It’s been a very soccer filled weekend for us. Between watching World Cup games together and running back and forth to Lincoln for Justus to play in a soccer tournament…we’ve been watching a LOT of games. At one point actually, we were watching Justus’ game from the van and listening to the remainder of the US vs. Ghana game on the radio. Ever watched one game and listened to another at the same time? It was a little bit interesting. I was never quite sure when to shout and when to cringe. Wow, are we a die hard soccer family, or what?

(I won’t even tell you about the great lengths we went to since we were out of town for the day and just HAD to watch US play Ghana. Hey, Matt and I have been to Ghana before. It is a special place to us. We were gonna see that game!)

Here’s our menu for this week:

Sunday, June 27
Oatmeal, pears
Lamb roast, potatoes, carrots, gravy
Leftovers

Wednesday, June 30

Homemade pizza, grapes
Simple soaked pancakes, homemade peanut butter and maple syrup, bacon

Thursday, July 1
Scramble eggs, turkey sausage, peaches
Tuna salad on tomatoes, fresh pineapple, crispy cheese crackers
Tacos on homemade tortillas, watermelon

Friday, July 2
Giant breakfast cookies, cantaloupe
Sandwiches, carrots, apples
Going to a cookout

Saturday, July 3

Pretty menu planners make me happy. They are much nicer to look at than a piece of faded paper ripped out of a notebook and thrown onto my fridge. Any menu planner is better than having no plan at all, but still…isn’t it more fun to be pretty and organized?

I’ve been wanting to work on some new summertime planners to share with you, but since I was having a hard time getting a round tuit, I asked Char of Delight-Design to make some for me. And for you. :)

Ah, she did way better than I could have ever done. Take a look at these! Not only did Char create pretty menu planners…she made pretty grocery lists to go with them! Just click the link below each image to download, print and share as many as you would like!!

Menu Plan for the Week

Between having lots of company and doing lots of traveling this summer…I have decided that my “menu plan” for the next few weeks needs to look a little bit different than it normally does. While I love to be organized, especially when it comes to feeding guests, sometimes a girl needs to be able to fly by the seat of her pants. Whatever that looks like.

Seriously, who comes up with these phrases? Go ahead…picture me. Flying. By the seat of my pants. In my kitchen. I’ll likely konk my shoulder on the corner of a cabinet door, ram my head into a watermelon and land with my elbow in the butter dish in the process, but whatever.

Instead of outlining my meals day by day…I’ve just made a list of meal and snack ideas to draw from. That way, depending on what each day holds, how many people I’m feeding, or what activity we’re running off to…I can pick and choose what food will work best for each day.

Breakfast Ideas:

  • Whole Wheat Sourdough Biscuits with fruit
  • Strawberry Shortcake (yes, for breakfast…look how healthy it is!!)
  • Giant Breakfast Cookies
  • Orange Muffins
  • Scrambled Eggs, Smoothies
  • Creamy Orange Cooler

Lunch and Dinner Ideas:

  • Taco Potatoes
  • Italian Roast Wraps
  • Black Bean Salsa with Kettle corn chips
  • Creamy Mac and Cheese
  • Lambburgers
  • Pizza
  • Chicken Fried Steak Strips
  • Spicy Avodado Dip
  • Rice and Veggie Stir Fry
  • Taco Salad
  • Build your own Sub Sandwich

Snack Ideas:

  • Watermelon
  • Popcorn
  • Chewy Granola Bars
  • Katie’s Tater Skin Crispies
  • Katie’s Power Bars
  • Cheese and Crackers*

*I was so excited for the folks at Triscuit Home Farming to send me two boxes of their crackers, plus a $20 gift card to purchase supplies to plant herbs from the Plantable Seed Cards inside each box! Did you know that herb seeds come tucked away in each box of Triscuits!?  I’ve got my supplies and will be planting my herbs this week and will patiently await my fresh basil and fresh dill!!! Thanks Triscuit Home Farming! Mmmm…fresh basil!

I suppose it goes without saying that we’ll be eating a lot of strawberries and salad this week. I’m experimenting with a healthy strawberry shortcake recipe today that I can hopefully share soon in the Healthy Celebrations series!

And speaking of healthy…um…or not so healthy…take note of what we’re having for lunch Tuesday. It’s Asa’s birthday, which means he gets to choose everything we eat that day. He hesitantly asked if we could please have ramen noodles.  Blech.  Okay, since it’s your birthday. Can’t be worse than hot dogs. I find it funny that he thinks of ramen noodles as a treat! And um…$0.18/pack? WHAT is this stuff made of? Never mind.  I don’t want to know.

In other news, we have an extra little boy “moving in with us” for a few weeks off and on all summer. Remember the red head? We love having him here! Plus, some friends from out of town arrived last night to stay for the week. We’re in for some busy, fun days!!

Here’s what we’ll be eating:

Sunday, June 6
Strawberry bread, bananas
Pizza casserole, tossed salad, strawberry shortcake
Grilled cheese sandwiches, strawberries and cream, carrot sticks

Monday, June 7
Scrambled eggs, turkey sausage, creamy orange cooler
Taco salad, fresh pineapple
Grilled hamburgers on whole wheat buns, potato salad, peas

Tuesday, June 8 (Asa’s birthday choices)
Whole wheat cinnamon rolls, fruit
Chicken strips, ramen noodles, pineapple, strawberries
Southside Grille, lemon pound cake, ice cream

Wednesday, June 9
Strawberry crepes with whipped cream
Picnic lunch at the park – sandwiches, fruit, chips
Fried chicken, mashed potatoes, gravy, green beans

Thursday, June 10
Chocolate chip pancakes, applesauce
Creamy mac and cheese, steamed broccoli
Homemade pizza, tossed salad

Friday, June 11
Strawberry peach slushie, peanut butter honey toast
Tuna salad on crispy cheese crackers, cantaloupe
Tacos on homemade tortillas, watermelon

Saturday, June 12
Whole wheat donuts, fruit
Chicken quesadillas, apple slices
Rice and veggie stir fry with chicken, zucchini, carrots and broccoli

Snacks to have on hand or to make for our guests:

  • Chocolate Chocolate Chip Muffins
  • Chewy Granola Bars
  • Soft Pretzels
  • Strawberry Milkshake

Print off some fun free menu planners here!

We’re enjoying some time with family this weekend and into this week, so I just wanted to pop in long enough to say that shock upon shock, there will not be a menu plan posted this week.

I know you’ll hardly be able to stand not knowing when we’re eating peas and if we’re making slushies…but it’s all up in the air right now. We’re winging it. You didn’t know I could do that, did you?

If you need some menu planning ideas for this week, just scroll through these several hundred menus I have posted.

Happy Memorial Day Weekend!

Menu Plan for the Week

May 23, 2010 by Laura 4 Comments

Remember how I said that our last soccer games were last week? Yeah, just kidding. We got all the way to Lincoln last Sunday afternoon (an hour away) and the gates were locked. We had a team full of very sad ten year old boys on our hands.

I was disappointed too, but since we were in Lincoln already, we took advantage of our “trip to the city” and went to Target and Kohls to make some exchanges. I loved it. But Justus? Shopping was NOT his idea of a fun alternative to playing a soccer game. Poor guy.

So anyway, this week we’re trying again. For real…our last soccer game for the season is today. Probably. I’m pretty sure. Most likely. I think.

Here’s our menu for the week:

Sunday, May 23
Oatmeal, pears
Taco Potatoes, oranges
Soccer team meet up at Culvers after game

Monday, May 24
Honey whole wheat bagels, apples
Black bean taco salad
Cheesy beef and rice, green beans

Tuesday, May 25
Mini apple pies
Bean and rice bowls, watermelon
Cheesy Salsa Enchiladas, tossed salad

Wednesday, May 26
Cinnamon swirl bread, cantaloupe
Cheddar Ranch Burgers on whole wheat hamburger buns, onion rings
Simple soaked pancakes, turkey sausage, scrambled eggs

Thursday, May 27
Breakfast cake, bananas
Spaghetti, tossed salad
Roast, potatoes, carrots, gravy

Friday – Saturday…up in the air weekend plans  :)

Wow, I am loving our fresh lettuce from the garden right now! Are any of you able to enjoy anything yummy from your garden yet?!

Thank you all so much for your “hugs” and support yesterday. I love all your suggestions about buying a shirt “for my mom” and giving it to someone in need. I’m going to consider starting a new tradition next year. What great ideas you shared! You are all awesome!

I DID have a wonderful Mother’s Day. Matt had to work a big part of the day (Mother’s Day at a restaurant means all employees on board, you know)…so we waited until the big crowd had thinned out and the boys “took me out to Daddy’s restaurant” for lunch. Matt was able to sit and eat with us at that point…AND my three older boys actually pitched in and paid for my meal. Are they so sweet or what?

I’m finally getting my menu posted for ya!

Monday, May 10
Simple soaked pancakes, blueberries
Grilled cheese sandwiches, tomato soup, carrots
Tacos

Tuesday, May 11
Chocolate chocolate chip muffins, bananas
Turkey sausage, hashbrowns, creamy orange cooler
Popcorn chicken, ranch potato wedges, peas

Wednesday, May 12
Scrambled eggs, fruit-kefir smoothies
Salmon patties, creamy coleslaw, sweet baked beans
Sloppy cornbread, green beans

Thursday, May 13
Cinnamon swirl bread, strawberry peach slushies
Tuna salad on crispy cheese crackers, strawberry milkshakes
Lasagna, tossed salad

Friday, May 14
Peanut butter honey toast, applesauce
Picnic in the park – sandwiches, chips, carrots, fruit leather
Hamburgers on whole wheat hamburger buns, onion rings

Saturday, May 15
Homemade oat crunch cereal with dried fruit
Leftovers
Crunchy ranch chicken, rice and veggie stir fry

You may be interested to know that I took your advice and got myself a new toaster oven. Thanks to Swagbucks, I was able to order a free toaster oven that is exactly what we need! We chose a Euro-Pro Convection 6-Slice Toast R Oven. We’re having so much fun warming our food in it and of course, toasting bread and biscuits in it. Thanks for your help and advice on this!
