Healthy Make Ahead Meals for March

Remember my Cooking and Baking Marathon last month? Encouraged by Jessica and Crystal, I’m at it again (although this time my list is quite a bit shorter).

Based on many emails and comments I receive regarding your desire to eat healthier foods…I’m convinced that more of you would take the plunge if preparing healthy food was more convenient for you. So, I’m working hard to figure out more healthy meals and treats that can be prepared ahead of time, frozen, and pulled out to eat in a hurry. Scroll through these posts to read through the ideas and recipes I currently have on my site.

Hey, as nice as it may sound that I’m doing this for you…really and truly my family and I are the ones benefiting. ALL the food I made and froze a few weeks ago has been SO nice to have on hand on days we have places to go and people to see. I actually STILL have Pizza Pockets, Cheesy Beef and Rice, Beef and Cheese Burritos and Whole Wheat and Honey Zucchini Bread  in the freezer from the last Cooking/Baking Marathon. I also have three bags of Chicken Fried Steak Strips made up and ready to cook up quickly! 

My favorite benefit of having convenience foods in the freezer is how it helps with the challenge of trying to get school work done and feed hungry boys at the same time. Ready-to-heat-up healthy lunches have been WONDERFUL to have on hand!!

So…Here’s my new list of freezer foods to try:

  • Mini Apple Pies  (These are now done and in the freezer already. The boys LOVED these!)

  • Pre-made Turkey Sausage Patties  (Now that I know that it’s okay to thaw and refreeze raw meat one time…I’m going to make up several batches of this sausage to make for some easy breakfasts/lunches.)

  • Breakfast Burritos  (I make lunch type burritos…why not make some sausage-egg-cheese burritos while I’m working up the sausage?)

  • Whole Wheat Tortillas  (Okay, these aren’t new for me to try, but if I’m going to make burritos…I’ll need to make a batch or two of tortillas. Also, it’s ALWAYS nice to have extra tortillas on hand for quesadillas – especially these Melting Snowflakes this time of year! Therefore, I’ll probably go a little Tortilla Crazy and make four or five batches of these awesome tasting tortillas this weekend.)

Beyond these foods…I’m planning on making Peanut Butter to have in the fridge for next week. (If you haven’t ever made homemade peanut butter, you HAVE to try it and see how EASY and DELICIOUS it is!!). 

I’m also going to keep working on making homemade ketchup. I’m still not entirely pleased with the recipe I’ve come up with…which, if you have been wondering, is why I haven’t shared it yet! I’m still tweaking. And tasting. And tweaking some more.

I’ll share with you early next week how the weekend of cooking and preparing went!

Mini Apple Pies (A Part of This Complete Breakfast)

Who decided that sugar coated sugar dobbers and frosted sprinked poptarts were the best way to start the day? I also want to know why the aforementioned choices…or a pancake drenched in syrup is considered a great breakfast food…yet an apple pie is considered to be a dessert.

Remember, I like to think outside the box when it comes to breakfast. I’m all about Giant Breakfast Cookies, Breakfast Cake, Funnel Cake, Whole Wheat Donuts…and if you recall…even Homemade Ice Cream for breakfast. And what about our Valentine’s day Peach Cobbler? Yes, I think breakfast should be enticing, delicious, nutritious and sometimes even fun. And I think Apple Pie should be okay to eat for breakfast.

This Mini Apple Pie recipe is a new one I’ve come up with as I work on creating more Healthy Make-Ahead Meals. These freeze well (unbaked) – then you can just pull out a little pie (or 3) per person and bake.

Make them for breakfast…and your family will smell them baking, jump out of bed and come running into the kitchen and plow you over onto the kitchen floor (out of joy and love of course).

You can make these a couple of different ways:  Mini Apple Pies, or Apple Pie Pockets…depending on what works best for you. I use the same crust recipe I use for my Homemade Pizza Pockets. Follow the same instructions for the pizza pockets to create an Apple Pie Pocket…

The following directions are for Mini Apple Pies:

Crust:

3 1/2 cups whole wheat flour
1 t. sea salt
1 cup melted butter
1 cup plain yogurt

Stir ingredients together until thoroughly mixed. Use the dough right away to create pockets or pies…or let the dough sit overnight on the countertop to break down the phytates and make the grains more digestable. This dough is MUCH easier to work with if you work it like playdough in your hands a while before you try to roll it out.

Filling:

3 pounds of apples – about 11-12 smallish apples (any kind you like)
1/4 – 3/4 cup sucanat (your preference)
1 Tablespoon ground cinnamon

Topping:

1/2 cup whole wheat flour
1/2 cup rolled oats
2-4 Tablespoons sucanat
3 Tablespoons melted butter

To make Mini Apple Pies:

miniapplepies1smPeel apples and cut them into bite sized chunks.

miniapplepies2smAdd sucanat and cinnamon.

miniapplepies3smStir well and cook over medium heat until apples are
tender and a syrup has formed (about 10 minutes).

miniapplepies5smIn the meantime, separate dough into 21-24 pieces.
Roll each piece into a little circle with a rolling pen.
As you can see, I am NOT a perfectionist. If I was making these for a
ladies’ brunch or something…I might take the time to make them pretty.
But for my family of boys?
Do you think they really care if their pies are pretty?
They eat them in three minutes flat. Thus my sloppy dough squishing.

Squish (or place nicely) your dough circles into well buttered MUFFIN PANS. Using a muffin pan for these Mini Apple Pies eliminates the need to go buy 24 little mini pie pans.

miniapplepies4smFill each (unbaked) crust with apple pie filling.

miniapplepies6smIn a bowl, stir together topping ingredients until the dry ingredients are moistened.
I find that melting the butter and stirring it into the flour, oats and sucanat makes a great crumb topping…much less effort than “cutting in the butter”.

miniapplepies7smSprinkle topping all over the top of your little pies.
Try if you can to be as messy about this process as I am. Sheesh.

Freeze your pies in your buttered muffin pans for a couple of hours.

miniapplepies8smRemove your muffin pans from the freezer and allow them to sit on the counter for 10-15 minutes.  Use a fork to gently pry the pies out of the pan. Place them carefully into freezer bags and put them bag into the freezer.

To bake your Mini Apple Pies:

Take desired number of pies out of the freezer and place them on a baking pan. Bake in a 375° oven for 35-45 minutes. You can let them thaw first if you want…but I find that the frozen pies bake just fine!

And now I’d like to point out that (depending on how much you use) there is about 1/2 cup of sucanat divided by 24 little pies…making this a very healthy, very low in sugar breakfast. Much less even than my Applesauce Bread or something otherwise considered a breakfast food.

Bring on the Breakfast Pie! Shucks…maybe we should even serve it with Ice Cream!

Becoming a Better Help Meet: The Most Important Thing

So, what’s your marriage like? How do you feel about your relationship with your husband? 

Do you feel as though you’re struggling to even like the guy you married? Do you love your husband deeply, yet long for him to grow into more of the godly man you desire? Do you crave more joy in your marriage, more peace, more contentment?

Or are you feeling pretty satisfied with your married life? Are you feeling like your marriage couldn’t possibly get any better? Are you overjoyed with your husband and love every minute you spend with him?

No matter what season you are in with your spouse and in your married life, there is one thing that is crucial for your marriage to thrive, grow and blossom:

Your personal relationship with God needs to be your top priority.

If your relationship with God is strong and growing, you will be bringing more joy into your marriage.

Why? Because having a dedicated relationship with God will bring your heart peace and joy…making you a better person, a better friend, a better wife, a better help meet .

That’s the result of choosing to put God first in your life. Peace. Joy. Contentment. 

Will you always be happy? Will things always go your way? Nope. Will you be able to change anything about your husband? Maybe. Maybe not. 

But if your relationship with God is what it should be…you will have joy in your life. You’ll have peace in your life that passes all understanding. You’ll be content knowing that you’re doing just what God wants you to do.

Don’t you want that kind of wife for your husband?  Doesn’t it give you a little thrill thinking about the kind of wife you can be to your man, just by learning more about God and His desires for you?

Let God teach you and transform you into the wife you need to be.

Spend time daily (constantly) with God, reading His word, meditating on what He’s trying to tell you, talking to Him about what He needs you to do, listening to Him, praising Him. 

I know many of us struggle with spending special time with God each day (and we have all kinds of excuses). It takes effort. It takes discipline. It takes desire. 

Be intentional. Your marriage depends on it.

Homeschool Hubbub: What to Do With Little Ones During School Time

Here’s a questions I’ve been promising to answer on my blog for about a year and a half:

What do you recommend I do with my babies and toddlers while I’m trying to teach my bigger kids?

You mean besides strap them into their high chairs for three hours and hand them candy and cookies to keep them quiet?

Yeah, I don’t recommend that.

What’s funny about trying to answer this question is that even though I home schooled for several years with little bitty guys running (or crawling) around…I’ve had to rack my brain coming up with the answer to this question.

What DID I do with my babies and toddlers while I was schooling my bigger boys (who were at the time quite little themselves)?

There is no simple answer or formula. I don’t have anything to just hand you. I can’t just say, “Oh, my little guys did X, Y and Z while the bigger kids were schooling.” We just sort of did it. I’m pretty sure it looked a little chaotic half the time. That’s just life with little ones.

I would read history or read aloud books while I was nursing a baby (sometimes the bigger boy would have to hold the book). I would squeeze in school work during the little one’s morning nap.

I would take all of us into a room with toys, close the door so that the little guys were contained and I would do school work with the big boys. That way everyone was safe and happy and I knew exactly where everyone was at all times.

If we were using tiny objects like cuisenaire rods, the bigger kid took them to a table and I kept the littler ones away from the table, hollering my help from afar.

Once the babies were 2 or 3…I had several play options on our school room shelves. These were some of our favorites:

Bead Buckets (I’d give my kids a big container of beads, some plates and a spoon. They’d spoon out beads and separate the colors onto plates. You could do this with beans or buttons too!)

I called each of these options “Rug Work” and the kids got to pick one activity off the shelf, go to a rug, sit on it and play. These options were only allowed to be played with on the rug and during school time. When they were finished, they put the activity back on the shelf and got something else to play with.

I usually had a Veggie Tale or an educational video each day that I reserved for the time I needed to do more difficult schooling with my bigger boys. That would ensure that I had 30 minutes of uninterrupted work time.

I certainly remember having moments of frustration…feeling like I was trying to read a book around a bunch of craziness…trying to keep my baby from eating books off the shelf and trying to keep the toddler from screaming when he didn’t get his way…all while trying to teach a 2nd grader what a fraction was.

Ultimately, everyone learned to be patient. The big kids learned to be patient and wait until mommy could answer their questions. The toddlers learned to be patient until mommy could get their favorite puzzle off the shelf. The babies learned to be patient…yeah right. The babies screamed until they were fed. The mommy learned to be patient because school time is fun and loud and full of hubbub and hardly ever goes according to her perfect and ideal plan.

The beauty of it is that school time didn’t take hours and hours each day (still doesn’t even with bigger kids). A couple solid hours of concentrated school time (with some diaper changing breaks here and there)…we got it done.

And somehow, we all survived to tell about it!

Gratituesday: Fruit in February

It’s cold outside. The snow is relentless. A few days ago, I slipped on the ice and fell right on my…

Knee. Next time perhaps I should avoid the ice. Oh wait. It’s everywhere. Unavoidable.

It’s easy to complain and whine about winter right about now, isn’t it? I’m a little bit tired of being cold and cooped up. We could all use a little sunshine right about now.

But, last week after my Azure Standard order came in, I realized how BLESSED we are. Even though we’re in the middle of winter, with no fruits or vegetables growing around us…we can still get our hands on fresh produce! Yay for other countries (and other parts of this country) with warmer climates and fruit bearing trees! Yay for trucks that can bring them to Coldville, Nebraska. Yay for Azure Standard that makes the opportunity for fresh, delicious organic produce possible!!

I ordered bunches of organic apples and pears, cauliflower, broccoli, carrots, avocados and onions. At the store I got oranges, clementines, a pineapple and bananas. A friend brought over more oranges, apples, carrots and grapes.

The beautiful, fresh, healthy produce reminded me once again of God’s goodness and provision. Suddenly I didn’t feel so sick of winter anymore. I felt blessed and taken care of.

Children…a Blessing?

A few weeks ago, I got this email from Jessica:

My husband and I have been married for about 2 1/2 years. We had always planned to wait about 2 years to have babies, but as time has gone by I have felt less and less ready to be preggo. I feel like the world has SO many negative things to say about having kids… “Have all the fun now because once babies come life is over…” etc. I know that the Bible says that children are a blessing from God but honestly sometimes I look at my friends with babies and I think, “Honey, you don’t look blessed, you look haggard and tired”.

I know that since the Bible says that children are a blessing that it MUST be true… and I’m SO sick of hearing about all the negative things about babies that the world is constantly screaming about…. what can you tell me about the blessing of children? Do the blessings really outweigh the burdens, the sleepless nights, the vomit, the poopy diapers, the carrying of the diaper bag everywhere you go…???? Why are kids a blessing? HELP ME! I know that I want to be a mom, but I think that the only thing that freaks me out is the thought of taking care of a sick child. I know that stupid… but its a fear, for real.

Funny, isn’t it…how we moms can often talk out of both sides of our mouth? (I love picturing someone actually doing that. Talk about multi-tasking.)

We say, “Oh I LOVE my children and they are the best thing that’s ever happened to me and my life is so much richer because of them.” At the very same time, we complain about how many times they got us up at night and how much puke there is to clean up and how much money they cost us and how we never have any time to ourselves and how the laundry never ends and how they never eat the food we put in front of them because they’re so picky, or simply too busy putting the food up their noses instead.

So, which is it? Is having children a blessing, or is it a huge inconvenience? Is it delightful, or is it exhausting? Is it fantastic, or is it frustrating?

My answer to each of these questions is…yes, absolutely.

Having children? It’s hard. It’s exhausting. It’s frustrating. It’s a job that never, ever ends.

But while there are times you feel like throwing in the towel (or throwing the towel at one of them)…you love your children so much that deep down you really don’t even mind the puke and the poop and the fact that both have been finger painted onto the headboard of their bed.

In fact, you chuckle, take a picture of the art work to show at their wedding rehearsal someday…then start crying (and gagging) while you scrub it all up.

There are SO MANY THINGS about parenting that are difficult and I can easily describe every one of them to you.

But it is practically impossible to put into words what an incredible blessing they are. I don’t think there have been words invented to describe the emotions you feel when you’re rocking your snuggly little one and their hair smells so sweet you just can’t stop breathing it in and stroking it.

Or how amazing it feels to read a book together or laugh with each other over how he slipped and fell outside and got snow in his pants.

Or when he says “mama” for the first time. Or just got out of the tub and has on warm footy pajamas and crawls up into your lap for kisses. Or when your big kid comes up to you and gives you a back rub. Or when you hear your child pray.

There are no words to describe it.

Are children a blessing?

I’d be happy to tell you just how much of a blessing.

My Great Big Wheat Order

You know that 500 pounds of wheat I had ordered? I picked it up yesterday. (And by picked it up, I literally mean that I picked-it-up. Lifted it. Fifty pounds at a time. Over and over.)

Actually…I picked up 1,000 pounds of wheat because my friend Anne went with me and she was also crazy enough to have ordered ten – 50 pound bags of wheat.

So there we were, heaving twenty – 50 pound bags of wheat into the back of my husband’s truck. We looked really cute. I’m sorry you missed it.

Matt and the boys weren’t home when we got back, so Anne and I got to lift them all over again while we carried them into our house (and then into her house).

I had so much fun interviewing myself back on this post, I thought I’d interview myself again, based on any questions you might have concerning my 500 pounds of wheat:

Me:  Wow, Laura.  500 pounds of wheat?  Are you crazy?

Me again:  Do you even have to ask?

Me:  Why did you order 500 pounds of wheat?

Me again:  Because I heard of a local gal ordering a big truck load of Wheat Montana. Apparently if you get enough people together to divide a truck load of their wheat, you can save a bunch of money. I usually order my wheat from Azure Standard, but sometimes it doesn’t come in. I never like running low on wheat. It’s not like I can just run to the store and get more, you know? So I ordered…a lot.

Me:  So, what in the world are you going to do with all that wheat?

Me again:  I grind my own flour and make from scratch all of our bread, tortillas, pancakes, waffles, bagels, cookies, brownies, quick breads and anything else that requires flour. I LOVE baking with freshly ground flour. It tastes incredible and is SO much healthier for us.

Me:  How long will 500 pounds of wheat last you?

Me again:  I’m thinking it should last about one year. I ordered 10 bags based on the fact that we go through almost 50 pounds each month.

Me:  You go through almost 50 pounds of wheat in a MONTH?????

Me again:  Well, there are six in our family. Five out of six are male. Four out of six eat like grown men. Plus, we have a LOT of company. Plus, I love to bake for others. Plus, we almost never buy any grain products from the store. Plus, no…that’s all.

Me:  Will the wheat keep that long, or are you afraid it will go bad? Where are you storing it?

Me again:  Wheat will keep for YEARS. As long as I keep it dry, it’ll be fine. I’m keeping it in a room that was once a garage, and is now just a storage room.

Me:  Can we see the rest of your storage room?

Me again:  Are you kidding? That room is by far the scariest in my house. Nobody gets to go in there. They’d lose all respect for me if they saw that mess.

Me:  How much did 500 pounds of wheat cost you?

Me again:  I paid $210 for all of it.  That makes it about 42 cents per pound. A great price for organic wheat!

Me:  What kind of wheat did you get?

Me again:  It came from Wheat Montana…and I ordered Hard White Wheat. I LOVE that stuff!!

Me:  Why wasn’t Matt there to help you with all of that terrible, back breaking labor?

Me again:  Oh, he offered. He actually had the day off when I needed to go pick it up. But, I really wanted him to have some time with the boys. Plus, I hadn’t spent time with my friend Anne for months. I kinda wanted the get-away. Besides, I’m much stronger than I look.

Me:  No you’re not.

Me again:  Okay, I’m not. But it really wasn’t that hard. I got a good workout.

Me:  Will you keep us posted on how long the wheat lasts you and what all you’re making with it?

Me again:  I’ll tell you more than you ever wanted to know.

Need a Giggle?

I have no idea where it came from, but Malachi (our littlest guy) has developed a “funny laugh” that never fails to crack us all up. We even put it on our answering machine. People say that they call now just to be cheered up by Malachi’s laugh on the recording.

I knew I’d regret it if I didn’t get a video of this goofy laugh. A few days ago I finally got it done. It took…more than a few shots. Ah, but at least it was fun.

If you happen to need a laugh and have one minute and forty one seconds to watch something  completely pointless and silly, please watch this little video we call, “Laugh Along with Malachi”. 

Hey, did you notice the other boys flying around in the background, trying to get on camera? At least the boys come by their wild and wackiness honestly.

Healthy Gluten Free Recipes

I often have the privilege of taking meals to friends who have just had a new baby. I love taking meals to people, but I really love holding the new babies when I get there. :)

My most recent new-baby-meal was delivered to a family that must avoid gluten. I enjoyed the challenge it posed to come up with an entire meal that was completely gluten free.

What I discovered through this challenge was that while I talk a lot about grains and grain mills and making bread…I also have quite a nice collection of recipes that are gluten free. I was excited to discover this and decided to make a Quick Click Gluten Free Resource Page on my site for those of you who either must eat a gluten free diet, or have opportunity to cook for those who do.

My hope now is to continue to add to this list as I find new, yummy, healthy gluten free recipes. I already have a few in the works that I plan to post, but I’d LOVE to add your recipe links to this page too!
