Menu Plan for the Week…sort of

This is a very busy week, which means that I don’t have time to create a nice, detailed menu plan. Instead, here’s a list I came up with of food I’ll make whichever day I decide to make it!

  • Lasagna Casserole
  • Cheeseburger Zucchini Boats
  • Chicken Fried Steak Strips
  • Cheddar Ranch Burgers
  • Beef Stroganoff
  • Black Bean Taco Salad
  • Spaghetti
  • Simple Soaked Pancakes
  • Tuna Topped Tomatoes
  • Banana Muffins with scrambled eggs

I’ll probably try to get some bread baked this week so that we can sometimes have peanut butter-honey sandwiches!

Hopefully I’ll get my act in gear and create a better menu plan next week!

Everything around me is starting to look like a green bean. Or a giganitic zucchini. This is such an exciting time of year!! I have 27 quarts of beans put up in the freezer already with plenty more ready to pick. Oh, and our corn is almost ready to eat!! Somebody hand me a stick of butter and a salt shaker.

Here’s our menu for the week, in which we add a few main dishes to our awesome fresh vegetables and fruits:

Chocolate chip muffins, pears
Lamb roast, corn on the cob, cantaloupe
Cheeseburger zucchini boats, watermelon

Monday, July 19
Crepes with jelly
Hamburger patties, hashbrowns, green beans
BBQ brisket, cheesy mashed potatoes, tossed salad

Tuesday, July 20
Mini breakfast pizza, peaches
Black bean salsa with chips, applesauce, carrots
Fruit-kefir smoothies, soft pretzels, scrambled eggs

Wednesday, July 21
Simple soaked pancakes, blueberries
Salmon patties, strawberry peach slushies
Crock-pot chicken, carrots, green beans

Thursday, July 22
Creamy orange cooler, toast
Black bean taco salad, cherries
Chicken and rice, peas

Friday, July 23
Strawberry shortcake, fresh whipped cream
Turkey sausage, creamy mac and cheese, sauted zucchini
Lamb chops, baked potatoes, green beans

Saturday, July 24
Whole wheat donuts
Leftovers
Fried chicken legs, mashed potatoes and gravy, asparagus

Snacks to make and have on hand:

  • Whole Wheat and Honey Zucchini Bread or Muffins
  • Justus’ Shaved Ice
  • Zucchini Brownies

Welcome to my very long post. I’m not sure if this is called multitasking…or if it’s called the best way to overwhelm your audience. Maybe it’s simply called Laura is trying to play catch-up. Yes, apparently I’m trying to kill three birds with one…post.

The Menu Plan:

Sunday, July 11
Oatmeal, pears
Cheddar ranch burgers, corn on the cob (while we watch the World Cup finals!)
Bean and rice bowls, fresh pineapple

Monday, July 12
Whole wheat waffles
Grilled cheese sandwiches, tomato soup, carrot sticks
Venison roast, potatoes, carrots, gravy

Tuesday, July 13
Scrambled eggs, oranges
Homemade pizza, grapes
Crunchy ranch chicken, stir fried rice and veggies

Wednesday, July 14
French toast, blueberries
Tuna on tomatoes, crispy cheese crackers, fruit kefir smoothies
Chicken fried steak strips, mashed potatoes, gravy, green beans

Thursday, July 15
Mini apple pies, cheese
Corn dogs, watermelon
Egg/turkey sausage/hashbrown casserole, orange muffins

Friday, July 16
Peanut butter honey toast, applesauce
Popcorn chicken, green beans
Sloppy cornbread, strawberry-peach slushies, peas

The Recipe

Back when I threw out the question about grills, Christy left a comment about how she makes Apple Crisp on the grill. I asked her for the recipe…and she kindly sent it to me. Doesn’t this sound SO good?

Apple Crisp on the Grill

In a bowl, mix together the apples, cinnamon and flour. Coat well, and add apple juice and sugar/or honey. Mix in with apples and fold in until mixture is combined. Place in an old metal bread pan or two disposable pie plates.

5-6 apples diced w/skins on (Adds color and extra vitamins)
2 T Sugar or honey
2 T. Apple juice
1 t . cinnamon
2T. whole wheat or AP flour

Topping:
1/4 c. whole wheat flour
1/4 c. rolled oats
1/4 c. butter (cold is good)
3 T . Brown Sugar
1 t. cinnamon

Mix topping ingredients together, and crumble evenly to the top of the apples! Wrap tightly in foil.

Christy says, “I put the crisp on the BBQ on low, at the same time as I I put on my potatoes, followed by the vegetables, then the burgers! When our main course is ready I turn off the heat, and let the crisp finish, and let the juices get nice and thick. The smell is amazing and brings a touch of fall to the air” :)

Menu Plan for the Week

It’s been a very soccer filled weekend for us. Between watching World Cup games together and running back and forth to Lincoln for Justus to play in a soccer tournament…we’ve been watching a LOT of games. At one point actually, we were watching Justus’ game from the van and listening to the remainder of the US vs. Ghana game on the radio. Ever watched one game and listened to another at the same time? It was a little bit interesting. I was never quite sure when to shout and when to cringe. Wow, are we a die hard soccer family, or what?

(I won’t even tell you about the great lengths we went to since we were out of town for the day and just HAD to watch US play Ghana. Hey, Matt and I have been to Ghana before. It is a special place to us. We were gonna see that game!)

Menu Plan for the Week

Between having lots of company and doing lots of traveling this summer…I have decided that my “menu plan” for the next few weeks needs to look a little bit different than it normally does. While I love to be organized, especially when it comes to feeding guests, sometimes a girl needs to be able to fly by the seat of her pants. Whatever that looks like. 

Seriously, who comes up with these phrases? Go ahead…picture me. Flying. By the seat of my pants. In my kitchen. I’ll likely konk my shoulder on the corner of a cabinet door, ram my head into a watermelon and land with my elbow in the butter dish in the process, but whatever.

Instead of outlining my meals day by day…I’ve just made a list of meal and snack ideas to draw from. That way, depending on what each day holds, how many people I’m feeding, or what activity we’re running off to…I can pick and choose what food will work best for each day. 

Breakfast Ideas:

  • Whole Wheat Sourdough Biscuits with fruit
  • Strawberry Shortcake (yes, for breakfast…look how healthy it is!!)
  • Giant Breakfast Cookies

I suppose it goes without saying that we’ll be eating a lot of strawberries and salad this week. I’m experimenting with a healthy strawberry shortcake recipe today that I can hopefully share soon in the Healthy Celebrations series!

And speaking of healthy…um…or not so healthy…take note of what we’re having for lunch Tuesday. It’s Asa’s birthday, which means he gets to choose everything we eat that day. He hesitantly asked if we could please have ramen noodles.  Blech.  Okay, since it’s your birthday. Can’t be worse than hot dogs. I find it funny that he thinks of ramen noodles as a treat! And um…$0.18/pack? WHAT is this stuff made of? Never mind.  I don’t want to know. 

In other news, we have an extra little boy “moving in with us” for a few weeks off and on all summer. Remember the red head? We love having him here! Plus, some friends from out of town arrived last night to stay for the week. We’re in for some busy, fun days!!

Picnic lunch at the park – sandwiches, fruit, chips
Fried chicken, mashed potatoes, gravy, green beans

Chocolate chip pancakes, applesauce
Creamy mac and cheese, steamed broccoli
Homemade pizza, tossed salad

Friday, June 11
Strawberry peach slushie, peanut butter honey toast
Tuna salad on crispy cheese crackers, cantaloupe
Tacos on homemade tortillas, watermelon

Chicken quesadillas, apple slices
Rice and veggie stir fry with chicken, zucchini, carrots and broccoli

Remember how I said that our last soccer games were last week? Yeah, just kidding. We got all the way to Lincoln last Sunday afternoon (an hour away) and the gates were locked. We had a team full of very sad ten year old boys on our hands.

I was disappointed too, but since we were in Lincoln already, we took advantage of our “trip to the city” and went to Target and Kohls to make some exchanges. I loved it. But Justus? Shopping was NOT his idea of a fun alternative to playing a soccer game. Poor guy.

So anyway, this week we’re trying again. For real…our last soccer game for the season is today. Probably. I’m pretty sure. Most likely. I think.

We have survived soccer season again this spring. We’re on the home stretch…our last games are Tuesday night. You can’t see me, but I’m doing back flips in celebration. I’ve loved watching my boys play…but it will be nice to have more time at home again. I think they are a tiny bit relieved too. (You should see the back flips they can do.)

Thank you all so much for your “hugs” and support yesterday. I love all your suggestions about buying a shirt “for my mom” and giving it to someone in need. I’m going to consider starting a new tradition next year. What great ideas you shared! You are all awesome!

I DID have a wonderful Mother’s Day. Matt had to work a big part of the day (Mother’s Day at a restaurant means all employees on board, you know)…so we waited until the big crowd had thinned out and the boys “took me out to Daddy’s restaurant” for lunch. Matt was able to sit and eat with us at that point…AND my three older boys actually pitched in and paid for my meal. Are they so sweet or what?
