How I Plan our Meals + Our Menu Plan This Week

April 11, 2010 by Laura 60 Comments

Download free menu planners here!

Recently one of my readers asked if I have any special method for menu planning. When planning a menu, I usually ask myself these questions:

  • What do we have going on this week (field trips, soccer games, events, church activities, company coming, etc)?
  • What is Matt’s work schedule this week?
  • What do we have in the fridge that needs to be eaten up?
  • What did we eat last week? (so I can offer a variety if possible)
  • What do I have in the freezers and pantry?

Then, I plan meals accordingly. If we have soccer games, I’ll try to plan a quick meal before we leave…or plan something easy to heat up when we get home. If Matt is working in an evening, I’ll plan a bigger meal for lunchtime so he can share it with us. If we have a homeschool activity in the morning, I’ll plan something quick to heat up when we get home (or something transportable so we can eat on the way there or back).

I try to plan a variety, so that we don’t have three chicken meals in a row or the same veggie all week long. This helps keep food exciting for the kids…plus makes sure we get many different kinds of nutrients each day.

What about you…do you have a special way of planning your meals?

Sunday, April 11
Oatmeal, peaches
Leg of lamb, baked potatoes, honey glazed carrots, peas, honey wheat muffins
Homemade pizza pockets, fruit

Monday, April 12
Whole wheat waffles, blueberries
Fried chicken legs, mashed potatoes, gravy, green beans
Bean and cheese burritos, clementines

Tuesday, April 13
Mini breakfast pizzas, oranges
Spaghetti, tossed salad
Chicken fried steak strips, potato wedges, steamed broccoli and carrots

Wednesday, April 14
Chocolate chocolate chip muffins (recipe coming THIS week – finally!)
Beefy enchilada bake, tossed salad
Simple soaked pancakes, turkey sausage

Thursday, April 15
Breakfast burritos, applesauce
Cheeseburger macaroni, steamed carrots
Italian roast wraps, fruit salad

Friday, April 16
Giant breakfast cookies, pears
Corn dog muffins, fruit-kefir smoothies, carrot sticks
Homemade pizza

Saturday, April 17
Scrambled eggs, toast, fruit
Leftover buffet
Grilled cheese sandwiches, pasta salad, carrot sticks

Hey, question for you of the UTMOST importance (not really)…

We got our toaster as a wedding gift and it has lasted 15  years (which means it’s actually 105 years old in toaster years – impressive). It’s been good to us and has toasted hundreds upon thousands of bready items. It is now on it’s last leg…sometimes toasting…sometimes forgetting to toast…sometimes sleeping through the entire process.

It’s time to get a new toaster. My question is…do you have any recommendations? Do you know of a great brand of toasters? OR do you think we should just get a toaster oven instead?!

See, I told you my question was important.

Menu Plan for the Week

macandcheese2sm

I spent the weekend fighting a sinus infection. My Gratituesday post this week may be about how thankful I am for soft kleenexes, because you just don’t realize how much you appreciate the softness until you go through two entire boxes in three days. I promise I’ll write about something else for Gratituesday. But kudos to the folks at Puffs. Many, many thanks.

In other news, I have three weeks to make two puppy costumes, a goat costume and a pig costume. Our boys are in a Three Little Pigs musical, which is going to be SO STINKIN’ CUTE. But, making costumes is not my gift. Do you suppose they could just be super heroes? I have all kinds of super hero costumes already. Picture it:  Super Man comes in and saves the Two Little Pigs and The One Little Batman from the Big Bad Wolf and everyone lives happily ever after. The end. I like it. I’m going to talk to the director and see if she’ll go for it.

Just in case she doesn’t, does anyone want to come help me make costumes?

And now, without any kind of nice segue, here is our menu for this week:

Sunday, March 28
Oatmeal, peaches
Soccer game – packed sandwiches, etc.
Creamy mac and cheese, steamed carrots

Monday, March 29
Simple soaked pancakes, blueberries
Bean and rice bowls with salsa and kreme fresh, oranges
BBQ meatballs, baked potatoes, green beans

Tuesday, March 30
Scrambled egg sandwiches, clementines
Spaghetti with meat sauce, tossed salad
Rice and veggie stir fry, pineapple

Wednesday, March 31
Warm chocolate soother, toast, apple slices
Beefy enchilada bake, fruit-kefir smoothies
Three cheese garlic chicken pasta, tossed salad, fruit

Thursday, April 1
Cinnamon swirl bread, pears
Salmon patties, steamed broccoli and cauliflower
Hamburgers on whole wheat hamburger buns, carrot sticks, apple slices

Friday, April 2
Spending the day with friends…meals??!!

Saturday, April 3
Scrambled eggs, toast, fruit
Tortilla meat and cheese wraps, carrots, apples
Chicken sandwiches, onion rings

Menu Plan for the Week

March 21, 2010 by Laura 12 Comments

This post may contain affiliate links. For more information, please see our disclosure policy.

On Thursday of last week, it was 68 degrees. The next day it snowed. This…is springtime in Nebraska. I am happy to report though that within the last week I have seen three or even four blades of green grass. And also, I heard something strange the other day and it turned out to be the beautiful chirping of a bird. I think it is so nice that the birds are kind enough to fly back and join us in the springtime.

Our family is in the midst of lots of spring activities. We’re busy getting ready for LTC (Leadership Training for Christ), a convention for 3rd graders up through 12th graders. Asa and Justus have been studying hard for the Bible bowl, plus practicing several times a week for dramas and puppet shows and choirs. Soccer season has also started for some of our boys and will start for ALL of them in two weeks. Did I mention all the boys are in our home school musical in April?

I’m letting you know about all this because if I forget to complete any sentences around here…it’s because my brain might be on the fried side (more than normal).

Thank goodness for the menu plan!

Sunday, March 21
Oatmeal, pears
Cheesy beef and rice, green beans
Taco Potatoes, applesauce

Monday, March 22
Whole wheat waffles, blueberries
Potato soup, fruit-kefir smoothies, carrot sticks
Cheddar ranch burgers, steamed carrots, broccoli and cauliflower

Tuesday, March 23
Mini breakfast pizza, oranges
Cheesy Salsa Enchiladas, tossed salad
Chicken and noodles, carrots

Wednesday, March 24
Chocolate chocolate chip muffins, apples
Turkey sausage, ranch potato wedges, peas
Homemade pizza, tossed salad, fruit

Thursday, March 25
Warm vanilla soother, homemade oat crunch cereal
Corn dog muffins  , carrot sticks, apples
Chicken Fried Steak Strips, simple mashed potatoes, gravy, asparagus

Friday, March 26
Sourdough English muffins with peanut butter and honey, pears
Grilled cheese, tomato soup
Lamb-burgers on whole wheat hamburger buns, homemade onion rings

Saturday, March 27
Honey whole wheat bagels, milk
Leftover buffet
Italian stew with green beans, tossed salad

If you haven’t already, be sure to sign up to win free Learn and Grow Pre-school Curriculum! A random winner will be selected in just a few more days!

Also, I just wanted to let you know that while I know you are are anxiously awaiting the continuation of my Journey to Healthy Eating series, I may take a break from it this week (don’t throw tomatoes!). Last week’s entry kinda took the soup out of me, plus I’ve been busy trying to catch up on other writing I’ve needed to get done. I’m also not sure I’ll get around to another post in the Becoming a Better Help Meet series this week. In the meantime, keep praying for your husbands!! :)

Ooh, and I’m very excited about a couple of new giveaways coming up this week. Stay tuned!

You all know that food makes me excited. Can I tell you about my latest little fun food thing? I found these cute mini chocolate chips at Amazon. They don’t have any soy lecithin in them (my reason for looking). They’re so stinkin’ cute and fun to bake with. Yep, doesn’t take much to entertain us all around here. (And yes, I often do make my own chocolate chips, but sometimes a girl just needs a little chocolate chip convenience.)

I’ve also got to tell you about how we tried Valerie’s Bacon Cheddar Meatloaves  last week! We’d been excited all week long because, hello? Bacon, cheddar cheese and beef all together in one dish? How would that not be good?

So Saturday night came and I had the meatloaves in the oven baking…went to the fridge to get out the bacon to wrap around the loaves for the last phase of baking…and DIDN’T HAVE ANY BACON. I knew I had some bacon in there. Except that I didn’t.   And I was WAY too scary looking to run to the store (which thankfully I remembered before I went).

So we had Cheddar Meatloaves , which were still amazingly wonderful, by the way.

cheddar_meatloaves

Here’s our menu for the week, and here’s hoping I have all the ingredients this time:

Sunday, March 7
Oatmeal, pears
Fund raising meal for youth mission trip
Creamy mac and cheese, steamed broccoli and carrots

Monday, March 8
Chocolate chip pancakes, bananas
Homemade corn dogs , apple slices
Roasted chicken, potatoes, carrots, gravy

Tuesday, March 9
Mini breakfast pizza, oranges
Grilled turkey and cheese sandwiches, strawberry peach slushie
Sloppy cornbread, tossed salad

Wednesday, March 10
Orange muffins, fruit and kefir smoothies
Cheddar ranch burgers, green beans
Chicken and noodles, carrot sticks, fruit salad

Thursday, March 11
Fried eggs, cinnamon swirl bread, clementines
Turkey sausage, mashed potato pancakes, peas
Italian stew with green beans

Friday, March 12
Peanut butter honey toast, canned peaches
Taco potatoes
Lamb-burgers on whole wheat hamburger buns, onion rings

Saturday, March 13
Mom is Great breakfast Cake
Leftover buffet
BBQ meatballs, baked potatoes, asparagus
