Valentine’s Day Crafts With Kids – a guest post

Valentine’s Day isn’t just for lovers—it’s for the whole family. Spend an afternoon with your kids this February 14th with these two simple crafts. Make a few extra to spread the love around to friends and family.


Lollipop Bouquet

This sweet craft costs considerably less than a store-bought set of flowers and is easy enough for kids to give to Mom or Dad as they please.

Materials Needed

Colored paper in green and pink, red, or other flower-like colors
Flat (not ball) lollipops
Scissors and glue stick

Directions

Fold the colored paper in half. Keeping part of the shape along the folded edge (so that the heart is a folded card), cut out heart shapes just bigger than the lollipop candy. Write a short message in the heart (“Be mine,” for example) and then glue it to the lollipop wrapper. For the leaves, fold the green paper in half. Cut out leaf shapes, keeping the stem part of the shape on the folded edge. Unfold the leaves and coat them with the glue stick. Fold it back over the lollipop stem.

Still have candy canes lying around since Christmas? Recycle them in this simple chocolate cookie recipe. Bringing kids into the kitchen (with supervision, of course) is always good practice.

Ingredients

2 ½ cups bittersweet chocolate chips (but don’t go over 61% cacao or it will be more bitter than sweet!)
1 ½ cups all purpose flour
¼ cup natural unsweetened fair trade cocoa powder
1 tsp baking powder
½ tsp salt
1 stick (or ½ cup) unsalted butter at room temp
1 cup sugar
1 tsp vanilla extract
1 tsp peppermint extract
2 eggs
4 candy canes, coarsely crushed (an easy and safe way to do this is to take them out of their original wrappers and freeze them in a paper bag. Once frozen, take it out of the freezer, cover with a thick dish towel, and give them a good whack with a hammer or rolling pin.)

Directions

Preheat the oven to 375 F. Line 2 baking sheets with parchment paper. Stir 2 cups of chocolate chips in a metal bowl over a saucepan of simmering water so they melt. Measure out 2/3 cup and put into a separate bowl. Take them off the heat. You’re going to use the 2/3 measurement to drizzle over the cookies later.

Meanwhile, whisk flour, cocoa powder, baking powder, and salt in a bowl. Beat butter in another bowl until creamy with an electric mixer. Add sugar and vanilla and peppermint extracts. Add eggs and beat. Add what’s left in the original chocolate bowl to the mixture and beat. Finally, add the dry ingredients and beat just to blend. Stir in the remaining ½ cup chocolate chips.

Take the dough 1 level tablespoon at a time and roll between palms into a ball before placing on the baking sheet. Space the cookies about 1 ½ inches apart. Bake for about 8 minutes or until cracked all over and a tester comes out with moist crumbs. Cool the cookies for a few minutes before transferring them to a cooling rack (still on the parchment paper).

Remember that 2/3 cup of melted chocolate? Warm them over simmering water again and, once melted, drizzle over the cookies using a fork. Sprinkle the crushed candy canes. Make sure that some of the red show on the cookie to give it a Valentine’s Day feel. Chill the cookies for about 20 minutes so the chocolate sets. Then, enjoy!

Valentine’s Day Treats

 Matt and I hardly ever do anything “special” on Valentine’s Day…we’re a little bit rebellious when it comes to this holiday. Although one year he did “break the rules” and get me some new potholders.  :)

A few years ago when our boys were all pretty little, going along with my Valentine’s Day rebellion, I didn’t do anything at all special for the family on Valentine’s Day. I guess I thought my kids were young enough not to notice? Or I figured they were boys and that they wouldn’t really get into heart shaped sandwiches? 

What was I thinking?

That evening, they shared with me how disappointed they were that we hadn’t done anything special to celebrate Valentine’s Day. No heart shaped pancakes or anything. Wow, I had no idea that my heart shaped efforts in years past had meant something to them. I ramped it up the next year, making heart shaped everything. They loved it…manly boys that they are. And I haven’t stopped since. I’m glad they care…hopefully they’re learning to do simple, inexpensive things for their future wives. Hopefully.

The Great Marriage Flirt

“Hey there,” I say to my husband as I come into the room where he is mudding and sanding the drywall. “Now that is lookin’ good.”

“Thanks,”  he says as he reaches down for more mud.

And then I say, “Oh, and those walls aren’t looking too bad either.” 

Now that stops him mid-mud-smear. Obviously, I wasn’t talking about the walls the first time. {giggle}  We share raised eyebrows and sly grins, as the kids run in and out, oblivious to what I just really said. That makes it even more fun.

Flirting with my guy is one of the most enjoyable parts of my day. I can’t help it. He’s fun to flirt with. It’s such a simple way to connect and to share smiles in the midst of hard work and crazy schedules. I love being his number one girl. I love being the one who puts the smile on his face. My flirting always makes him smile – especially when it takes him by surprise.

Once a marriage is well underway and perhaps kids join the mix, we can sometimes feel lost in all the paper work and bills and gymnastic classes and carpooling and grocery shopping and dirty diapers and broken dishwashers. Somehow, we may not even remember how to flirt because really it feels good enough just getting your hair brushed some days. 

So don’t make this flirting thing complicated. Just do small things to keep your marriage fun and lively. Simply relax and enjoy your husband and the relationship God gave you.

A simple smile straight to him goes a long way.

Flirting isn’t always about sex. It rarely is, in my opinion. It’s really about connection. Sharing something special between just the two of you. Having those secret messages that float over the dinner table when neither of you can get a word in over the hubbub of one child banging his sippy cup on the highchair and another child sharing the most exciting part of her day with daddy (the part about how Curious George climbed a tree after a kitten and couldn’t get down and the fireman had to come and the Man with the Yellow Hat said…). 

If you’re just being “work partners”, trying to get through each day without losing your heads…something needs to give. You and your husband are more than just work partners. You’re more than just friends. You’re more than teammates. 

You’re lovers. Forever.

Enjoy being together. Smile. Bump into each other “accidentally”. Wink. Sneak a kiss. Email or text him something “sassy”.

Flirt.

It’s fun. :)

Gratituesday: God, Your Love is Enough

Being sick, while it’s terribly un-fun, does give a person some time to reflect. Over the weekend, as I lay in bed trying to recover from the flu, I was able to do some good thinking – as much as a person can think with a foggy brain, that is.

I was on the verge of feeling sorry for myself. I hate being stuck in bed. I hate seeing my kids suffering. I hate that Matt was having to take care of everything that I should have been helping him with.

And then, I read some emails from some of you who are struggling mightily with family members who have health problems. I learned of some terrible health situations from family members in our congregation. Some of my friends on Facebook shared prayer needs that hit me hard.

I stopped feeling sorry for myself right away. What our family is suffering with isn’t fun…but it’s just the flu. It’s normal. It happens. We’ll get over it. We’re already working our way back to normal (as in, the kids felt up to getting the swords out and swinging them today).

Justus had received the WOW Hits 2011 CD for Christmas and Matt put it in for me to listen to while I rested. I heard a song that was new to me, and I just couldn’t get enough. I played it over and over. I’m excited to share it with you here.

The song is Let the Waters Rise by Mikes Chair. It is a message of comfort, especially to those of you going through difficult times. I pray that it will be a blessing to all of you, whether you’re struggling, or whether you’re in the midst of calm and peace. God’s love IS enough. We can trust Him.

The Traveling Casserole

When we travel, I always pack quite a bit of food. This takes some effort when you’re getting ready to go on a trip, but we find the work is worth it as we save a lot of money on eating out. Plus, it’s a lot easier on our systems. (Don’t even get me started.)

Aside from good ol’ sandwiches, here are some other food items that we have found travel well:

  • Pizza
  • Burritos (either breakfast, meat and cheese or bean and cheese)
  • Quesadillas (just cheese or cheese with chicken)
  • Tuna Salad with Crackers
  • Corn Dog Muffins
  • Sloppy Corn Bread Muffins
  • Scrambled Egg and Cheese Sandwiches on English Muffins (at breakfast time)
  • Breakfast Cookies
  • Chewy Granola Bars
  • Muffins
  • Fruit
  • Carrot Sticks

In January, after our 3,800 mile road trip, you could say that we were just a little bit tired of traveling and eating in the car. We’d eaten packed food, fast food, snack food and well…a few too many beans. Vegetable soup and salad from the comfort of our own kitchen had never sounded better.

And yet, just three days after our return home, we needed to make a two hour (one way) trip to one of Asa’s basketball games. Matt and I tried not to groan as we discussed our food plan for the day. The idea of eating out or eating concession food made us turn green. Packing sandwiches didn’t appeal to us in the slightest. Nothing sounded good. Even the kids, who normally think eating out or having sandwiches and chips is a big treat, curled their upper lips at us.

What to do…what to do…because we did need food.

Enter….The Traveling Casserole:

I’ve gotta say…I’d never thought of this idea before. (I didn’t think of it this time either…it was Matt’s brilliant idea.)  He dug out the very cool Pyrex Dish with Insulated Carrier that someone had given us as a gift. Why couldn’t we just make a “real meal” and keep it warm in this until we were ready to eat?

Did I mention that my husband is brilliant?

One of the boys suggested Cheesy Beef and Rice…also brilliant. Cheesy Beef and Rice is not messy or runny or gooey or likely to cause stains on basketball uniforms.

I made it, baked it and packed it up just before time to leave. I grabbed a serving spoon, some paper plates and plastic forks….tossed in some yogurt and fruit and we were good to go.

When we were ready to eat, I just served up paper plates and passed them to the back of the van. Not one bit of casserole was left at the end of the night…and not one of us was whining about having a stomach ache or about having to eat a sandwich…again.

So…all that to say…think outside the box just a little bit when packing food for trips. There is no limit to the traveling food ideas.

Except for I don’t think I’d ever want to pack spaghetti. Or anything you’d have to eat with chop sticks.

Like we ever even eat with chop sticks when we’re at home at the table?

I have no idea why I just said that.

The no-good flu bug has hit our house. Fever, body aches, coughing, no energy, no appetite, no good. Elias and I were down for several days last week and are just now starting to feel almost normal(ish)…just in time for Malachi to wake up with a fever today. :(  Matt’s been holding down the fort. What would I do without him?

Since Elias and I have been lying around together for days (being pitiful), he helped me with our menu plan for this week. Ah, it would appear that our appetites are coming back. :)

What ARE the Seven Layers in the Seven Layer Chip Dip?

Five women friends and I were standing around after church Wednesday night talking about and planning our upcoming Super Bowl party. If you could have listened in on our conversation, you may have rolled your eyes. Or maybe you would have shrugged along with us? 

“What time does the game start?” “What channel is it on?” “Who’s playing this year?”

Clearly, we are a well informed group of ladies, always keeping up with the latest trends and world events.

One of the girls jumped in excitedly with, “No wait. I’ve got this one.” Then she told us not just one, but both of the teams playing. Very impressive. I can’t for the life of me remember what she said now.   I was just in awe of the fact that one of us actually knew.

We should have stopped talking right that minute, or at least began to focus on the food part of our planning. But no. Instead we had to discuss where we thought the teams were from. Why? Why would we do that?

It would appear that we don’t know our football geography very well. I’m not going to rat anybody out, but somebody thought the Steelers were from California. 

(Just so you know, in case you are also going to a Super Bowl party, the Steelers aren’t…from California. There is no end to the helpful information you can learn while reading this blog. I am always glad to be of service.)

Finally my friends and I moved on to territory we are well informed about:  FOOD.

My pregnant friend who was helping to plan the party suggested hinted BEGGED that someone should really make “that seven layer chip dip thing”. Hey, I’ll make anything for my pregnant friend, since she finally figured out something that sounds good.

In addition to the dip, I’m planning on taking something else fun (suggestions???) in that above pictured  football dish someone loaned me. 

And I could do a Swag Search to find a recipe for Seven Layer Chip Dip Thingy. But you all are so smart and have so many fun ideas…I decided to just ask you.

What seven layers should I layer?  Meat or no meat? Onions or no onions? Never mind. I don’t think she’ll want onions. But she does want avocado. (Don’t you love it when I think out loud?)

I’m afraid with all of your answers I’ll end up with a Twelve Layer Chip Dip Thingy. That will probably be okay though, won’t it? We will, after all, be needing a large container of dip while we visit in the background watch all the commercials thoroughly enjoy the game.

3 Effective Strategies to Help You Pay Off Credit Card Debt

The average American family has too much credit card debt. According to results posted by Visual Economics, the average American family makes $43,000 per year and owes $2,200 in credit card debt. Since not everyone even has credit card debt, that means those who do typically have debts in excess of a couple thousand dollars.

If you are currently working on getting out of credit card debt, here are three effective strategies to consider. 

#1. Pay Off Highest Interest Debts First

This is the oldest approach to debt repayment. It is, in fact, the approach that makes the most mathematical sense. Simply make a list of all your debts, and then start to pay off the debts that cost you the most (determined by interest rates).

Thus, you would pay off the 17% Capital One card before the 15% American Express card. Last of all, you’d pay off the 10% credit union card.

In the long run, this method saves you the most money, and theoretically, helps you get out of debt the fastest. But life and debt repayment are about a lot more than money. However, when you look closely at credit card consolidation and balance transfers, you realize that math is not the heart of the debt issue. 

#2. The Debt Snowball

If you’ve heard of the debt snowball, it is likely because Dave Ramsey promotes the debt snowball.

With the debt snowball, you list your debt by amount owing instead of by interest rates.

Imagine you owed $9,000 on a Capital One card, $5,000 on an American Express account, and $2,000 on a card from your credit union.

In this case, you would pay off your cards in the following order – credit union, American Express, and Capital One. You would continue to make minimum payments on all the other debts until you pay off one debt. You would then shift your focus to the next debt. 

One of the biggest advantages to the debt snowball is that it provides the quickest emotional pay off. Instead of waiting until you pay off $9,000 in debt (as you would with the highest interest), you get to do the happy dance after paying off the $2,000 credit union bill. That emotional energy will fuel your continued fight out of debt.

#3. Emotional Debts are the First to Go

The fact is sometimes we make poor choices. Choices that haunt us. Let’s say you once helped buy a $1,000 stereo for an old boyfriend. That relationship never worked out, but you still have that $1,000 credit card debt. Imagine how good it would feel to finally pay off that debt and move on. 

This debt repayment strategy encourages you to list your debt in order of how passionate you are to pay them off. Perhaps one credit card company has been especially rude in their interactions. Put them first, and get them out of your life. 

Again, this is a strategy that relies on emotions more than math.

Which is the best strategy?

The answer completely depends on your temperament. 

I, for example, could effectively use #1 and #3 in conjunction. The reason? I hate paying interest to banks so the debt with the highest interest rate would also be the one with the most emotional pay off attached to it. 

Yet, there is no denying that many, many people are following the debt snowball with amazing results. Either way, if you have credit card debt, be sure you have a game plan or steps to get out of debt and work aggressively towards whatever strategy you adopt.

Breakfast Organization (With Some Great Giveaways!)

At the mention of my family’s Oatmeal Rebellion, many of you piped in with your ideas for quick and easy breakfast ideas. You shared some great suggestions, which made me excited to mention some more. You can NOT have too many helpful breakfast ideas in your back pocket. Although I don’t really recommend keeping your actual breakfast in your back pocket. That would be a bad situation on so many levels.

While Sunday mornings are a bit crazy as we all try to get out the door looking halfway presentable…I’m going to also venture to say that every day can be hectic at breakfast time if we don’t have a plan. My kids are hungry from the moment they wake up. One of my boys would actually eat my leg if I didn’t shove an egg in his mouth as he rolls out of bed. He is that hungry. You’d think I didn’t just feed him four helpings of dinner the night before (and a snack before bed).

One of my best recommendations for us to keep our Breakfast Time Organized is to plan ahead. But my best, best recommendation is that if at all possible…make breakfast the night before. 

If I can, I bake our next day’s breakfast muffins or bagels or quick bread while I’m making dinner the night before. Or, I’ll start my pancakes or waffles to soaking. Or, I’ll mix up a Breakfast Casserole to have ready to bake the next morning.

It’s easy really…to make breakfast the night before while I’m cooking dinner. I’m already in the cooking mode. I’m already making a mess. Might as well make a bit of a bigger mess and get breakfast baked up too, right?

Then, after dinner, we get the whole kitchen clean (LOVE our Kitchen Chore Chart!) and put our breakfast on the table for the next morning (unless it needs to go into the fridge because leaving out a raw Breakfast Casserole would be about as bad as putting your breakfast in your back pocket).

Gratituesday: Hard Work Tastes Good

Remember all the abundance of produce that I was tripping over last fall and trying very hard to appreciate? All the canning and preserving we do during August and September (in the midst of soccer season) is overwhelming at times. We know we’re doing it for our family’s health and to save money…but it really is a lot of hard work!

But now that it’s (almost) February? Now THIS is why we work so hard in the fall!!

Everytime we run out of applesauce, we go to the pantry. Each time I decide to make spaghetti or pizza? We get out a jar of sauce. We’ve enjoyed many a grilled cheese sandwich with homemade tomato soup. We’ve got a great supply of salsa left. We have canned peaches to eat in cottage cheese for a quick and easy snack. Our supply of frozen green beans and corn is holding up just fine, and we haven’t been holding back.

Healthy food doesn’t get much easier than this.

All that hard work back in the fall? It was SO worth it.

Remind me of this post in September when I’m again overwhelmed and tripping over boxes of apples and tomatoes.
