spread half of meat mixture over tortillas.
  4. Layer again with the 4 remaining tortillas.
  5. Spread remaining meat mixture over tortillas.
  6. Top with 1½ cups cheese.
  7. Bake uncovered at 350° for 20-25 minutes.

Cheesy Salsa Enchiladas
This dish freezes easily too, making it a great make ahead meal!

Freezing Instructions:  Cover dish well and freeze. Thaw and bake as directed above. Or, if the enchiladas are frozen, bake in a 250° oven for one hour, then at 350° for another 30 minutes or until cheese is bubbly.

Serve these Cheesy Salsa Enchiladas with a tossed salad and fresh fruit. This meal is as simple as can be!

Our Healthy Eating Journey, Part 7

I wish I could tell all of you about the “magic bullet” that cured Malachi of his eczema. There really is no such thing and it’s been a huge struggle for us throughout this journey. I’ll tell you more about some of the things we’ve tried and what’s (mostly) worked tomorrow in a separate post, but I WILL tell you here and now that we have NO REGRETS that we pulled him off the steroids and cortisone creams. Especially now that we’re on the better end of his eczema battle, we can testify that you do NOT have to resort to drugs to help your child’s eczema…no matter how severe a case it is. 

Even though we were just at the beginning of our healthy eating journey, we had learned enough about food, drugs and overall health to know that eczema is NOT a skin issue. Skin is an organ. When something is going wrong inside our bodies, toxins have to go somewhere. In Malachi’s case…they appeared to be “coming out” through his skin. (This was explained to us both by our chiropractor and by another homeopathic doctor that we took Malachi to.)  If we were to just treat the rash as a skin condition, those toxins inside of him would be suppressed in his little body…and then what? It was making him miserable, but at least his body was trying to rid itself of toxins. 

Ultimately, this meant that there was no quick fix for Malachi. We were going to have to get to the root of his problem and figure out what was going on inside of him before the rash would go away. It was going to be a process.

We faced incredible opposition to our choices and took all kinds of criticism because “we were allowing our child to suffer” by not giving him the drugs. People couldn’t believe we weren’t “giving him anything for that awful rash”. From doctors to strangers, we felt like we were being looked down upon for “letting” our child look and feel like he did. 

It was a very painful time. I wanted to scream at people, “Do you think we LIKE watching our baby suffer? Do you think we don’t KNOW how bad he feels? Do you think we’re just IGNORING his pain? We’re NOT!!!!! We are SO not!! We hate this!!!! We HATE it! Don’t make this worse for us!!!!!!!!!!!!”

I know people didn’t mean to make it worse…I was just weary.

And so, we began learning about food and nourishment. We began learning more about how our bodies work. We began learning more about toxic cleaners and detergents. 

And we began changing almost everything about how we ate, cleaned, stored our food, cooked our food. So many changes.  Because of Malachi, we felt quite an urgency to make a lot of changes all at once, but wow was that very overwhelming! 

I’ll write a separate post tomorrow to explain several of the ideas that have helped Malachi because if you have a little one suffering from eczema…you don’t want to wait on me to get through with this series to hear about it!

But this post is already getting long and I have yet to tell you about my hospital stay because of asthma complications and how much I learned about myself and about true health and oh yeah…many of you are waiting to hear about how I finally gave up drinking Pepsi…

I’m posting my menu plan a little bit early this week because I’ve got bunches of posts to get up in the next few days. Sorry that I’ve been bombarding you all weekend!

Azure Standard: How Does it Work?

Here’s a little Q & A for you to let you know if it’s possible for you to order from my favorite food co-op, Azure Standard. You can see some samples of my monthly grocery orders here and here. Check out these jars of golden honey…YUM!

What is Azure Standard?

Azure Standard is a food delivery service specializing in offering top notch, organic and natural products. These folks provide my family with amazing organic produce and groceries each month. I am constanly blown away by their prices, especially for organic produce. Usually their organic fruits and vegetables are LESS EXPENSIVE than the non-organic produce I can find at my local grocery stores.  They are SUPER easy to work with and incredibly nice. Read all about Azure Standard and what they stand for here.  Are they awesome or what?

Who does Azure Standard deliver to?

Azure Standard has truck routes delivering to Alaska, Arizona, Arkansas, California, Colorado, Hawaii, Idaho, Iowa, Kansas, Minnesota, Missouri, Montana, Nebraska, Nevada, North Dakota, Oklahoma, Oregon, South Dakota, Utah, Washington and Wyoming! Plus, they are continuing to expand as much as they are able. If you’re from North Texas, read here about how you can encourage a drop point in the DFW area! And, if you’re from any of the above mentioned states, click over to read their delivery schedule specifics. Flip through the pdf file to find your state and see if there’s a drop location near you. If there isn’t one, you may be able to call and set one up. (That’s exactly how I did it a few years ago…I just called and set up a delivery drop point in my town!)

If Azure Standard doesn’t have a truck route to my area, can I still order?

Yes! If you are unable to be a part of a co-op/truck delivery route…you can still order (most items) and have them delivered UPS or by mail. They deliver all over the U.S. and the world (if you make special arrangements). Shipping costs may be high, but it’s worth a check.

How often do the trucks deliver?

Azure Standard delivers once each month. I place my order on a Thursday…I pick it up the following Tuesday. (Every route is different, that’s just how it works for me…but talk about instant gratification!)  We all meet our truck in a designated location, unload our boxes and bags (squeal with delight over our pretty fruit and bags of oats), load our vehicles and go home. It all takes about fifteen minutes. Amazing. Here’s a little field trip I took my readers on a few months ago so they could pick up my Azure Standard order with me…

Is there a minimum order?

Yes…if you’re right along the truck route, there is a minimum $550 order…but that’s total, for everyone who is ordering. If you get a few families involved, your minimum is met pretty easily.

Your individual order must also be at least $50. If your order is under that amount, just combine it with a friend.

Their prices for these organic foods are incredible! Are there any hidden fees?

Hidden, no. But some states (like mine) are subject to a delivery fee. I DON’T mind the delivery charge at all. If I didn’t have Azure Standard, I’d have to drive 2 hours one way to get food like this, and then the food prices would be a LOT higher. My delivery charge is less than my fuel cost would be to drive the 2 hours, plus the food costs less. I happily pay the delivery percentage on my order.

Hey, I can’t see the prices on their website! How can I see their prices?

Call them and set up an account. (541-467-2230)  They’ll give you an account number and password, then you can log into their site and see all their prices. You can also fill out the form here to request  a free catalog.

Do I have to order in bulk? I don’t have much storage space.

You can order in bulk, but you can also order small amounts of a product. I love this feature! You can order 50 pounds of oats, or just five pounds. You can order an entire case of organic ketchup, or just one bottle.

Does Azure Standard have a nice selection of gluten free food?

A Bunch of Azure Standard Stuff

I wanted to give you fair warning. I’m going to be writing a few posts soon explaining the benefits and great aspects of ordering food from Azure Standard.

This information won’t apply to many of you. If Azure Standard doesn’t deliver to your area (and I’ll be listing those areas soon), feel free to nod, smile and click over to a post that means a little more to you and helps you in some way. (Like my Chocolate Chip Brownie recipe, which means a LOT to everyone I’m sure.)

But if Azure Standard DOES deliver to your area, I’m hoping to encourage more of you to take advantage of Azure Standard’s wonderful services if you can. I’ll be posting sales and special features as often as I’m able. Maybe weekly (if they have anything cool in their bargain bin), or just monthly as they update their produce and sales.

Azure Standard isn’t paying me to say all of this (although if they want to, I’d be okay with that). I just LOVE Azure Standard and want to spread the wholesome food love.

Menu Plan for the Week

You all know that food makes me excited. Can I tell you about my latest little fun food thing? I found these cute mini chocolate chips at Amazon. They don’t have any soy lecithin in them (my reason for looking). They’re so stinkin’ cute and fun to bake with. Yep, doesn’t take much to entertain us all around here. (And yes, I often do make my own chocolate chips, but sometimes a girl just needs a little chocolate chip convenience.)

I’ve also got to tell you about how we tried Valerie’s Bacon Cheddar Meatloaves  last week! We’d been excited all week long because, hello? Bacon, cheddar cheese and beef all together in one dish? How would that not be good?

So Saturday night came and I had the meatloaves in the oven baking…went to the fridge to get out the bacon to wrap around the loaves for the last phase of baking…and DIDN’T HAVE ANY BACON. I knew I had some bacon in there. Except that I didn’t.   And I was WAY too scary looking to run to the store (which thankfully I remembered before I went). 

So we had Cheddar Meatloaves , which were still amazingly wonderful, by the way.

High Five Recipes: Cream Scalloped Potatoes

Had I not tasted these potatoes myself (when my friend’s mom made them) and realized that I had just bitten into a bite of comfort food heaven, I would not have believed that these three little ingredients all by themselves could actually create such a wonderful side dish.

All of the other scalloped potatoes I’ve ever made have required quite a bit of work:  prepare potatoes…make a white sauce…layer the potatoes with the sauce…cook covered for a specific amount of time…then uncovered for another specific amount of time.

But this potato recipe?  Scrub and slice potatoes. Sprinkle with salt. Pour cream over potatoes. Bake. Stir every once in a while. Eat. Try to be nice and share. No really Laura…please pass the potatoes.

Cream Scalloped Potatoes

4-5 medium potatoes
1 1/2 cups cream
sea salt to taste

Scrub potatoes and cut into very thin slices. Spread into a casserole dish. Sprinkle with salt. Pour cream over potatoes.

Bake uncovered at 300° for 1 1/2 to 2 hours, pulling dish out and stirring occasionally. Serve when potatoes are tender and cream has thickened.

The starch from the potatoes naturally thickens the cream into it’s own white sauce! SO simple!

Now, you’re welcome to throw in some onion or even sliced carrots into this dish if you want more flavor. I personally love it with just a generous amount of salt.

This potato dish is inexpensive, healthy and takes very little time to prepare. And it tastes like comfort food heaven. What more could we ask for?

Healthy Homemade Breakfast Burritos

Well, I made the kids mad at lunch today. I stood there making 20 breakfast burritos and wouldn’t even let them eat one.

Instead, they had to eat tuna.   I was heartless enough to actually make them wait until next week to eat the Breakfast Burritos. Hey, I’m just trying to get ahead here. Someday when they become the parent, they too might have a Breakfast Burrito agenda and make their children settle for tuna. And then they’ll come back to me and tell me how sorry they are for being mad about the 2010 Withholding of the Breakfast Burritos.

Homemade Breakfast BurritosYum

1 pound turkey sausage, browned
12 eggs, scrambled
1 1/2 cups shredded cheddar cheese (I use Landmark Raw White Cheddar)
2 cup salsa (more or less to taste)
20 whole wheat tortillas*

*Tortilla Hint:  If you’re making your own tortillas (and if you aren’t, you really should be, because YUM)…try this tip to make burrito forming so much easier! As you roll your tortillas, cook them on just one side, leaving the other side softer and more flexible.  Also, I find it works best to form the burritos within two or three hours of making the tortillas…before the tortillas have been refrigerated.

To put together the burritos:

Stir together scrambled eggs, cooked sausage, cheese and salsa. (I leave out the salsa at first and make up some salsa-less burritos for a couple of boys in my life who don’t like salsa. Then I add salsa to the remainder of the mix and make a few with salsa for the rest of us!)

Place burritos in a freezer bag and store in the freezer for up to three months.

To reheat:  Place desired number of thawed or frozen burritos on a baking sheet. Heat in a 350° oven for 10-20 mintues until heated through.

P.S. The children weren’t mad for long. They really like tuna…but just temporarily forgot that fact when they smelled the sausage cooking. They happily ate their tuna and will ever so much more happily eat their Breakfast Burritos some morning next week when I have yet another agenda:  the-hurry-up-and-eat-breakfast-so-that-you-can-start-your-handwriting-and-math…agenda.

Mini Apple Pies (A Part of This Complete Breakfast)

Who decided that sugar coated sugar dobbers and frosted sprinked poptarts were the best way to start the day? I also want to know why the aforementioned choices…or a pancake drenched in syrup is considered a great breakfast food…yet an apple pie is considered to be a dessert.

Remember, I like to think outside the box when it comes to breakfast. I’m all about Giant Breakfast Cookies, Breakfast Cake, Funnel Cake, Whole Wheat Donuts…and if you recall…even Homemade Ice Cream for breakfast. And what about our Valentine’s day Peach Cobbler? Yes, I think breakfast should be enticing, delicious, nutritious and sometimes even fun. And I think Apple Pie should be okay to eat for breakfast.

This Mini Apple Pie recipe is a new one I’ve come up with as I work on creating more Healthy Make-Ahead Meals. These freeze well (unbaked) – then you can just pull out a little pie (or 3) per person and bake.

Make them for breakfast…and your family will smell them baking, jump out of bed and come running into the kitchen and plow you over onto the kitchen floor (out of joy and love of course).

You can make these a couple of different ways:  Mini Apple Pies, or Apple Pie Pockets…depending on what works best for you. I use the same crust recipe I use for my Homemade Pizza Pockets. Follow the same instructions for the pizza pockets to create an Apple Pie Pocket…

The following directions are for Mini Apple Pies:

Crust:

3 1/2 cups whole wheat flour
1 t. sea salt
1 cup melted butter
1 cup plain yogurt

Stir ingredients together until thoroughly mixed. Use the dough right away to create pockets or pies…or let the dough sit overnight on the countertop to break down the phytates and make the grains more digestable. This dough is MUCH easier to work with if you work it like playdough in your hands a while before you try to roll it out.

Filling:

3 pounds of apples – about 11-12 smallish apples (any kind you like)
1/4 – 3/4 cup sucanat (your preference)
1 Tablespoon ground cinnamon

Topping:

1/2 cup whole wheat flour
1/2 cup rolled oats
2-4 Tablespoons sucanat
3 Tablespoons melted butter

To make Mini Apple Pies:

tender and a syrup has formed (about 10 minutes).

Roll each piece into a little circle with a rolling pen.
As you can see, I am NOT a perfectionist. If I was making these for a
ladies’ brunch or something…I might take the time to make them pretty.
But for my family of boys?
Do you think they really care if their pies are pretty?
They eat them in three minutes flat. Thus my sloppy dough squishing.

Squish (or place nicely) your dough circles into well buttered MUFFIN PANS. Using a muffin pan for these Mini Apple Pies eliminates the need to go buy 24 little mini pie pans.

miniapplepies4smFill each (unbaked) crust with apple pie filling.

miniapplepies6smIn a bowl, stir together topping ingredients until the dry ingredients are moistened.
I find that melting the butter and stirring it into the flour, oats and sucanat makes a great crumb topping…much less effort than “cutting in the butter”.

miniapplepies7smSprinkle topping all over the top of your little pies.
Try if you can to be as messy about this process as I am. Sheesh.

Freeze your pies in your buttered muffin pans for a couple of hours.

miniapplepies8smRemove your muffin pans from the freezer and allow them to sit on the counter for 10-15 minutes.  Use a fork to gently pry the pies out of the pan. Place them carefully into freezer bags and put them bag into the freezer.

To bake your Mini Apple Pies:

Take desired number of pies out of the freezer and place them on a baking pan. Bake in a 375° oven for 35-45 minutes. You can let them thaw first if you want…but I find that the frozen pies bake just fine!

And now I’d like to point out that (depending on how much you use) there is about 1/2 cup of sucanat divided by 24 little pies…making this a very healthy, very low in sugar breakfast. Much less even than my Applesauce Bread or something otherwise considered a breakfast food.

Bring on the Breakfast Pie! Shucks…maybe we should even serve it with Ice Cream!
