Big Family Food and Fun: April 21-27, 2024

Sunday morning was a bit less intense compared to the past few weeks. Instead of having to pack an entire lunch for our family to eat after church and before Keith’s soccer game, we were planning to enjoy a potluck lunch with our church family. My only responsibility was to take Frosted Brownies, which I had baked and frozen last week.

So while feeding all the kids breakfast, I put BabyBoy#11 into one of our kitchen sinks for his “bath.” A couple of the kids had fun helping me.

We loved spending extra time with so many friends after church while we ate.

Then we loaded up and headed to Keith’s soccer game. I had packed apples and pistachios to snack on at the game because even though we had just eaten lunch, we seem to always still need snacks. ;)

I tried to capture a picture of Keith’s fan club as we all trailed out after the game. We are quite a parade.

I had put a a Pork Roast into a crock pot early that morning for our dinner that night. But it was still not quite done at mealtime. So I left it to continue cooking and pulled out leftovers to fill our bellies.

It was a boring and no-veggie dinner of leftover Smoked Chicken, Mac and Cheese, and Toasted Sourdough Bread.

I had made some Peanut Butter Cup Whipped Cream that afternoon so we all enjoyed it with graham crackers as a treat after dinner.

Monday morning for breakfast I scrambled eggs and the kids made toast for themselves to go with their eggs.

It was a warm day so the girls were so happy to put on new summer-y outfits!

I attempted to take Anna to Food Distribution where Keith and I go on Monday mornings. Once Keith starts Kindergarten next year, Anna will be my Food Distribution sidekick. I instructed Keith to show her how it’s done and he did – sort of. They got pretty distracted by toy donations in the room where we were working, oy.

I just had the two of them for the rest of that morning because Matt and Elias had taken the three youngest kids to York for the day to spend time with our friend Nancy. So I spent my time and energy working extra on some of Keith and Anna’s behavior needs. And I taught them both to help me load the dishwasher.

After school, Kiya set up a nail salon on our back steps. :)

We had lots of visits from friends that afternoon/evening as our dear friend Phyllis came to see us. She showers us with love when she comes and our time with her is such a gift.

Then friends Charlene and Samantha came for the evening. Once our girls discovered Samantha’s purse, it was all over. Thank you, Sam, for letting them use up ALL YOUR LOTION AND CHAPSTICK. All of it. Gone. Plus dental floss. Bless.

I was so busy enjoying friends that evening that I didn’t cook or take pictures of what I didn’t cook. ;)

I asked Elias to throw in four frozen pizzas for us, which he did, and here’s what that looked like at the end of the night:

Tuesday, Matt and I made a plan to run to a couple of stores and then go to a park before heading home. I packed lunch, knowing that we would need to eat through all of these plans.

We had some lunchmeat that needed to be eaten up so I put it on buns with cheese and melted them in our air fryer just before we left for our outing.

Matt stayed in the van with our littles while I ran into Walmart for inner tubes so he could fix bike tires later that day. While in the store, I couldn’t not run over to see if there were any food mark-downs, right? Woo – marked down pizzas!

And a beef roast for $3.08/pound!

Our time at the park was windy! But it was a good outing for the kids so that we could get their energy out.

We dropped Acacia and Josie off at Ms. Kathi’s on our way home for their special time with her that day. Then we got home and put away groceries we’d picked up that afternoon. Here’s what I got at Aldi:

Keith and Anna didn’t have school that day. Anna was excited to help me load the dishwasher, seeing as she’d been taught how the day before and was now an expert.

Keith played in the dirt all afternoon and came in with a mustache.

Justus, Kelsey, and Kelsey’s mom, Nicole, came for dinner that night! Brayden, Kiya, and I had just arrived back from helping at the Food Distribution but I had all the food in crock pots or ready to rewarm on the stove. We had Sunday night’s Pork Roast, Crock Pot Baked Potatoes, Corn, Green Beans, Rolls, and Strawberries with Whipped Cream.

We don’t get to see Nicole very often so it’s a huge treat that she is in town!

Wednesday morning, I made French Toast and Bacon. I also blended up a smoothie full of greens for Matt and me.

It is worth a mention that I do very well keeping children alive. But plants? Not so much. (Water perked these back up, thankfully.)

While the plants were suffering and dehydrated, I also failed to pull the last of our  bacon out of the oven at the right time. I decided to make as much bacon as possible that morning to get ahead. But then I forgot about these pans when I went upstairs to get myself dressed and ready for the day.

Can’t win ’em all.

Matt and Elias spent the day in York working again and they took the youngest three kids to our friend Emma’s for the day. They loved this!

That night for dinner I grilled some Pork Steak I’d picked up on the cheap a few weeks ago.

They turned out amazing! We ate them with strawberries and salad.

Thursday morning I let Brayden and Kiya toast their own bagels or toast in the air fryer (they consider this a huge privilege). We ate them with applesauce or bananas.

Matt needed some items at Menards so he dropped three kids and me at Sam’s while he took the other two kids across the parking lot to Menards to do his shopping. My main goal was to get fruits and veggies because we go through them so quickly. Beyond spinach, spring mix, broccoli, oranges, salad kits, and grapes, I picked up some kleenex, plastic containers, barbecue sauce, pickles, heavy whipping cream, almond butter, hot dogs, milk, eggs, and fig bars.

We dropped Acacia and Josie off at Josalyn’s where they spent some time painting. :)

Late afternoon I handed everyone a box or two of kleenex from the case we’d bought at Sam’s that day and we all paraded up the stairs to put them on our storage shelf.

Kiya is quite the organizer, so she helped everyone put their box in its place.

We had to be at the kids’ school that evening for a special Preschool Family Open House so for an early dinner I baked the Walmart pizzas that I’d picked up earlier in the week.

Keith and Anna were so excited to introduce us to all their friends. Brayden was excited too because he has had the privilege of helping in a preschool classroom a few mornings recently. He felt like a celebrity when he walked in and was swarmed by little ones who were happy to see him!

There were activities set up at tables for us to enjoy.

Of course Anna found the flamingos at the photo booth!

Friday the kids didn’t have school so I made a huge batch of pancakes with sausage.

I was planning to make these Chocolate Cupcakes (with spinach) but discovered that I didn’t have any chocolate cake mixes. Not to worry – I just added a little bit of cocoa powder to the yellow cake mix to cover up the green spinach. :) While I was using greens, I made another batch of these smoothies for Matt and me.

Mid morning I packed up a lunch for us to take on our outing for the day. It was rainy and wet outside so we decided to take everyone to the indoor mall play place to get energy out. For lunch I packed Cheese, Salami, Crackers, Grapes, and the Cupcakes with a container of frosting to surprise the kids.

The mall play area was a big hit!

At lunchtime we took all eight kids (our Bonus Boy was with us again this weekend) to potty and wash hands. Then we sat in the Food Court and handed out the lunch we’d packed. It was both sweet and crazy. :)

Back at home, there were tornado sirens off and on all afternoon, which was a bit nerve-wracking for some of our kids. As many of you heard, there ended up being a lot of tornado-action here in Lincoln and in Omaha and surrounding areas. THANK YOU SO MUCH to all who emailed to check in on us. Thankfully, we are all safe and sound.

Because of the craziness of the afternoon, we stayed in that night and warmed up leftovers for dinner. Kiya was excited to be our food-warmer-upper. :)

While Kiya was working on dinner, I used Sunday’s leftover Pork Roast to get ahead for future meals. I put together a huge pan of Party Potatoes with Pork Roast. Then I turned the rest of the meat into sandwiches like this. All of the adults in our house love having individually wrapped sandwiches on hand to grab and go for work needs.

Saturday morning we had No-Bake Chocolate Chip Cookie Dough Bites. (I had intended to make No-Bake Snickerdoodle Bites but realized too late that I didn’t add cinnamon. So I switched to chocolate chip and no one complained!)

While the kids played outside, I prepped our Sunday lunch. We were going to have a fun Sundaes on Sunday event with church friends right after worship service and everyone was to bring their lunch. I made two loaves of bread worth of Uncrustables to take with us. Then I used the crusts to make Easy Bread Pudding for our Sunday breakfast.

I headed outside so Matt could come in and get something done. I discovered that Brayden and Kiya were across the street with our neighbor, John. He is a plant and flower expert and they were helping him and learning as they went. This is so good for them!

Then John came over and started teaching our girls about the weeds in our yard that look like flowers. Note how Acacia has her arms around Josie and Anna. She is such a little mama. :)

The weather was decent so we decided to load up the eight kids and go to the zoo for a few hours. I grabbed a random assortment of whatever was easiest to grab for us to eat for lunch an snacks while we were there.

After we finished eating, the kids lined up on a wall to watch a Porcupine lesson being taught in the exhibit area.

We headed over to look at other animals and were stopped by a Peacock with all its feathers spread wide. Amazing!

We played in the sand area for quite a while before loading up for home. We had a huge afternoon/evening with people stopping by for visits including overnight guests. Our friend Malorie has turned into Elias’ girlfriend Malorie. :) :) :) She graduated from college that day and her family came to spend the evening and night with us. It was a wonderful time getting to know each other better!

For dinner I made a meal similar to this one with Smoked Chicken Legs, Caesar Salad, Corn, Baked Beans, and Rolls.

We got a bunch of dirty, tired kids through the bath and that was our week!

Big Family Food and Fun: December 17-23, 2023

As you can imagine, Sunday mornings are a bit hectic at our house as we try to get out the door to church with so many little ones. I’d get more done ahead of time on Saturday night if I wasn’t already just trying to survive the regular needs of Saturday night. Phew.

At one point in the morning this Sunday, I was able to run to our laundry room to gather outfits for our five littlest. I laid them on the back of our living room couch like this so that Matt and I could work together to get everyone dressed.

Our Sunday lunch that day included 23 lovely people and it was marvelous! I set up a big Baked Potato Bar and our friends brought salads and desserts.

I usually bake potatoes like this in a crock pot. But I needed my crock pots for other things, plus 10 pounds of potatoes don’t fit into one crock pot. So I “baked” them in our large roaster, hoping it would work well to do the job I needed it to do while we were at church. Phew, it worked!

Our potato bar included Chili, white queso, bacon, shredded cheese, butter, sour cream, salsa, ranch, guacamole, and olives. At the last minute, before leaving for church, I also threw 24 hotdogs into a crock pot to cook all morning. I knew we’d have a large crowd and I wanted to make sure we had enough food. AND I realized that a lot of baked potato toppings can double as hot dog toppings (chili dog, anyone??).

We went through all 24 hotdogs plus almost 10 pounds of potatoes this meal. It was awesome!

The selection of desserts our friends brought was so good. Those frosted bars there look like brownies but take one bite and you realize they are a delightful Ginger Snap bar. Wow. So good. I’m not going to tell you how many I ate with my coffee that afternoon. And the next day. :)

Our friends trickled away for the afternoon and our family pulled up the Husker volleyball final match to enjoy together. This photo is a peek into why we love living in Lincoln. Being able to enjoy time with our adult kids is a gift I can’t put words to. (Even if the Huskers did choke and forget how to play their sport, bless ’em.)

After the game, we got the kitchen cleaned up from lunch and I decided that there would be no more cooking or dishes that day. Anna finished off the can of our lunch olives while I put five frozen pizzas into the oven for dinner.

I only burned one of them. Ack.

Some friends of ours had been sick all week so we decided to put together a surprise package for them and deliver it to their porch. Brayden, Kiya, and Keith made cards…

And we put together a box filled with treats and crafts. Look at these adorable ornaments from Delight Design! I have a stash of them for our kids to color or paint so I put some in for our friends to color.

I had a couple of frozen Lasagnas in our freezer so I put one in a large gift box to go along with our surprise box along with the cards our kids had made. Then we loaded everyone up to go make our delivery.

We had some disposable cups with lids leftover from our Christmas party the night before, so we put some hot cocoa into them and told the kids they could have one for the road after they buckled in. This was a GREAT idea that we will probably not do again any time soon because giving kids sugar while confining them to car seats made for an extra-crazy van ride home, oy!

Someone gave us the gift of this delicious loaf of cinnamon-y bread at church on Sunday so Monday morning we enjoyed it with our breakfast.

Eva came over and helped Matt with the littles while Keith and I headed to our  Food Distribution set up to help get food ready to give away on Tuesday. Mid-morning, Eva sent me this “Mini-Laura” photo of Acacia. :)

There was a Sam’s close-by so after Keith and I finished helping at Food Distribution, he and I headed to Sam’s to pick up a few necessary food items as we get ready for Christmas.

That afternoon, I browned 4-pounds of sausage and 6-pounds of hamburger meat to get meals ready for the upcoming days.

I used a combination of cooked hamburger and cooked sausage to make a huge Lasagna for Friday night. My dad and his wife were coming for a visit and we were planning a fun evening with all of our big kids coming to see them.

I then used some of the cooked sausage to make four pans of Quiche for our dinner that night. Brayden was happy to mix up a big bowl of Caesar salad to go with them, plus we had some strawberries.

I had planned for us to make these Reindeer Cookies for a couple of weeks and we finally made it happen Monday night!

Our little Josie-girl had fun trying to put antlers and a nose on her cookie. Turned out pretty good, don’t you think?

Anna was very proud of her cookie creation!

While the cookies were baking, the kids watched part of Rudolph the Red Nosed Reindeer since it matched the theme of the evening.

And then they ate their cookies before getting ready for bed!

Tuesday morning Keith decided that pancakes sounded really good. :) I had a Kodiak mix from Costco so he helped me mix it up and I made a huge batch of pancakes on our griddle for breakfast.

A dear lady at church had told us on Sunday that she had the week off and to “go out for some time to yourselves before Christmas!” while she came to babysit. Ohhhhh such a sweet offer!

So Tuesday mid-morning we left the youngest five with Kathi, Elias, and Malachi while Matt and I had an early lunch at Cheddar’s. I took this picture to send to another friend who had given us a gift card to use on a date sometime. Great food and uninterrupted conversation!

I wrapped presents all afternoon during naptime, then picked up Brayden and Kiya to head to the Food Distribution to give out food. This service opportunity really stretches them and is teaching them so much about seeing others and showing love. It also sometimes triggers some tough emotions as sometimes they see someone that reminds them of a person from their past. We tend to have a few things to work through as we drive home on these days.

This particular day, they had been given an excess of donations from various grocery stores so we brought home two bags of food like potatoes, salad kits, canned soup, buns, rolls, and bread.

I had put White Chicken Chili into the crock pot earlier in the day so that dinner would be ready to serve without me being there to make it. I forgot to take a picture that evening but here are the lovely leftovers in the fridge. ;)

Wednesday morning after we got Brayden and Kiya off to school, Matt and I loaded up the youngest five to run final errands before Christmas. We went to Aldi because butter and cream cheese were on sale. I got a case of both – woot!

Then we headed to Costco, putting two kids in my cart and three in Matt’s.

I felt a little bit like a crazy woman, but that afternoon I also went to Sam’s. I’d gone to a different Sam’s with Keith earlier in the week but they didn’t have the bacon I wanted and we must have our bacon, mustn’t we? This Sam’s had it and it was still hugely discounted! I got two boxes, which equals 20 pounds. I feel no regret. :) :) :) I am now FULLY stocked up on groceries and ready for Christmas!

When Anna got off the bus from preschool that afternoon she was excited to open a gift from her teacher. It was so sweet to watch her delight as she pulled the little items out of her package!

Have I mentioned that we have not one but FOUR birthdays in our family in December? This particular day, we were celebrating Malachi turning 19! Per his request, we had a junk food buffet, ha. I couldn’t handle only serving pizza rolls and corndogs so I included grapes, berries, and carrots in the food line.

Several off his friends came to Lincoln to celebrate with him plus his cousin from Kansas. SO special! Asa and Eva came too (Justus and Kelsey weren’t able to join). It was a great evening!

I could only scrounge up 10 candles for our 19-year-old. I need to put candles on my Walmart list. :)

We had “present time” in the living room, giving Malachi some very adulty gifts like dishes and boxes of mac-and-cheese. He and his cousin are planning to get an apartment together soon so he’s starting to collect needed items.

Somewhere in there, I managed to get Brayden, Kiya, Keith, and Anna to join me in putting together little gifts for their teachers. Phew, what a busy (but great!) time of year.

Acacia wanted to get in on the action, the little sweetheart. She put together a teacher gift for the teacher she doesn’t have, haha.

Thursday morning I made our daily smoothie, then put a roast and carrots into the crock pot to slow cook all day for that night’s dinner. (Note to self: Put the carrots on the bottom next time so that they can cook in the juices and turn out to be more tender.)

My dad and his wife, Tacy, arrived early in the afternoon – such a treat to see them! (We hadn’t seen them since Adoption Day in May.) We visited all afternoon, then for dinner enjoyed the Roast and Carrots plus Buttered Corn and Rolls.

Our nephew, Troy, was still here visiting too – so much fun to have family in town!

We finished off dinner with Christmas Cookie Cut-Outs, which we’d made like this. So I gave each kid a cookie with some frosting and sprinkles so that they could decorate their treat before eating it.

Friday morning it was fun to make several pans of bacon with the big box I’d picked up on sale earlier in the week. We had it with Cheesy Scrambled Eggs and Grandma Tacy’s Banana Muffins that she’d made and brought for us.

Papa walked to school with Matt, Brayden, and Kiya. Then he and Grandma Tacy were excited to walk Keith and Anna to their bus when it came to pick them up at noon. :)

We set out a fun Sub Sandwich bar for lunch with a variety of breads, meats, and cheeses plus avocado, spinach, and condiments. We had chips and carrots on the side and we were nice and full afterward.

Acacia and Josie ate their lunch at a little table Papa and Grandma Tacy had brought for them. It’s soooo cute.

When Keith and Anna got home from preschool that day, they were excited to pull everything out of their backpacks and tell us about their Pajama Day – Gingerbread Party. :)

We ate a huge Lasagna for dinner with Caesar Salad and Green Beans.

Plus we enjoyed Christmas Cut Out Cookies and Frosted Brownies.

All of the older kids were able to be there to enjoy some Papa and Grandma Tacy time. :)

I happened upon this scene in the kitchen and while I had to keep up with littles and couldn’t hang out with them, it was delightful to me to see all of our Bigs enjoying each other in our kitchen. :)

We gathered in the living room after dinner for a little bit of Christmas gift exchange time.

And then we attempted to put some VERY HYPER CHILDREN to bed. They are all a little bit extra-emotional because of the holidays. Having extras at our house is so exciting – but makes it hard for them to regulate. Which makes it hard for me to regulate as I work with Matt to settle everyone. This was the third night in a row of crazy bedtime behavior (it started on Malachi’s birthday evening) and I was in tears by the time we finally got them calm and into their beds.

Ugh. This life is so, so good. And also very much hard. It is everything all at once. God led me to read Psalm 18 on Saturday morning and the Truth from it is so good and was so needed. He is our strength. He is our rock. He delights in me and loves me. This is how we can walk through these days. Breathing all this in changed Saturday for me.

My dad loves to buy donuts for us when he comes to visit so we enjoyed those with an Easy Egg Casserole and fruit.

We had gifted my dad a Big Boggle game for Christmas and I reallllllly wanted to play it with him. So we decided to let the kids open a gift from their CASA that she’d delivered that week. I knew that the gift was a huge set of Magnatiles and thought the kids might spend some timing enjoying them so that I could have some good grown-up game-playing time. This plan worked out about as good as it could work, haha. Dad, Tacy, and I played several rounds of Big Boggle even while there was a bit of chaos behind and around us. :)

I had started a full crock pot of Ham and Potato Soup that morning and it was ready for us to eat at 12:30. I buttered and warmed up some rolls we’d been given at the Food Distribution to help stretch the meal. We had a few additional friends hanging out that morning and Justus and Kelsey stopped by too. So altogether there were 20 of us and we finished the entire pot plus all the rolls! (And some clementines and cookies.)

I rested that afternoon after Dad and Tacy headed home. Then I went to the kitchen, turned on Christmas music, and did some baking as the girls were waking up. I mixed up my Peppernut recipe but made them into regular cookies instead of a billion tiny bites like my grandma used to make. They taste delicious like this and of course take much less time.

I also made Fudge and Shortbread.

After all of that, I didn’t feel like making dinner, ha. So we made popcorn and got out fruit, cottage cheese, peanut butter pretzels, and yogurt.

While Matt and I started our Saturday night bath process, Malachi and the boys set up our new Corn Hole game that Papa and Grandma Tacy had gifted us. :)

Then the best thing happened! We settled all of our clean, jammied kids into the living room for Singing and Prayer time. Just before time to head upstairs, the doorbell rang. Who could it be??

The kids were AMAZED by this special visitor and each one of us received a beautiful handmade (by Mrs. Claus) gift. It was incredible and sweet and well, we have some pretty great neighbors. ;)

And that was our week! Merry Christmas!

Big Family Food and Fun: December 10-16, 2023

Sunday we were blessed to have friends join us for lunch after church – a precious family of five that we have known for many years. Living in Lincoln with them now is a huge blessing so that we can worship and spend time together.

I made a Spiral Cut Ham, Cheesy Mashed Potatoes, and Green Beans. Their family brought Salad, Cucumbers, Cornbread Muffins, Brownies, and a Trifle. It was an amazing feast!

When our kitchen looks like this, it is my favorite. I will stare at this photo and praise God for all He’s given.

We visited and the kids played a good part of the afternoon. Then I turned some of the leftovers into casseroles. I used leftover ham to make an Easy Egg Casserole and put it into the freezer for Christmas morning. Then I made two Ham and Hashbrown Casseroles – one for us to eat this week and one to give to a mom who just had her first baby.

At dinnertime, we finished off some of the side dishes from lunch along with Roasted Chicken. After we got the kids to bed, Matt finished getting all the chicken off the bones. Throughout the week, we can have easy chicken meals, plus I can make broth with the bones!

Monday morning Eva came over to help with the kids. I took BabyBoy#11 to a WIC appointment. Then I was blessed to spend two entire hours visiting with my friend Charlene – a rare and awesome treat!

Monday evening, Brayden had a Ukulele Concert so I made a big pan of Cheesy Chicken and Rice (this recipe but with chicken instead of beef) so we could have an early dinner before his performance.

Most of us were able to watch his concert and he was so excited (and nervous) that so many were there!

Justus and Kelsey surprised him with flowers afterward. :)

Tuesday after breakfast I used the chicken bones from Sunday night’s chicken to make a big pot of broth.

Keith and Anna had home visits from their preschool teachers that morning. Then as soon as all the littles went down for naps that afternoon, I headed out by myself to shop at Costco. I got a few more Christmas gifts plus milk, fruits and veggies, olive oil, chicken nuggets, diapers, and a few other needed items.

I got home just in time to unload the van and then pick up Brayden and Kiya to head to the Food Distribution where we help hand out food each Tuesday afternoon. I had used the last of Phyllis’ pulled pork to make BBQ Pork Melts, which Matt and Elias baked at dinnertime. So we got home and ate them along with leftover potatoes and fresh spinach.

Wednesday morning I used leftover ham from Sunday to make Ham and Cheesy Eggs and then let the kids choose a bread item. (We almost always bring home quite a bit of bread leftovers from the Tuesday Food Distribution.) That day we had a couple varieties of loaf bread plus bagels and Cranberry Orange Muffins.

Our morning was full of appointments and meetings. As we were getting kids dressed, Keith requested to comb Acacia’s hair for her. I usually let the girls look at pictures on my phone while I brush their hair (to keep them still) and Matt was able to capture this sweet sibling moment. Acacia actually let Keith brush her hair for quite a while!

I had a lot of tortillas from Azure Standard in our freezer and I wanted to make a big batch of these Burritos, so for lunch I made a Burrito Bar so that I could the leftovers to put together freezer burritos.

For dinner that night I used the chicken broth I’d made on Tuesday to make a pot of Chicken Noodle Soup (with spaghetti noodles since that’s what I had on hand). I also made a blender full of these smoothies because I had a lot of greens in the fridge to use up.

Justus had come over to give Brayden a piano lesson so he grabbed a bowl of soup too.

I was going to get out a Christmas craft for the kids to work on that evening, but I discovered a wrestling match that then turned into an I Spy game with Daddy. And before we knew it, it was bedtime. :)

Thursday evening we had signed up to deliver a meal to friends who just had a baby. So we decided that we would eat an early dinner, load everyone up to look at Christmas lights since we needed to head out to drop off food.

Brayden saw what we were having and asked if he could make dinner. Yup! From start to finish, he made our Orange Chicken and Steamed Broccoli. (This may not seem like a big deal for an almost-10-year-old. But for this guy, it is a very big deal and we are so thankful he has come so far as to do something like this.)

Meanwhile, I pulled out some frozen Christmas cookies to frost and decorate for the new parents we were delivering food to. Following these methods of making cookies with kids is sooooo helpful and this night proved it! The cookies were already rolled out, cut out, and baked. All we had to do was frost and sprinkle. Kiya loved helping me with this job and wanted to know who else we could make food for. :)

After we ate Brayden’s delicious dinner, Matt loaded all of the littles while I finished putting together the meal we were going to deliver: Ham and Hashbrown Casserole, Steamed Broccoli, Grapes, and Cream Cheese Cut-Out Cookies.

After we dropped off the food we found fun neighborhoods with lots of Christmas lights to enjoy. When we got home, Elias had pulled up the Husker volleyball game – perfect timing! We won the game just in time to get the kids to bed. :)

Friday morning I made a loaf of bread worth of Eggs in a Nest. Kiya had requested them since I hadn’t made them in a while. Perfect!

That morning I also made a batch of Flourless Chocolate Banana Muffins with some bananas that were turning black.

Putting the muffins into festive paper liners turns them into Christmas muffins!

We loaded all the kids up that morning to run errands. First stop: Trader Joe’s to look for a few gifts to put together for teachers, etc.

Keith got to push a kid-cart, which totally made his day!

After school that afternoon, Keith proudly pulled out an ornament he had made at school and wrapped by himself.

That evening, we all put on our snuggly-est jammies and headed to church for a Christmas Pajama Party! The children’s ministry team did a wonderful job putting together a super fun evening for the kids. We had a great pizza meal.

We had a dance party.

A grinch and an elf showed up and started a “snowball fight” which was a huge hit!! Well, except for with Acacia and Josie who weren’t so sure what to think about the whole thing, haha.

There were crafts and a bingo game and a chocolate fountain – a WONDERFUL party that we all loved! Best of all, the kids were all jammied up and ready for bed as soon as we got home. :)

Saturday morning I set out the Flourless Chocolate Banana Muffins  I had made the day before. I also baked the remainder of the box of bacon I had bought a few weeks ago. We had a few yogurt cups from Aldi so we finished those off too.

Mid-morning we loaded up snacks and kids and headed to the indoor play place at the zoo.

I had made a big bowl full of Tuna Salad so we could eat right away when we got home.

During naptime that day, we spent time getting ready for a Christmas party with some friends who were coming from out of town. Kiya set out fun Christmas plates and juice pouches.

Then the kids watched as I attempted to put together Santa Bananas. Hahahaha, you got me, Pinterest. We were all giggling the entire time I was putting these together – especially every time I tried squirting the whipped cream onto the Santa hats and into Santa beards. The whipped cream didn’t cooperate very well.

Oh – and then the red M&Ms started to bleed so by the time we served these, Santa had quite the bloody nose. Sorry ol’ fella. It was FUN though and I’m glad we tried these. Good luck if you decide to try too. :) :) :)

We set out a buffet of Hotdogs, veggies, and other fruit to go along with our Santa Bananas.

Justus and Kelsey came over to help, thankfully! Altogether there were 8 adults and 16 kids. Was it loud? Do you even have to ask? But look at this precious, full table…

After dinner, we all loaded up in our cars/vans and drove around to enjoy Christmas lights. When we came home, Matt and Justus had popcorn ready and then Justus and Kelsey helped serve Hot Cocoa to go with it.

What a night! Matt had already bathed four of the kids earlier while I was working on the infamous Santa Bananas. Kelsey threw two of the girls into the tub after Hot Cocoa. Our guests headed out and we tucked everyone into bed after a fun time together!

And that was our week!

Big Family Food and Fun: August 6-12, 2023

It was our last week before school starts and we made the most of it!

It all began last Sunday

Getting everyone off to church (or anywhere) is quite a production. But the there’s this sweetness as we were brushing hair and putting on dresses…

We are so blessed to begin each week by hosting whoever God brings to our home for Sunday lunch. Now that we are more settled after our move, we are able to prepare a big meal and fill the house. There were 26 of us this particular Sunday. Our kitchen was full, our dining room spilled over into our living room, and I felt so cared for by God that He would give us this gift.

Big Family Food and Fun

I had made brunch foods for this Sunday Lunch: This Egg Casserole (multiplied to include 36 eggs and 3-pounds of sausage), Chocolate Chip Cheesecake Muffins, Raspberry Oatmeal Bars (made with blueberry jelly instead because that’s what I had in the fridge), strawberries, grapes, and raw veggies.

Remember how I said that I’ve decided to save money by skipping the butter in my Stick of Butter Rice?? (<— it tastes the same with or without it, so…) Well, look how much butter it takes to make this small pan of Raspberry Oatmeal Bars. Hahaha, I will never skimp on the butter in this one, and it’s WORTH IT. These are incredible. Because of the butter. :)

So many dear friends joined us for our Sunday meal, and our friend Cindy brought her delicious Mac and Cheese and Cowboy Caviar (similar to this recipe) with chips to share with everyone.

 

 

We rested in the afternoon after our guests left, and for dinner that evening I made this Creamy Mac and Cheese. Then I warmed up leftover taco meat and opened a can of tuna. What??? Ah, but I had a method to my madness. Whoever wanted to add tuna to their mac and cheese turned their meal into Tuna Casserole. But whoever added taco meat to their mac and cheese turned their meal into Cheeseburger Mac. We ate this with buttered peas and watermelon.

That night the weather was beautiful so we headed out for a walk. We heard live music nearby so we decided to follow our ears to see where they took us!

How fun! There was a church nearby who was hosting a free event for the community. There was live music, a lady making balloon creations for the kids, and Kona Ice. We enjoyed the music and had fun with our balloon creations.

Monday morning I had to take two of our girls to an appointment so I threw bananas, yogurt tubes, and leftover bars onto the table for breakfast.

Late morning Elias made three frozen Costco pizzas and we loaded all the kids into the van to eat at the zoo. (Matt had gone to York for the day.)

We enjoyed our pizza along with peach cups and juice, then we let the kids play in a big play area next to the spider monkeys before heading home for naps.

That night we joined two of our neighbor families for a super fun meal of hotdogs and smores.

Ah, and water balloons!!

We are so very thankful that God provided us with such a wonderful neighborhood full of wonderful people to do life with. We all need this.

In York on Monday, Matt got 10 dozen eggs from our neighbors. It feels good to be stocked up again!

Tuesday morning I mixed up a double recipe of Bran Muffins. Plus I made a double batch of Applesauce Bread and “baked” them in my crock pots. It sort of worked. The outside became a bit overdone while we waited for the middle to finish baking. Then it fell apart as I was taking it out of the crocks. But it still tasted good!

I packed crumbly pieces into a container to take to the zoo for another picnic.

Malachi hadn’t been to the zoo with us yet since so much of the summer he had been away for work and camps. So we were all excited to show him all we’d discovered all summer. We decided that our extra zoo fun for today would be to feed the giraffes.

On our way to have lunch with the flamingos (we love flamingos, plus there’s a perfect picnic table right by them!), we stopped to show Malachi the penguins.

It was well past lunchtime by then and Acacia decided she couldn’t wait. Before I realized it, she had pulled out the Apple Bread – and spilled all of it onto the cement. Then of course all the little girls rushed over to eat off the ground. Yuck. I hated to waste it but we scooped it up into the trash and decided to make our way to the table to actually feed everyone finally.

Lunch that day was crackers with cheese, turkey, and ham plus applesauce or peach cups, dried blueberries, and juice. But no apple bread, ha.

For dinner that night, a new friend joined us and we ate Costco’s tortelloni with sauce and steamed broccoli.

Wednesday morning we ate more of the Bran Muffins, which I cut in half, buttered, and warmed in the air fryer. They are so good this way!

For lunch I made Hashbrown and Egg Nests with ham included. These went over very well!! I made extras on purpose so we could warm them up for quick breakfasts next week before school.

Matt was in York again that day, so Malachi went with me to the mall so the kids could run off some energy in the play area there before naptime.

Justus and Kelsey joined us for dinner that night. I smoked two pork loin, warmed up leftover green beans and broccoli, stir fried some squash and zucchini, and made several boxes of mac and cheese.

I had also baked a cake that afternoon – and of course I had snuck in a bunch of spinach. This was a fun treat for dessert!

Our dear friend Phyllis came to visit us Thursday morning. We showed her around the Castle, took her on a walk to show her the Sunken Gardens, then came home and made grilled cheese sandwiches for lunch.

The way she pours love into our kid is priceless.

By the way, being able to make make grilled cheese or pancakes on this amazing griddle built into our stove is sooooo nice! Also, I used Havarti cheese slices from Costco. WOW. That cheese is a game changer for sandwiches.

Meanwhile, would you believe? Our friend Barbara had read in an email I sent out earlier in the week about our Great Apple Bread Spill at the zoo. She secretly made us a large loaf to replace what we lost and her hubby dropped it off that morning while we were gone. What precious friends. I told our kids: remember this, guys. We can offer special gifts of love to others too. :) :) :)

After we got the kids down for naps and rest time, I ran out the door to get groceries and a few last minute needed school clothes items. I got a lot of produce at Costco (plus jeans for the kids that I found marked down!).

Then I went to Aldi to get yogurt, milk, buns, and rolls.

When I got home, we worked together to unload groceries (which sounds much sweeter than it actually was – after I’ve been gone the kids usually go a little crazy when I get back, oy). Matt had baked frozen pizzas and I made smoothies to go with it so we could have a quick dinner (which sounds much sweeter than it was because the little girls spilled their smoothies and turned dinner into a huge mess, oy).

We cleaned up and rushed out the door for a Walk to School Night so the kids could meet their teachers and see their classrooms. It had been an extra crazy hour of putting away groceries and feeding everyone (and cleaning up smoothie spills) so we were VERY happy that right before we left, Kelsey texted to see if we wanted her help getting to the school that night. YES PLEASE.

Getting ready for company

Friday morning we enjoyed Barbara’s Apple Bread before getting our house ready for our first overnight guests at the Castle!

The family we were getting ready to host is a family of 8, so all of our meals were about to become extra large! I got out this huge bag of chicken thighs and dumped marinade right into the bag so I could smoke it that night for our dinner.

I also baked a double batch of Chocolate Chip Muffins for Saturday’s breakfast.

And made a huge pan of brownies. :)

When the kids started to get squirrely, we packed a picnic, put on their swimsuits, and headed to the splash park.

I had air fried a big box of Taquitos (from Sam’s) for our picnic that day. It worked great! We ate them with clementines, yogurt, and cookies.

During naptime, our friends arrived!!!!! This family is incredibly dear to us. Since the girls were napping, we wasted no time getting out cards to play our mutually favorite game of Nertz. I was ridiculously rusty as I haven’t played in years. So I got a terrible score but it sure was fun!

We smoked the marinated chicken at dinnertime, cut up watermelon and brownies…

….made steamed green beans, buttered corn, and oh yeah. I had washed and thrown a bunch of potatoes into a crock pot before leaving for the Splash Park so that they could bake and be ready for dinner.

Our table was full and it was perfect.

After dinner, we took our friends on a walk to the Sunken Gardens so they could enjoy the beauty with us.

We are a large parade when just our family goes, but adding the Brocks must have been quite a show as we walked from our house to the garden. There were 19 of us out with our strollers, wagon, and kids/adults on foot. :)

We had popsicles when we got back because we had earned them. :) Then we got all the kids showered and to bed, quite the ordeal!!

When I woke up the next morning I was planning in my head how I would take advantage of the extra hands available to give my kitchen floor a much-needed sweep and mop. But look what I woke up to!!!! A beautifully clean kitchen with scrubbed floors. SO SWEET. Thank you, Brocks!!

I set out a breakfast buffet of sausage, bacon, muffins, bread, fruit, Cream Cheese Fruit Dip, and yogurt. It was simple and good.

After breakfast, we packed a sub sandwich lunch and headed out to the zoo for a few hours.

Here are 17 of us (Kelsey joined us too but was the one taking the picture). :)

We found our favorite picnic tables by the flamingos to enjoy our sandwiches, chips, fruit, juice, and brownies. We were our own zoo at the zoo, but it was so great to be together.

We made it home by 1:45 and got the four littlest down for naps. The rest of us cleaned up and got ready to go to a wedding – and from that point on, I got no pictures. Boo. The wedding was for our long-time friend Jacob and his bride Sarah, and it was beautiful.

TODAY is mine and Matt’s 29th anniversary. :) I love going to weddings as a reminder of where we came from, so the timing is perfect. Here’s to a brand new week and a Christ-focused new year of our marriage!

Make-Ahead Recipes to Serve Holiday Guests

If you’re hosting guests for the holidays, I suggest making some of these Make-Ahead Recipes to make your time together more enjoyable!

Any time I’m hosting company for any occasion – but especially during holiday time – I like to have meals, snacks, and desserts prepared ahead of time if possible. This way I can enjoy visiting with our guests without spending much time in the kitchen. (I don’t do a great job of talking and cooking at the same time, oy!)

Here are some of my favorite recipes to make ahead and serve guests who are visiting:

Make-Ahead Recipes to Serve Holiday Guests

Main Dishes

  • 20-Minute Taco Soup
  • Cheesy Salsa Enchiladas (freezes well)
  • Chicken Salad (store in fridge and serve on rolls or croissants)
  • Chili (freezes well and can be served with fritos and cheese or with hotdogs for chili dogs)
  • Homemade Tomato Soup (a crowd favorite served with grilled cheese sandwiches)
  • Italian Pasta Bake (freezes well)
  • Potato Soup (doesn’t freeze well but can be made and stored for a few days in the fridge, then quickly rewarmed on the stove)
  • Simple Chicken Cheeseballs with a Kick (freezes well)
  • Simple Pizza Chicken Bake (freezes well and is one of the easiest recipes you’ll ever enjoy!)
  • Whole Wheat Pizza Crust (freezes well and are great to have on hand to make quick pizzas)
  • Ham and Hashbrown Casserole (freezes well)
  • Spicy Ham and Potato Soup (doesn’t freeze well but is great make ahead and stored in the fridge for a few days before warming and serving)

Easy Homemade Chocolate Milk

It really is easy to make Homemade Chocolate Milk! And it tastes better than any store-bought chocolate milk you can find. What a treat!

Recently, someone gave us 5 gallons of milk. FIVE! I mean, we have a big family, but it’s still hard to get through five gallons of milk before it goes bad.

I had fun figuring out ways to use up the milk. Pudding ranked high on the list:

  • Vanilla Pudding
  • Butterscotch Pudding
  • Tapioca Pudding
  • Peanut Butter Pudding
  • Chocolate Pudding

Mac and Cheese is also a great way to use up milk, especially this amazing recipe. And then, making Chocolate Milk as a special treat always makes my family happy!

I don’t love for us to drink much sugar. So I made this Easy Chocolate Milk to share with college students when they came over so that the gallon of fun could be spread throughout many of us, not just our family. :)

Easy Homemade Chocolate Milk

Serves: 1 gallon +
Ingredients
  • 1 cup brown sugar
  • ½ cup unsweetened cocoa powder
  • ½ cup water
  • 1 gallon milk
Instructions
  1. In a large pot, mix together sugar, cocoa, and water.
  2. Cook on low heat until the sugar is dissolved and the mixture is well combined.
  3. Turn off the heat.
  4. Stir in the milk with a whisk until the chocolate is evening mixed throughout.
  5. Pour chocolate milk into a gallon-sized serving jar.
  6. Chill for at least two hours before serving.

Decorate Your Own Cookies – a Fun Tradition We Enjoy With Guests!

We’ve started setting up a “Decorate Your Own Cookies” table when we host college kids or teens for youth events during any holiday season. It’s been a huge hit so I thought it was time I shared it with you!

Now, mind you, I throw (almost) all of my “food coloring is bad” knowledge out the window to make this fun tradition happen. Sometimes occasions just call for sprinkles, you know?

TIP: To add color to frosting without as much compromise, we’ve found this Natural Food Coloring to be wonderful! You can even get naturally dyed sprinkles!

How to Set up a “Decorate Your Own Cookies” Table for a Group:

1. Make cookies ahead of time according to the holiday. Christmas cookie cut-outs, heart-shaped cookies for Valentine’s Day, Easter egg or bunny-shaped eggs at Easter, etc. Here’s our favorite Cream Cheese Cut-Outs recipe!

2. Set out baked cookies along with a variety of fun frosting, sprinkles, and other decorating options for people to “play with.”


3. Be sure to set out knives, plates, napkins – an even toothpicks for the extra creative  in the group!

This simple idea has been so much fun when we have groups of kids or young adults over for meals. Not only that, I’ve found that it saves me time when preparing to host a large group. Instead of decorating a bunch of cookies to serve for dessert as we celebrate a special holiday, I just prepare the decorations and cookies and let everyone else do the decorating. It’s a win-win!

Don’t forget cupcakes!

You can use this same idea with cupcakes, which is even easier than cookies. Bake cupcakes and let everyone frost and decorate their own!

I certainly hope you enjoyed this sugar-filled, sprinkle-topped, food-colored post. Eeeeek. But hey, it’s all about hospitality, loving your guests, and having fun together!

Cream Cheese Chocolate Chip Bread

Cream Cheese Chocolate Chip Bread is a huge hit!

One of my favorite things to do is to text my college-age son and tell him to invite friends to eat lunch with us on Sunday after church. So here’s how this works:

  1. Justus texts friends to invite them for lunch, then he tells his friends to invite friends too.
  2. His friends invite friends, and they are welcome to invite others too.
  3. We never know who is going to show up for lunch, and it is always a blast!

Often I’ll be in the kitchen putting the final touches on the meal while college kids pour into the living room. I walk out to greet them and get to be surprised every time by who was able to come!

I am often asked, “But how do you know how much food to make?”

Well, I don’t. ;) But God does. There’s always plenty, and I can always pull more from the pantry or freezer to stretch out each meal. In addition, if I’ve made lots and lots of food and not many are able to come for the day, that means we have extra food to share with sick or struggling friends throughout the week.

What does all this have to do with Cream Cheese Chocolate Chip Bread?

I recently served this fun bread on a Sunday afternoon to our college guests along with Taco Soup and a buffet full of sides. This bread was gone within minutes! The chocolate chips are the main attraction, but if you ask me, the cream cheese is the most valuable player in this recipe. You’ve got to try it!

Ingredients
  • ½ cup melted butter
  • 8-ounces softened cream cheese
  • ½ cup sucanat or raw sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ¼ cup milk
  • 2 cups whole grain flour (I use freshly ground soft white wheat)
  • 1 teaspoon baking powder
  • ¼ teaspoon sea salt

Instructions
  1. In a large mixing bowl or in a powerful blender (like a Blendtec), whip together butter, cream cheese, sugar, eggs, vanilla, and milk.
  2. Add flour, baking powder, and salt.
  3. Fold in chocolate chips.
  4. Pour batter into a well-buttered 9" loaf pan.
  5. Bake in a 350 degree oven for 45-55 minutes or until a toothpick inserted in the middle comes out clean.

Simple Crock Pot Chocolate Peanut Butter Lava Cake

I shared this Simple Crock Pot Chocolate Peanut Butter Lava Cake with you many years ago! Christmas is the perfect time to bring it back, don’t you think?

This recipe looks rather involved, but would I be sharing it if it was difficult? Of course not. :) Putting this together is very simple, and worth every bit of your (small amount of) effort!

Simple Crock Pot Chocolate Peanut Butter Lava Cake

Serves: 6-8
Ingredients
  • 1 cup whole wheat flour
  • 2 Tablespoons unsweetened cocoa powder
  • ½ cup sucanat or brown sugar
  • 1½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup milk
  • 2 Tablespoons melted butter (or coconut oil)
  • 1 teaspoon vanilla
  • ½ cup natural peanut butter
  • ½ cup semi-sweet chocolate chips
  • TOPPING:
  • 3 Tablespoons cocoa powder
  • ½ cup sucanat or brown sugar
  • 1½ cups boiling water
Instructions
  1. Combine flour, cocoa, sucanat, baking powder, and salt. Mix well.
  2. Make a well in the center and add milk, butter, and vanilla.
  3. Stir well, until batter is smooth.
  4. Stir in peanut butter (heat if needed, to thin).
  5. Stir in chocolate chips.
  6. Spread the batter evenly into a well greased slow cooker.
  7. Make the topping:
  8. Mix cocoa and sucanat, whisk in boiling water until smooth.
  9. Gently pour over batter in crock pot, but don’t stir.
  10. Cover and cook on HIGH until puffed and the top layer is set, about 2- 2¼ hours.
  11. Turn off crock pot and let stand, covered for at least 30 minutes.
  12. Serve the cake (which is now on top) with ice cream or whipped cream and drizzle the fudgy pudding from the bottom over both.

A Practical but Fun Way to Bless People in Need

I originally shared this idea back in 2015, but as God continues to show us more about loving others, I wanted to bring back the idea again this year. Truly this is a very practical but fun way to bless people in need this winter!

Here’s my original post from 2015:

I picked up several pairs of fun Christmas socks before Thanksgiving, so as expected, I bought some toothpaste and pencils to go with them. This is the obvious action to take when gifting Christmas socks. Everything I do is normal.

What actually happened is that I bought the fun Christmas socks with our adopted college students in mind. I figured I would package them up with some other goodies and put them in their campus mail. But then I came across the fun idea on Pinterest to fill the socks with treats and little gifts, and before I knew it (which really translates to several days and hours later) – I had six sets of these:

These gifts were terrifically fun to put together! I went with basic wool socks for our three male adopted students, as you’ll see below. Since I’d gotten so many pairs of fun girly Christmas socks on sale, I decided to mix theirs up a bit. While it looks like they’re receiving mis-matched pairs, I actually rolled up the second sock of each pair and stuck it down inside the toes. So the girls are getting two pairs of cute socks. Sorry boys – yours are much more practical!

Christmas Sock Gifts

Speaking of practical – I included a few other practical items inside the guy’s socks. What college student wants to actually spend money on toothpaste and soap? Not to worry, I’m here to help. Their socks included soap, toothpaste, pens, candy cane chapstick, a small flashlight, gum, and candy (because not everything must be practical and at least I included toothpaste to brush away the sugar).

The girl’s socks were a little more on the fru-fru side because my inner girl rarely gets to come out in this household of men and all that I’d been holding back exploded in the dazzling Christmas aisles at Walmart. I got the girls sparkly lip balm and glittery nail polish, Christmas nail files, snowman pencils, face scrub, gum, and candy.

Our family then worked together to come up with a punny gift tag idea to attach to our socks. Our gift tag creativity hadn’t woken up yet that morning, however, so all we came up with was “Hope your Christmas doesn’t sock.” (Get it? Don’t try too hard.) Since that idea didn’t come close to making the cut, I searched online and came up with this:

A great way to bless people in need!

Beyond using this idea as a fun gift option, consider using this idea to gift those around you who are less fortunate. Filling wool socks with practical items and turning them into fun gifts like this would surely be a blessing to recipients going through a tough time. In my town, we don’t have many homeless, but we do have many low-income individuals and families. I’m working on putting together packages for several people we’ve met and become friends with this year while volunteering at our local mission. I’ll write more about this experience sometime. :)
