Menu Plan for the Week, a Freezer/Pantry Clean Out Challenge Update, and How I Got Ahead This Weekend

It would appear that my “only buy produce, eggs, and dairy” challenge has also turned into a “see how deep you can dig down into the pantry and freezer to surprise your family with random food choices” challenge. I’m having a lot of fun. My family? I don’t even think they’ve actually noticed.

It’s just food to them. As long as there is plenty and as long as it is tasty, there doesn’t seem to be any argument to eating muffins made with freeze dried strawberries (this recipe, only with almost expired freeze dried strawberries) or an un-named casserole that used up the rest of our turkey and some odds and ends of pasta.

I have not made a dent in our store of food, though I am panicking a little bit as it appears we are completely out of the vital ingredient dried cranberries. I’m not sure how we will survive.

I had fun doing some price matching and buying our fresh produce for the week. Actually, most of what you see in the picture is gone already. We plow through it. I’ll probably head back to the store on Wednesday if we can wait that long.

Yes, that is one big sour cream tub.
I like that this brand contains only one ingredient, “cultured cream.”
We go through it pretty quickly, and as a side note:
When I use up the sour cream, the container is perfect for soup when I take meals to other families.

Regarding my plans to get ahead, can I just confess (again) how much I dislike cleaning? I was very willing to spend hours in the kitchen, but finding the motivation to go upstairs to tackle some filth? That is not nearly as much fun. Let’s focus on the fun food, shall we?

First thing, I grabbed out my Oh, For Real book and all spices needed to make Turkey Sausage and Ranch Salad Dressing Mix. Two full jars of spice mixes later, I put 12 pounds of ground turkey with spices on the stove to cook.

While the meat was cooking, I went to work on muffins. I had already put together and frozen Chocolate Chocolate Chip Muffins the night before, so I started on Banana Muffins and Peanut Butter Chocolate Chip Muffins. Super easy!

Realizing I was hungry and about to faint (not really, but I thought I should add some drama), I pulled out tuna salad and a bunch of fruits and veggies. The boys had slept in and weren’t hungry yet for lunch, so I munched alone while jotting notes in my Menu Planning Notebook.

After working on menu ideas for this week, I turned over to the Freezer Section of printables. I decided to start jotting down what I have left in my freezers since I’m working on getting them cleaned. Having a running list will be helpful. I didn’t finish the list, because the turkey sausage was finished cooking and I was done eating. I’ll take my list out to my freezers later to take final inventory.

Yes, I know. Corn isn’t a vegetable. 

Last, I took a few minutes (yep, that’s all it took) to make a double batch of Instant Oatmeal. It filled three half-gallon jars, so we should be set on that for a while. I love having that on hand!

After the meat cooled, I separated it into freezer bags for easy “almost ready” meals. We’ll be using some for Sausage Gravy this week!

What I Plan To Do This Weekend To Get Ahead And Caught Up

This weekend, we have no basketball games and only three of us will be home. I have too much on my “take advantage of this situation” list, but I figure why not aim high so that I’ll have a super productive weekend? (I do plan to rest a little bit too!)

Here’s what I’m hoping to get ahead on in the kitchen:

  • Make several jars of Instant Oatmeal
  • Cook 12 pounds of Turkey Sausage
  • Bake Applesauce Bread

Because it’s been way too long since I put frozen muffin batter in the freezer for breakfast convenience, I plan to make several frozen batches of:

  • Chocolate Chocolate Chip Muffins
  • Banana Muffins
  • Peanut Butter Chocolate Chip Muffins

I also need to make Ranch Salad Dressing Mix. We go through that super quickly!

Parts of my house desperately need cleaning, plus we are gearing up for a big bathroom remodel!! And, I’m working every spare minute on a new Healthy Snacks eBook. It’s finally starting to come together, which means I’ll be able to share it with you soonish.

This snack recipe and so many more are coming right up!

A Safer Kitchen ~ From Teflon to Stainless Steel and Cast Iron

Some of the questions I’m asked frequently as so many of you transform your kitchens are:  What cookware is safe? If plastic is bad, what should I use to store leftovers? I’ve heard Teflon is bad, but what should I replace it with? How do you keep your food from sticking if you don’t use Teflon? What about bakeware? Is aluminum okay?

And on it goes.

A Safer Kitchen

During the next few weeks, I will be addressing many of these questions and sharing how I have transformed my kitchen through the years. Key words: through the years.  We might all have the desire to throw out everything we have and replace it all right away with safer items. But realistically, you may just have to do this in stages. Shucks, it’s no fun to be practical. ;)

Today I’ll start by talking about cookware.

Teflon and other non-stick knock-offs are only bad for you when heated. This means that looking at Teflon will not hurt you. Cooking food in it will. Bummer, huh?

How is Teflon harmful? When heated, it emits dangerous chemicals and toxic gases. Ever heard of pets dying as a direct result of living in a home which uses Teflon? It’s true. I’ve read it from multiple sources. :(  While people aren’t dropping dead immediately from this poison, we do suffer the harmful effects over time.

I highly recommend working away from using non-stick pots, pans, and skillets – making the trade to Stainless Steel and Cast Iron. Both are proven to be safe and both are wonderful to work with in the kitchen!

Stainless Steel

I had a lovely set of Pampered Chef non-stick cookware and I was sad to give it up. Eventually, I was able to replace it with a very simple and inexpensive set of Stainless Steel cookware, much like this set. Isn’t it pretty?!

I think it’s worth mentioning that while you do want high quality cookware, you don’t have to get top of the line. My inexpensive set has lasted for years and is looking to last me many more.

Cast Iron

Admittedly, it’s tough to make scrambled eggs or pancakes on stainless steel. Cast Iron to the rescue!

Not only is cast iron safe, I love how it cooks food and helps create wonderful flavor. I have two favorite pieces of cast iron:  a large skillet and a griddle.

Lids aren’t necessary, but they sure are nice!

This griddle is super nice (I have one very similar which is also double sided). The size means I can crank out three times as many pancakes at one time than I can in a regular skillet, and when I butter the griddle well, the pancakes turn out great!

Now, with my nice collection of stainless steel and cast iron, I love knowing my food is being cooked safely. Again, be practical with your budget and take baby steps toward making these healthy changes.

How to Easily Add Fruits and Veggies to Your Meal

It’s not hard, it’s not hard, stop making it hard, I’m telling you – it’s not hard.  It’s also quite easy.

I used to just serve one fruit or vegetable with each meal (if that). This might have been enough for our nutritional needs, as long as we were getting some fruits or veggies at snack time too. But when all was said and done, I think my family was only getting 1-3 servings of fruits or veggies each day. That is just not enough.  Our bodies need more – more variety of nutrients, and a larger quantity too.

Putting a big variety of fruits and vegetables on the table with each meal is something I’ve been improving on through the past few years. I hope you’ll join me in this endeavor. It isn’t nearly as difficult as I used to believe it was. In fact, I’m learning that fruits and vegetables are probably the easiest food there is to make and serve. Truly!

Below you’ll see an example of a meal I made recently. Notice the simplicity. Also notice that I rarely put our food in serving dishes – we just eat them right out of the cookware. :)

Easily Add Fruits and Veggies to Your Meal

See the big pot of Tuna Casserole? Easy as that was to make, it was the most time consuming meal item I prepared. All the fruits and veggies on the side were a piece of cake. Actually, they were fruits and veggies, not cake, but you know what I mean.

To go with the tuna casserole, I cooked some frozen peas (which took about 3 minutes), washed blackberries, sliced a cucumber, and opened a bag of petite baby carrots. That made a total of four super easy fruit and veggie side dishes that we enjoyed. The apples, bananas, pears, and clementines you see in the weren’t actually for our meal. Those just sit out on the table as a center piece and for all of us to grab for snacks as needed.

This practice of setting out several different lightly cooked and raw fruits and vegetables to go with our main dish has become the norm around here. Once you get into the habit, it really is easy. Actually, I’ve found that it’s even been a fun challenge to see how many different kinds of fruits and veggies I can put on the table with each meal!

This is a typical grocery shopping haul for the week, plus I have many fruits and vegetables in the freezer.

An added benefit of setting out a wide variety, beyond the obvious fact that we are getting a great bounty of nutrients with all the different types of goodies out there is this:  If one of our boys doesn’t love all the types of fruits and vegetables I set out, they will at least like 2 or 3. I do it this way on purpose so that everyone will have something they love. While we don’t all fill our plates with every single item, we do fill our plates with what we like…which means there is no fighting at the table to get my kids to eat their veggies. Hallelujah!

And one more thing. Crunching and chewing on these fruits and vegetables as side dishes has been filling up my boys’ hollow legs. If I covered my table with a bunch of grains and carbs, they’d certainly fill up on those, but would not be gaining as much nourishment. We still eat plenty of grains around here (especially at breakfast), but I’ve found that we’re feeling better by trading heavy amounts of bread for larger quantities of fruits and vegetables.

And another one more thing. If fruits and vegetables is what you serve, that is what your family will learn to eat. If you don’t serve them, they won’t eat them.

Okay, one last one more thing. I still have to push a couple of my kids to fill up on fruits and vegetables. It is getting easier, but just like most kids –  mine would rather have a donut with a side of potato chips. Keep encouraging, keep serving, keep providing – the love of fruits and vegetables will come.

Making Peppernuts for a Healthy Snack

I was blessed to meet Samantha and her little girl, Kenna, at a Meet & Greet almost two years ago. It was so much fun to receive pictures of Samantha and her kids, plus this fun story about making Peppernuts!

I just wanted to send, well I was told by Kenna I must send Mrs. Laura these photos of her favorite cookies =]
We are practicing counting and following patterns, so we made Peppernuts the other day, since there is roughly a million to count. She helped with the ingredients, dough, and placing them on the sheets for me. She is awfully proud of herself =] So here are a few pictures of her “super favorite cookies” and of course a “selfie” with her, and one of Bubba. He enjoyed eating them.
Also, my husband now uses these cookies for cereal….. He said its healthier than the other cookie cereal, and it tastes way better, so I can’t judge him. =]
Oh, also, my peppernuts look super cute when stored in jars =]

Gratituesday: Snuggly

You know me right? I love sunshine. I love heat. I live in Nebraska.

This means that many months out of the year we don’t have much sunshine, and the only heat we get comes from our fireplace or furnace. Most days, I am wearing an entire load of laundry because of the amount of layers I have on. Space heaters, blankets, thick slippers, wool socks, and hot drinks are my friends.

I’ve decided that while I much prefer summer over winter (understatement!), there’s a lot to be said for the snuggliness of this season. Piling under blankets on the couch while we read history books together is actually kind of fun. Sipping on hot drinks throughout the day doesn’t hurt my feelings.

Ha! Who decided today’s lunch should be a table full of cold food?? We pulled out tossed salad fixings and Turkey Salad, plus Creamy Orange Cooler and chips with Spicy Avocado Dip. There was no oven or stove involved! What was I thinking?  I shivered my way through lunch (which tasted awesome, by the way), drinking some peppermint tea to keep me from turning blue. :)  It’s okay. I made up for it by making Turkey Pot Pie for dinner tonight.

This season of all things snuggly isn’t so bad, right? I love the comfort of soft blankets, warm food, and steamy mugs. As an added blessing, today the sun was actually shining in through the windows! It made our “high of 14°” seem a little less frigid.

There’s nothing like a freezing cold winter to make folding a load of hot clothes that just came out of the dryer actually a coveted chore. Who knew?! :)

Money Saving Monday: Clean out the Pantry and Freezer

Ready to save some grocery money by cleaning out your pantry and freezer? You’ll be amazed at the great food hiding in there!

Since I’ve been doing my “eat from the pantry and freezer instead of buying groceries” challenge for exactly one whole day, I thought it was high time I posted an update about how it’s going so far. That, and I thought this idea of “using what you have” fit perfectly into our Money Saving Monday series. ;)

So there you have it. Today’s Money Saving Monday tip is:  Challenge yourself. Instead of running to the store for ingredients, try creating a few meals and snacks from what you have stored in your pantry and freezer. This can save you quite a bit of money in the long run!

So far, all one day of this challenge has been very fun for me. By the end of the month, I might not be as enthusiastic. Either way, this is a good practice to bless your grocery budget and to help ensure that you don’t waste food.

Sunday after church, we invited several college students over to eat with us. Matt and I worked together to make a mountain of Whole Wheat Waffles, scrambled cheesy eggs, Homemade Hashbrown Patties, and fruit. I was planning to make Peach Syrup but would you believe? We only found one little bag of frozen peaches in our freezer. (I guess the “eat all the frozen peaches” part of the challenge was completed before the month began.)

I decided instead to put that small amount of peaches into a pot with all the frozen berries I found hanging out in all my freezers. Therefore, using this Peach Syrup idea, I made a Peach-Strawberry-Raspberry-Blueberry Syrup. Matt declared it to be the best part of the meal. And now I’m completely out of frozen fruit (except for pineapple). Well that didn’t take long. :)

Here’s all that was left after our feast, but I’d say there are enough waffles there to give us an easy breakfast this week:

For High School Huddle Sunday night, I made a huge pan of Apple Crisp from the bags of apples I’d sliced and frozen this fall. How easy was that?

I will say that after just one day of this, I am really recognizing how much food we go through during a 24 hour period – especially when we invite others to join us. That’s the point though. We have plenty of food – and we are happy to share! If this challenge only lasts a week or two before I need to start stocking up again, so be it. That will be one or two weeks of grocery savings, and it all adds up!

Menu Plan for the Week and My Grocery Budget Goals for January

Now that we’re back from our holiday travels, I have felt the need to clean out some of our pantry and freezer items. Buying in bulk and buying ahead really works well for our family, but I’m thinking it may be a good idea to dig down to the bottom of my storage containers and freezers to see what random items I’ve kept pushing to the side for the last few months. I have plenty of meat, plenty of frozen vegetables and fruit, plenty of pasta, plenty of so many food items!

So I thought to myself, “What if? What if each week during January (and maybe February?) I only buy fresh produce from the store, eggs and milk from our local sources, and (wait for it)…nothing else? What if I forced myself to think simply, to use what we have, and to be creative?”

I’m really not sure if this little experiment is going to work for me. The beauty of buying in bulk when I come across a sale is that I pretty much never run out of anything we need and pretty much never have to pay full price for anything. One or two months of eating from our food storage and not taking advantage of deals might set me back a little bit. Plus, whatever shall I do if I run out of applesauce?!?!??!?!

Right. I am not going to run out of applesauce.

There are dozens more jars where this came from. We had a great apple year.

Recovering from my bulk-food-obsession-panic, I realized that there will likely be good deals to be found in February and March when I’m ready to stock up again. Duh.  In the meantime, I think we’ll see some big grocery budget savings. Sweet!

Our menu this week reflects all the food I have ingredients to make without having to shop. Because this is the beginning of our experiment, I have plenty to work with. And who am I kidding? My family could probably eat well for more than three or four months with all the food I have stored away. It’s like a Coppinger Family Grocery Store in my back room. I’d show you a picture, but it’s freezing in that room and therefore a terrible mess because it’s too cold to organize, and I’m not humble enough to share the insanity all over the internet.

I like iHerb because they carry many of the groceries I like to use, plus they offer free shipping on all orders over $20. Ordering groceries online is just not worth it if I have to pay shipping.
