Dark Chocolate Granola

We are so excited that this week we will be having a house full of company! Each year in October during York College Homecoming, we get to host quite a few friends and family. We fill the house and have so much fun. It’s one of my favorite weekends of the year.

I’ve been putting lots of homemade, prepared food in the freezer so that I can enjoy my company instead of cooking the whole time they are here. The first of our guests show up on Wednesday, and the fun continues from there. Here’s what we’ll be eating:

Sunday, October 6
Poppyseed bread (recipe in {Healthy Make-Ahead Meals and Snacks}), apples
Sandwich lunch meeting after church
Small group potluck – Black bean salsa and chips, Italian pasta bake, banana muffins

Monday, October 7

Well, I almost burned today’s lunch – twice. First, last night when I was making the Hearty Green Bean Casseroles (one for today’s lunch and one for the freezer) – I almost scorched it in the pot as it cooked. Then, I put one of them into the oven this morning while getting ready for church and forgot to turn the oven off before I left.

I blame it on the boys. I told them to remind me. :)

Thankfully, I remembered during Bible class (yes, I was concentrating on Nicodemus too) and ran home between class and worship to turn off the oven. I’m happy to report that the casserole still tasted great. Phew!

Menu Plan for the Week

Happy First Day of Fall! That means it’s a holiday, right? And that I should take a nap to celebrate? Yes. Okay then. Right after I get my menu plan written. :)

I feel like I’m learning right along with you more ways to get ahead in the kitchen and more reasons that getting ahead is helpful. As much as I love cooking, I do not want it to be a full time job. I love being ahead, saving myself stress, and still putting great food on the table for my family.

I haven’t been able to do anything yet toward the Getting Ahead for Dinner Challenge. Have you? What I have done is take advantage of the meals I already had prepared and in the freezer. Such a life saver after a full day of soccer games. Hopefully during the next few days I can replenish my stock. Otherwise, I’ll actually have to cook a meal from start to finish at dinnertime. Can you imagine?! :)

Menu Plan for the Week (With Make-Ahead Breakfast Ideas)

How’s everyone doing so far with the Getting Ahead for Breakfast Challenge? Our family has been eating a lot of Instant Oatmeal Packets recently, so I’m going to have to make more soon. Which leads me to my next statement:  We do not always follow our menu plans exactly.  (I’ve shared this before, but felt it was worth sharing again.)

I begin the week with the best of intentions. I create a menu based on what I feel will work best for each day of the week. But real life and ideal menu don’t always never jive perfectly – so I roll with it. That’s why having Make-Ahead Meals prepped and ready to grab is so important to me in this season of life.

Since we’re focusing on getting ahead for breakfast this week, I decided that each breakfast item on my menu would include foods that have been or can be made ahead of time. If I can at least get breakfast put on the table quickly and easily, I find that the rest of my day goes more smoothly.

Matt took the boys to camp this weekend for a Dads-n-Lads getaway. I cooked for no one, I did no laundry, I spent much needed, uninterrupted time with the Lord, and I ate a frozen pizza for dinner last night. Gross but true. Eh, it was a fun treat, and all I had to wash later was my plate. I’ll eat right the rest of the week. :)

I am happy to report that while all of my men were gone, this time I did not have to deal with any snakes.

It’s been a strangely quiet weekend. Matt was gone for two days with the soccer team in Iowa. Asa and Justus, our oldest, were out at their beloved church camp for a state-wide youth rally. That left just Elias, Malachi, and me at home. It’s been strange to only have two kids here, and I got loads of work done. Why? Because I let my younger two have more technology time than normal. Plus I didn’t cook for two days. Not one thing. I splurged on bread, lunch meat, and sliced cheese and we ate sandwiches and fruit whenever we felt like it. It was a vacation.

Our normal and busy will start up again on Monday, and I’ll be ready. But the break was needed and I feel refreshed.

Menu Plan for the Week

It was quite a week at our house! With our two oldest boys on a mission trip with the church youth group, and our two youngest boys with grandparents – Matt and I were home alone for four days. It was quiet, refreshing, and fun for Matt and I to have some time to ourselves. But it sure has been great to fill our house up with kids again!

All four boys were home for 20 hours, then Asa left again to go to a Leadership Camp. He’ll be home mid-week. But, we still have four boys around because one of my nephews came to stay for a few days. The weather has been beautiful – perfect for playing lots of baseball and soccer games in the yard, as well as jumping on the trampoline!

Here is what we’re looking at eating this week. If you see some good sounding recipes in this list, but no recipe links, that’s likely because those are recipes I’m experimenting with to include in a new {Healthy} Make Ahead Meals and Snacks eBook I’m working on for the fall. This Sweet Pecan French Toast Casserole was super easy to make and a huge hit with family and guests. That recipe will definitely make the book. :)

If you haven’t already, many of you who pre-ordered Oh, For Real should be receiving it in the mail any day now! (Those of you who just ordered last week – yours will be on its way tomorrow!)  I’ve heard back from several of you who have received your book already. Thank you so much for your encouraging responses!

Jolene:  Got my Oh, For Real book today in the mail!!! Loving it already!

Patty:  Just wanted to let you know that since bringing your book home my oldest (10 years) has been cooking up a storm. I have never seen him so excited to be in the kitchen. He is preparing everything with only a little guidance. We have had a lot of messes in the kitchen, but some delicious food.

Beth:  I got my book in the mail yesterday. I enjoyed looking through it last evening even though it made me hungry. I plan to share the book with my daughter.

I have to say (and I feel a little bit giggly as I say it) – Having my own cookbook in my kitchen has already been a tremendous help to me, too. I have to keep reminding myself that it’s there. My first response when I need to check a recipe is to run to the computer to look it up here on my website. Then I remember, “Laura! Look in your book!” And there it is. I’m so thankful for it, and I’m happy to say that so far, I’ve been careful enough not to spill anything on it. (Now that I’ve said that out loud, I will probably go goober it up with a pretty combination of chicken broth, barbecue sauce, and cookie dough.)

I loved what one reader emailed recently in regard to the menu plans I share:

I just wanted to say I have learned so much in the last fews months from your website. I grew up in a home where if it wasn’t instant, it wasn’t food. Therefore, when I got married and started a family I knew how to cook nothing besides frozen food and instant mashed potatoes. My husband left about 5 years ago and it’s just been me and my now 8 year old daughter. Money is tight and since I started following your meal plans and cooking real food, my grocery bill has been cut in half!

I love it when people share that they have switched from processed food to real food – and I love it even more when they share that this practice has saved them money! Feel free to follow my menu plan all you want. It just might save you some money!
