Homemade Chocolate Pudding Recipe

Apparently, it is the week for pudding! We’ve shared our Homemade Vanilla Pudding recipe, a great idea for a Pudding Parfait in a Jar, and today our Homemade Chocolate Pudding Recipe!

Just like our Homemade Vanilla Pudding recipe, this one is tried and true and worth another share. We wanted to highlight it again as another school year is approaching (I know, I don’t want to talk about it either!). This is a great recipe for an after school snack or to pack in a lunch.

Homemade Chocolate Pudding RecipeYum

Homemade Chocolate Pudding Recipe

Serves: 4-6
Ingredients
  • 2½ cups milk
  • 3 egg yolks
  • ¼-1/2 cup real maple syrup
  • ¼ cup unsweetened cocoa powder
  • 4 Tablespoons arrowroot powder or cornstarch
  • ¼ teaspoon sea salt
  • 1 teaspoon vanilla
Instructions
  1. In a medium saucepan, whisk together milk, egg yolks, maple syrup, cocoa powder, arrowroot powder, and salt.
  2. Cook over medium heat, whisking/stirring CONSTANTLY until pudding begins to thicken.
  3. Stir over the heat for about 15 more seconds.
  4. Remove immediately from the heat, and continue to stir until pudding is creamy.
  5. Add vanilla and continue to stir until mixed.
  6. Pour into serving dishes and serve warm, or chill for two hours and serve cold.

Summer Activities for Kids: Make Ice Cream in 10 Minutes!

Looking for some fun activities to do with your kids this summer? I’ve enjoyed 22 summers with kids (and counting!), so I certainly have a few ideas to share! Stay tuned during the next few weeks as we provide all kinds of suggestions for making your summer with your kids meaningful. (Subscribe here so you won’t miss out!) As I was remembering this fun summer activity idea, I decided it would be much more fun to do if we invited friends over to join us! So we sent out the invitation, got our supplies ready, and had a little Ice Cream Making Party!

By the way, we are SO CLOSE to final adoption day for Bonus Boy that I almost waited to post this so that I could show you his precious face. Soon and very soon he will officially be a Coppinger and then all stickers come off!

This “make ice cream in a bag” idea is one of those we always WANT to do, but never seem to get around to ACTUALLY doing. Somehow inviting friends to do it with us made it much more doable, you know? Afterward, the kids played and the moms visited. Bliss! And also, there was ice cream to eat, so double win!

Make Ice Cream in 10 Minutes!

Summer Activities for Kids: Make Ice Cream in 10 Minutes!

Ingredients
  • 1 cup heavy whipping cream
  • 3 droppers full of liquid stevia, or 3-4 Tablespoons real maple syrup, or 3-4 Tablespoons sugar
  • ½ teaspoon vanilla extract
  • ½ cup rock salt or coarse sea salt
  • Ice
  • quart and gallon sized freezer bags
Instructions
  1. Measure cream, sweetener, and vanilla into a quart-sized freezer bag and seal.
  2. Fill a gallon-sized freezer bag half-full of ice.
  3. Add ½ cup rock salt to the ice.
  4. Place the sealed quart-sized bag filled with ice cream ingredients into the bag of ice and salt. Seal.
  5. Toss the bag back and forth, shaking and tossing for 5 minutes or until the mixture thickens to ice cream.
  6. Remove the quart-sized bag and rinse the salt off.
  7. Open the bag, scoop out the ice cream, and enjoy!

We moms found that the ice cream shakers needed a little bit of help to get the mixture shaken vigorously enough to turn into ice cream! Also: be sure to do this activity outside!! The bags tend to get drippy. :)

No-Bake Chocolate Chip Cookie Dough Bites – (Gluten and Dairy Free)

You might notice that this No-Bake Chocolate Chip Cookie Dough Bites recipe looks identical to our No-Bake Chocolate Chip Cookie Dough Bars recipe. This one is a fun one to make with your kids!

Yep. You figured it out. Same recipe. One shaped into bars. One shaped into balls. We are so creative, are we not?

Need Almond Butter?

It’s hard to find a good price on this! Aldi has been my best option, if and when I can make it there to shop. (I live an hour away from the closest Aldi, boo!) Try to find one without added sugar. Or better yet, if you can find a good price on almonds, make Homemade Almond Butter!

Need Honey?

I much prefer and recommend buying local honey! Otherwise, I recommend buying a big jug from Azure Standard if that is an option for you.

Need Chocolate Chips?

My very favorite chips are these Enjoy Life Mini Chocolate Chips! They are usually more expensive in the summer as they don’t ship well in the heat. So watch for them to go down in price in the fall and winter months, then stock up!

Need Vanilla Extract?

Oh how I love making it myself! Unfortunately, the price of vanilla beans has gone up over the years. Boo. Still, I think it’s best to make it ourselves if we can! Learn how here!

No-Bake Chocolate Chip Cookie Dough Bites - 5 Ingredients

Ingredients
  • 1 cup natural creamy almond butter
  • ¼ cup honey
  • 1 teaspoon vanilla extract
  • ½ cup coconut flour
  • ¼ cup mini chocolate chips
Instructions
  1. Mix the ingredients together in a bowl until well combined.
  2. Roll the mixture into teaspoon-sized (or whatever sized) balls.
  3. Refrigerate for about 30 minutes before serving.

Easy Low Sugar Strawberry Cream Cheese Cake

There are so many wonderful reasons to love the month of May. The school year ends (for most), the frigid weather finally becomes pleasant (in Nebraska), and strawberries are everywhere (in bowls, in plates, in my hand…). I will now introduce you to my most recent recipe experiment involving strawberries: Easy Low Sugar Strawberry Cream Cheese Cake.

This cake is moist. It’s flavorful. It’s low in sugar. It’s whole grain. It offers the wonderful taste of early summer joy. And friends, it is topped with Cream Cheese Frosting. I declare that to be the MVP of this cake – along with the strawberries, of course!

Cutting Back on SugarYum

If you’ve been around here long, you know that I’ve taken the liberty of cutting down the sugar in many recipes, making sure they still taste amazing. I believe a lower sugar ratio is something we can get our taste buds used to! I recommend cutting back on sugar gradually, starting with homemade desserts and muffins.

Easy Low Sugar Strawberry Cream Cheese Cake

Easy Low Sugar Strawberry Cream Cheese Cake

Ingredients
  • 2½ cups whole wheat pastry flour
  • ½ cup sucanat or sugar
  • 2 teaspoons baking powder
  • 1½ cups fresh or frozen strawberries
  • ½ cup milk
  • ½ cup sour cream
  • ½ cup melted butter
  • 2 eggs
  • 1 teaspoon vanilla extract
Instructions
  1. Combine dry ingredients in a bowl.
  2. Puree strawberries until smooth.
  3. Add pureed strawberries, milk, sour cream, melted butter, eggs, and vanilla.
  4. Mix with beaters until smooth.
  5. Pour into a buttered 9x13 cake pan.
  6. Bake in a 350° oven for 25-30 minutes or until a toothpick inserted in the middle comes out clean.
  7. Allow cake to cool.
  8. Frost with Cream Cheese Frosting (recipe options below)

Here are my favorite Low Sugar Cream Cheese Frosting recipes!

Stevia-Sweetened Cream Cheese Frosting

2 cups heavy whipping cream
2 Tablespoons softened butter
8 ounces softened cream cheese
1 teaspoon vanilla extract
Liquid stevia to taste (I use about 20 drops)

In a large bowl, whip cream until soft peaks form. Add softened butter, cream cheese, vanilla, and stevia – whipping until well combined and smooth. Spread over cooled cake. Store in refrigerator.

If you prefer, here’s a slightly sweeter but still not too sugary frosting option:

Maple Cream Cheese Frosting

8 ounces softened cream cheese
¼ cup softened butter
3-4 Tablespoons real maple syrup
1 teaspoon vanilla extract

With a hand mixer (or in your blender), whip together all ingredients until smooth. Spread over cooled cake.

INCREDIBLE Whole Grain Raspberry Cheesecake Bars

Stop what you are doing right now and make these Whole Grain Raspberry Cheesecake Bars!! Well, maybe finish reading this post so you can get the recipe. Otherwise though, the making of these bars should become a very high priority. My family is in love with them!

As it happens, one day I decided to experiment with combining my Raspberry Oatmeal Bar recipe with my Crustless Cheesecake recipe. The result is this incredible, layered dish of delightfulness.

The cheesecake filling bakes right into the bars, creating a fantastic moist texture with raspberry cheesecake flavor. Truly, each bite of these bars is full of WOW.

As a bonus to the deliciousness of these Raspberry Cheesecake Bars, we get to enjoy the nourishment of whole grains, healthy fats, and low sugar content. I personally find nothing wrong with serving these bars for breakfast. But they are also wonderful as a dessert!

Whole Grain Raspberry Cheesecake BarsYum

Whole Grain Raspberry Cheesecake Bars

Ingredients
  • 1½ cups whole wheat flour
  • 1½ cups rolled oats
  • ½ cup sucanat or brown sugar
  • ½ teaspoon baking powder
  • ¼ teaspoon sea salt
  • 1 cup melted butter
  • ½ cup 100% raspberry jam
  • CHEESECAKE LAYER:
  • 8-ounces softened cream cheese
  • 1 egg
  • 2 Tablespoons real maple syrup
  • ½ teaspoon vanilla extract
Instructions
  1. Mix together flour, oats, sucanat, baking powder, and salt.
  2. Stir in melted butter until the mixture resembles crumbs.
  3. Press half of the mixture into an 8x8 inch baking pan.
  4. Spread jam over the top.
  5. In a blender or with beaters, whip together cream cheese, egg, maple syrup, and vanilla.
  6. Spread this cheesecake layer over the top of the jam.
  7. Sprinkle remaining oat mixture on top of the cheesecake layer.
  8. Bake in a 350° oven for 45 minutes or until lightly browned.

Not a fan of raspberries? Substitute any of your favorite jams or jellies. And my next experiment will likely include something involving chocolate too! (You are shocked, I’m sure.)

Since I just shared a list of fun ways to enjoy coffee, I thought it was fitting to share a list of lightly sweetened cookie recipes to go with your coffee. Or your tea. Or water. Or milk. Choose your cookie – choose your beverage!

I love a barely sweet treat with my coffee. The recipes listed below are made with whole grains, wholesome fats, and have low sugar content. I have simply adapted our favorite cookie recipes through the years to make them lower in sugar while still keeping them delicious!

As a bonus, it is worth sharing my favorite flourless brownie recipes!

These are also low in sugar, and are completely grain free. I can’t get over how delicious these are. The trick to keeping them moist is to remove them from the oven BEFORE they appear to be done. If you leave them in the oven too long, they’ll get dry. But remove them when they are still a bit gooey and you are golden!

  1. Super Moist Flourless Peanut Butter Brownies – Only 5 ingredients!
  2. Super Moist Flourless Brownies – These are the same as the Peanut Butter variety, but they’re made with Almond Butter instead.
  3. Flourless Brownie Muffins – Use the above two recipes, and bake the batter into muffin cups. If it’s possible, that makes the brownies even better!

Sweet and Simple Cranberry Cookies

You all know I’m not into anything fancy. The simpler the better when it comes to pretty much everything from food to clothes to schedules. So it probably doesn’t surprise you that I took my basic Sweet and Simple Butter Cookies recipe and added one tiny ingredient to make these Sweet and Simple Cranberry Cookies. Hmmm, I bet you can’t guess which ingredient I added. (Indeed, my ways are so mysterious.)

I’m not a big fan of raisins in my cookies. But adding dried cranberries to this simple butter cookie? Well, that takes them up a notch without adding any effort. Phew, no added effort? Well, that’s a relief. We cannot be expected to add effort to our cookie-baking endeavors. That takes all the fun out of eating a cookie.

Oh! But don’t you worry about me giving you permission to eat a cookie. These are low in sugar, with just a little extra added sugar when we toss in the dried cranberries. And check out how few ingredients these have? Just 5 simple items to grab to make these delights!

Ingredients
  • 1½ cups melted butter
  • ½ cup sugar (raw, white, brown, or sucanat)
  • 1 teaspoon vanilla extract
  • 3 cups whole wheat flour (I use freshly ground soft white wheat)
  • ½ cup dried cranberries
Instructions
  1. Cream butter and sugar together in a bowl.
  2. Stir in vanilla extract.
  3. Mix in flour until well combined.
  4. Fold in dried cranberries.
  5. Scoop Tablespoon-sized balls of dough onto cookie sheets.
  6. Press the dough down with your fingers or a fork.
  7. Bake in a 350 degree oven for 8-12 minutes or until cookies are golden brown.

Technically, any treat can be sweetened with honey. But here are 20 of our family’s favorite easy recipes that call for honey.

Looking to use honey in recipes instead of sugar? I typically use 1/2 the amount of honey compared to the called for amount of sugar. And depending on the recipe source, I often cut it down even more than that. You’re not a bit surprised, are you?

Delicious Low Sugar Chocolate Bundt Cake with Chocolate Glaze

Because I am your friend, I am sharing this Delicious Low Sugar Chocolate Bundt Cake with Chocolate Glaze just in time for Valentine’s Day. See, you can make this cake any time, any day. But Valentine’s Day is sort of an excuse to eat chocolate. So this cake recipe comes to you just in time!

Does the recipe look familiar? It should. I originally created and shared this recipe a few years ago, baking it in a regular cake pan. It remains my all-time favorite cake recipe, and I usually spread Low Sugar Cream Cheese Frosting over the top.

But sometimes it’s fun to mix things up a little by, you know, pouring your cake batter into a pan of a different shape. Do I know how to party or what?

Ingredients
  • 1 cup melted coconut oil
  • 1 cup water
  • 4 Tablespoons unsweetened cocoa powder
  • 2 cups whole wheat pastry flour
  • ½ cup sucanat or brown sugar
  • dash of sea salt
  • 1 teaspoon baking soda
  • ½ cup sour cream
  • 2 eggs
  • CHOCOLATE GLAZE:
  • ½ cup butter
  • 4 Tablespoons cocoa powder
  • 2 Tablespoons milk
  • 2-4 Tablespoons honey (sweeten this to your taste)
  • 1 teaspoon vanilla extract
Instructions
  1. In a large mixing bowl, stir together flour, sucanat, salt, and baking soda.
  2. Set aside. In a saucepan, bring oil, water, and cocoa to a boil.
  3. Pour liquid mixture into the bowl with the dry ingredient mixture.
  4. Stir well.
  5. Add sour cream and eggs, mixing well.
  6. Pour batter into a buttered bundt pan.
  7. Bake in a 350° oven for 30-35 minutes or until a toothpick inserted in the middle comes out clean.
  8. Allow cake to cool completely before drizzling chocolate glaze over the top.
  9. For CHOCOLATE GLAZE:
  10. In a small saucepan combine butter, cocoa, milk, and honey.
  11. Cook and stir over low heat until ingredients are well combined and mixture begins to thicken slightly.
  12. Remove from heat.
  13. Stir in vanilla.
  14. Drizzle over cooled cake.
