Simple Snack Recipe: Honey Sweetened Flourless Peanut Butter Bars

This Honey Sweetened Flourless Peanut Butter Bars recipe has been a family favorite for many years!

Though actually, I used to always make this recipe into cookies. And I used to use regular sugar. And I used to use 2 cups of that sugar! (Whoa.)

Now I use just 1/3 cup of honey and I simply mix up the three needed ingredients to make Honey Sweetened Peanut Butter Bars instead of cookies.

I love that even though I’ve drastically cut the sweetener, these cookie bars are sweet enough that my kids still enjoy them, but they aren’t so sweet that I can’t enjoy them too. But the best part, of course, is that they stir together super quickly and provide a wholesome snack for the family in just a few minutes!

The cookie version of this low sugar recipe is great too. You’ll find it here. I just like the ease of spreading the batter into a pan and baking. Shortcuts are our friend!

Ingredients
  • 2 cups natural peanut butter
  • ⅓ cup honey
  • 1 egg
Instructions
  1. Mix the ingredients together until smooth.
  2. Spread mixture into an 9x13 inch baking dish
  3. Bake in a 350° oven for 15-20 minutes or until bars are lightly browned.
  4. Allow the pan to cool for 10 minutes before cutting into bars.

I prefer making Homemade Peanut Butter, simply because it tastes amazing and I can be confident about the ingredients! Here are my two favorite Peanut Butter recipes/methods:

Simple Snack Recipe: No Bake Chocolate Chip Cookie Bars

These No Bake Chocolate Chip Cookie Bars are full of fiber and protein, naturally gluten, dairy, and grain free, and sweetened with honey. Except for the chocolate chips. Those are sweetened with sugar. Meh, let’s live a little.

I love these bars so much! They are a snack that fills the belly and satisfies the sweet tooth without being terribly sweet. They offer nourishment while still being fun. They are a perfect snack!

As you can probably see from the pictures, these No Bake Chocolate Chip Cookie Bars soften when out left out of the fridge too long. This problem is solved by grabbing a fork and right digging in. Or, you can still eat them with your hands. Simply lick your fingers after you enjoy a bar.

Simple Snack Recipe: Chocolate Cheesecake Fudge (Stevia or Honey Sweetened)

Who says we can only eat fudge during a holiday season? This Chocolate Cheesecake Fudge is so low in sugar we can eat it in the middle of February, every other Thursday, and if you’re really feeling sassy, on a Monday afternoon after you’ve washed the breakfast dishes.

Or not. I mean, you don’t have to actually wash the dishes before rewarding yourself with this fudge. I think it is enough work to have dirtied the dishes in the first place, am I right? Indeed. Fudge all around!

This Chocolate Cheesecake Fudge needs no special occasion. Though it will feel like a special occasion while you’re eating it because of the fact that it is fudge and it tastes amazing. I suppose the fact that it has the word “cheesecake” in the title also proves its greatness. You will be tempted to feel guilt over splurging on this treat since Christmas was two months ago and you’ve been doing such a good job of eating right since the first of the year. But no guilt is allowed or even warranted because this fudge isn’t full of sugar! Yep. It’s sweetened with a little honey and a little stevia. That’s it.

Of course this qualifies as a Simple Snack Recipe because you can blend all the ingredients together in just a couple of minutes. What a treat!

Chocolate Cheesecake Fudge

Simple Snack Recipe: Chocolate Cheesecake Fudge (Stevia or Honey Sweetened)

Ingredients
  • ½ cup softened butter
  • 8-ounces softened cream cheese
  • 2 Tablespoons unsweetened cocoa powder
  • 2 Tablespoons honey
  • 30 drops liquid stevia (I like NuNaturals brand best)
Instructions
  1. Blend ingredients together in a high power blender.
  2. Spread mixture in an 8x8 inch dish.
  3. Chill in the fridge for at least one hour.
  4. Cut into pieces and serve.
  5. Store fudge in the refrigerator.

Simple Low Sugar Chocolate Cheesecake Fudge

This recipe is easy to adapt. Add more or less honey, stevia, and cocoa powder per your preference. You can find NuNaturals Liquid Stevia here (my affiliate link).

Simple Snack Recipe: Sweet and Salty Almonds or Pecans

We thought you might like a simple snack that is a little bit sweet, a little bit salty, and obviously, a little bit nutty. Everyone likes to be a little bit nutty sometimes. So how about some Sweet and Salty Almonds or Pecans?

When I first decided to experiment with this recipe, I planned to surprise Matt with Sweet and Salty Almonds after he’d put in a hard day’s work. So I searched the pantry. No almonds. I searched my freezer. No almonds. I searched my other freezer. No almonds. I searched my other freezer. (I have a lot of freezers.) No almonds.

What I did find was package after package after package of pecans. Apparently my desire to stock up for our Pecan Pie needs way back at Christmas time took over my brain and prevented me from ever adding almonds to a shopping list. After all, there’s no such thing as Almond Pie. At least I don’t think there is.

Anyway, Matt never knew about the Sweet and Salty Almonds because on the day of this nutty experiment, I presented him with Sweet and Salty Pecans and all was well.

Aside from the time it took for me to search through all my freezers behind all the leg of lamb, cube steak, and bags of peaches from last summer’s harvest in a futile effort to find almonds that didn’t exist, making these Sweet and Salty Pecans was super fast and easy.

So grab either almonds or pecans (or both if you’re feeling extra nutty). Make a batch or three of these Sweet and Salty Nuts. They make a great snack to enjoy when you need a pick-me-up!

Sweet and Salty Almonds or Pecans

Serves: 1 cup
Ingredients
  • 1 cup whole almonds or pecans
  • ¼ cup water
  • 3 Tablespoons brown sugar, maple syrup, or sucanat
  • 1 teaspoon ground cinnamon
  • Pinch of sea salt
Instructions
  1. Stir water, sugar, cinnamon, and salt together in a medium sauce pan.
  2. Bring to a boil.
  3. Pour the almonds or pecans into the boiling liquid, stirring for about one minute until the nuts are coated with the syrupy mixture.
  4. Spread prepared nuts onto a parchment paper-lined cookie sheet.
  5. Cool and serve or bag them up to give as treats!

Simple Snack Recipe: Cream Cheese Salsa Dip

Two ingredients. TWO. That’s all it takes to make this simple and delicious Cream Cheese Salsa Dip.

Some of you might remember this recipe. I added it as a tiny little page way back in the beginning days of this site. I decided it was high time I re-share it as an actual post in easy-to-read and print form. It’s especially exciting to share as I’ve recently learned how to put it together more easily.

See, before it took six whole minutes to make. Now it only takes three. Too bad there’s not a way to cut every job in half. We’ll keep trying, though. :)

The six minute version: Put ingredients in a bowl and mix with a hand mixer. Watch to see that cream cheese and salsa don’t fly up and smear your glasses and forehead. Clean up many splatters all over the kitchen countertop. But at least the dip is good.

The three minute version: Put ingredients into a high power blender. (I have a Blendtec and don’t know how I ever lived without one.) The end.

My kids make this Cream Cheese Salsa Dip regularly. They love eating it after soccer or basketball practice. It’s great to take to parties. It’s a huge hit no matter who we serve it to, and have I mentioned that it’s made with only two ingredients? Any guesses as to which two ingredients? It’s a tough one, given the very vague title of the recipe. Take your time.

  • 16-ounces salsa (any variety)
  • 8-ounces softened cream cheese
Instructions
  1. Blend ingredients together (preferably in a blender, but a hand mixer works too!).
  2. Serve with corn tortilla chips.

I daresay this Cream Cheese Salsa Dip with tortilla chips with a side of a No Bake Cookie Cup is a pretty good combo. A little sweet. A little salty. A lot of happiness.

Simple Noodle Soup on a Simple Budget

Did you save your bones from the Simple Lemon Garlic Chicken Legs so you could use them to make broth? You’ll need that great broth in this Simple Noodle Soup recipe!

See how orange my broth is? That’s because I always cook a lot of carrots and other veggies with my chicken or beef bones when I make broth. Then I blend up the mushy, cooked veggies and stir them back into the broth. I’m telling you, this tip makes our broth super delicious and obviously very packed with nutrients!!

I store my broth in 1/2 gallon jars in my fridge to pull out and use as needed. Usually when I make soup, I add more veggies so we’re getting veggies upon veggies and our soups are very nourishing!

This particular Simple Noodle Soup recipe I’m sharing today can really be made according to your family’s preferences. I simply cook sliced carrots and whole wheat noodles in the broth, salt it liberally, and call it a meal. If I serve it with salad then we’re getting even more nutrients and if I throw some fruit on the table we’re golden.

The best part is that this soup is comforting, warm, tasty, and quick to put on the table. It costs very little to make, especially if you’ve kept chicken bones from past meals like these Simple Lemon Garlic Chicken Legs.

Simple Noodle Soup

Simple Noodle Soup on a Simple Budget

Serves: 4-6
Ingredients
  • 4 cups of your favorite broth
  • 2-3 carrots
  • 1½ cups of your favorite whole grain pasta, any shape or variety
  • Salt and pepper to taste
  • Additional veggies your family likes in soup
Instructions
  1. Pour broth into a large cooking pot.
  2. Slice carrots (and other veggies if you like) and add to the pot.
  3. Bring broth and carrots to a boil.
  4. Add pasta, salt, and pepper.
  5. Cook until pasta is tender, about 8 minutes.

There’s no meat in this soup, but if you’ve got some leftover chicken hanging around, feel free to stir it in for extra nourishment and protein!

Simple Hashbrown and Egg Nests (on a Simple Budget)

I first made these Simple Hashbrown and Egg Nests on a Saturday morning in which we had no plans. No plans. None. I didn’t actually know what to do with myself.

So I did something unwise and I drove myself to Wal-Mart. I know better. Going to Wal-Mart on a Saturday is a very bad idea. This is because everyone from the entire town and every surrounding town is there, making it one big party in which navigating through grocery aisles becomes an Olympic sport.

There are tight squeezes and dozens of “excuse me’s” and by the time I finally make it over to the frozen hashbrowns, the brand I’m hoping for is out of stock. Because, of course.

During this shopping endeavor while breaking into a sweat and attempting not to crash into fellow shoppers at Aisle 9, my biggest goal is to keep a smile on my face. “Shine for Jesus, Laura!” I tell myself. “What would Jesus do?” I ask myself.

Well, Jesus probably wouldn’t have gone to Wal-Mart on a Saturday, because of His ultimate wisdom.

When I finally got home from the store that day, I could think of nothing I would love more than to make a huge feast for my family because after all, my morning had been so laid back and relaxed so far. Thank goodness for the ease of recipes like this one for Simple Hashbrown and Egg Nests. They made their way into the oven very quickly and I think it goes without saying that after my taxing morning, I was ready to sit down with my family and eat a second breakfast.

These Simple Hashbrown and Egg Nests are incredibly tasty and would make a wonderful dish to serve at dinnertime. That’s why I’m qualifying it for a Simple Meals on a Simple Budget recipe. Making these quickly in the evening and serving them with salad, veggies, and fruit will make a great dinner!

Oh. But don’t go to the store at 5:00 pm on a weeknight to get these ingredients for your dinner because in my experience, that time is worse than a Saturday morning at the store and I think we all know how I feel about that.

Ingredients
  • 15-ounces frozen shredded hashbrowns
  • 8 eggs
  • 2 Tablespoons dried minced onion
  • 1 cup shredded cheese (we like Colby jack or pepper jack best, but any variety will work!)
  • Sea salt and pepper to taste
Instructions
  1. Mix ingredients together in a bowl until well combined.
  2. Scoop mixture into prepared muffin tins (I find that it works best to melt a bit of oil in each tin so that the baked nests pop right out!)
  3. Bake in a 400 degree oven for 30 minutes or until golden brown.

My favorite meals to make are the meals I can dump into the crock pot and forget about until dinner time. This Simple Crock Pot Applesauce BBQ Chicken is one of those meals. It turns out juicy, flavorful chicken with no effort!

While I like cooking my chicken in the crock pot, I’ve started always cooking my rice in my Instant Pot. What did I ever do without my Instant Pot!?

Grab out some greens, steam a veggie, and this meal is perfection on a plate with very little effort!

Simple Crock Pot Applesauce BBQ Chicken

Ingredients
  • 2 pounds boneless chicken thighs or breasts
  • ⅔ cup natural applesauce
  • ⅔ cup BBQ sauce
  • Sea salt to taste
  • Chili powder to taste
Instructions
  1. Place chicken pieces at the bottom of a crock pot.
  2. Sprinkle salt and chili powder over chicken.
  3. Drizzle on applesauce and bbq sauce.
  4. Cover and cook on low for 5 hours.
  5. Serve over rice or potatoes.

Simple Lentil Nachos (on a Simple Budget)

Simple Lentil Nachos is a don’t plan ahead, don’t thaw meat, don’t worry about dinner recipe! If only all meals could be this easy. Oh, and it’s also a don’t spend much money recipe. High fives all around.

Now you know me. I’m a meat-lovin’ girl, living in a household of meat-lovin’ men, all of whom are athletes who need large amounts of protein every day. So I always cringe just a little bit when discussing “meatless recipes” because while I love that this is a great way to save money, I don’t love how unsatisfied meatless meals leave my sons. They love carbs and can eat potatoes until the cows come home, but well, they definitely need the cows to come home. And then they need said cows to land on their plates in the form of a roast or a patty.

But this is what I’ve learned: While it doesn’t work well to go meatless for an entire day at my house, it certainly is possible to offer one or two meatless meal every couple of days. As long as I try to balance our meatless meals with plenty that are meaty, and as long as our meatless meals are still full of protein, we do okay.

Phew, kind of sounds like we’re high maintenance around here. Nope. Just hungry. Hungry, hungry, hungry.

So…Simple Lentil Nachos. This recipe is ridiculously easy so brace yourself for the simplicity. It’s also relatively boring if not dressed up with tasty toppings. But rest assured, once you’ve filled your bowl with all that you love, scooping this onto a chip is actually quite good!

Here’s how simple it is to make Lentil Nachos:

1) Cook lentils (which is, by the way, effortless).
2) Add salsa and salt.
3) Serve in a bowl with your favorite nacho fixins.
4) The end.

Don’t tell all the other beans, but lentils have become my favorite legume because of how effortless they are to prepare. No need to plan ahead or soak. Just boil and serve.

Ingredients
  • 1 cup dry lentils
  • 2½ cups water
  • 16-ounces salsa
  • Your favorite nacho toppings like cheese, olives, peppers, lettuce, tomatoes, guacamole, and onions
  • Your favorite tortilla chips
Instructions
  1. In a medium-sized saucepan, stir together lentils and water.
  2. Bring to a boil.
  3. Reduce heat and simmer for 15-20 minutes or until lentils are tender.
  4. Stir in salsa, heating for an additional 2 minutes.
  5. Serve mixture with tortilla chips and your favorite nacho toppings

Dark Chocolate Peppermint Mousse

This Dark Chocolate Peppermint Mousse recipe was originally published here in 2014. I decided it deserved to be bumped back up to the top of my site so you can relive the deliciousness. It’s such an easy recipe that you can quickly make it during these last few days before Christmas!

This is one of the easiest treats you will ever make. You’ll especially appreciate the final step. Allow me to explain…

Many a recipe (including this one) will instruct us to:

    1. Mix ingredients.
    2. Pour mixture into serving dishes.
    3. Chill for at least two hours.

Is it just me, or does it seem that in order to follow the directions diligently we should mix our ingredients, pour the mixture into serving dishes, then promptly “put our feet up and do nothing for at least two hours?” It says to “chill” right? If we read this literally, I do believe we are being told to do absolutely nothing. Relax. Take a breather. Chill out already.  For two entire hours (or more – don’t forget the “or more”).

Is anyone else thinking about Amelia Bedelia right now?  (If you haven’t read those children’s books, you’re missing out.)

Now I’m not exactly sure what to think about recipe instructions that say, “chill until firm.” Rarely do I notice more defined muscle tone when I’m chillin’ in my chair for two hours or more. “Chill until it jiggles in the middle” – well now, unfortunately that makes quite a bit more sense.

I’ll be the first to admit that taking time to rest doesn’t come easy for me. I’d love to “chill” after mixing up a recipe – but who will take care of all those dirty dishes? Amelia Bedelia, perhaps?  If only.

While I’m sure we could have a lovely discussion about taking time to rest, washing dishes, or encouraging healthy muscle tone – I will now turn the conversation back to this new recipe I’d like to share, letting you know that in fact, once you mix it up, it needs to be poured into serving dishes and chilled.

Ingredients
  • 1½ cups heavy whipping cream, divided
  • 1 cup dark chocolate chips
  • ½ teaspoon peppermint extract
Instructions
  1. Measure ¾ cup cream into a sauce pan.
  2. Heat until hot, but not boiling.
  3. Remove from heat.
  4. Add chocolate chips, stirring until melted.
  5. Stir in peppermint extract and set mixture aside.
  6. Whip the remaining ¾ cup cream in a bowl until firm peaks form.
  7. Fold chocolate mixture gently into whipped cream.
  8. Spoon mousse into 6-8 bowls or cups.
  9. And finally, the instructions you've all been waiting for: Chill for at least two hours before serving.

To be clear, this means that you need to put the mousse into the refrigerator for at least two hours until you are ready to serve it to your family or guests. Before the pan and bowl get crusty, wash your dishes and wipe down the counter-tops. Then hug your children, check the mail, return a phone call, switch out the laundry, get out meat for dinner, scrub the gunk off the floor, and re-hang the curtain that got pulled down.

After that, by all means, you should chill. :)
