After keeping it a secret for weeks, we finally gave Matt his Father’s Day gift this morning. So much fun!

If you’re interested, we have just six 4-ounce bottles of vanilla extract left. It’s been fun watching them sell and seeing how many different states they are headed to. May they be a blessing in your kitchen. ;)

Menu Plan for the Week

Here is what I said to my boys one morning last week:  “You are brothers. That means you are on the same team. Stop treating each other like enemies, be nice, and for Pete’s sake, stop all that ridiculous arguing!!!!!”

Oh wait. That is not the quote I meant to share. Goodness.  What I really wanted to tell you is that one morning last week, I was able to say this to my boys:

“To go with your breakfast, you can have cherries, blueberries, kiwi, apples, raspberries, pineapple, clementines, pears, strawberries, nectarines…or a banana.”

Yes, we actually had eleven different varieties of fresh fruit in our fridge or on our counter-top. Can you say spoiled?? (Our family – not the fruit.) It is unbelievable to me how blessed we are in America to have all of these wonderful choices. I love how many great fruits are in season right now – filling my kitchen with goodness. Truly, we are so, so blessed.

And then, there are all the wonderful frozen fruits in my freezer:  strawberries, mango, pineapple, peaches, and blueberries. These Pineapple Mango Smoothies have been rocking my world. They are perfect on a warm afternoon when we all need a snack to hold us over until dinner.

pineapple_mango_smoothie_2

The fun is just beginning as fresh garden produce will begin making it’s way into our house. Ahhhh summertime. So much to love.

Here’s what our menu looks like this week:

Sunday, June 9
Easy breakfast casserole, nectarines
Grilled hamburgers and hotdogs, grapes, sweet peppers, baby carrots
Leftovers

Monday, June 10
Cranberry white chocolate chip breakfast cookies, apple slices
Black bean salsa, pineapple mango smoothies, baby carrots
Italian cream cheese chicken, asparagus, tossed salad

Tuesday, June 11
Honey cinnamon muffins, scrambled eggs, grapes
Chicken patty sandwiches with fresh spinach, and tomatoes, baby carrots, pears
Pizza boats, watermelon, tossed salad

Wednesday, June 12
Whole wheat waffles, blueberries, whipped cream
Chicken salad on homemade pitas with lettuce and tomatoes, strawberries
Cheesy salsa enchiladas, tossed salad, pineapple

Thursday, June 13
Almond flour muffins, fried eggs, kiwi, strawberries
BLTs, grapes, sweet peppers, baby carrots
Teriyaki chicken with rice and veggies (broccoli, asparagus, zucchini, and carrots)

Friday, June 14
Pancake sausage muffins, nectarines
Salmon patties, potato wedges, green beans, cherries
Homemade pizza, tossed salad

Saturday, June 15
Flaky cream cheese pastry, blueberries
Leftovers

Have you been enjoying any sibling arguments fresh fruit lately?

It was quite a week at our house! With our two oldest boys on a mission trip with the church youth group, and our two youngest boys with grandparents – Matt and I were home alone for four days. It was quiet, refreshing, and fun for Matt and I to have some time to ourselves. But it sure has been great to fill our house up with kids again!

All four boys were home for 20 hours, then Asa left again to go to a Leadership Camp. He’ll be home mid-week. But, we still have four boys around because one of my nephews came to stay for a few days. The weather has been beautiful – perfect for playing lots of baseball and soccer games in the yard, as well as jumping on the trampoline!

Here is what we’re looking at eating this week. If you see some good sounding recipes in this list, but no recipe links, that’s likely because those are recipes I’m experimenting with to include in a new {Healthy} Make Ahead Meals and Snacks eBook I’m working on for the fall. This Sweet Pecan French Toast Casserole was super easy to make and a huge hit with family and guests. That recipe will definitely make the book. :)

Menu Plan for the Week

May 26, 2013 by Laura Leave a Comment

Well, the past two weeks have been abnormal around here when it comes to menu planning. This week? Still weird. In fact, every week this summer will be just a little bit different from our normal school year routine.

We’ve got kids in and out all summer heading to camps, mission trips, more camps, and grandparents. Sometimes we’ll have three boys at home, sometimes just two, sometimes zero, and often we’ll have all four boys plus their cousins, neighbors, and friends too.

Did you follow that? Neither did I. I’m just sayin’ that planning a menu each week this summer might be a little difficult. Well, planning it may not be that hard. Following it is another story.

Here’s what is kinda sorta on our menu this week:

Sunday, May 26
Granola, fruit
Tuna sandwiches with lettuce and tomatoes, carrots, grapes, apples
Pizza with family

Monday, May 27
Pancakes, cantaloupe
Hamburgers on the grill, potato salad, veggies, cake and homemade ice cream
Dinner on the road

Tuesday, May 28
Sweet pepper, spinach, and mushroom omelets, clementines
Chicken salad in whole wheat pitas, tomatoes, pears
Steak on the grill, asparagus, watermelon

Wednesday, May 29
Whole wheat waffles, strawberries, whipped cream
Black bean salsa with organic corn chips, fruit salad
Crock pot chicken tacos

Thursday, May 30
Creamy orange cooler, fried eggs
Salmon patties, tossed salad
Cheeseburger macaroni, peas

Friday, May 31
Breakfast burritos, blueberries, oranges
Chicken Patty Sandwiches with lettuce and tomatoes, baby carrots, watermelon
Pizza casserole, tossed salad

Saturday, June 1
Pineapple mango smoothies, toast
Leftovers
Pigs in a blanket, steamed broccoli and carrots, cantaloupe, strawberries

I am loving our warmer weather and the food that comes with it! Hope you are having a wonderful Memorial Day weekend. :)

Menu Plan for the Week – And My Whole Foods Market Jealousy Issues

May 19, 2013 by Laura 27 Comments

This post may contain affiliate links. For more information, please see our disclosure policy.

meal_at_weardens

Just like last week, I don’t have much of a menu plan to share with you this week. Our family is having the most amazing time in Colorado – finding service opportunities, holding Meet and Greets, and catching up with friends we rarely get to see. We’ve been taking lots of pictures, which I’ll be sure to share as soon as I can!

We’ve been blessed to cook many of our meals in our friends’ home where we are staying. They eat a gluten free diet, so for the meals we’ve shared, I’ve done my best to make them GF.

Here are some of the meals we’ve enjoyed so far:

  • Scrambled egg and cheese sandwiches with apple slices on our way to help with a food bank
  • Lamb kabobs on the grill, stir fried veggies (carrots, broccoli, and asparagus), and fresh strawberries
  • Brats on the grill with strawberry/pineapple/orange/mango smoothies
  • Italian Pasta Bake made with Tinkyada rice pasta, tossed salad, green beans, watermelon
  • Cereal (hey, we’re on vacation!)

What do we plan to eat this week?

We’re not entirely sure yet, as we plan to continue to be on the road for a few more days. During each of the days we’re spending time serving with organizations, we’ve just done whatever has been easiest and best for the people we’re working with. Plus, we’re doing all we can to make home-cooked meals as simple as possible for our host family. The more we can cook with or for them, the better! They are, after all, housing six additional people for over a week. :)

What has been really nice is the availability of awesome grocery stores in these parts! Really, I try not to be jealous. But how cool (read: unfair, boo, wah) is it that when we punched “Whole Foods” into our GPS to grab some food for the grill, something like TEN stores came up within just a few miles of our friends’ house! But really, we’re just so very happy for those of you who can drive five minutes and have access to such great stores. Really. I’m happy for you. Totally. :)

Later in the week, once we get home, our menu will likely consist of lots of salads, grilled meats, steamed veggies, Chicken Patty Sandwiches, and Calzones that are already made and in the freezer…and I’m really hungry for Whole Wheat Waffles with strawberries.

belgiun_waffles

Here are my menu plan archives if you need more healthy menu inspiration. Meanwhile, I will be munching on fresh organic blueberries and cherries from Whole Foods. With each yummy bite, I will continue to be happy for my friends here and for all of you that you have such great stores in your backyard. ;)

How close is the closest Whole Foods store to your house?  Me? I have to drive two hours. Oh, but we’re getting one in Lincoln later this year, so that will make it only about an hour away – yay!

Menu Plan for (three days of) the Week

My family is spoiling me again this Mother’s Day. I just finished a delicious lunch (made by everyone but me), and now I am listening to Matt and the boys clean the kitchen. I think I may go take a nap.

mothers_day_1
No, the boys didn’t get up at the crack of dawn to bake fresh rolls.
I happened to have some in the freezer,
so all the boys had to do was get them out to thaw before church.
:)

Here are the flowers I received at church today. Each boy (including Matt) got to pick one flower to give me. I am amazed that somehow they coordinated and all picked a different color to bring to me.
mothers_day_2

Our family has some exciting days ahead of us this week and next. We take off Wednesday for a week long trip. Therefore, the menu plan? There’s no need for one.

I will share with you what the first few days of our week look like before we leave, but I’ll warn you, it is not exciting in the least:

Sunday, May 12 – Happy Mother’s Day to me in which I am not allowed to cook all day!
Scrambled eggs, fruit
Grilled BBQ Chicken, cream cheese corn, tossed salad, butterhorns
Pizza

Monday and Tuesday
Leftovers, clean out the fridge, scramble more eggs, make some smoothies, finish cleaning out the fridge

Wednesday
Pack sandwiches for the road, plus lots of fruit and water bottles

If you want some real (and helpful) menu ideas, please check out this link which is always available to you:  My menu plan archives.

I’ll share more about our upcoming trip on Gratituesday, because without a doubt, this trip is one that we have looked forward to for quite some time and we are so thankful it is finally here!!!

strawberry_shortcake

We have a few strawberries left from my shopping trip last week, so I think I need to make some Strawberry Shortcake. What do you think?! :)

A couple of weeks ago, we were blessed to go to a Geography Fair on our local Christian college campus. There, our boys got to “experience” and learn about many other countries in the world. It was a lot of fun, and inspired me to have our boys create a little geography fair of our own. :)

They were each in charge of choosing and researching any country in the world last week. They wrote information about it, created a flag of their country, and looked at the foods found in those countries. This week, they are each making one dish that represents their country. We’ve worked them into our menu plan this week!

Sunday, May 5
Baked oatmeal cups, kiwi
Nacho bar fundraiser for mission trip kids at church
Huddle at our friends’ house

Monday, May 6
Belgian Waffles (made by Asa, who studied Belgium last week)
Chicken patty sandwiches, fruit salad
Alfredo sauce with pasta, steamed broccoli and carrots, tossed salad

Tuesday, May 7
Homemade poptarts, oranges
Tacos
Something Venezuelan – made by Justus  (update to come)

Wednesday, May 8
Danish cinnamon snails (made by Malachi, who is studying Denmark)
Chicken burritos, sweet peppers, pears
Lasagna casserole, fried zucchini, tossed salad

Thursday, May 9
Honey cinnamon muffins, strawberries and cream
Recipe from Djibouti – if in fact Elias and I can find one that will work!
Black bean salsa, organic chips, fresh pineapple, orange slices

Friday, May 10
Fried eggs, hashbrowns, turkey sausage, clementines
Cheesy beef and rice, green beans, sweet peppers
Homemade pizza, baby carrots, apple slices

Saturday, May 11
Scrambled egg sandwiches, fruit
Leftovers
Teriyaki chicken and veggies (broccoli, carrots, zucchini, peppers)

If you happen to have any wonderful Djibouti recipes hanging out in your kitchen – please share!! Elias wasn’t kidding when he said they were hard to find. :)

Menu Plan for the Week (Where’s the Fruit?!)

peanut_butter_chocolate_chip_muffins_1

As I looked over my kitchen in an effort to plan this week’s menu, I realized how low we are on fresh and frozen produce. Indeed, we are Fruitless in Seattle…er, Nebraska.

Actually, I think it just seems this way because we are so spoiled. I love having a wide variety of fresh fruits and vegetables to choose from when I plan my meals. To get us through the beginning of the week, we do have just a few apples, oranges, and bananas. There is home-canned applesauce in the pantry. I have some frozen peas, green beans, strawberries, and blueberries. There is a little lettuce in the fridge. Otherwise, I’m looking forward to a shopping trip soon! I’ll plan to snap a picture of what I get and share it with you. (To clarify, I’ll share the picture, not the produce. Sorry. My boys eat big.)

Soooo – if you look at the menu plan and think, “Wow, she just keeps putting a generic “fruit” or “vegetable” as a side dish,” that is because by those days I anticipate being completely out of whatever we currently have on hand, and I’m not sure what I’ll be blessed to find at the store. Who knows? It could be that on Thursday, we’ll have kumquats! (Because as we all know, kumquats are plentiful in Nebraska this time of year.)  ;)

Sunday, April 28
Easy breakfast casserole, oranges
Chicken sandwiches, carrots, fruit
High School Huddle – Italian pasta bake, green beans, cream cheese corn, frosted brownies (these brownies, this frosting)

Monday, April 29
Quick mix pancakes, applesauce
Taco corn fritters, fruit kefir smoothies
Cheeseburger mac, tossed salad, peas

Tuesday, April 30
Peanut butter chocolate chip muffins, apples
Cheddar ranch burgers, sweet potato fries, fruit smoothies
Calico beans, tossed salad

Wednesday, May 1
Scrambled egg sandwiches, fruit
Sloppy joes, ranch potato wedges, green beans
Italian roast wraps, tossed salad

Thursday, May 2
Zucchini bread, bananas
Hot spinach and artichoke dip, fruit
Homemade pizza, tossed salad

Friday, May 3
Fried eggs, toast, fruit
Turkey ranch pinwheels, steamed veggies
Tuna casserole, veggies

Saturday, May 4
Sweet pepper fritata, fruit
Leftovers
Swiss steak, rice, veggies

How’s your supply of fruits and veggies? Ever had a kumquat? (Can’t say that I actually ever have.)

I had almost forgotten about this Blueberry Coffeecake recipe. It was perfect for breakfast this morning before we headed out to church. (I baked it last night so that it would be ready to serve!)

blueberry_coffeecake

This week, we decided to get our four boys into the kitchen for some more intense cooking experiences. They each get to take one full day, and have full responsibility for planning, cooking, and clean-up. That’s not to say that they won’t have help and guidance. But the majority of the work is up to them. It’s been lots of fun helping them plan their meals! They really had to give thought to their plans so that they would make the menu balanced throughout the day. I believe I should do this more often!

Later this week, I’ll share some pictures and tell you how it’s been going.

Sunday, April 21
Blueberry coffee cake
Scrambled egg sandwiches, apples, baby carrots
Huddle at our friend’s house

Monday, April 22 – Asa’s day
Breakfast cake muffins, fruit
Chicken nuggets, homemade french fries, peas
Tacos

Tuesday, April 23 – Elias’ day
French toast, fruit
Homemade corndogs, pears, plums
Hamburger cream cheese dip, veggie yet to be determined, key lime pie

Wednesday, April 24 – Justus’ day
Chocolate chocolate chip muffins, fruit
Pasta alfredo, steamed broccoli and carrots
Chicken fried steak strips, mashed potatoes and gravy, green beans

Thursday, April 25 – Malachi’s day
Breakfast cookies, fruit
Calzones, baby carrots
Lasagna, tossed salad, death by chocolate

Friday, April 26
Peanut butter honey toast, oranges
Meat and cheese burritos, tomatoes, fresh pineapple
Easy noodle stir fry with chicken, broccoli, carrots, asparagus, and zucchini

Saturday, April 27

Stay tuned to see how the boys do with executing their menu plans!! :)
