Menu Plan for the Week and What to do With Beets??

You know how dads are supposed to “bring home the bacon?” Well this week, my husband brought home some beets and collard greens. That’s almost the same thing as bacon, right?

Matt’s been working over at a gentleman’s house, painting a shed. As he was leaving Friday, a neighbor handed him an arm full of awesome produce. Awesome – except for beets and collard greens are two veggies our family isn’t very fond of. We’re determined to find creative ways to eat them though as we know they are very good for us. That’s where you come in. A little beet and collard green help please??

After an internet search Friday night, I made smoothies with shredded beets, pineapple, orange juice, avocado, spinach, and strawberries. They were actually pretty tasty, and the beets made them beautiful. I’m not sure my family will go for another round of them though. Tell me what you do with beets and collard greens. :)

In other produce news, I loaded my cart at the store on Saturday so that I’d have plenty to work with for our meals this week. A lady at the check-out was like, “Wow, stocking up?” I’m so used to plowing through loads and loads of food each week, I forget what my cart-fulls must look like to others. I had to tell her, “Nope, I have teenage boys. This is all for just this week.” ;)

Sorry about the picture quality. The sun was shining on our kitchen table (yay sunshine!!), which caused a glare on my plastic containers. Below, if you could see beyond the glare, you would find:  Baby Spinach, Mixed Greens, Petite Carrots, Carrots, Cauliflower, Broccoli, Romaine Lettuce, Raspberries, Zucchini, Asparagus, Clementines, Cabbage, and Sweet Peppers.

I’m excited that at least for right now, our Wal-Mart and another small local grocery store in town  are carrying more organic varieties of produce for very reasonable prices. Here are the meals we’ll be eating this week:

Sunday –  Matt teaches a college age Bible class on Sunday mornings, and I try to take home-baked goodies to share with the students. This week I’m taking Apple Crisp. We’re having company after church, so I’m making Chicken Noodle Soup, a plate of Carrots, Sweet Peppers, and Cucumbers, Olives, Dill Pickles, and Butterscotch Bars. Tonight there is a church fellowship, so I’m taking two Apple Pies. (Yes, we still have lots of apples at our house!)

The rest of the week, here’s what we’ll be working with:

Breakfast

  • Bacon Cheese Muffins
  • Blueberry Coffee Cake
  • Cranberry White Chocolate Chip Breakfast Cookies
  • Crepes with fruit and/or Cream Cheese Filling
  • Scrambled Cheesy Eggs
  • Pumpkin Pie (will be a great breakfast since I’ll be cutting down the sugar in this recipe quite a bit)

Lunch

  • Hamburger meat cooked with cabbage and onions, served on a bun
  • Corn Dogs (hoping to make extra to stash in the freezer)
  • Chili with cheese on baked potatoes
  • Chicken Salad
  • Hamburger Sauerkraut Dip with chips
  • Leftovers

Dinner

  • Chicken Pot Pie
  • Cheeseburger Macaroni
  • Flounder (Thanks to you, we tried this last week. It turned out ugly, but delicious!)
  • Italian Pasta Bake
  • Homemade Pizza
  • Salmon Patties with rice

Fruits and Veggie Sides and Snacks

  • Clementines
  • Apples
  • Raspberries
  • Cheesy Cauliflower Cakes (If you haven’t tried these yet, you should. Amazing!)
  • Sweet Potato Fries
  • Roasted Asparagus
  • Spaghetti Squash
  • Green Beans
  • Peas
  • Mixed Greens
  • Spinach
  • Stir fried broccoli, carrots, asparagus, and zucchini
  • Applesauce

Menu Plan for the Week ~ And A Little Bit About Our Past Few Days

I hate to talk about the weather, but…

Is it cold at your house already? It’s been unseasonably cold the past few days here in Nebraska. Temps are supposed to creep up again, thankfully, but here it is mid-September and I’m already wearing wool socks. It’s a little early for that, but I’m kind of a cold weather wimp. ;)

We’re pulling in quite a bit from our garden since it’s been getting so cold at night. We probably won’t be getting many more fresh tomatoes (sniff). I chopped one up to go with a new recipe – Taco Dip. It was super, super easy and really delicious – two favorite qualities in a recipe at my house. Fresh pineapple (not from our garden, ha!) was a great side dish. And of course, I served a mountain of quesadillas too. We’re serious about our food.

One of the cold days last week, you would have found me wearing my wool socks…and drinking an iced coffee. Silly and counterproductive, I know. But the iced coffee was delicious, making the shivering episode completely worth it. I will say though, I stuck with hot coffee the rest of the week. I’m not completely crazy (just mostly).

Are Paleo, Gluten Free, Grain Free Diets a Fad? Healthy or Not Healthy? My Thoughts…

I decided it would make perfect sense for me to post about My Favorite Whole Wheat Recipes, and then follow it up the next day with a post about avoiding wheat and/or grains altogether. I like keeping you on your toes.

Seeing as the Ultimate Healthy Living Bundle includes an entire section on Special Diets, I thought this might be a good time to address my thoughts on eating a gluten free, grain free, or paleo diet. Let’s chat, shall we?

A few weeks ago, I got this email from Deb:

I am just wondering what you think about all the gluten free, etc. rage? Some of my friends truly have celiac, but most just seem to be trying this as more of a fad, way to lose weight, etc. Don’t you think that the reason that they feel better is because they give up processed junk and sugar, not so much because of the actual gluten?

We just had a missionary stay with us from Australia, she is originally from Taiwan and has lived in Kenya as well. She says that Americans are the only ones who take supplements and vitamins and have all these food allergies. She thinks it is ridiculous to eat at McDonalds, then buy vitamins. She stayed with us 2 weeks and it was very interesting, even if she was out and about, she would NOT get fast food, she would go to the grocery and buy fresh meat and vegetables and come home and cook it, even though it costs more and was more time consuming. Also, a lot of my friends that are on these EXTREME diets cheat half the time anyway, so what is the point?

Ah yes. I too have watched people go from eating a basic diet of donuts, chips, fast food, and skittles – to eating a low fat or low-carb diet. They lose weight, feel better, and swear that the key is to cut out carbs, grains, gluten, eggs, beef, or butter.

Hey, hey, hey. Them’s fightin’ words to this girl. Nobody better be blaming my butter or beef on their poor health! Especially when we’re talking about the kind that comes from cows who are raised in a healthy environment. But enough about my beloved bovines. What is the healthiest way for all of us to eat?

I hate to disappoint you, but I do not believe that there is a one-size-fits-all diet.  I believe real food, in balance, based on what your body can tolerate and thrive on is the right diet for you. Learn to listen to your body, and nourish it.

I love my beef, and in fact, I believe I personally need quite a bit of (grass fed, if possible) red meat in my diet in order to maintain a healthy level of iron in my body. You might not need much or any beef. You may not need much of any variety of meat. Okay by me – that means more cow for this girl. Learn to listen to your body, and nourish it.

While some can’t tolerate grains or gluten, I can. I can’t eat them in large amounts, and in fact, I believe most of us should cut back on the grains just to make more room in our diet for fruits and vegetables.  Learn to listen to your body, and nourish it.

Here are my Paleo, Gluten Free, and Grain Free thoughts in a nutshell:

  • When you give up processed foods and instead eat more wholesome, nourishing foods, you will feel better and look better. This has very little to do with the fact that the food might be gluten free, paleo, or grain free.
  • If you truly are allergic to a certain food or if a food makes you sick, by all means, you should not eat it.  You might want to check into NAET though. It is possible to re-program our bodies so that they no longer reject certain foods as allergens. My boys and I have experienced this, and it works. Where we used to have food allergies, we no longer do, praise God!
  • A Gluten Free label does not automatically make a food healthy.
  • Cutting down on grains is beneficial, especially if the majority of what you eat is grainy. Our bodies need a better balance, and grains can be difficult to digest. Bready foods should not be our main nourishment focus.
  • If we’re cutting down our grains, we should not replace them with loads of almond flour and coconut flour. I believe these flours are fantastic additions to our diets, and wonderful to use in baking – especially if your body can not tolerate grains. But to eat them by the pound every day? Well, what happened to balance?

Paleo, Gluten Free, and Grain Free diets can be healthy and beneficial. But if you’re focused on cutting out foods for the wrong reasons, and not focused on overall body nourishment – you’re right back where you started.

Menu Plan for the Week ~ The Boys Are Back in Town

After a very busy and full three months of travel, mission trips, family reunions, and church camps – our family is all home and back together again. We have loved all the great experiences we’ve had all summer, especially loving that our boys have had such rich times of spiritual growth at church camp. We also really loved seeing family we don’t get to see very often. But being home together again and settling into a routine? We are so thankful!

I counted.  In all 31 days of July, I was home only 7 days. And those 7 little days I was home? I was only able to do bare minimum, like laundry and packing for the next trip. Phew! My house is dirty. My computer work is backed up. I don’t even know what’s in the back of my fridge. No matter. I’m refreshed and ready to settle back into home and work life again.

Also? I’ve missed you.  I really needed the computer break. I needed the break from writing day after day. I needed to step away from all the work it takes to keep up with this blog. Now that I’ve had this time of refreshment and break from the norm, I am so ready to sit here with you, sharing what I’ve learned, hearing about your experiences, and serving alongside you as we create heavenly homes and love our families together.

So, hi! I’m back. Praise God for how He works and the opportunities He provides to give us just what we need. I hope your summer has been full of God and the perfect lessons He teaches as we seek His will.

In other news:  As of today, I am 41 years old. It’s been a fun, happy birthday so far with all my men spoiling me. I look forward to celebrating my birthday with you, too. Watch for fun sales starting tonight!

Now how about a menu plan? I haven’t written one for the past few weeks, so here’s hoping I still remember how. After all, all the boys are back home, and a couple of them grew several inches during the summer. I’m getting shorter and shorter all the time in this family of growing boys. People who haven’t seen them for a few weeks have commented that they didn’t even recognize them at first. Seriously, these teenage boy growth spurts are nuts. Wow, I love these kids – and their appetites.

Menu Plan for the Week ~ How Do I Cook For Three People?

I believe we should label this summer “The Summer of Never Being Home.” Never is perhaps too strong a word, since in fact, we have been home for a few days here and there in between all the travel and camps. But we have certainly been away from home more than we’ve been at home. After a big trip to Nashville, a smaller trip to Oklahoma, two weeks at church camp – I am home for four days before taking off again.

Where am I going this time? Oooooh, yay me! I am blessed to go spend three days with my friend who had a baby a few weeks ago. I get to love on Mama and Daddy, love on baby, love on baby, love on baby…and maybe do a few dishes and some freezer cooking. Whatever Mama needs. I’m very excited.

After I get home, I’ll have two days, then head off again for another quick trip. Then, our family will all be home together just in time to begin our school year the first full week of August. Phew! This has been (and continues to be) one very full summer!

So let’s catch up a little here.  I’ve been online very little in the past two weeks since internet access out at church camp was quite difficult to come by.  I’ve missed you!  Week One at camp found our family in these roles:  Justus and Elias were both campers, Asa was a counselor, and Matt, Malachi, I were helping in the kitchen. Cooking for 140 campers and staff? So fun – and completely exhausting. Wow, and wow some more.

Week two of camp for us was quite different. It was Senior High session, which meant that Asa was/is now a camper; Justus, Elias, and Malachi were kitchen staff, and Matt and I were Bible class teachers. The week allowed for much more down-time for Matt and me. We studied, taught, studied some more, spent time with campers…and took naps and went to bed early every night. Really, I couldn’t believe how much sleep my body kept asking for. Apparently, this summer has worn me out more than I realized. :)  By Thursday, I believe we finally caught up on rest. It was a great week of refreshment for us. Matt and I loved team-teaching the youth. They blessed us so much, and working together in that role was wonderful.

As the week came to an end, Justus and Elias asked if they could please stay for one more week to help in the kitchen. They loved their role working together with three other middle school boys to keep up with running the dishwasher, wiping tables, filling drink jugs, and doing whatever else the head cook needed them to do. It’s always fun when you’re working with your friends, right? (And when you’re having adventures with catching mice in your cabin late at night. Oh boys.)

Because the head cook said he could certainly still use our boys’ help for the final week of Senior Session, we let them stay. So three boys are still at camp, and here we are at home with only our youngest, Malachi. It’s quiet, for sure.

So what to eat, what to eat? Well, for starters, we came home to find this in our garden:

Right after Matt brought in the first bunch, we snapped and steamed them – then absolutely pigged out on them. We could not get enough. I mean, we did not even take the time to use a fork. We picked them up and ate them like they were French fries. No shame. Wow, they are unbelievably delicious.

For these next few days at home with just the three of us, here is what we’ll be eating. (You’ll notice there’s no real plan here. What can I say? I’m not feeding an army this week, plus I’m planning to leave again in a few days. Meals will be light and simple.)

Breakfasts:

  • Blueberry Streusel Muffins (One batch will actually last us more than one day. Amazing.)
  • Dark Chocolate Almond Granola
  • Scrambled Cheesy Eggs
  • Fresh Fruit like crazy

Lunches and Dinners:

  • Spaghetti
  • Chef Salads
  • Tuna Salad
  • Cold Sandwiches
  • Healthier Cheese Dip
  • Creamy Mac and Cheese
  • Fruits, Veggies, Salads, and Smoothies

Here’s to a great week of continued refreshment, playing catch-up, and eating amazing summer produce!

A Few Simple Ingredients…

Mix and Match Real Food Ingredients

Have I told you how much I have loved the Meet and Greet events so far? And how much it made me want to meet ALL of you!!?!

One of the topics we discussed at the Springfield Meet and Greet was how nice it is that once you have some key, real food ingredients in your kitchen – it suddenly becomes much easier to put healthy, whole food meals on the table.

It’s so true! If you are just beginning to switch your kitchen to a real food kitchen, rest assured, your job is just about to become much easier!

I took a few minutes to make a list of the top two dozen ingredients I always try to have on hand in my kitchen. With these ingredients, I can make hundreds of recipes. Check it out:

  • Wheat or other grains (to grind into flour)
  • Oats
  • Brown Rice
  • Whole Wheat Pasta
  • Milk
  • Eggs
  • Peanut Butter (or peanuts to make your own!)
  • Coconut Oil
  • Butter
  • Yeast
  • Sucanat and/or Honey
  • Baking Powder
  • Baking Soda
  • Sea Salt
  • Cinnamon
  • Minced Onion
  • Garlic Powder
  • Tomato Sauce
  • Cheddar Cheese
  • Veggies (fresh or frozen)
  • Fruit (fresh and frozen)
  • Canned Salmon or Tuna
  • Beef
  • Chicken
  • Chocolate Chips (these are necessary – don’t you think?!)

So what can I make with the above list of ingredients? Well, off the top of my head, I can think of spaghetti, mac and cheese, tuna casserole, muffins, pancakes, a few casseroles, stir fry, and pizza. And if I stood on my head for a while and got more blood flowing, the list could go on and on…

But I won’t. I’d likely break something (like a wall or my neck) if I tried to stand on my head.

My 10 Favorite Real Food Pre-Packaged Convenience Foods

Can food be pre-packaged, convenient, tasty, and healthy – all at the same time? Why yes, as a matter of fact it can. Is it possible to fill your shopping cart with foods that are nourishing, delicious, and guilt free? Why yes, as a matter of fact it is. And finally, does anyone know where I might have put my favorite pen? Eh, that’s okay. I figured it was worth a shot to ask.

There are many healthy foods that take little to no time to prepare. Today as I was putting lunch on the table and asking the boys to pull out strawberries, carrots, peppers, and pickles from the fridge to go with our meal, I was once again struck by how easy it is to put healthy foods on the table.

Stop believing the myth that eating healthy food is difficult and time consuming! And seriously, if you come across my missing pen, would you please let me know?

10 Real Food Pre-Packaged Convenience Foods

There are dozens of foods you can buy that are full of nutrition, just because they were born that way. You might need to take the time to peel it, wash it, or slice it – but have you ever timed yourself opening a box of cookies, then working like mad to get the plastic pouch inside to tear open? In the meantime, you really should have just sliced a cucumber.

Here are 10 great ideas for real food pre-packaged convenience:

1. Mini Sweet Peppers

Oh my goodness, have you tried these? They are deliciously sweet, perfectly crunchy, and wonderful all by themselves or in a salad. We take these on the road trips, munch on them for snacks, add them to our lunch plates, and argue about which color tastes the sweetest. I can’t get enough of these.

2. Fresh Berries

Without a doubt, you can not compete with fresh berries picked and eaten right out of the garden. But during the times those are not available, we look for the best deals on strawberries, blueberries, blackberries, and raspberries at the store. Wash ’em and eat ’em. It doesn’t get any easier than pulling out berries for a snack or a side dish with a meal.

3. Grape or Cherry Tomatoes

Again, these are best fresh out of the garden. But since ours won’t be ready for another month or two, buying these pre-packaged works great for us.

 4. Baby Carrots

There is some controversy over buying packaged baby carrots because of the information many have heard about baby carrots being soaked in chlorine before being packaged. Read this info and do with it what you wish. As for me, sometimes buying a package of baby carrots is a huge help in my effort to provide my family with extra veggies during a meal.

5. Mixed Greens

Think making salad is too time consuming? Oh for Pete’s sake. Just buy a container of mixed greens and throw it on the table. It’s pre-washed and ready to eat. We go through a couple packs of these each week.

6. Pickles

Open a jar, put it on the table, your work here is done.

 7. Cheese Sticks

These can be a little pricey compared to buying a hunk of cheese and slicing it yourself. But when we’re talking about pre-packaged convenience foods, this one is a winner. Cheese is great for an on-the-go protein snack. Yay cheese.

8. Larabars

Yes, you can made these homemade. I’ve done it myself many times. But sometimes my family needs something to stuff in a pocket to eat in between soccer games. I watch for great sales and coupons through Amazon or Vitacost, and buy these by the case. They contain fruit and nuts only – a great healthy snack.

9. Fruit Leather

Again, I make this homemade sometimes too. But for a fun treat, I like getting pre-packaged fruit leather when I find it on sale.

10. Raisins

Buy them by the bag or in individual serving sized boxes. This pre-packaged convenience food is awesome for snacking. And really, aren’t those tiny little boxes just the cutest?

What else? Oh, I could list tons. Peanuts, cashews, almonds, bananas, apples, grapes, oranges – think of all the pre-packaged real foods there are to pick from! Never again can we ever claim that healthy eating is difficult. And never again should anyone carry my favorite pen out of my office, put it down, and forget about it.

Meatless Freezer Cooking: Bean and Cheese Burritos and Meatless Spaghetti Pie

One big mess, four awesome meals. It was a great morning!

Since we’re finished with our official school year, I got a couple boys involved in today’s freezer cooking. Elias (12) learned to make Meatless Spaghetti Pie (recipe in {Healthy} Make-Ahead Meals and Snacks eBook). He chose to use shell-shaped pasta, because when you’re the cook, you earn the privilege of picking from penne, spiral, shell, elbow….

Am I the only one who thinks picking the pasta shape is a fun activity? Maybe I just don’t get out enough.  Well, anyway, Elias picked shell noodles and did a great job putting together the Meatless Spaghetti Pies.

In the meantime, I made a triple batch of Whole Wheat Tortillas for Bean and Cheese Burritos. I then put together 23 burritos. Because we eat so much at our house, these burritos will only last us two meals. But, I now have 11 burritos in the freezer to pull out sometime in the next few weeks for an easy meal!

I can roll tortillas faster than my skillet can cook tortillas,
so I just start laying them out all over the counter while they wait for their turn to be cooked.

Hey, would you like to hear an obvious discovery I made this morning? When you’re making meatless meals, you don’t have to worry about thawing out meat before you cook. Sometimes my brilliance shocks you, doesn’t it?  Not only is this meatless thing a money saver, it’s also a time saver. But I still love my beef.

After the mess was cleaned up, we ended up with 23 burritos and 2 spaghetti pies. If I add plenty of sides to those pies, I can make it work to serve one tonight and freeze one for another day.

Cheesy Beef and Rice and Bacon Cheeseburger Casserole ~ Freezer Cooking Week One

Here’s hoping you got all your grocery shopping done for this challenge. If not, you can certainly join this challenge at any time!

Did you brown 8 pounds of hamburger in preparation for the freezer cooking? How long did it take?

Wait.  You didn’t time yourself cooking the hamburger meat? It’s possible that you aren’t as much of a food geek as I am. Be thankful.  I just get a kick out of knowing how much time it saves to double – or octuple, as the case may be in this beefy situation – in order to get ahead.

Today, we’re going to make both Cheesy Beef and Rice and Bacon Cheeseburger Casserole.

Why are we making both recipes in one day? Because they both call for rice. It makes sense, then, to cook up all the rice we need for both recipes, then divide it up and make our four casseroles. Oh the efficiency. Oh the productivity. Oh the smell of bacon…

Yeah, by the way, prepare yourself for the fact that your family will likely get excited about eating bacon once they smell it cooking today. If you weren’t planning to serve the Bacon Cheeseburger Casserole tonight, you may need to change your plan to accommodate all the bacon sniffers and the sad I can’t believe you’re making bacon and we can’t eat it faces in your home.

So let’s get started. 

I’m assuming you’ve already cooked your meat. If not, well – cook your meat. Because we’re making four casseroles today, you’ll need four pounds of cooked hamburger.

Now, begin by getting the rice cooking since that’s what takes the longest. The beauty of this: while your rice cooks, you can do 45 minutes of other work or play. Unless, of course, you want to stand at the stove watching your rice get plump and tender.  snore

We need 5 cups of brown rice for these four casseroles, so measure out 10 cups of water and bring it to a boil. Stir in 5 cups of rice, turn down your burner to simmer, cover the pot, then walk away. Here are more detailed instructions on cooking brown rice.

There it is. It can cook all by itself and will actually turn to mush if you stir it.
So put the lid on, set a timer, and walk away. 

In the meantime, you can cut your bacon into bite-sized pieces and get it cooking. You can also get out your casserole dishes, set out your other needed ingredients, and trim your fingernails – though not all at the same time or all in the same place.

Once your rice and bacon are finished cooking, divide the rice according to the recipes. Stir in remaining ingredients to create your four casseroles. I found that it was easiest to use two huge bowls – one for each recipe. Then I divided the contents of the bowl into two casserole dishes for each recipe.

Cheesy Beef and Rice x2

You might notice that since I was making so many cheesy casseroles this week, I cheated and bought a big bag of pre-shredded Colby jack cheese. I know.  There are healthier options, and I always recommend the healthier options. But it’s still cheese, right? At least I didn’t purchase a pre-shredded Snicker bar (which doesn’t even make sense, but I was trying to divert your attention away from my orange cheese).

Bacon Cheeseburger Casserole x2

I actually made these four casseroles over the weekend so that I could get ahead a little bit on putting together these challenge posts. How lovely it was to put a Cheesy Beef and Rice plus a Bacon Cheeseburger Casserole into the freezer. I then put one Cheesy Beef and Rice into the oven too cook and serve for dinner, and put the additional Bacon Cheeseburger Casserole into the fridge to serve another day this week. One big mess, four great meals!

See how easy it was to set out delicious and healthy veggie and fruit side dishes with this Cheesy Beef and Rice? I cooked some frozen green beans, set out a package of mixed greens along with some homemade dressings that were already made and in the fridge, sliced a couple of pears, and called in the family. Except for about one serving of greens, this entire spread was gone in about a half hour.
