Lunch in a Jar: Apples & Peanut Butter (And Other Fun Fruits and Dips)

It only made sense to follow our Veggies with Dips in a Jar post with this Fruit with Dips in a Jar Post. The most basic idea along these lines: Apples & Peanut Butter.

Apples & Peanut Butter in a Jar

Just like the veggies, place your favorite fruit dip in the bottom of a small jar. Then put in your favorite fruit (apples work best for something like this!). Place the lid on the jar, pack, and take on the go. So, so simple!

First up, if you’re going to pack Apples & Peanut Butter in a jar, you will need links to our favorite homemade peanut butters!

  • Peanut Butter (just peanuts)
  • Peanut Butter (super creamy – like Skippy or Jif)

Don’t be intimidated by the idea of making peanut butter. It truly is remarkably easy! And fresh, homemade peanut butter tastes incredible!

Not up for making peanut butter? No problem. Though I do recommend that you avoid purchasing the varieties that contain hydrogenated oils and corn syrup. Choose a natural brand with few, wholesome ingredients.

Next, let’s talk about fruit.

Apples and grapes transport the best and work best for dipping. Bananas might require an 8-ounce wide mouth jar like this so you can spread the peanut butter or other dip on top. Blueberries are a good possibility too. Fresh pineapple, cut into thin slices, is a great option.

Lunch in a Jar: Veggies with Dip

Hopefully you’ve already seen this genius idea for putting veggies with dip in a jar and packing it for lunch. This has become one of my favorite ways to eat well on the road!

Do you see that?

  1. You put Ranch Dip or Hummus or any of your favorite veggie dips into the bottom of small jar.
  2. Then you add your favorite raw veggies.
  3. Put on a lid and you’re good to go.

When it’s time to eat, your veggies are already dipped. Pick up a carrot, eat the carrot covered in dip. How can eating well get any easier than this?

Lunch in a Jar: Popcorn Chicken with Ranch

This month we’re talking about lunches that can be packed in jars to take on the road, to work, or to school. We’re about to get creative. Whose ready to pack some Popcorn Chicken with Ranch Dip?

Silly me. I forgot to pack the chicken in a jar the day I took these pictures. I grabbed a baggie instead. The ranch dip though? Well, it went into one of my favorite little 4-ounce jars. These jars are perfect for transporting dips and dressings!

Here’s the thing about fried chicken: It’s good hot or cold. Therefore, we can make a big batch of Popcorn Chicken, separate it in jars or baggies to send in lunches to be eaten with dip. What a fun lunch!

Our Favorite Dips to Pack in Lunches

  • Barbeque Sauce
  • Ranch Dip
  • Spicy Ranch Dip

These dips can also be made ahead in big batches, then packaged in jars to grab and go. I love how easy this is!

You might remember Popcorn Chicken – one of the first recipes I shared here long ago. I’ll post it for you again here for easy access!

Simple Popcorn Chicken with Ranch

Lunch in a Jar: Popcorn Chicken with Ranch

Serves: 3-6
Ingredients
  • 3 large boneless, skinless chicken breasts or thighs
  • ¾ cup whole grain flour
  • ½ teaspoon sea salt
  • ½ teaspoon garlic powder
  • butter
Instructions
  1. In a medium sized bowl, stir together flour, salt and garlic powder.
  2. Using kitchen shears, cut chicken breasts into tiny bite sized pieces.
  3. Toss chicken in flour mixture to coat well.
  4. Smear a thick layer of butter on the bottom of a 9x13 inch baking dish.
  5. Pour coated chicken into dish, spreading so that they are in a single layer.
  6. Bake at 350° for 10 minutes. Stir chicken and bake another 10 minutes.

Need your chicken to be gluten free? Use your favorite gluten free flour. (I’ve made these successfully with Brown Rice Flour.)

Need Popcorn Chicken in large amounts (how well I understand!)? Double, triple, and quadruple this recipe without problem.

Want to really get ahead? Make this Popcorn Chicken in huge batches and freeze them. This will make packing lunches so easy!

Back to School Lunch in a Jar: Supplies You’ll Need

Ready to discover great Back to School Lunch ideas that you can make and pack in jars? It’s time to get your supplies ready!

Why pack lunches in jars? Let me count the reasons:

  1. Packing lunches in jars means you can make great food ahead of time, then grab it from the fridge and take it in a hurry.
  2. Jars protect food from becoming smashed in a lunch box.
  3. Jars are see-through, so you can discover your options with a quick glance in the fridge.
  4. Glass is safe for food storage, so you don’t have to worry about dangerous plastics.
  5. Jars are reusable, so you’ll save all kinds of money in the long run.
  6. You can purchase jars in all sizes, giving many options to put together a perfect lunch box!

I think it goes without saying that jars are cute and beautiful and pretty and delightful. Indeed, I really love jars. :)

Back to School Lunch in a Jar: Supplies You’ll Need

I have jars in a variety of sizes, which comes in very handy depending on whether I’m packing tiny jars with dips for veggies or bigger jars full of soup. Here are my top suggestions for jars to use to pack lunches:

These Basic 8-Ounce Jars are a common household item. They are great for baking quick bread, and for packing berry parfaits and any number of small lunch items.

These 8-ounce jars (with regular lids) are short and squat-y. They are wonderful for packing sliced fruit, homemade pudding, cooked meat chunks, and much more.

I LOVE these tiny 4-ounce jars for packing fruit or veggie dips!


It’s hard to tell the size in the picture below, but these 16-ounce wide mouth jars are a favorite for packing main dish items and salads in lunch boxes.

Wide mouth jars make eating directly out of the jar so much easier! They are also easier to clean. I have a set of these 8-ounce wide mouth jars and use them all the time for packing fruit salads and other side dishes.

My favorite, favorite (because obviously I can’t decide which jars are my favorite) are these 8-ounce wide mouth jars. They are so handy for packing, well, just about any side dish item in a lunch box.

For both wide mouth and regular jars, I keep a supply of these plastic lids. They are the best! Check out wide mouth plastic lids and regular plastic lids.

How to Bake Quick Bread in Jars (With 10 Recipes!)

I’ve long been fascinated that it is possible to bake quick bread in jars. I finally took a little time to learn the tricks!

Whether we like it or not, it’s time to think about getting back into a school routine. For all who need to pack a lunch (and even for all who don’t!), we’re excited about our new Lunch in a Jar series!

I love the idea of making a batch of Quick Bread in Jars, then grabbing them out of the fridge as needed to pack in lunches!

Why bake Quick Bread recipes in jars and not simply bake muffins to pack in lunches? Simple! Jars keep the breads/muffins from becoming smashed. It’s genius really. Bake them, stash them, grab them, pack them. It’s super fun!

How to Bake Quick Bread in Jars

How to Bake Quick Bread in Jars (With 11 Recipes!)

Ingredients
  • 1 batch of your favorite quick bread (see recipes below!)
Instructions
  1. Mix up a batch of Quick Bread as directed.
  2. Scoop batter into six buttered 8-ounce jars (do not fill jars over half full).
  3. Place prepared jars on a cookie sheet.
  4. Bake in a 350 degree oven for 45 minutes or until a toothpick inserted in the middle comes out clean.
  5. Place a lid/ring on the jar immediately after removing the bread jars from the oven so they will seal. (This step isn't entirely necessary if you are storing the bread in the fridge. But sealing will allow the bread to keep for an extra week inside the fridge.)
  6. Allow bread jars to cool completely before transferring them to the refrigerator.

Granola Bar Cups – a Brilliant Way to Make Granola Bars To-Go!

If all the brilliant people continue to share all their brilliant ideas, we will never run out of great ways to improve our lives in the kitchen and the ways we feed our family.

This time, we’re learning (from wonderful readers like you!) that we can follow my well-loved Chewy Granola Bars recipe, but instead of making them into bars as normal, we can press them into muffin cups. Need to pack them into a lunch box or be able to easily offer a single serving to cut down on the mess?

Try these Granola Bar Cups!

Recipes that work fantastically with this Granola Bar Cup idea are:

  • Coconut Fudge Bars
  • Chewy Granola Bars

These are both no-bake recipes, which makes them very fast to put together.

The beauty of both of these recipes is that you can make them according to your family’s preferences and allergy needs. The Coconut Fudge Bars are much lower in sugar than other recipes, so I stick with that one now. If you need to use gluten free oats, you can. If you need to avoid peanuts, use another nut butter or sunbutter. The recipes are very forgiving, very quick to make, and very fun.

But even more fun is that you can press the mixture into muffin cups for easy transport and lunch box packing!

Granola Cups

Once they have chilled, you can slip one into a baggie and pack it to-go.

If you’re thinking to yourself, “Wow, those look like high sugar No-Bake Cookies I love,” you’ll be happy to know that they taste a lot like the beloved cookie we’ve all grown up loving. The difference is that we can eat these made with healthier ingredients and way less sugar. How fantastic is this?!

My Favorite Cheesecake Factory Salad Makeover

Who loves a Cheesecake Factory BLT Chopped Salad more than cheesecake???? This girl. I’ve only been there a few times, but I found a salad there that I love soooo much. This begs the question: A salad? At cheesecake factory? Why?

See, here’s the thing. When one goes to the Cheesecake Factory, one wants to enjoy the cheesecake right? Therefore, eating a salad as a meal preceding the cheesecake makes perfect sense. One must save room for the cheesecake! That is how I discovered this salad. Or a salad much like this.

I believe the salad I ordered at Cheesecake Factory had chopped apples and some chicken in it too (but it’s been about a year since I’ve been there so I can’t remember all the specifics). Add those to this if you like. All I know is that this salad is so good that our family devoured a huge bowl of it – two days in a row. And I want to make it again tomorrow.

Helpful hint: Want to get your kids to like salad? Add BACON.

My Favorite Cheesecake Factory Salad Makeover

Serves: 6-8
Ingredients
  • 6 cups chopped mixed greens, lettuce, or spinach (any combination you like)
  • 2 chopped tomatoes
  • ½ pound bacon, cut into bites, cooked, and drained
  • 1-2 cups sweet corn, cooked and cooled
  • 1-2 chopped avocado
  • 4 ounces feta cheese crumbles
  • Dressing:
  • 2 Tablespoons olive oil
  • Juice of one lime (about 2 Tablespoons)
  • salt and pepper to taste (I put in a few shakes of each)
Instructions
  1. Toss salad ingredients into a large bowl.
  2. In a small jar, shake together dressing ingredients.
  3. Pour over salad and toss.
  4. Serve right away!

This is a perfect spring or summertime meal. I think I could eat this every day. And believe it or not, I don’t even have to have cheesecake afterward. :)

I can’t tell you how delicious and flavorful this is. You MUST try it. Every bite is delicious.

Lazy Dogs ~ The Make-Ahead Lunch Box

You might laugh at this recipe for several reasons. It is a little different from those I typically share.

First of all…hot dogs?

Yes, hot dogs. Remember how I’ve told you that I really love me a good, all beef hot dog? It’s true. I love sweet peppers, apples, strawberries, and asparagus better. But a good quality beef hot dog tastes really yummy to me. What can I say?

Second reason to laugh at this recipe:  This is not exactly the most inexpensive recipe I’ll ever suggest that you make. I didn’t find my hot dogs on sale, and I got the best quality dogs I could find at the store that don’t contain nitrites. So…cha-ching.  I used real cheese, not American cheese slices, which is obviously, more expensive because it’s real.

I did save by making my own whole wheat tortillas. But other than that? I’m not telling you how much each of these Lazy Dogs cost me. I’ll do it better next time by waiting for a sale on hot dogs. So if these Lazy Dogs are a little more on the pricey side, why am I sharing this recipe with you? Because these Lazy Dogs taste good. Because they are still less expensive than eating out. Because they are a fun, kid friendly (and apparently Laura friendly) food. And because you can make them ahead of time and put them in your lunch box.

I can’t take the credit for this great idea. When I posted my Taco Quesadilla recipe, “Busy Mom in AL” shared this:

Another of our “wraps” are some that we call Lazy Dogs! We boil some hot dogs to plump them up, roll them up with some cheese in a tortilla and heat them up in the oven until the cheese melts! Very good, even cold!

I loved the idea and made them for our soccer games and travel that very weekend. Once I had the tortillas made, the boys got in an assembly line to help put the Lazy Dogs together. Just like that, our to-go meal was ready.

Tortillas (I use homemade whole wheat tortillas)
Cheese Slices (I use Colby jack slices)
High Qualtity Beef or Turkey Hot Dogs (I found Oscar Meyer Angus Nitrite Free Dogs)

Boil the hot dogs just long enough for them to plump. ( <— what a weird sentence.)  Lay one slice of cheese on each tortilla, top with a hot dog, and roll it up. Bake in a 350° oven for about 10 minutes or until cheese has melted.

Make these ahead of time! Warm them in the oven, then serve.

We found that we preferred these warm instead of cold. Still, if you want to pack them to-go, simply bake, wrap, and pack. Easy and fun!

Bacon, Egg, and Avocado Salad ~ Make-Ahead Lunch Box

How do we get our family to eat a lot of greens? Put bacon, eggs, and avocado in the bowl with the lettuce.

The Make-Ahead Lunch Box

Rarely is my family of men pleased to see a lovely bowl of salad as the main dish at lunchtime. You can almost see the “am I gonna get full?!” look of panic in their eyes. After all, typically a tossed salad lunch just doesn’t stick with a person very long into the afternoon. But if there’s bacon in it? And boiled eggs? And avocado? And cheese? Well, now we’re on to something.

My family devoured this last week when I made it – even the boys who don’t typically love eating avocados. With all the other flavors mixed in, this salad with all its goodness works for even my pickiest eaters. Along with the salad, I served fresh pineapple, fresh cantaloupe, and a new recipe I was experimenting with: Coconut Fudge Bars. We were all very full after our meal – and stayed full until after we got back from swimming that evening at 5:15. At that point we were all ready to eat our own beach towels – but that’s typical no matter what we’ve eaten for lunch.

This recipe is hardly a recipe. Simply throw together whatever amounts of each ingredient you feel is best for each family member. We all ate great big bowls full, because that’s what we do around here. Need to this be Gluten Free? It’s GF without having to try. Need it to be Dairy Free? Leave out the cheese.  You might have been able to figure that one out by yourself.  ;)

Ingredients
  • Bacon, cut into bites, cooked, and drained
  • Boiled eggs
  • Avocado, cut into bites (as well as you can cut an avocado into bites)
  • Cheddar or Colby jack cheese, cut into small chunks
  • Mixed greens, lettuce, and spinach of choice
  • Tomatoes, chopped
  • Salad dressing of choice
Instructions
  1. Toss ingredients together and have a feast.

To prepare for the lunch box:

Prepare all ingredients in advance, from cooking the bacon to boiling the eggs to chunking the cheese. Toss the fixin’s into a jar or bowl with a lid before heading out for the day. Put the dressing into a separate container to add just before eating.

These ingredients, prepared in advance, will last a week or two in the fridge for quick salad prep. If you chop your avocado ahead of time, simply place the avocado pit into the container to help maintain the nice green color.

Side dish ideas:

  • Fresh fruit like pineapple, cantaloupe, watermelon, apples, oranges, and/or grapes
  • Carrot sticks with hummus
  • Coconut Fudge Bars or Chewy Granola Bars
  • A favorite muffin or slice of quick bread
  • Crispy Cheese Crackers
  • Fruit and kefir/yogurt smoothie

You really have to try this salad. Really – even people who don’t normally love salad should love this one. It has bacon in it, for crying out loud. It’s happiness in a bowl.

Hey, have any of you tried the “Salad in a Jar” idea? I am excited to try that sometime, both because it’s a great packaging idea…and of course, because it involves a jar. It’s happiness in a jar. With bacon (for crying out loud).
