How My Kids Adapted a Recipe to Make it Healthier, a Brownie Pudding Cake Recipe, and a “Teaching Your Kids to Cook” eBook Giveaway!

While I do the majority of the cooking at our house, simply because I love it so much, we have slowly but surely been training our boys to read recipes and put simple meals together. Remember how they cooked for me on Mother’s Day? Dad played a big role in that, but still, it was impressive to me (as I sat locked in my office listening and blogging the play-by-play of the action) to hear that our boys know where ingredients are, and how to figure out a brand new recipe.

Most impressive to me, however, is the fact that our boys have learned to adapt recipes to make them healthier. I really had no idea that I was inadvertently teaching them this skill as we’ve cooked together. But as our two middle boys (ages 10 and 12) dug through our Better Homes and Gardens cookbook one day recently and decided to make a Brownie Pudding Cake, I found myself preparing to walk them through how to exchange less healthy ingredients for those that we typically bake with.

To my surprise, my assistance was never needed. I heard them reading the recipe aloud, “1/4 cup sugar – okay, I’ll get out the sucanat.” and  “1 Tablespoon cooking oil…I think coconut oil would be the best one for this cake.”

I stayed out of the kitchen the entire time. They had it under control and knew just what to do. Might they still need my assistance at times while they are cooking? Of course. Not everything about “healthifying” a recipe is as easy as switching out sugar for sucanat, one for one. But it goes to show that if you talk through recipes while you’re cooking with your kids, they will learn an incredible amount, whether you realize it or not!

In case you’re interested, here is my boys’ version of a very tasty cake. They even got a picture…after we taste tested it. :)

Coppinger Boys’ Brownie Pudding CakeYum

1/2 cup whole wheat flour
1/4 cup sucanat
1 Tablespoon unsweetened cocoa powder
1 teaspoon baking powder
1/4 cup milk
1 Tablespoon melted coconut oil
1/2 teaspoon vanilla extract
1/3 cup sucanat
2 Tablespoons cocoa powder
3/4 cup boiling water

Stir together flour, 1/4 cup sucanat, 1 Tablespoon cocoa, and the baking powder. Add milk, oil and vanilla, stirring until smooth. Spread batter in a 1-quart baking dish. Combine 1/3 cup sucanat, and the remaining 2 Tablespoons of cocoa powder. Gradually stir in boiling water. Pour evenly over batter. Bake at 350° for about 30 minutes or until a toothpick inserted into the middle of the cake comes out clean. Serve warm. Makes 6 servings.

Cook Once, Eat Twice (or more) {Eat Healthy ~ Save Time}

When I make a lasagna, I must cook some meat, add some sauce and spices, layer the noodles with the meat sauce and cheese, then wash a few dishes.

When I make two lasagnas, I must cook some meat, add some sauce and spices, layer the noodles with the meat sauce and cheese, then wash a few dishes.

When I made three lasagnas, I must cook some meat, add some sauce and spices, layer the noodles with the meat sauce and cheese, then wash a few dishes.

I’ve even made up to eight lasagnas at one time. Even then, my job was to (all together now…) cook some meat, add some sauce and spices, layer the noodles with the meat sauce and cheese, then wash a few dishes.

Whether I’m making one lasagna or eight, I dirty the same number of dishes while preparing the food. I take barely any extra time to make extra lasagnas, so for me, it’s a no-brainer. Why would I just make one lasagna when I can make three (or eight)?

(And by the way, I typically only make eight lasagnas at once when I’m feeding a big soccer team. While my boy-filled family does eat a lot, we are not up to eating 1.333 lasagnas each…yet.)

The same “Cook Once, Eat Twice (or More)” concept applies to almost everything I make – Cheesy Beef and Rice, Corndog Muffins, even these Whole Wheat Waffles. You do realize what will happen though, if you start participating in this “Cook Once, Eat Twice (or More)” system? You will then have a nice supply of healthy, homemade meals to quickly pull out of your freezer and heat up for your family – with little to no effort. Putting a hearty, healthy, delicious meal on the table will become extremely easy. You will no longer be able to use the “I don’t have time to eat or cook healthy food…” excuse.

Raspberry Almond Muffins from Deliciously Organic

Yesterday’s new recipe try-out from the Deliciously Organic cookbook was Raspberry Almond Muffins.

How did my family like them? Well, the recipe made 18 muffins. I pulled them out of the oven, left to go take a walk, got back, and there were only 5 left. I guess we now know how my family liked them. ;)  At least they left some for me to try. (I loved them too, by the way!)

Menu Plan for the Week – {and a little bit of Mother’s Day mysterious dessert making play-by-play}

1:25 pm Well, I am currently shut into my office right now, and I don’t have permission to come out until the mysterious dessert my boys are working on has come out of the oven. I can hear the beaters running and if my family knows me at all, I expect to smell something chocolatey any minute now… ;)

Matt and the boys have been doing a great job spoiling me today, making Mother’s Day super special. Check out the lunch I just feasted on:

1:46 pm Matt just snuck in with a smirk to say, “Apparently the eggs were supposed to be beat separately before adding the other ingredients. Therefore, they have a bowl with 1 cup of flour, mixed with some baking powder and two eggs. Can you figure out something to do with that tomorrow so we don’t have to waste it?” I have two things to say:  I am both excited and afraid to see my kitchen after today. And, I think I’ll be making pancakes tomorrow from that flour/egg/baking powder mixture. It just makes sense. :)

While I’m still here in the office, I’ll show you a picture of Carrie Vitt’s (from Deliciously Organic) amazing Loaded Baked Potato Soup that we made yesterday.


Wow, that soup was good! Matt added some dehydrated red peppers in his bowl and loved the kick. The rest of us loved it with sour cream and cheese. It was easy to make, and everyone in the family devoured it. I liked that it called for chicken broth, giving me a meatless meal and a new option for stretching a chicken for six meals. Get her amazing cookbook along with some healthy and family friendly meal plans at a great price!

2:18 pm Elias just came in to ask, “I can’t tell you pacifically, but if you were making frosting, would you use brown sugar or sucanat?”

I told him, “Brown sugar, and there’s organic brown sugar in the pantry”, but are you sure it doesn’t call for powdered sugar?”

And ‘pacifically’? Be still my heart. The cuteness abounds.

2:20 pm Elias came back in to say, “If you smell that burned smell, don’t worry.”

Okay, I’ll try. ;)

2:28 pm Beaters again. What in the world???

I’d say this post is “to be continued…” I’ll be back later with an update on what the boys made for my Mother’s Day dessert.

The Benefits of Exercise (It’s About More Than Weight Loss!)

I humbly consider myself to be thoroughly kicked in the pants. Good grief – why have I avoided exercise for so many years? Since I began to workout faithfully in January, I feel healthier and more energetic than I have EVER felt!

You know one of the main reasons I avoided exercise? Okay, two of the main reasons? 1) I didn’t really need to lose much weight and 2) I have asthma.

Oh dear – I was really afraid that my asthma would flare up if I exercised? Let me tell you right here and now – and this is the part where I have been kicked in the pants – exercise has made my asthma better, not worse! Beyond that, being at a healthy weight is great, but that’s a silly reason for me to think that I didn’t need to exercise.

Shucks, exercise can certainly help a person lose weight (sweet!), but as I have been working out with Jen, I have learned all kinds of reasons why exercising has been beneficial to me. I’ll let her share about those reasons here in a minute, but first I need to gab and gush about how good I feel.

Here’s the deal:  The past couple of weeks, my family has been passing around a cold  – and I didn’t get sick. This never happens to me. Any time my kids are snotting and hacking, I catch it. Within days, infection typically hits my asthmatic lungs, causing some major issues like bronchitis or even pneumonia.

This time, I began to get a sore throat, then began to fear that sickness and lung congestion would lay me flat. I upped my vitamin intake, drank plenty of water, and worked to get enough rest. And would you believe it? I fought that cold and did not get sick.

You may not understand the significance of this. But trust me, Matt and I are astonished. All of the cardio workouts and the weight lifting I’ve done during the last 4 1/2 months have really built my immune system and strengthened my lungs. I feel strong! I feel healthy. I can fight now!!! (Fight infection, that is – not the children. I do feel strong, but I still don’t feel the need to get on the floor and wrestle, just in case you were starting to picture that…)  ;)

I asked Jen, of Getting Fit with Jen, to give me a bullet list of all the amazing benefits to exercise:

~ Lowers your blood lipid profile (cholesterol)

~ Makes daily living/every day activities easier

~ Reduces your risk for cardiovascular diseases

~ Improves bone health, which helps fight osteoporosis

~ Improves mood and mental health

~ Lowers your blood pressure

~ Transforms your body shape

~ Helps you achieve and maintain a healthy weight

And oh yes, exercise can strengthen your immune system. I realize that exercise isn’t preventing me from ever getting sick again. But I have seen so many improvements in my overall health since beginning our workouts. I’m in this for the long haul!

The Brownie Experiment – Which Takes Longer to Make, Boxed or Homemade?

Well, bless my heart. The work I have to do around here for you people is sometimes just too much, you know? I mean, after I labored over the mac and cheese experiment, spending thirty whole seconds of extra time in my kitchen to make the good, homemade, whole grain, Creamy Mac and Cheese, several of you got on your knees and begged asked me to experiment next with brownies to see which took longer – brownies from a box, or homemade brownies. Really. Asking me to bake two pans of rich, gooey, chocolatey brownies? I seriously had to muscle up on this request, you know? Sometimes you all can be soooo demanding.

It’s okay though – {she says, with the back of her weary hand placed pitifully on her forehead} – I love you all enough that I was able to find the strength to serve you in this way. If someone must make two pans of brownies to help prove a point, I will rise to the challenge.

What? I suppose next you’ll ask me to make chocolate cake, or pudding, or fudge or something? Who do you think I am anyway?

Okay. I’m all done pretending to whine now. Seriously, anytime you want to ask me to make brownies, I am alllll over it. I’m happy to “take one for the team” anytime chocolate is involved.

So here’s a little something that hasn’t been in my kitchen for several years now…

Why yes, it did feel a little funny pouring that into a bowl. And then, because I haven’t made brownies from a box for such a long time – I actually had to take the time to read the directions. I felt a little silly and was glad no one was in there watching me struggle to remember and figure out how to make brownies from a box. Except now I just told you about it, so I guess you get to make fun of me anyway.

From box to pan, before going into the oven, it took me right at 4.5 minutes to mix up these brownies. Quick and convenient? Yep, they sure were. (I used Olive Oil in case you were wondering.)

Next, I started to mix up my Homemade Fudge Brownies that I have been making for several years now. I already had some whole wheat flour ground and in the freezer, but I totally don’t feel like that was cheating in this experiment because I almost always have flour ground and in the freezer for brownie emergencies baking. It’s a little something I call “kitchen efficiency” and it totally works for me.

How long did it take for me to mix up the homemade brownies and get them into the pan? 5.5 minutes. Why did it take me an entire minute longer to mix up homemade brownies than it took to mix up the boxed brownies? Because I had to wait for my butter to melt on the stovetop. Yes, the butter was taking its sweet time to liquify. But never fear. While my butter was melting, I got out my other brownie ingredients, washed a few dishes, and talked to my children. All was not lost in that extra minute of brownie preparation time.

Can you tell which pan is homemade and which pan is from a box?

Not that you can, however, because they are sort of gone now.

So, did making brownies from a box save me any time? Yes. One whole minute. Score one for boxed brownies.

Did I feel better about using an extra minute of my life to melt some butter and mix up brownies with sucanat and whole wheat flour? Well, of course I did. Plus I got some dishes done while my butter melted.

By the way, do you know why it only took me one extra minute to mix up the homemade brownies? Because I have made homemade brownies so many times that I don’t even have to think about it anymore. Truly, the more you cook from scratch, the easier and faster it becomes. If you’re new to baking and cooking outside of the box, don’t lose heart! It gets easier the more you do it!

And then, it won’t be long until you’re like me and have to cock your confused head to one side while you try to read the directions on the back of a box.

Crazy but true. ;)

I’ve got more experimenting to do, so stay tuned for more fun updates. I think muffins are the next on my list.

Menu Plan for the Week

This is our last week to host High School Huddle for this school year. :(  We’ll pick back up in the fall again. I can’t tell you how much I enjoyed feeding these kids and having them in our home each week for fellowship and Bible study time. What a great group.

In an effort to treat these kids right on our final huddle night, I thought Cheesecake Brownies were in order (along with a big pasta bar). I made three batches of the brownies to make sure there would be enough.

I have noooo idea what happened to that brownie in the bottom right corner.
Weird things like that happen in my kitchen sometimes. ;)

Speaking of brownies, this weekend was apparently the weekend of the brownie. I went through a lot of cocoa in two days! In addition to Huddle, there was a graduation party, and a ministry meeting we needed to go to. I decided to take brownies to those events, and actually made one batch of brownies from a box so I could time myself to see which took longer – homemade brownies or boxed brownies. I’ll share the results of that experiment later this week. :)

Menu Plan for the Week

Last week, on a whim, I decided to put together a bowl of Tammy’s Chicken Pasta Salad after breakfast. It was a warm day, plus we had soccer games that evening. I can’t tell you how grateful I was that I had quickly made this salad that morning. Just before game time in the late afternoon, we all dished out bowls of salad, then headed out to the soccer field. It was convenience food at it’s finest! That meal is a perfect example of how you can”Eat Healthy and Save Time“. :)

Tonight for High School Huddle, I decided to try a variation of these Oatmeal Butterscotch Chip Cookies. I mixed up the recipe as directed, except I added chocolate chips instead of butterscotch chips. Then, I spread the batter into a 9×13 inch baking pan and baked them for 25 minutes. They were a hit!

I Scored FIVE!!!! (and our Menu Plan for the Week)

In case I haven’t mentioned it already, you should know that my entire family loves the game of soccer. Five out of six of us play, coach, and/or referee – leaving me to do what is safe and wise:  1) feed them all well  2) try to keep up with the practice/coaching/game/referee schedule as much as is humanly possible 3) cheer loudly from the sidelines and 4) for the love of everyone involved, stay far away from the soccer ball.

This system has worked well for years. But Saturday told a bit of a different story where Mom and soccer were involved. I had done my part that morning of feeding them all well before games, and then cheering loudly from the sidelines. (Although it was really cold, so instead of cheering very loudly, mostly I was focused on keeping my nose from dripping.)

Because an entire morning of soccer games is apparently just not enough, Matt and the boys decided to start a pick-up game on a small field with a few of their young friends. My kind husband then asked if I would like to join them out on the field.

I hesitated briefly, but given the fact that I am determined to get fit and thought that spending that time on the field with my family might actually be fun, I said yes. After all, I was cold. I figured that I could at least play for a couple of minutes so I could get warmed up a little bit.

One hour and fifteen minutes later, we decided to be finished. Yes, for one hour and fifteen minutes, I played soccer.

Perhaps I should clarify.

On-lookers may not call what I did “playing soccer”. It may have appeared to be more like a crazy 38 year old woman stumbling across a soccer field while occasionally making haphazard foot contact with a rolling ball.

But I’ll have you know – I scored five, yes…count them…FIVE goals. Why yes, I did.

I’m not entirely sure how it happened, because during the entire game, even though my brain often knew just what to do, that message usually didn’t quite make it to my feet. Generally, I felt like my feet were made of cast iron and wouldn’t budge or lift or turn the way I was trying to tell them to. But, since I was on my husband’s team, he obviously did a great job feeding the ball right to my foot so that I could force, flick, or otherwise, fling the ball into the net.

FIVE times!!!

Oh, had I told you that number already?

I should also mention that by the end of our game, I was so tired I could barely walk. And yes, today, I do have some bruises and sore muscles. Playing soccer definitely uses quite a different variety of muscles than does walking, jogging, lifting, and doing work-out videos. And the bruises. I definitely learned why shin guards are required for soccer.

But it doesn’t matter, because I scored five!

And now, while I sit here with ice on my knee, I will work on our menu plan for the week…

High school huddle – Grilled hamburgers and hotdogs, chips, pickles, olives, carrot sticks, butterscotch bars (x3)

Tuna casserole, peas

Tuesday, April 24
Easy breakfast casserole, oranges
Beef and cheese burritos, pineapple
Taco potatoes, tossed salad

Wednesday, April 25
Chocolate chocolate chip muffins, applesauce
Easy noodle stir fry with carrots and broccoli
Barbeque brisket, cream scalloped potatoes, green beans

Thursday, April 26
Warm vanilla soother, cinnamon swirl toast
Tuna salad on crackers, tomatoes, olives
Baked three cheese chicken pasta, tossed salad

Friday, April 27
Whole wheat donuts, apples
Chicken nuggets, ranch potato wedges, peas
Tacos

Saturday, April 28
Applesauce bread, scrambled eggs
Leftovers
Turkey sausage and red bean stew, cornbread muffins
