Big Family Food and Fun: February 18-24, 2024

Sunday after church some friends came over to hang out with us. The girls painted nails. The boys chased each other with light sabers. The parents had adult conversation – bliss!

At mealtime, we had Pulled Pork, Honey Glazed Carrots, Baked Beans, Corn, and super delicious Cheesy Potatoes that our friends brought.

Monday morning we had Breakfast Cookies that I’d found tucked away in the freezer. They were almost gone before I remembered to take a picture. :)

I made another batch of Peanut Butter Honey Puffs that morning. Having these on hand for the kids is really helpful, but the truth is that I often need to grab one for a quick bite of protein. So maybe I really make these for me? ;)

 

I made two cans worth of Tuna Salad that morning to get ahead on kids’ lunches for school.

Then we packed up a big picnic to take to the zoo. The kids were off school that day and the weather was beautiful so we made a day of it!

Kelsey was off that day so she met us there!

Late that afternoon, while BabyBoy#11 napped, Elias took Brayden out for some Bro Time. I told Kiya we should use the time to make tomorrow’s breakfast and she requested Pumpkin Donuts. That’s a bigger and messier recipe to make compared to muffins, ha. But I decided to go for it. Slowly but surely all the other littles came in to join us and “help.”

After a big zoo day and a big Pumpkin Donuts mess, I was glad to just pull out leftovers for us to eat for dinner.

Tuesday morning I pulled out the Pumpkin Donuts we’d prepped and put some in the air fryer to cook.

We didn’t need all of them that morning so I put half in a freezer bag and froze them for another day.

I made a quick glaze to dip the donuts in, plus I baked several pans of bacon.

Keith and Anna’s teachers came by that morning for their quarterly Home Visit. The kids LOVE this!

After school that day, Brayden, Kiya, and I went to our Food Distribution site to give food to people in that area. Usually there are around 100 people that come through the line. We came home with some goodies too, including two Easter egg decorating kits that the littlest kids wanted to “eat” right away, ha!

Before leaving that afternoon, I had smoked a Whole Chicken and cooked Green Beans and Stick of Butter Rice. I kept the chicken warm in a crock pot so at dinner time, Elias rewarmed the beans and dinner was served!

It was gorgeous outside so the kids ate at a picnic table in the yard.

Wednesday morning, Matt and I loaded up the youngest five and headed to Walmart for WIC items.

These shopping outings are a mixture of great and hard. I’m so thankful to do this with Matt. :)

I don’t remember what the kids had for lunch that day. But for some reason I decided that I really wanted a bowl of Cheerios. So that’s what I had with my daily smoothie.

With the weather being so awesome, I decided to grill burgers for dinner that night. We ate them with  Stir Fried Veggies, and Strawberries with Chocolate Whipped Cream. It was all so delicious!!! Our kids had been outside most of the afternoon/evening and we found ourselves hanging with neighbors so we invited them in to join us too. It was perfect!

Thursday morning I made two loaves of Cinnamon Bread worth of French Toast for breakfast.

Mid morning I used spinach and pumpkin to make a batch of these.

When it was time to pick up Brayden and Kiya from school, Acacia and Josie took a muffin for the road. :)

I used leftover rice and chicken from Tuesday to make Cheesy Chicken and Rice (this recipe subbing chicken for beef). We ate it with another two pounds of strawberries and the leftover Chocolate Whipped Cream from the day before, plus peas and corn.

Matt had been working in York all day and Malachi helped me brave the day without him. By the time we’d chased kids for hours and gotten them fed dinner, we were wiped out. Malachi sat in a chair with a Anna and Acacia watching videos. At this point, we were just surviving until Daddy got home. :)

Ah, but what did Daddy have with him when he got back? A big girl bed for Acacia. Malachi helped him get it set up, along with a big girl bed for Josie that we already had, while I kept seven VERY HYPER KIDS alive.

Here they are, all set and ready for their first night out of cribs!

It went better than I expected with only one middle-of-the-night wake up. :/

Friday we played outside as much as possible, enjoying the amazing sunshine.

I was pretty mentally worn out from all the intense parenting involved in our days, which is made worse when Matt is in York for the day as he had been the day before. So that afternoon I was able to go out by myself and spend a leisurely two hours at Costco. Phew, this was good down time for me. :)

I needed to stock back up on basics and I also wanted to pick up some convenience items that are easy to grab and take for picnics. I also had our third floor renters in mind as I shopped as it is handy for them to have several small snack items with them when they go to work.

We are now well stocked with some basic cooking/meal ingredients (coconut oil, cheese, hamburger meat, sausage, milk, cream, turkey lunchmeat, olives, spices, eggs), fresh fruits and vegetables (that will last maybe three days, ha), chips, and some special packaged snacks that our renters can enjoy AND our kids can enjoy for special outings.

It was Friday and if I can, we like to have “French Fry Friday.” I have not wanted to spend the money on prepared frozen fries lately as the price of those has gone up A LOT. Meanwhile, right now I’m finding our favorite Gold Potatoes priced at $0.54/pound which is fantastic!

So for dinner that night, I used 5-pounds of potatoes to make Homemade French Fries. (I made them similar to this and then after baking them, I put them in the air fryer to crisp up.) We enjoyed them with Chicken Nuggets and we ate in shifts as it’s pretty impossible to make enough fries and nuggets to feed us all at the same time. :)

There was some excitement going on one block over from our house as a pipeline had some sort of issues. All of our kids were interested in what all the flashing lights were about so we loaded up in strollers and walked over to “watch the show.” The worker trucks were gone by the time we got there, but we did get to admire the great big hole in the street. :)

Saturday morning I had help cleaning out a dishwasher…

I baked a dozen eggs on a cookie sheet, cooked a bunch of sausage patties, and turned them into Breakfast Sandwiches.

I planned to save and freeze extras for future easy breakfasts, but this is all we had left, ha!

Keith helped me make two loaves of bread worth of Uncrustables.

We packed them up with apples, olives, cucumbers, chips, cookies, and juice to take to the park for lunch. (I also packed a Pediasure and fruit/veggie pouch that we needed for BabyBoy#11.)

It took a literal three hours to get out the door that morning because behavior struggles slowed us down over and over. Please pray for these children and for Matt and me as we help figure out their needs and how to help them find peace. The effort it takes to get out the door for these outings is huge. But then once we finally reach our destination, it is all worth it as the kids can run out their energy in healthy ways. Phew.

We went to one of our favorite parks where there is a playground, bike trail, skateboard area, basketball, tennis, and disc golf. It’s perfect for our family!

Food tastes better when you’ve been running around outside!

Oh but wait. The food is abandoned when you spot ducks swimming in the water behind you!

Malachi joined us with his skateboard and Acacia and Josie tried to keep up with him on their scooter bikes.

We rode/walked around the trail together then we made our way over to the skateboard and basketball area. Everyone was soooo much happier and peaceful while we were there – one of the big reasons we venture out any chance we can with this crew!

We ate leftovers that evening in an effort to clean out the fridge. Our neighbors hosted a 50th Anniversary party and we briefly went to our church’s game night. And that was our week!

4 Grocery Items I Can Only Find at Sam’s

I’m a big fan of Costco, Aldi, and Sam’s so those are the stores where are do the majority of my grocery shopping. Here are the 4 grocery items I can only find at Sam’s.

To be fair, when I say that I can only find these at Sam’s, I mean that I can only find these brands at these prices in these amounts. As in, there are certain items I can buy at Sam’s, Costco, or Aldi or any other grocery store. But there are four items I always and only buy at Sam’s because they are amazing and/or not specifically to be found at other stores.

Allow me to explain. Shall we begin with bacon?

5 Grocery Items I Can Only Find at Sam’s

UPDATE: The original post I wrote in February, 2024 didn’t include the fifth item that I added December 2024!

1. BACON

I’ve been so excited about this restaurant-style box of bacon I find and love from Sam’s. It is worth mentioning that we have two Sam’s Clubs in Lincoln but I can only find this box of bacon at one of the locations. So that’s the store I go to!

This is a 10-pound box of bacon for only $29.98. That’s a great price per pound for very good bacon, and a huge bonus is the cooking convenience this box provides. The bacon comes on parchment paper sheets (about 8 slices per sheet) so all I have to do is get out my cookie trays, place a sheet of bacon on each tray, and bake it as-is. SO EASY. And the bacon is delicious.

I usually cook eight or ten sheets of bacon in one cooking session so that we can eat some for our upcoming meal and then have leftovers in a bag in the fridge for sandwiches, breakfasts, and casseroles. I also save the bacon grease to flavor our green beans.

2. PEANUT BUTTER

The ingredients in this peanut butter are very similar to this Homemade Peanut Butter I used to make. The price – $8.12 for 5-pounds of peanut butter – cannot be beat! And we love how this peanut butter tastes.

We go through a lot of peanut butter at our house so I usually buy two 2-packs each time I go to Sam’s. Here are 40 recipes we use regularly.

3. WAFFLE FRIES

Sam’s carries this 4-pound bag of Waffle Fries for only $6.98. I pick up a bag of these every time I go to Sam’s and we love this treat!

With so many of us living here, we usually eat the entire bag for one meal. But what an amazing price compared to buying fries if we were to eat out! $6.98 to feed fries 10-13 people, depending on who is here, is fantastic!

4. COLBY JACK CHEESE SLICES

Obviously there are packages of sliced cheese at just about every grocery store. But here’s why I always get it at Sam’s:

  • Costco’s Sliced Colby Jack is “reduced fat” and we prefer regular.
  • I love having a huge quantity to work with and Sam’s is the only place I find it like this.

This 42-pack costs $7.24 at Sam’s, and in case you’re wondering – the cost per slice is the same at Aldi. But there are only 11 slices in an Aldi package and that doesn’t go very far for us.

We love this cheese when we make Grilled Cheese Sandwiches and sometimes the kids like to eat a slice for a snack. It is worth mentioning that while we don’t like the Reduced Fat Colby Jack at Costco, they do have a sliced Havarti cheese that is incredibly good. So that’s the variety of sliced cheese we buy at Costco.

5. GRASS FEED HAMBURGER MEAT

Costco has organic hamburger meat, but it doesn’t specify that it’s grass fed. Aldi has grass fed hamburger meat, but their price just tipped above Sam’s price by $1/pound. So each time I go to Sam’s, I get several pounds of their Grass Fed Hamburger Meat for $4.98/pound.

Beyond these five items, there are all kinds of groceries that overlap between Costco and Sam’s that I get at either store depending on where I am and what I need. I love having memberships for both warehouses because they are similar, yet different, and I’ve settled into needing both.

Costco or Aldi: Which Has Better Prices?

Have you ever been curious about the bottom line here? Costco or Aldi: Which has better prices?

Back when we lived an hour away from both Costco and Aldi, at most I could hit each of these stores once per month. Now that we live in Lincoln, I can go wherever, whenever. Hahaha, I mean, if you don’t consider the fact that getting out of the house and to the store EVER is quite the feat.

How many carts does it take to contain all of the Coppinger children??

Two. And then let’s hope there’s still room in the carts for groceries.

If I move a few mountains, I can get out of the house all by myself to buy groceries. This still sometimes requires two carts, but that’s only because I don’t have kids with me and will therefore buy as much as I can because of the “convenience” of shopping on my own.

There are currently 12 people living in our home and our grocery budget is hanging in there at $1,400/month. You can read details about this here.

Now that we’ve lived in Lincoln for over half-a-year, I feel like I’m finding my groove just a bit when it comes to knowing which prices are better at which store.

My favorite places to shop in Lincoln are: Costco, Aldi, Sam’s

I pick up our WIC items at Walmart because I’ve found that to be the easiest and because the three above-mentioned stores don’t work with our WIC cards.

There are a few items I can only get at Sam’s. This post details that info. But for today…

Costco or Aldi: Which Has Better Prices?

Now, it all depends on what you’re going for. In my experience, non-organic items at Aldi are less expensive than almost all Costco items. But the quality of most of those Aldi items are subpar and I’ve found that it’s not always worth the savings. I mean, have I really saved money if I buy cheaper grapes at Aldi but then have to throw half of them away because they got moldy right away?

Here are the items I’ve cost compared and where I’ve landed on purchase preference. Prices tend to fluctuate so I won’t share specific costs, but will instead note what I’ve learned about which store has the better overall price.

Grassfed Butter – Both stores have a Kerry Gold knock-off and wow are they good! Best price: Aldi

Tip: Watch for it to go on sale during the holidays and stock up. It freezes well!

Cream Cheese – As of 2024, I’ve stopped buying cream cheese at Aldi and have discovered that Costco’s brand of cream cheese is less money and delicious! Best price: Costco

Regular Butter – Best price: Depends on the day – watch for sales at both stores and stock up when they are discounted!

Shredded Cheese – Aldi has regular-sized pouches whereas Costco has bulk-sized (5-pound) pouches. Shredded cheese freezes well, so buying the bigger pouches works even if you don’t go through it quickly. Best price: Costco

Nitrite-Free Lunch Meat – Both stores carry a nice variety of healthier lunch meats. They freeze well so it works to buy in bulk. Best price: Costco

Organic Chicken Broth – Both stores have good quality organic broth that I like to have on hand for easy soups and casseroles. Costco’s price wins by a few cents per container. Best price: Costco

Organic Salsa – Both stores have tasty organic salsa, but Aldi’s is significantly cheaper. Best price: Aldi

Canned Corn – Cost per can of corn is about the same at both stores, but Costco’s is better quality. So in my book… Best price: Costco

Applesauce Pouches – By far every variety of these is cheaper at Costco. We go through these like crazy at our house! Best price: Costco

Why yes, I do buy my bulk in bulk…

Organic Pasta Sauce – Both stores have very tasty pasta sauces and both are high quality. Hands down though, Aldi’s is cheaper. I buy 6-12 jars at a time! Best price: Aldi

Rotel – Cost per can of Rotel at Costco and the Aldi knock-off are about the same. Because the price is the same, I prefer to buy a case at Costco because we go through a lot of it and it’s easier to buy by the case. Best price: Both

Organic Coconut Oil – There is no comparison on this one – Costco’s oil is much, much less per ounce compared to Aldi. Granted, Costco’s is an 84-ounce tub vs. Aldi’s 14-ounce jar. The bulk option saves a large amount of money! Best price: Costco

Organic Olive Oil – Again, you’ll have to buy a larger quantity to enjoy the savings. But I find that it’s worth it! Best price: Costco

Cage Free Eggs – I like to buy the 5-dozen packs at Costco because we go through eggs so quickly at our house. As it turns out, they are less money this way. Best price: Costco

Whole Milk – I buy many gallons of milk each week and while I know the cheapest price is at Aldi, I can’t go there every week. I just pick it up wherever I happen to be that week. But best price: Aldi

Half & Half – Do you want organic or non-organic? If you want organic, best price: Costco. If you aren’t particular and are ok with non-organic, best price: Aldi

4% Cottage Cheese – We like whole milk cottage cheese at our house and have found that price per ounce is less expensive at Aldi. Best price: Aldi

Big Family Food and Fun: January 7-13, 2024

Sunday for lunch we made Cheddar Brats (I cooked them before church then put them into a crock pot to stay hot). I had made Cheesy Mashed Potatoes and Oatmeal Raspberry Bars the day before. Plus I made Green Beans, Cream Cheese Corn, Baked Beans, and warmed up leftover Ham for those who didn’t want Brats.

There were 17 of us for lunch that day. :)

That afternoon, our friend Paula dropped off school lunches for Brayden and Kiya to enjoy all week (read here about how this came about). This is a huge gift and help for our family!

That evening Keith, Anna, and Acacia helped make pizza for dinner.

While the pizzas were baking, I did some work on Anna’s hair. It seems that while she was in her room “napping” that afternoon, she had discovered the body wash in the girls’ bathroom. I’m not sure how much she pumped out of the container, but you can be sure that her hair was very, very, very clean. It took quite some time to rinse all the bubbles out of her locks. Oy.

We had carrots with our pizza. Some of our kids really like to dip carrots in peanut butter. Ever tried it? It’s highly recommended by the Coppinger kids. :)

That night we got the much anticipated school email that Monday would be a Snow Day! I started thinking of ways to make our day with the kids super fun at home since we wouldn’t be able to get out and go anywhere.

First up, Snowman Pancakes for breakfast with sausage links.

After breakfast we headed to the table to make Shrinky Dinks. Remember those?! None of our kids had ever experienced them before so they were a huge hit.

We heated up the smaller of our two ovens knowing we didn’t need the large one for melting down our Shrinky Dinks. But this was a bad idea because it was too hard to get that many heads in the same spot to watch the magic happen in the small window of that oven. Oops.

We headed back to the table for more crafting…

Then we went into the kitchen and started making Snowflake Quesadillas. The kids LOVED this.

Anna was convinced that this was NOT the snowflake she made and I couldn’t talk her into understanding that once I unfolded her tortilla, this was the result. Nope. (I gave hers to Josie and asked Anna to make another one – showing her the unfolded version right away this time.)

After lunch, we headed into the living room to put together puzzles before naps.

We had leftovers for dinner that night. Brayden asked if he could warm up the Chili. He has started to really love helping in the kitchen!

After dinner, Elias was an awesome sport and joined us for a game of Headbands. :) :) :)

We had served an early dinner so before bedtime I sliced, buttered, and toasted some Pumpernickel bread that we’d been given last week.

We had another snow day on Tuesday so I drew fun faces on cups and filled them with Warm Vanilla Soother. (Our BabyBoy#11 has eating challenges but I was able to get two tiny nibbles of Soother in him. Hooray!)

I made French Toast that morning also. Man, I love this built-in griddle. It is such a blessing to have!

I had been hungry for a childhood recipe “Peanut Butter Honey Puffs” – likely the very first recipe I tried on my own with my very first Buddy Bear Cookbook. I couldn’t remember the exact measurements but we made it work and they tasted like I was eight again!! (Also? That afternoon I was able to find the cookbook on Amazon and ordered it for myself!! I mean, I ordered it for the kids. Ha.)

Then, we took turns adding ingredients to make Chocolate Chip Cookies to share with our church staff.

At lunchtime, I turned Sunday’s Baked Bean leftovers into Beanie Weanies. Once again, Brayden wanted to help.

The boys were excited to help Daddy shovel snow during naptime.

Acacia helped me vacuum the living room rug later that afternoon. She’s tiny but mighty. :)

For dinner I made two pans full of Crunchy Ranch Chicken with leftover Cheesy Mashed Potatoes and Buttered Peas. We all LOVED this chicken. I need to make it more often!

Since we’d been cooped up so much that day, we found some Winter Dance Party videos on YouTube so that we could get some exercise before bed.

The kids got to go back to school on Wednesday after two weeks of Christmas break and two bonus snow days. I made them Scrambled Egg Sandwiches so they’d be nice and full for their first day back.

We’d heard that there was more Snow Storm on the way so I went to Aldi and Costco during naptime that afternoon. At Aldi I got several gallons of milk, lots of whole milk yogurt, salad mixes, cucumbers, fritos, and cake mixes for upcoming birthdays.

At Costco, I got stocked back up on frozen fruit, frozen peas, frozen pizza, chicken nuggets, potatoes, bananas, grapes, avocados, broccoli, spinach, spring mix, oranges, eggs, hamburger meat, turkey for sandwiches, canned corn, rotel, applesauce, chocolate chips, and a few other odds and ends. I was so happy to find a new coat/snowsuit for just $9.00 for a birthday gift for Anna!

Back at home, the older boys helped me get everything unloaded. It was fun to see all the fruits and veggies filling the island in our kitchen! I’ve been trying not to spend much at the stores this month so that I could focus on using the food we have on hand. But we were really low on produce so I feel like after this shopping trip, I can put together more well-rounded meals.

That night I used Tuesday’s Crunchy Ranch Chicken to make this Chicken Bacon Pasta dish. It was SO GOOD. And so easy. It’s a one dish meal with spinach stirred right in.

We got the kids off to school Thursday morning and sent Matt and Elias to York to work on our houses there. Malachi helped me get through the morning with the 5 littlest. At one point, all of them were in one spot playing happily. I got a picture as quickly as I could before they scattered or screamed. :)

Mid-morning we put together plates of cheese, crackers, blueberries, and cucumbers with ranch. We had case workers visit after that, plus Keith and Anna left on the school bus for their afternoon pre-school.

It was Anna’s birthday! Kiya wanted to paint her nails as a gift to her, so as soon as Anna and Keith got off the preschool bus, this was the scene:

Anna requested Mac and Cheese with Peas for dinner, and we made some Chicken Strips and Caesar Salad too. (We just stir frozen peas into hot mac and cheese – it’s a kid favorite.)

Yes, it was as loud in our dining room as you imagine that it was when you look at this:

Cake time! Anna requested Chocolate Cake, which of course I made like this with spinach blended in. Then I poked holes in the cake and poured in chocolate pudding. Then I made Chocolate Whipped Cream for frosting. It was super good!

After cake, we gathered in the living room for present time.

While we were gathered in the living room, we got the email telling us that school was canceled for Friday because of another incoming snow storm. Justus and Kelsey, who were at our house for Anna’s birthday, had packed a bag in hopes that this would be the case so that they could “accidentally” get snowed in with us. We didn’t tell the kids – but let them be surprised when they woke up on Friday morning. :) It was awesome!! And it was so helpful to have them with us because Matt and I were getting a little bit exhausted from keeping so many cooped up kids entertained.

I made Whole Wheat Waffles and Bacon on Friday morning.

Mid-morning, we found some fun YouTube videos that walked us through the process of “how to draw.” We all drew a dinosaur, a minion, and a flamingo. This was a fantastic activity to keep us busy! By the way, we all decided that it was a Pajama Day. ;)

Kelsey warmed up leftover Chicken Bacon Pasta and leftover mac and cheese for lunch. I sliced oranges and that was that.

Keith and Acacia worked together to scrub potatoes for dinner.

Matt and Kelsey played Ticket to Ride First Journey with the kids during naptime while Justus and I worked on our computers.

After the game, I pulled Brayden, Kiya, and Keith into the kitchen to teach them how to make Pizza Chicken Bake. This is a great recipe to give to the kids!

While dinner baked, Kelsey and Justus played several rounds of “Silent Ball” with the kids. That might be one of the most amazing games – it’s quiet, engages the kids, and keeps them busy. Perfection!

Dinner that night was Pizza Chicken Bake, Baked Potatoes, Steamed Broccoli, and leftover Cream Cheese Corn.

Justus and Kelsey hadn’t planed to stay a second night, but the snow had continued to fall all day, leaving them no choice. I sure didn’t mind! I hadn’t made Cinnamon Rolls for a very long time (years probably), and after all the Snow Days, it seemed like the perfect thing to make. It was super fun to show the kids how Cinnamon Rolls were made. But I will likely not make them again for a while. I just don’t have time to spend on recipes like this right now. :)

But what is worth it? Oh yes.

We turned on music and made more crafts that morning.

For lunch, I made Taco Soup with avocados, fritos, and fruit.

Justus and Kelsey were able to shovel themselves out make it home that afternoon. Having them here for two days was such a game changer for our Snow Day needs. It was amazing to have them here!

Brayden ventured outside to get us a bowl full of snow so that we could finally make the Snow Ice Cream we’d hoped to make all week.

I had apples that were getting squishy so I turned them into a double batch of Applesauce Muffins.

I made Spaghetti with Salad for dinner.

We spent the evening giving everyone baths and getting ready for Sunday. WHAT A WEEK!!! :)

Favorite Christmas Food at Costco and Sam’s

Do you have favorite must-have Christmas food at Costco and Sam’s? Do you have a hard time not buying EVERYTHING like I do? How about stocking up on baking ingredients? Yes to all of the above?

They get me every year – walking through Costco and Sam’s at Christmas time. Everything looks wonderful, fun, and festive! I have to hold back so that I don’t spend too much on food, much less gifts. Well done, Costco and Sam’s marketing people. Well done.

Here’s what came up when I searched online for Costco and Sam’s Christmas images. SEE? This is what we find when we walk in. It all looks so good!! (Yes, I do love all things Christmas.)

My good judgement does kick in and while I do put several fun treats and gifts into my cart, I don’t buy the entire store. #selfcontrol

But here’s what I tend to buy that is both practical and fun for hospitality during the holidays…

Favorite Christmas Food at Costco and Sam’s

Hawaiian Rolls

These are great for Sliders on a finger-food night or as a side dish if we’re having Ham. These are super sweet and tasty, perfect for a Christmas treat/snack/lunch/side. What? They’re just rolls, you say? Nope, not at Christmas time. They are magic rolls during the holidays.

Cheeses and Crackers

I’m not sure why I don’t put together fun cheese and cracker trays on random Thursdays in February. These seem to be saved for special occasions like Game Nights around holiday time. Either way, Costco and Sam’s both have nice options for cheese varieties and fancy crackers.

White Queso

Ok fine. I buy this all year long. But it does taste better around Christmas and it works great to keep warm in one of my Mini Crock Pots. We love this when we set up a Nacho Bar!

Fresh Fruit

I obviously buy this all year long too. But a fresh fruit platter at Christmas time? Well, it tastes extra sweet and looks extra pretty. Is it possible that the Costco and Sam’s marketing people have me all excited about everything when I’m there in December so even the grapes look irresistible?? Absolutely. (Even though I just bought the exact same variety of grapes two weeks ago when the Christmas music wasn’t playing and I felt no extra excitement beyond, “well here’s a good snack for Wednesday.”)

Croissants

Yep, these are a must-have with Chicken Salad on say, December 23?? On a Santa tray. With a side of those marvelous grapes mentioned above and ooooh, BABY CARROTS!!! (Again, buy fresh produce whilst Christmas music is playing in the background and suddenly everything is an exciting Christmas-food purchase. Baby carrots in March will just be baby carrots. In December they are FABULOUS WITH SOME KIND OF WONDERFUL DIP!!!)

Is this just me?

Fun Drinks

For real though – hot chocolate, tea, and coffee in green and red packaging with gold trim and glittery snowflakes? I need them all because my family and guests will LOVE their drink while we sit and visit, open gifts, and play games. We have all those fun Christmas mugs, do we not? We must provide drinks to fill them. And not just any drinks. The exact same drink that will later be found in a normal-looking package but is now only available for a limited time in a super fun festive package. I give in to this (and also they are usually “on sale” so this is a plus).

How about baking ingredients?

100% yes. I stock up on everything during this time because some of these items (like organic canned pumpkin) is not available year round. And the prices truly are wonderful this time of year.

Granted, shopping at Christmas time and seeing all of the ingredients deceive me into thinking that I will for sure have time and make time to make allllllll of our favorite Christmas goodies. Obviously we will bake for our neighbors, our church staff, our kids’ teachers, and everyone else within a twenty-mile radius. Obviously.

I may or may not be able to follow through with these grand plans, but I never regret stocking up on baking ingredients during the holidays. They are discounted and they will be used eventually. So these always go into my cart:

  • Canned pumpkin
  • Cream cheese
  • Butter
  • Chocolate Chips
  • Unsweetened Cocoa
  • Flour
  • Sugar
  • Cinnamon

I might also give in to special-shaped pretzels, Chex cereal, chocolate stars, nuts, and other fun items placed on end-caps and featured as limited time selections. If the price is right and I know how to use it…

Big Family Food and Fun: August 27-September 2, 2023

Sunday morning as I was getting the three little girls dressed, they suddenly started to be twirly and dancy and huggy. I started snapping pictures and they started posing and I got so many cute and giggly photos!

Breakfast that morning – before they were dressed so that we didn’t destroy clean outfits – was leftover goodies I’d made last week: Banana Bread and Chewy Granola Bars.

We planned to stay at church for lunch that day, so I packed up grapes, nacho dip/chips, and brownies to share. (I also took a loaf of banana bread I’d made in hopes that our friend who just had a new baby might be there. She was there! New Baby is precious, and I stuck the loaf of bread into her stroller for her to take home and enjoy.)

Lunch that day was a crazy fun Parking Lot Party after church. There were 150+ who stuck around after church to eat, visit, and play.

We’d taken our Shaved Ice Machine and Elias filled cup after cup for everyone at the party. Take a look below at the precious baby in the yellow dress standing by her brother’s leg. She stood there for the longest time, just being with him while he worked. Josie sure does love her brother. :)

That evening we met up with friends at a park. I packed a picnic (cheese, crackers, mandarin oranges, pistachios, and juice) but only got one picture the entire night! We were having too much fun visiting and playing.

Monday morning we ate more of the same (I had made a HUGE batch of the granola bars), plus apples with this special cheese.

Lunch was leftover 3-Cheese Spaghetti. Dinner was a dish I’d made ahead of time here. I dumped it into the crock pot at lunch time, turned it on low, and it was bubbly at dinnertime. We ate it as a chip dip with watermelon.

Tuesday morning Brayden had tests at school so he informed me that he needed “good sleep and a good breakfast.” I made cheese eggs and sausage (while an unnamed toddler was tantruming on the floor – part of her typical morning routine as we try to help her learn to regulate her emotions).

I got out strawberries and Orange Muffins that I had frozen and thawed.

After we walked Brayden and Kiya to school, we came home and did some cleaning. Anna and Josie “helped” by getting a hand broom and dust pan. The effectively spread around everything I’d swept up and made me do the work twice. ;) But I love that they want to help and that they are learning.

Meanwhile, Matt was upstairs using a power sander in one of our third floor suites that we are getting ready to rent out.

Elias and Malachi helped me with the five littlest all morning since Matt was upstairs working. I actually got quite a bit done in the kitchen that morning since the two guys were chasing kids for me. I made these 3-Ingredient Peanut Butter Cookies (multiplying the recipe x6) so that we can eat some now and have cookies in the freezer to use as needed later.

At lunchtime, I cleaned leftovers out of the fridge for all of us to eat. Unfortunately, I left the corn cooking too long and all the water steamed off so the bottoms got blackened. The kids were not impressed. ;)

I had to take BabyBoy#11 to a doctor appointment that afternoon, so before we left I put everything for this recipe into a crock pot (I even managed to plug it in AND turn it on. Go me.)

That evening I plated and bagged all the cookies I had made so now we have four bags of frozen 3-Ingredient Peanut Butter Cookies ready to pull out and use as needed.

Wednesday was a bit of a blur. But for dinner that night I made two griddles full of grilled ham and cheese sandwiches with an air fryer full of French fries. I also made a bowl full of Strawberry Fluff which the kids loved.

After we got the kitchen cleaned up that night, we drove to the zoo and walked around the garden they feature just outside the zoo. We hadn’t had a chance to do that yet so it was extra special to do this just before bedtime.

Thursday morning after we walked Brayden and Kiya to school, we loaded up the youngest five kids and headed to Aldi. Phew, we filled two carts and that was just with children, ha. Somehow we managed to also put food into our carts, getting our Aldi favorites: whole milk yogurt, whole milk cottage cheese, whole milk, three varieties of bagels, hoagie buns, apple juice, pear cups in 100% juice, and three varieties of cheese slices.

I don’t always like to buy produce at Aldi, but they had really good prices that day and the quality looked better than usual. I bought bananas, cantaloupe, watermelon, pears, two varieties of organic apples, grapes, blueberries, and four bags of salad mixes. I also found a 5-pound roast for $1.99/pound so I grabbed it. Chips were on sale for $0.99/bag so I got six bags.

I ended August with a whopping $1,780 grocery spending total – more than I’ve ever spent that I can remember. I’d feel bad about it except that I don’t – not even a little bit. We went under budget for several months in a row before this month and we had a lot of extra food needs this month. God provides, we make the wisest choices that we can, and we feed a lot of people. Praise God for His provision!

It felt so good to have so much fresh fruit on hand again!

I snapped this photo of the third floor room Matt’s been working on all week. Here’s the floor, half-way finished. So gorgeous!

Thursday afternoon our sweet friends, Steven and Barbara, dropped off two lovely loaves of banana bread for us – all sliced and ready to eat!

It was Acacia’s birthday so I put 12 burgers on the grill plus 14 brats.

I made a birthday cake, poking holes into it and pouring pudding into the holes, then topping it with whipped cream. The only thing I made from scratch was the whipped cream. Boxed cake mix and pudding mix for the win this time. :)

She may have turned three, but she’s already mother hen to this baby chick as we try to help him gain strength to sit on his own.

Some of our big kids were able to join us for dinner so I set out a spread of brats and burgers, chips, and fruit.

She figured out how to blow out the candles. :)

Keith was so excited to hand Acacia her gift – a little purse I’d found on clearance for $3.00. She loved it and has been carrying it around everywhere!

Friday morning we enjoyed Ms. Barbara’s banana bread with yogurt and blueberries.

After we got the kids off to school, Matt and Elias headed to York to work and Malachi helped me take the kids to Costco. I didn’t need to shop, I just needed customer service as I had noticed that the last time I was there they rang up four cases of diapers when, in fact, I had only purchased three. Since it was a $45 discrepancy, I felt it was worth getting credit back. Thus, going to Costco became our morning outing. :)

The boys started to get restless so Malachi walked around with Keith and BabyBoy#11 while I got the bill figured out with Customer Service.

Then we had a special treat of Costco Pizza. It was mostly a mess (like, a 12-15 wet wipes to clean up the pizza sauce mess). But it was fun for everyone and $6 took care of that day’s lunch!

As we were loading everyone back into the cart to head out to the van, Little-Mama-Acacia started to rub BabyBoy#11’s back. Goodness, the sweetness.

That night Malachi threw Sam’s Orange Chicken into the air fryer, and I got out cold watermelon and two bags of salad mix from Aldi. It was easy and hit the spot!

When Matt and Elias arrived back at home, they had our former foster son, age 4, with them to spend the weekend. Everyone was overjoyed to be back together!

The kids played and played outside that evening. I thought they might need a little something to eat to fill their bellies before bed, so I took grapes and cheese outside. They all thought that was a good plan. :)

Some dear friends arrived Friday night to visit for the weekend! For breakfast on Saturday, I set out banana bread and muffins, yogurt, blueberries, bananas, and made sausage and tator tots. Brayden had requested hashbrowns but I was out so we decided that tator tots were the same thing. ;)

The kids asked to play cards that morning, and this was the result. Ugh.

We packed up a big picnic for lunch and headed out to the Splash Park for one last hoorah before it closed for the season.

I wasn’t sure I had enough lunch meat left in my packages, so I threw together a container of tuna salad real quickly.

I smoked two pork loin for dinner that evening and served them with green beans, watermelon, buttered and toasted hoagies leftover from lunch, and Cream Cheese Corn. Meals like these are my favorite!!

After dinner, we took our friends on a walk to our beloved Sunken Gardens. Aww, there’s our Kellie with her baby boy. We became friends with Kellie and Ben while they were students at YU. They spent a lot of time at our house during those days and became a part of our family. Now here they are with a baby of their own. It was amazing to have a weekend with them!

Here we are in September, heading from summer into fall. We’re going to soak up every last bit of nice weather while it’s here!

3 Big Fat Costco Essentials

During one of my last grocery shopping trips, I realized that I rely on 3 big fat Costco essentials. I can’t ever run out of these!

Indeed, I’m talking about actual fat. Healthy fats that cost less at Costco and are essentials at my house.

My 3 Big Fat Costco Essentials

Here they are, in no particular order. Ah, phooey. Who am I kidding? Of course they are in order. Butter is my favorite, hands down.

1. Butter

Now that we have such a large household, I find that we go through butter very quickly. We bake with it often and spread it on all of our muffins and breads.

Costco butter comes in a 4-pound-pack and currently costs just $2.87/pound. I haven’t found it for this low anywhere else I’ve shopped. I usually buy two 4-packs each time I shop (once or twice each month) so that I always have a couple pounds in my fridge and extras to grab from my freezer.

What do I make with butter?

Well, how long do you have?! These are some of our very favorites:

  1. Homemade Graham Crackers
  2. Sweet and Simple Butter Cookies
  3. Garlic Butter Shrimp
  4. Stick-of-Butter Rice is incredible and worth a huge mention (though I have recently admitted that I sometimes skip the butter in this recipe in an effort to save money, ha)

2. Coconut Oil

Coconut oil has been a staple at our house since I discovered its wonderful health benefits in 2005. We use it on our skin and in our recipes.

I love this 2.48 L tub from Costco for just $14.89. What an inexpensive way to get a lot of healthy fat into our diet!

I use olive oil for cooking more than I do for baking, and this Organic Kirkland Olive Oil from Costco is my favorite. It is only $14.79 for a 2 Liter bottle and it lasts a long time, even at my house!

That Time I Didn’t Buy Any Produce at Costco

What?? I didn’t buy any produce at Costco? How did that happen?

I guess I didn’t need any that day. This is bizarre because I have a terrible time keeping up with fresh produce at our house. We eat fresh greens like crazy (well, we drink them, actually) and we go through fresh veggies and fruit by the ton.

Bananas, berries, grapes, apples, pears, carrots, cucumbers, peppers, salad mixes, spinach, spring mix, kiwi, melon, broccoli, potatoes, oranges  – I always get so much produce that I could almost fill an entire Costco cart with produce every time I go. But then there was…

That Time I Didn’t Buy Any Produce at Costco

Last week, I went into Costco, loaded an orange flat cart with items, and not one of those items was from the fresh produce section. Did I just get a couple of items that day? HAHAHA. No, I wish. My cart looked like this, and I got what I went in for and then some.

I mainly went in for cases of diapers, toilet paper, and other non-food items. But then I kept finding food staples on sale because so much is discounted right now during Back-to-School season. Knowing that I didn’t need most of those items now, but that I could buy them at a discount and freeze them for later – I kept piling up more onto my cart.

Did this make me go over my grocery budget this month? Oh yes it did. But will it save me in the long run? Absolutely it will. Plus, it feels really good to be so stocked up right now. This frees me to focus more on helping our kids as they transition into our new school routine. (Our kids’ past trauma makes every transition more intense. Gimme that frozen pizza.)

So hooray. I’m all stocked up!

Except for the produce.

I already had a lot of fresh produce at our house at the time of this particular shopping trip, so I didn’t think twice. Until two days later when – well of course. We’ve eaten up almost all of our fresh produce. (We do have a beautiful abundance of wonderful tomatoes and squash from friends’ and neighbors’ gardens!)

Looks like I’ll be heading back soon, making my August grocery bill even larger. As of today, I’ve hit a whopping $1553 for the month. (This is the grocery budget we shoot for with 11 people at our house.) I’ve gone way over, but there are other months I’ve been under, so it all evens out. Also? We need to eat. I have to buy food. And I strive to be wise with every purchase. :)

What I Buy at Costco to Pack in School Lunches

I realized that there are many items I buy at Costco to pack in school lunches for my kids. These are great money savers, so I wanted to share!

Does it actually save money to pack a lunch?

Last year, if you recall, I did a price breakdown on many of the lunches I pack for my kids to see if it actually saves money to send lunch in a lunchbox vs. buying lunch at school. (It does, in fact, save money.)

But more than that, I found that if my kids eat school lunch, they don’t make good choices (I wouldn’t have either at their age!). They tend to eat the cookie first and not much else because they either run out of time because they were distracted or because they didn’t like the main dish offered. Veggies never happened at school – not because they weren’t offered but because Mom wasn’t there to make them eat them.

Packing lunches for our kids ensures that they eat better, they eat more, and at the end of the day I can talk with them about what they enjoyed and what they would like done differently next time.

What I Buy at Costco to Pack in School Lunches

We only pack sandwiches and chips for a Fun Friday lunch. The other four days of the week, we like to pack a different variety of foods they like. Some lunches are hot, some are cold, and both work very well!

Here’s a big run down at food we get at Costco that works great as we pack school lunches!

Fruits and Veggies

Costco’s Organic Gala apples are the perfect size for a school lunch, plus they are high quality and always priced wonderfully per pound. Their grapes make a great side dish, and I simply buy whichever variety is priced the lowest at that time. Clementines pack well and are easy to peel. I pack fresh Costco pears and bananas occasionally, but those are tricky because they tend to get squished in the lunch box. ;)

When GoGo Squeeze are on sale, I stock up! These are great to throw into a school lunch because they don’t even require a spoon. ;) I get applesauce cups also, and every once in a while I put a GoGo Squeez yogurt into a lunch (that’s usually a special treat that I include in a Fun Friday Lunch).

Peach Cups and Mandarin Orange Cups in 100% juice are great to send with the kids for fruit variety and because we often run low on fresh fruit at home (I buy a ton but we eat a ton, so I struggle to keep up!). Having these cups on the shelf is super convenient and great for lunch boxes. They really like Pear Cups also, but it is hit and miss on finding those.

Baby carrots and cucumbers are great lunchbox options. Brayden discovered this summer that he LOVES cucumbers. :) Kiya isn’t a fan of cucumbers but she does like baby carrots dipped in peanut butter. :)

I’ve found that it’s worth it to splurge on Costco’s Avocado Cups and Guacamole Cups as they pack well and are fun to eat with tortilla chips.

And speaking of tortilla chips…

These huge bags from Costco are our favorite. They are a great price and go a long way, even for our large family.

Often I’ll pack a little baggie of these chips to go with any of these dips I’ve made and put into small containers:

  1. Simple Bean and Cheese Salsa Dip
  2. Cream Cheese Salsa Dip
  3. Bacon Ranch Chip Dip
  4. French Onion Dip
  5. Bacon Tomato Dip
  6. Black Bean Salsa
  7. Healthier Cheese Dip 
  8. Nacho Cheese Pretzel Dip
  9. Easy Guacomole

From the cheese aisle

Big packs of cheese sticks come in handy as something easy to throw into a lunch box to help fill the kids’ bellies. Plus I like to get big packs of sliced Colby jack cheese to use on Friday’s sandwiches or to enjoy with crackers.

Lunchmeat

These Kirkland brand varieties of ham and turkey are our favorite. We don’t just use them on sandwiches for our lunchboxes. Often we’ll roll them up and put them into a bag to eat as-is.

These Cheese and Cracker 12-Packs are a bit of a splurge, but I like to keep them on hand anyway because they are a great lunchbox item that I can fall back on if I don’t have much time to put together anything else. And yep, even though they are a convenience item, the overall cost is still lower than paying for a school lunch.

Mac and Cheese

For a hot lunch option, I buy cases of mac and cheese at Costco. Typically, if I’m making mac and cheese for lunch for the littles, I’ll make extra to warm up and put in a thermos the next day for the elementary-aged kids. It’s perfect! (See how I send hot lunches to school here.)

Costco Frozen Pizza

Remember how I figured out that buying Costco Frozen Pizza is a great frugal meal option? They are also a great school lunchbox option! I’ll bake one, let it cool, cut it, and baggie it up to throw into the kids’ lunchboxes. So easy and they love it!

Packaged Treats

It costs less to bake homemade muffins (40+ recipes here) and other baked goods (huge list of recipes here) to send in a school lunch. But Costco offers big boxes of pre-made treats like this that are nice to add to a lunch box. We like their 100% fruit strips, Nature’s Bakery brand items, and Bobo’s muffins.
