Simple Pumpkin Pancakes

November 21, 2014 by Laura 7 Comments

It might be apparent to you at this point that I am on a big pumpkin kick right now. First Pumpkin Breakfast Cake, then Pumpkin Cheesecake, now Simple Pumpkin Pancakes. It’s just one more way to add vegetables to our table, plus it’s delicious – so why not? That, and I have oodles of pumpkin puree at my house right now, so I’m making everything I can think of. My family rejoices.

It is important to note that I often use butternut squash in many of the pumpkin recipes I am making. Pumpkin and butternut squash are interchangeable in recipes. Many a pumpkin pie at my house is actually butternut squash pie, but don’t tell.

Want to know how to easily cook a pumpkin (or butternut squash)? Cooking them whole is the easiest way I’ve found to cook them to make puree. Once pureed, I use it right away or freeze it until I need it. Awesome, nutritious goodness!

These Pumpkin Pancakes stir together in just a few minutes and taste fantastic. Veggies for breakfast…woot!

Simple Pumpkin PancakesYum

1 1/2 cups whole wheat flour (I use freshly ground hard white wheat)
1 teaspoon baking powder
1/4 teaspoon sea salt
1 teaspoon ground cinnamon
2 eggs
1 cup pumpkin puree
1 1/4 cups milk
1/4 cup melted butter

Whisk ingredients together until smooth. Cook on a hot, buttered griddle, flipping once the pancake becomes bubbly on the first side. Serve with applesauce or real maple syrup. Makes about ten 3-inch pancakes.

Simple Pumpkin Pancakes

Other pumpkin (or butternut squash) recipes you’ll find here:

  • Pumpkin Chocolate Chip Bread
  • Pumpkin Chocolate Chip Muffins
  • Pumpkin Donuts
  • Warm Pumpkin Custard
  • Multi-Grain Pumpkin Waffles and Pancakes
  • Pumpkin Chocolate Chip Cake
  • Pumpkin Pecan Pie Squares

  • Pumpkin Cheesecake

What’s your favorite way to use pumpkin (or butternut squash)?

Menu Plan for the Week ~ Plus What I Accomplished Over the Weekend

November 15, 2014 by Laura 9 Comments

This post may contain affiliate links. For more information, please see our disclosure policy.

Here’s a little something worth noting:  Our work as homemakers and mothers is glorious, but rarely glamorous.  I spent some extra time online this weekend, researching new recipe ideas for the holidays. All of the pictures I came across were so pretty, the end result of the recipe was so perfect, and I almost started feeling overwhelmed with trying to keep up with the Joneses (or the Pinterest Queens as the case may be).

Then here I was, ready to post pictures of some of the very simple (but ever so helpful) tasks I got checked off my list this weekend so that I can try to better manage my wife/mom/school/work/ministries life next week. None of my pictures even look exciting, much less pretty or pin-worthy. And don’t look now, but I was so busy cooking and writing on Saturday, I never even made it upstairs to change out of my pajamas. Glamorous? Not even a little bit. Glorious? Absolutely.  I love the life God’s given me.

Rarely Glamorous, Always Glorious

Here are some snapshots of my not so glamorous, but absolutely glorious (or at least practical) weekend:

Friday afternoon I washed and poked three lovely squash our neighbors had grown in their garden and shared with us. Into the oven they went.

weekend work 1

Then, I pulled out the chicken carcasses I’d saved from last weekend and set them to boiling for broth. You’ve got to admit, a picture of chicken carcass floating in water is almost glamorous, yes?

weekend work 2

About 1.5 hours after I put the squash into the oven, I pulled them out, took out the seeds, scooped out the inside, and pureed it. I now have five 2-cup portions ready to use for upcoming baking projects. I use this squash in any recipe that calls for pumpkin. No one can tell the difference.

weekend work 3

Friday night after the broth was finished, I strained out the bones and cooked rice directly in the broth. I also threw tons of carrots and spinach into the pot. Once cooked, I stirred in chicken and other ingredients to make Creamy Chicken and Rice Casseroles. One went into the freezer for another time. The other went into the fridge for my family to eat this week.

weekend work 4

Saturday we ate leftovers all day (a perk to having only three people at home all weekend). I was barely in the kitchen at all except to make a quick batch of Chili and double recipe of Coconut Fudge Bars for this week.

Oh! And I finally finished the “Build Your Menu Planning Notebook” I’ve been working on for the past several months. I’ll be sharing all the details about this on Monday once I get it uploaded into my shop. You are going to love this new fun and helpful resource!

Build Your Menu Planning Notebook 350

Nothing about meal planning is particularly glamorous, but saving your family money and feeding them nourishing meals? It is glorious. I can’t tell you how much fun I had printing and putting together my own personal Menu  Planning Notebook! I got seriously giddy as I picked from all the pages and then built a notebook to suit my needs. Details soon!

notebook 2

Menu Plan For the Week ~ With Caramel Popcorn

September 28, 2014 by Laura 9 Comments

Now here’s something I haven’t made for several months:

Caramel Popcorn With No Corn Syrup!

Caramel Popcorn isn’t something I think of to make for a treat in the summertime. Now that it’s fall, it seems perfect. I’m making a huge batch to serve the teens tonight who are coming for Bible study. Easy, inexpensive, filling, and fun!

Speaking of something I don’t think to make very often…I rarely think to make breakfast for lunch or dinner. Why not? I have no idea. It’s easy, it’s inexpensive (usually), and it doesn’t take much time. I decided that today for our Sunday Dinner, we would have pancakes and bacon. No one will complain, I guarantee you that. :)  Do you have breakfast for dinner very often?

Sunday, September 28
Raspberry oatmeal bars, apples
Quick mix pancakes, bacon, scrambled eggs, pears
High school huddle – Tator tot casserole, tossed salad, carrots with ranch, caramel popcorn

Monday, September 29
Cinnamon swirl bread, fried eggs, clementines
Bean and cheese burritos, pineapple mango smoothies, sweet peppers, olives
Lamb chops, cream scalloped potatoes, tossed salad, green beans

Tuesday, September 30
Pumpkin pancakes, applesauce
Hamburger patties, cheesy cauliflower cakes, steamed broccoli, raspberries
Alfredo sauce with pasta, Italian chicken, tossed salad, roasted asparagus

Wednesday, October 1
Bacon cheese muffins, cantaloupe
Popcorn chicken, ranch potato wedges, peas, carrot sticks
Homemade tomato soup, grilled cheese sandwiches, green beans

Thursday, October 2
Scrambled cheesy eggs, strawberry smoothies
Spicy avocado dip with chips, sweet peppers, nectarine cream cups
Grilled barbeque chicken, honey glazed carrots, tossed salad, fried okra

Friday, October 3
Giant breakfast cookies, apples
Baked potatoes in the crock pot with ham, cheese, and broccoli; olives, cucumbers
Homemade pizza, tossed salad

Saturday, October 4
Crepes with blueberries and cream cheese filling
Leftovers
Lamburgers, homemade fries, carrot sticks, peas

Get free fall menu planners here and here. We’re working on designing new and different planners to use with different methods of menu planning. Watch for those later this week!

basket of apples

We are loving all the apples available to us right now! We are now completely stocked with homemade applesauce for this winter, plus we’re eating a lot of apples for snacks and with meals. One of our favorite ways to eat these apples is with Cream Cheese Fruit Dip. If you haven’t tried this recipe yet – do it. It’s amazing. My kids think it’s kind of like dipping your apple in cheesecake. :)

You’ll notice in my menu plan below that I am serving this dip twice today – once this morning for a college age Bible class Matt teaches at church; and again tonight for the teens who come to our home for Bible study and fellowship.

Cream Cheese Fruit Dip

Hope your week is full of blessing! Here’s what our menu looks like:

Welcome to one of our newest features here at Heavenly Homemakers! I love hearing the stories of how you are using the recipes you find on our site or in our books. Do you have a story to share? Take a picture or two, then email me with the details of how you use your favorite Heavenly Homemaker recipe. :)

Share Your Heavenly Homemakers Recipe Story

Lori sent this in last week – a wonderful inspiration to all of us as we begin busy school years:

With school starting next week, I’ve been spending some time in the kitchen. I like breakfast to be as quick and simple as possible. My husband is usually in charge of feeding the kids while I’m getting ready for work. When I asked my kids (Kaylee-11 and Blake-8) what I should have available for breakfasts when school starts, they both said Breakfast Cookies. Silly question, I know. These cookies have been a staple at our house since I discovered the recipe a few years ago. Kaylee has actually been asking for them all summer. She will be thrilled to come home from camp to find the freezer stocked with her beloved cookies.

Blake is the happy taste tester!
Elias, our 12 year old, walked through my office as I was prepping this post. He was excited to see:
  1. All the food in the picture. Elias likes looking at food as much as I do. :)
  2. My cookbook in the picture. “Hey look, it’s your book!”
  3. Blake’s glasses are almost identical to his. Love of breakfast cookies and matching glasses? I think they’d get along just fine. :)

Can’t wait to hear from more of you. Share your stories!

Menu Plan for the Week ~ The Boys Are Back in Town

August 3, 2014 by Laura 13 Comments

This post may contain affiliate links. For more information, please see our disclosure policy.

After a very busy and full three months of travel, mission trips, family reunions, and church camps – our family is all home and back together again. We have loved all the great experiences we’ve had all summer, especially loving that our boys have had such rich times of spiritual growth at church camp. We also really loved seeing family we don’t get to see very often. But being home together again and settling into a routine? We are so thankful!

I counted.  In all 31 days of July, I was home only 7 days. And those 7 little days I was home? I was only able to do bare minimum, like laundry and packing for the next trip. Phew! My house is dirty. My computer work is backed up. I don’t even know what’s in the back of my fridge. No matter. I’m refreshed and ready to settle back into home and work life again.

Also? I’ve missed you.  I really needed the computer break. I needed the break from writing day after day. I needed to step away from all the work it takes to keep up with this blog. Now that I’ve had this time of refreshment and break from the norm, I am so ready to sit here with you, sharing what I’ve learned, hearing about your experiences, and serving alongside you as we create heavenly homes and love our families together.

So, hi! I’m back. Praise God for how He works and the opportunities He provides to give us just what we need. I hope your summer has been full of God and the perfect lessons He teaches as we seek His will.

Fresh Peaches

Our peach trees are giving us all kinds of delicious fruit right now.
What a great treat to come home to!

In other news:  As of today, I am 41 years old. It’s been a fun, happy birthday so far with all my men spoiling me. I look forward to celebrating my birthday with you, too. Watch for fun sales starting tonight!

Fresh Peaches 2

Fresh banana bread and sliced peaches right off the tree? Perfection.

Now how about a menu plan? I haven’t written one for the past few weeks, so here’s hoping I still remember how. After all, all the boys are back home, and a couple of them grew several inches during the summer. I’m getting shorter and shorter all the time in this family of growing boys. People who haven’t seen them for a few weeks have commented that they didn’t even recognize them at first. Seriously, these teenage boy growth spurts are nuts. Wow, I love these kids – and their appetites.

pasta salad bar 3

Have you tried this great Pasta Salad Bar idea yet? What are you waiting for?!

Here’s this week’s menu plan:

Shrimp and veggie stir-fry with asparagus, broccoli, yellow squash, carrots, and zucchini; watermelon

Monday, August 4 (We start our school year today)

Meat and cheese burritos, sweet peppers, olives, pineapple mango smoothies (with spinach blended in)
Italian cream cheese chicken, tossed salad, asparagus

Tuesday, August 5
Honey cinnamon muffins, scrambled eggs, raspberries
Chef salad, banana bread, watermelon
Grilled barbeque chicken, corn on the cob, garden green beans, fried zucchini

Wednesday, August 6

Menu Plan for the Week

Happy Mother’s Day to all you ladies, sisters, mothers, aunts, and friends! I hope all of you are receiving honor and celebration today. Matt and the boys are spoiling me as usual. I’ve not lifted a finger (except to type this post of course). Even though Matt is having a hard time getting around, he’s still been able to talk the boys through making lunch and cleaning up. Super great!

mother's day lunch 14

Look, Matt is up on two feet! He’s still hobbling, but his foot gets better each day. We’re super thankful for the progress he’s making and that his foot is healing so well. Thank you to all who prayed for our family last week. :)

mother's day may 2014

He doesn’t look it in this picture, but Asa really is as tall as, if not taller than, Matt.
Everyone is growing, or I’m getting shorter by the minute.

Last week’s meal plan went out the window after Matt hurt his foot on Tuesday evening. Thankfully, I had plenty of prepared food in the freezer that I could pull out and use. Plus, I ran to the store and got some sandwich stuff to fill in the gaps. Between that and simple to throw on the table fruits and veggies, we made it just fine.

If part of this week’s menu looks a lot like part of last week’s menu, that’s because I just copied and pasted it over. May as well use what I already planned last week, right?

Sunday, May 11 (Mom’s Day Off)
Instant oatmeal packets, raspberries
BLT wraps, fresh pineapple, strawberries with chocolate whipped cream
Pizza

Monday, May 12
Strawberry cream muffins, fried eggs
Calzones, pineapple mango smoothies, cucumbers with ranch
Italian cream cheese chicken, tossed salad, steamed broccoli and carrots

Tuesday, May 13
Oatmeal breakfast bars, raspberries
Hamburger sauerkraut dip with chips, kiwi, blackberries
Orange chicken, baked potatoes, green beans, tossed salad

Wednesday, May 14
Poptarts, blueberries
Chicken tacos, tomatoes and lettuce, olives, cantaloupe
Chili mac, tossed salad, peas

Thursday, May 15
Cheesy scrambled eggs, pears
Easy noodle stir fry with broccoli, carrots, asparagus, and mushrooms
Grilled barbeque chicken, creamy coleslaw, cucumbers and carrots with ranch, watermelon

Friday, May 16
Whole wheat waffles with strawberries and whipped cream
Cheeseburger zucchini boats, fruit and kefir smoothies (with spinach)
Hearty green bean casserole (recipe in Oh, For Real cookbook), tossed salad

Saturday, May 17
Giant breakfast cookies, blueberries
Leftovers
Black bean taco salad, cantaloupe

Our Mother’s Day lunch today was incredible. Watch for those new recipes here this week. You must learn to make BLT Wraps and Chocolate Whipped Cream for Strawberries!

Sweet Pecan French Toast Casserole, Basic Cream Muffins, and Poptarts ~ Freezer Cooking Challenge

April 17, 2014 by Laura 1 Comment

This post may contain affiliate links. For more information, please see our disclosure policy.

I was planning to share part of this yesterday, but my website server was down most of Wednesday (ack!). Therefore, I’m sharing the rest of my freezer cooking challenge results all in one post. Actually, since I couldn’t work on my website Wednesday, that ended up being great kitchen time in which I experimented with new recipes and knocked out the rest of the baking I needed to do for this challenge. Sometimes, not being able to work on the computer is a good thing. :)

Tuesday, I made two dishes of Sweet Pecan French Toast Casserole (recipe in {Healthy} Make-Ahead Meals and Snacks eBook). We ate one that morning, and I froze the other one. My freezer is beginning to be super full. Love this!

french toast 2

french toast 1

Yesterday, I rolled out a double batch of dough and made tons of Poptarts. It’s been a while since I’ve made these, so everyone was very excited to have these for breakfast. It’s a good thing I froze half before serving them, otherwise I think the boys would have just eaten them all!

poptarts freezer

Once the Poptarts were in the oven, I mixed up a double batch of Basic Cream Muffins (recipe in Let’s Do This! eCourse, Lesson 4). I had plans to divide the dough in half, and add in different fruits. But then I got lazy and just dumped blueberries into the bowl. Eh, we like blueberry muffins.

cream muffins freezer

I froze the batter, unbaked, and will simply pull them out some night before bed to bake the next morning. If you haven’t tried freezing muffin batter, you must! I love how easy this is! Here are all the details.

And that completes this week’s freezer cooking challenge! How did you do?

We’ll be taking a break next week and pick back up on our freezer cooking challenges later. I’ve got a party planned for us next week (can’t wait to share!), plus my freezer is really full. ;)

Breakfast Pizza {Real Food Dollar Menu}

Yum

Our boys discovered that you can use my Whole Wheat Pizza Crust to make an awesome Breakfast Pizza. They also discovered that if you work ahead in your math book, you will finish ahead of schedule. On the contrary, if you avoid doing math some days, you will have to do double the lessons on the days you’d really rather go outside and play with your brothers on the trampoline.

But back to the pizza.

breakfast_pizza_2

Make it just like you would a regular homemade pizza, using this crust recipe. Top it with salsa, scrambled eggs, cheese, and any other toppings of choice – like veggies and meat.  Homemade Turkey Sausage is great on this pizza!

Bake it as directed. Serve with fruit.

breakfast_pizza_1

Without adding meat, I found that it cost about $4.52 to make this meal, which filled my family of six. That’s about 75¢ per person, for a meal that actually sticks with them for several hours!

Easy, delicious, filling, versatile, inexpensive, and healthy. What more could you want? (Except maybe to be finished with math lessons for the year.)

*I calculated my cost based on the food sources and prices I have available to me. Most of the ingredients I use are organic. Your cost may be slightly more or less depending on where you find your ingredients.

Looking for more meals on our Real Food Dollar Menu? Here are the recipes I’ve shared so far:

  • Hearty Chili
  • Spanish Rice
  • Pasta Alfredo
  • Crock Pot Barbecue Chicken
  • Crock Pot Beef Stew
  • Easy Chicken Pot Pie
  • Chili Mac

Stay tuned for many more recipes and ideas for our Real Food Dollar Menu!
