Thank you all so much for your “hugs” and support yesterday. I love all your suggestions about buying a shirt “for my mom” and giving it to someone in need. I’m going to consider starting a new tradition next year. What great ideas you shared! You are all awesome!

I DID have a wonderful Mother’s Day. Matt had to work a big part of the day (Mother’s Day at a restaurant means all employees on board, you know)…so we waited until the big crowd had thinned out and the boys “took me out to Daddy’s restaurant” for lunch. Matt was able to sit and eat with us at that point…AND my three older boys actually pitched in and paid for my meal. Are they so sweet or what?

Our Healthy Eating Journey, Wrapping it Up

I had finally accepted and realized that our bodies needed nourishment. Eating food wasn’t just about filling a hole. Eating food was about providing our bodies with all of the right nutrients, vitamins, minerals, enzymes and fats.

I re-read Nourishing Traditions. I asked millions of questions of my friends who knew more about healthy eating than I did.  I got completely overwhelmed.  I began throwing processed foods out of my pantry. I pretty much turned into a Nazi about healthy eating. If it wasn’t organic, raw, fermented, grass fed, soaked whole grain or cultured…I was scared to let it pass our lips. We would probably die! We would for sure get cancer! Malachi’s eczema would get worse! My asthma would get worse! We would all get terribly sick!

This way of thinking turned me into a nervous wreck anytime we went anywhere. If I was at home, I could control what we ate. But if we were at a friend’s house or out of town visiting family or if someone offered my children candy…I was scared to death to let us eat! Those foods were poison!! It sounds crazy (because it was) but that’s how I was when I first learned about eating nourishing foods. When you’re first learning about the harmful ways animals are raised for meat and milk and how many pesticides are sprayed on produce, it can make you want to run away screaming. 

It took me a few months to come around. Part of it was that I just needed to wrap my brain around this new lifestyle. I had to figure out how to eat and serve my family a healthy diet. I had to learn where good food sources were. I had to learn to spend money on food (and figure out where that money was going to come from). I had to learn how to grow my garden organically. I had to learn how to cook and bake differently.

But I had to learn to CHILL OUT.

I learned that while we could try our best to eat the best foods we could most of the time…we could never eat perfect foods all of the time. And guess what? That’s okay! The stress of trying to eat perfectly, and the fears I had developed when we couldn’t were probably more harmful than the occasional store bought pizza or non-organic apple we might eat.

And so I discovered a healthy balance. More importantly, so that our children would come along with us on this journey and not be afraid that Mommy would be serving them yet another weird dish that they’d never heard of and that they hated…I learned to re-create all of our favorite foods. Now, we could eat all of our favorites (Pizza, Mac and Cheese, Tacos, Nachos, Spaghetti, etc.), but they were made with healthy and wholesome ingredients! The kids were happy. The parents were happy. Our bodies were happy.

So that’s where we’ve landed. We don’t eat a perfect diet…we just do the best we can. Our journey continues, because that’s what journeys do, don’t they?

Now my goal is to continue to develop more healthy and tasty recipes that my family loves and share them with you!

I’m wrapping up this series about Our Healthy Eating Journey today, with plans to launch into another series of sorts in which I’ll share some simple steps you can take toward healthy eating if this journey is new to you. I’ll share specific information about healthy meats, dairy products, eggs, spices, grains, produce, fats, etc. More importantly, I’ll give you ideas and tools for where to start. You DON’T need to change everything all at once!

My goal is to help you know that eating healthy is a possibility for EVERYONE. No matter what your budget, your cooking ability and experience, your understanding of nutritious food. You can do this!

Healthy eating tastes so good! Learn along with me that changing over to a healthy lifestyle is simple, affordable and delicious!

We survived our nine soccer games last week. We survived the musical. In fact, games and musical were better than great! You’ve heard enough about our soccer week, but I’ll share more about the musical later…because you do want to see my boys in their costumes, right? 

Now, we are enjoying some out of town guests for a couple of days! I’ll share more on Gratituesday!

Here’s our menu for this week! Oh, and I’m happy to report that we have way less than nine soccer games this week…plus NO musical practices! Whatever shall I do with all my extra time?!

Our boys’ musical is this coming Saturday. Their costumes are coming along…I’ll be sure to get some pictures to show you what I came up with. Again, making costumes? Not my gift. Nodding yes when someone offers to help me. Oh yeah, I can do that.

How I Plan our Meals + Our Menu Plan This Week

Recently one of my readers asked if I have any special method for menu planning. When planning a menu, I usually ask myself these questions:

  • What do we have going on this week (field trips, soccer games, events, church activities, company coming, etc)?
  • What is Matt’s work schedule this week?
  • What do we have in the fridge that needs to be eaten up?
  • What did we eat last week? (so I can offer a variety if possible)
  • What do I have in the freezers and pantry?

Then, I plan meals accordingly. If we have soccer games, I’ll try to plan a quick meal before we leave…or plan something easy to heat up when we get home. If Matt is working in an evening, I’ll plan a bigger meal for lunchtime so he can share it with us. If we have a homeschool activity in the morning, I’ll plan something quick to heat up when we get home (or something transportable so we can eat on the way there or back).

I try to plan a variety, so that we don’t have three chicken meals in a row or the same veggie all week long. This helps keep food exciting for the kids…plus makes sure we get many different kinds of nutrients each day.

Hey, question for you of the UTMOST importance (not really)…

We got our toaster as a wedding gift and it has lasted 15  years (which means it’s actually 105 years old in toaster years – impressive). It’s been good to us and has toasted hundreds upon thousands of bready items. It is now on it’s last leg…sometimes toasting…sometimes forgetting to toast…sometimes sleeping through the entire process.

It’s time to get a new toaster. My question is…do you have any recommendations? Do you know of a great brand of toasters? OR do you think we should just get a toaster oven instead?!

See, I told you my question was important.

Freezer Cooking Diary of the Week

I’m gonna just admit to you that I bit off more than I could chew this week (so pardon me while I type with my mouth full).

This was not a good week for me to try to make extra food. This would have been a good week for me to HAVE extra food in my freezer ready to pull out and warm up quickly. But what did I do? I cooked extra food. In the midst of running around like a funky chicken taking my kids to soccer and musical practices…putting the final touches on all of our LTC projects…preparing for a short trip…working on costumes…going on a field trip…sorting through spring/summer clothing…and doing school work.

WHAT was I thinking?

I think I was thinking that having extra food on hand in the coming weeks will be very handy, and I’m right…it will be very handy. But I’m whipped.

I am NOT whining. No ma’am. I’m just saying that maybe next time I should make a better judgment call on when I should do extra cooking. 

And also, I’m letting you know that every single room of my house looks like a bomb went off. There were apparently separate bombs for every room and some bombs were larger than others and had a flying clothing effect.

Ah, but at least I have lots of prepared food in my freezer now, eh?

Here’s a run down of the week:

Sunday night I started a pan of beans to soak and mixed up a double batch of tortillas to soak overnight.

Monday morning before schooltime, I started cooking beans and rolling out tortillas. I put together the Bean and Cheese Burritos and got them into the freezer by noon. I then mixed up a double batch of dough for Homemade Pizza Pockets and Beefy Enchilada Bake to soak. I also made a batch of Homemade Ice Cream for the Ice Cream Experiment. That was it for Monday.

Tuesday was the biggest cooking day as the only extra thing we had going on was one soccer practice.

I got five pounds of meat cooking before breakfast. Once I got the kids started on their math and other individual work, I mixed up a double batch of Corn Dog Muffins and got those into the oven.

The meat was then finished browning, so I stirred up three pounds of Sloppy Joes and put them into jars for the freezer. The remaining two pounds of hamburger helped make up two big pans of Beefy Enchilada Bake.

I then set about putting together Homemade Pizza Pockets and Mini Apple Pies. I had to take a break somewhere in there and feed us all lunch. Everyone was disappointed that we weren’t having pizza pockets and apple pie for lunch. (Ah, but what they didn’t know what that I had secretly stuck a big apple pie in the oven for later!)

Finally, I got the Mini Apple Pies finished and put into the freezer. 
Those will make a wonderful breakfast some morning soon!

I finished Tuesday off by mixing up a double batch of Giant Breakfast Cookies to soak for the next day.

Wednesday I spent the morning baking Giant Breakfast Cookies. While each round of cookies was in the oven baking, I’d go tackle some homework help or spring clothes sorting.

I took some time to shake up some Ranch  Dressing Mix, Italian Dressing Mixand Taco Seasoning Mix. I LOVE having these mixes ready for when I need to make dressing or dip or tacos or…all the other things I use making these mixes.

And there you go. I didn’t quite finish everything on my list, but that’s okay! I think we will be using many of these convenience foods next week while we CLEAN UP the war zone that is our house.

I spent the weekend fighting a sinus infection. My Gratituesday post this week may be about how thankful I am for soft kleenexes, because you just don’t realize how much you appreciate the softness until you go through two entire boxes in three days. I promise I’ll write about something else for Gratituesday. But kudos to the folks at Puffs. Many, many thanks.

In other news, I have three weeks to make two puppy costumes, a goat costume and a pig costume. Our boys are in a Three Little Pigs musical, which is going to be SO STINKIN’ CUTE. But, making costumes is not my gift. Do you suppose they could just be super heroes? I have all kinds of super hero costumes already. Picture it:  Super Man comes in and saves the Two Little Pigs and The One Little Batman from the Big Bad Wolf and everyone lives happily ever after. The end. I like it. I’m going to talk to the director and see if she’ll go for it.

Just in case she doesn’t, does anyone want to come help me make costumes?

Menu Plan for the Week

You all know that food makes me excited. Can I tell you about my latest little fun food thing? I found these cute mini chocolate chips at Amazon. They don’t have any soy lecithin in them (my reason for looking). They’re so stinkin’ cute and fun to bake with. Yep, doesn’t take much to entertain us all around here. (And yes, I often do make my own chocolate chips, but sometimes a girl just needs a little chocolate chip convenience.)

I’ve also got to tell you about how we tried Valerie’s Bacon Cheddar Meatloaves  last week! We’d been excited all week long because, hello? Bacon, cheddar cheese and beef all together in one dish? How would that not be good?

So Saturday night came and I had the meatloaves in the oven baking…went to the fridge to get out the bacon to wrap around the loaves for the last phase of baking…and DIDN’T HAVE ANY BACON. I knew I had some bacon in there. Except that I didn’t.   And I was WAY too scary looking to run to the store (which thankfully I remembered before I went). 

So we had Cheddar Meatloaves , which were still amazingly wonderful, by the way.

Here’s our menu for the week, and here’s hoping I have all the ingredients this time:

Sunday, March 7
Oatmeal, pears
Fund raising meal for youth mission trip
Creamy mac and cheese, steamed broccoli and carrots

Monday, March 8
Chocolate chip pancakes, bananas
Homemade corn dogs , apple slices
Roasted chicken, potatoes, carrots, gravy

Tuesday, March 9
Mini breakfast pizza, oranges
Grilled turkey and cheese sandwiches, strawberry peach slushie
Sloppy cornbread, tossed salad

Wednesday, March 10
Orange muffins, fruit and kefir smoothies
Cheddar ranch burgers, green beans
Chicken and noodles, carrot sticks, fruit salad

Thursday, March 11
Fried eggs, cinnamon swirl bread, clementines
Turkey sausage, mashed potato pancakes, peas
Italian stew with green beans

Friday, March 12
Peanut butter honey toast, canned peaches
Taco potatoes
Lamb-burgers on whole wheat hamburger buns, onion rings

Saturday, March 13
Mom is Great breakfast Cake
Leftover buffet
BBQ meatballs, baked potatoes, asparagus
