Gluten Free Pasta that Tastes Good

I decided early on in Malachi’s Gluten Free Experiment that I wasn’t going to buy lots of “specialty gluten free” foods. They are crazy expensive and many of them are void of any kind of nutrition. 

However, I’ve made a couple of exceptions, in the name of sanity and so that I can present something “normal” for Malachi. For instance,  if we’re eating pasta, I’d like him to be able to have pasta. I found and purchased one small bag of Tinkyada Brown Rice Pasta at Walmart, thinking that if he liked it and if it actually cooks up nicely, maybe I’d look into purchasing more to have on hand. The ingredient list didn’t even make me squeamish!

I am VERY happy to report that Tinkyada Brown Rice Pasta DOES cook up nicely and that Malachi DOES like it!!! Keep in mind, Malachi is six years old…he’s not just eating it to be polite. That means he really does like it! :)

AND…you know my unique method for making Healthy Creamy Mac and Cheese? 
This Tinkyada Brown Rice Pasta even worked in THAT recipe!!! SO good!!!

I couldn’t be more excited!!! (Okay, c’mon. Sure I could.  Gluten free pasta that tastes good isn’t that amazing. There are more exciting things in the world.)

Still…I’m pretty excited. Now, when some of you leave comments on my various pasta recipes, asking if rice pasta will work…I’ll be able to say “yes!”. 

And for the record, the Tinkyada Brown Rice Pasta is, unfortunately, a significant amount more expensive than the Whole Wheat Pasta I normally buy. But since I’m just using it for one person in our household, that one bag of Tinkyada Brown Rice Pasta is lasting us a long time.

Menu Plan for the Week

Matt and I had a lovely time at the Nebraska Home School Conference this weekend…and we were so excited that we were able to meet several of you!! Thanks for taking the time to come say hello in the middle of your busy weekend. We loved it!!

Now…how can we figure out ways to meet all of the rest of you??? Hmmmm……..

Speaking of the conference, here are some interesting things that occurred that really have nothing to do with much of anything, but which you may or may not find interesting or boring. :)

One is that because we were at our little vendor booth, talking to people and sharing about our curriculum and telling people what HeavenlyHomemakers.com is all about….we were standing on our feet on a hard floor for two solid days. Our legs got tired, but eh…no biggy. It was a great time. 

It wasn’t until about two hours after the conference ended and we were home unloading our gear that suddenly we both realized how sore we were. By bedtime, I was gimping around like I’d sustained an injury and Matt had to run me a bath to soak in. 

This morning, I was scooting around like a little old lady. Every move hurts as I’m trying to work my kinks out. If you saw me, you’d likely say, “What happened to you? Did you fall? Were you hit by a moving vehicle? Did the boys’ wrestling matches finally get the best of you?” And I’d have to reply, “I did absolutely nothing. I simply stood in the same spot for two days and now I can’t seem to walk or move.”

Matt said that this is normal (he knows these things from his work at the restaurant). I’m so glad he thinks I’m normal.

Anyway…the other thing that isn’t relevant to anything and that you may not care about is:

On Friday of the conference, because there were people coming by the booth almost constantly all day long…we didn’t find much time to eat the lunch we had packed. We were able to sneak a bite in here and there, but by 6:30 that evening when the vendor booths closed, we were both quite hungry. We got in the van to head home for the night and while this was very unlike us, we decided on fast food because we needed food…fast. So, we went to Culvers because if you’re going to eat fast food, it should at least taste really good.

Now, I don’t know if you know this about me or not, but I’m a beef lovin’ girl. I think it’s something about how I tend to feel sick and anemic if I don’t get enough iron…but regardless…there are times that I just need me some cow. This was one of those times.

As we looked at the menu I decided that a “single” just wasn’t going to cut it. I told Matt that I was going to shock us both and order the “double cheddar”.

And I did. And I ate it all.  And I didn’t look back.

I inhaled that double burger and I was very happy and Matt just watched in amusement. Somewhere in between bites and while I had ketchup running down my chin, I said, “Thank you for not judging me for ordering and eating an entire double.”

And then I handed him my fries because really…I was just there for the beef.

(And in case you’re wondering, because of our gluten free experiment, Malachi will be eating the non-gluten parts of these meals, or I’ll adapt part of a meal for him, or whatever. I’m trying not to be a short order chef, but I’ve found that it’s easier to try to cook “normally” and just adjust a few things for him specifically. I’ll probably talk more about this during our Gluten Free Recipe Parade which begins tonight!!)

It’s a Gluten Free Recipe Parade!

Many of you may remember the Heavenly Homemakers Recipe Parade we had back in October, when I spent the entire week posting new and fun recipes, giveaways and cooking tips. It was a blast and it made us all hungry to try all the new and healthy recipes!

Well, thanks to all of your encouragement on our Gluten Free Experiment post, and because I just can’t seem to stop myself when it comes to tinkering with new recipes…I’ve been having a good ol’ time in my kitchen the past few days playing with some of the recipe ideas you all sent my way, or just making up fun recipes for foods to eat that don’t contain gluten.

In my quest to create dishes that Malachi (and the rest of us) would enjoy, I have been quite determined NOT to try looking high and low for “specialized gluten free” ingredients.  I know they are available, but they are pricey and many of them do not contain much in the way of nutrition.

Besides, I want to come up with recipes that EVERYONE can appreciate and enjoy…not just those who have to eat a gluten free diet. I’m out to prove (to myself, most of all) that there is no end to all the yummy and fun dishes and treats you can make without gluten. I’m also out to prove that eating a gluten free diet doesn’t have to be expensive!

And so…next week we’ll be having a great big Gluten Free Recipe Parade here at Heavenly Homemakers!

Happy first day of spring!!!! I actually thought it smelled like spring when I walked outside this morning. And I saw four or five blades of green grass, yes I did. Seeing any green in your lawn yet? :)

What it Means to “Soak Grains”

It’s a funny term isn’t it? “Soak your grains.” It sounds like you need to dump a bunch of water into your bucket of hard white wheat kernels and give ’em a good soaking. But don’t do that.  You don’t want soggy wheat berries.

For those of you who are new to “soaking grains” and have emailed me with questions of confusion as to what this means exactly…I thought I would take the time to explain it a little bit better, and to show some pictures of what a bowl of “soaking grains” looks like!

First, let’s talk a tiny bit about why soaking grains is important. Because I’m not good at remembering big words and how to use them, here is a quote from the Nourishing Traditions cookbook about soaking grains:

Phosphorus in the bran of whole grains is tied up in a substance called phytic acid. Phytic acid combines with iron, calcium, magnesium, copper and zinc in the intestinal tract, blocking their absorption. Whole grains also contain enzyme inhibitors that can interfere with digestion. Traditional societies usually soak or ferment their grains before eating them, processes that neutralize phytates and enzyme inhibitors and, in effect, predigest grains so that all their nutrients are more available.

In Laura’s terms:  When you soak your grain, your tummy will feel better and the nutrients in the grain will be better used by your body.

If you’ve been reading here long, you know that I’m a little bit on the fence when it comes to soaking grains. Sometimes I’m a soaker…sometimes I’m not. It depends on the day and what recipe I’m using, but I do try to soak my grains if I can. There are different schools of thought behind soaking grains and you can read my thoughts about it (and other people’s ideas and comments) here. Matt and I have come to the conclusion that we don’t need to go into panic mode if I don’t get around to soaking our grains. Right or wrong…that’s where we’ve landed. I really like the pressure this has taken off of my brain.

Now, having said all of that…I would like to share what “soaking grains” really means. Ultimately, it means that you are soaking the whole grain that has already been ground into flour . (You can/should also soak oats or cornmeal. Oats are soaked the same as flour. Cornmeal requires a different variety of soaking, which I’ll discuss in a separate post.)

The soaking of said flour or oats needs to be done in an “acid medium liquid” for 12-24 hours, or at least overnight. This means, you can soak your flour or oats in:

  • Any cultured dairy product such as buttermilk, yogurt or kefir. You can read about how I easily and inexpensively make these products here. Or…
  • If you are not able to use dairy products in your family, you can instead use water with 2 Tablespoons of lemon juice or vinegar in place of the buttermilk, yogurt or kefir.

The flour doesn’t need to “go swimming” in the liquid. It simply needs to be wet. In any of my recipes that give soaking instructions, I will share the exact measurements of flour and/or oats and liquids needed for soaking. On my site, I have instructions for soaking:  Whole Wheat Waffles, Simple Soaked Pancakes, Breakfast Cookies, Breakfast Cake, Poptarts, Pizza Pocket dough, and others that I’m likely forgetting at the moment. :)  I also describe how to soak my Whole Wheat Tortillas in my Totally Tortillas ebook.

Here is what my Simple Soaked Pancakes look like in the morning after I’ve stirred together the flour and buttermilk the night before. See the little bubbles that formed? That means we’ve accomplished kind of a “sourdough” effect. Perfect! Next, I mix in the remaining ingredients and make the pancakes. (And then the fam will eat the entire triple batch before I have a chance to grab one if I’m not on top of my game.) 

This is what my Whole Wheat Tortillas look like once I’ve mixed them up and left them to “soak”. This recipe with soaking instructions is so simple because I put them all together, they soak, then they are ready right away for me to roll them out and cook them!

Soaking grains isn’t difficult at all…it just requires a little bit of planning ahead!

Some other frequently asked questions about soaking grains include:

Do I need to soak my flour even if it isn’t freshly ground in a grain mill?

Yes, even if it is store bought whole wheat flour, it is best to soak it if you can.

Do I need to soak my white flour?

Nope. The reason it’s white flour is because the bran and the germ have been taken out. The bran is what needs to be soaked in the first place. Since that’s not there…no reason to soak!

Two Simple Ways to Get Ahead in the Kitchen

It may be apparent after you read this post that somebody got a little bit wheat grinder happy this week, thoroughly enjoying a small portion of the 300 pounds of hard white wheat that had been delivered. (You can read all my posts involving grain and grinding grain here, in case you’re interested in reading about my grainy obsession.)

I couldn’t help myself. After being sick myself and taking care of a family of sickies for the past four weeks (that influenza stuff is a BEAR), to have energy again and healthy children with appetites is truly delightful. I’ve been spending extra time in the kitchen, trying to make up for lost time it would seem. I loved every minute of it.

Okay, maybe not the dirty dishes part.

Dirty dishes aside (and really – I shouldn’t complain about the blessing of having so many people to dirty up dishes at my house), I loved being able to bake and cook a little extra this week in order to have healthy convenience foods in my freezer. Two things occurred to me as I was participating in this mad flour grinding, recipe mixing up, dough kneading, cooking ahead extravaganza this week, and I would like to share them with you.

Here are two of the simplest ways I’ve found to get ahead in the kitchen:

1. Cook or bake just one extra thing each day, if at all possible.  This might mean that you brown up several pounds of hamburger to have on hand for an easy casserole, tacos, sloppy joes, etc. Or it might be that you whip up some snacks to have on hand for the kids. Or maybe you could cook up some brown rice to have for simple meal prep the next day. It doesn’t have to be complicated or time consuming. But if you happen to be home and have a few extra moments during the day, utilize it for cooking up a little something extra to make for convenience on those days you barely have time to cook at all because you’re running around crazy-like. 

2.  If you’re mixing up one batch, you might as well mix up two (or three) batches.  You’re already making a mess. You’re already getting out the needed ingredients. Why not double or triple up the recipe and make plenty of extra of whatever it is you’re making, then put the leftovers in the freezer for a busy day. I love doing this with Whole Wheat Waffles, Easy Lasagnas, Muffins…whatever freezes well and reheats easily.

Here are just a few pictures of the food items I made this week in my efforts to get ahead. Let me clarify something though:  Not every week is this productive for me in the kitchen. I happened to be home most of the week without many outside engagements, allowing me to really focus on teaching my kids and working in the kitchen. Now I  have several quick foods in the freezer to easily warm up on those days where we’re running to ball games and practices, or dentist appointments or any other event that makes it difficult to spend time cooking.

What did my kids do while I was doing this extra cooking? Most of the time, they were sitting in the kitchen with me, doing their school work. They also spent a fair amount of time playing with a huge box, shooting things, and eating the food I was making.

Homemade Teriyaki Sauce (No MSG or HFCS!)

Ever noticed how tough it is to find dressings and sauces that don’t have MSG (Monosodium Glutamate) and HFCS (High Fructose Corn Syrup)? MSG, by the way, is a flavor enhancer that is made up of a bunch of chemicals I can’t pronounce and a bunch of scary stuff I don’t want to know about. You can read all the big words here.

I’ve been so excited each time I figure out how to make a new homemade salad dressing or condiment (see the whole list of healthier condiment recipes on our site)! Making your own condiments is not only much healthier, it’s often quite a bit cheaper too. And, lo and behold, these items are easy to make.

Shall we now all take a moment and enjoy a collective sigh of wonderment? Yes indeed recipes that are healthy, cheap and easy. All at the same time.

The beauty of homemade condiments too is how delicious and flavorful they are…all by themselves. We do not need to add MSG and HFCS or BGNJ to make our food taste good. (I made that last one up just for kicks and it was very fun.)

Well, apparently that was my little “rant” for the day. Try homemade condiments. They taste so good and pure.

And now for the Homemade Teriyaki Sauce recipe!

Homemade Teriyaki Sauce (No MSG or HFCS!)

Ingredients
  • ¼ cup tamari soy sauce
  • 1 cup water
  • 1-2 teaspoons freshly grated ginger or dry ground ginger (more or less to taste)
  • 2 Tablespoons honey
  • 1 minced garlic clove
  • 2 Tablespoons organic cornstarch
  • ¼ cup cold water
Instructions
  1. Combine 1 cup water, soy sauce, honey, garlic and ginger in a saucepan and bring to a boil, stirring constantly.
  2. Dissolve cornstarch in ¼ cup cold water and add to sauce.
  3. Stir constantly and allow the sauce to thicken.
  4. If the sauce is too thick, add a little bit of water or soy sauce to thin.

(I use Organic Tamari Soy Sauce from OliveNation which is gluten and MSG free!) We LOVE this Teriyaki Sauce on chicken wings.
