Easy Fruit Choices I Give My Kids Every Day

We go through a lot of fruit at our house! But I don’t have time or enough hands to cut up fruit for my kids. Here are the easy fruit choices I try to keep on hand to give my kids every day.

Currently, we have six little ones and four of them are in diapers. Therefore, I had to stop buying cantaloupe and fresh pineapple, simply because they would sit neglected on the counter and I would never, ever get around to cutting them.

Six minutes. Ten maybe. That’s how long it takes to prep a cantaloupe. And yet, there are not ten minutes to be found these days. Awww, these babies!

I have started to rely on other fruits that take no prep, or maybe just thirty-seconds of prep. Wash-and-serve fruit like berries. 100% fruit cups like peaches, pears, and mandarin oranges. Applesauce squeezies by the case! Bonus points if there are vegetables in them! (Like these.)

East Fruit Choices I Give My Kids Every Day

Here’s a quick list for us so that you and I can easily reference when we need ideas and inspiration for fruit we can grab and hand to our kids. Better yet, if they’re old enough, they can reach in and grab it themselves!

  • Bananas
  • Prepared Unsweetened Applesauce Cups (or applesauce scooped out of a jar into small bowls)
  • Applesauce Squeezies – with other fruits and sometimes vegetables included
  • Blueberries
  • Raspberries
  • Strawberries
  • 100% Peach Cup
  • 100% Pear Cup
  • 100% Mandarin Orange Cup
  • Canned Pineapple – tidbits or slices
  • Apples
  • Clementines
  • Pears

Some Fruity Tips

~ Usually my kids eat apples and pears better if they are sliced or cut into small bites. So if I have two hands-free, I’ll quickly prep those fruits to hand my kids for snacks or a side dish to our meals.

~ They really love apple slices dipped in peanut butter, so sometimes that turns into our lunch!

~ I usually drain the juice out of our fruit cups before serving them, simply because our toddlers will spill the juice everywhere while trying to eat the fruit.

~ I teach my little ones to peel their own clementines as soon as they are able. So even at their very little ages, if I get the clementine started, they can take over and peel it on their own.

~ I like to cut strawberries into small pieces to make them easier to eat, but when there’s no time, I try to make a big deal of how fun it is to eat a great big strawberry while holding onto the green part.

~ I keep a bowl of prepared 100% fruit cups in our kitchen for our kids to grab as needed.

~ Watch out for the prepared fruit cups labeled “no sugar added.” That’s code for “fake sweetener added” so I always avoid those. Go for the cups prepared in 100% fruit juice.

Some day, I’ll slice cantaloupe, pineapple, and watermelon again! As for now, these easy fruit choices work best for us!

Breakfast at School: SO MUCH SUGAR

Hey, breakfast at school? You sure are sweet.

Today I’m taking a moment to process my thoughts about the school’s tasty donuts. Also, the chocolate milk. Then I’m going to tell you what I’m trying to do at our house to help our kids avoid sugar overload.

I am all about offering a fun breakfast. But I try to keep the sugar level down if I expect any of us to be productive. Here babies. Eat these fruity pebbles. Now go sit still for a long time and calculate numbers and sound out words.

First day of school, 2021. Keith had to get in on it too!
And how dare they get on the bus without him?!

School breakfast is free this year, so I decided to check something off my morning list and let the kids eat at school when they got off the bus.

I have no idea what the kids ate on their first day. It was the first day. We survived it. That’s all that mattered.

On the second day of school, our kindergartener came home with precious, sweet chocolate cheeks. She proudly told me that they all got chocolate donuts for breakfast! I celebrated the fun with her, and then gently suggested that maybe tomorrow she pick something less sugary to start her day.

Bless her little five-year-old heart. On day three, she told me that today she’d had cereal – so that was much less sugary, right? Good job, said I. What kind of cereal did you pick?

Her happy reply was, “The chocolate kind. OH! And then I poured chocolate milk into it so it was double chocolate!”

Oy. Well, what would any of us have chosen as kids? The chocolate cereal with the chocolate milk? Well, yeah! (Ok, fine. I would have chosen the fruit loops.)

Yes, of course, the school always also offers fruit and protein. But Mom isn’t there to make them take it and eat it, ha. And it’s easy to overlook it when there lie the donuts. So.

I fight enough battles with our kids.

Our seven and five-year-old babes have plenty of other more important needs for me to focus on. I feel like I am constantly re-training and re-directing and re-teaching them. So for me to say, YOU MAY NOT EAT SUGAR AT SCHOOL! would not be an ok thing. This isn’t a hill I’m going to die on. It’s not their fault that there are so many fun sugar choices. And the school has a lot of kids to feed in a short amount of time. They can’t make omelets to order. Sweet items are easier to dole out!

Chocolate Milk…times three

This one is maybe the hardest for me. When given the choice, of course, our kids are going to take chocolate milk. That’s what I did as a kid!

I’ve tried to encourage white milk, but they don’t like how it tastes out of a carton. Then there was the day Brayden proudly told me he’d chosen a different carton of milk at school. “White milk?” I asked. “No, the pink kind!” Ahhhh, strawberry. Hahaha. Bless.

If the kids just got one sugary milk each day, I would just shrug and move on. Again, I’m not dying on this hill. But in fact, they get chocolate milk three times every day. One at breakfast, one at snack, and one for lunch. My stomach hurts just thinking about it.

So we decided to skip breakfast at school.

Maybe once in a while, I’ll let them go through the breakfast line for a special treat. But I feel like I need to start their day of learning on a better foot so that they can focus better.

  • I feed my kids before they get on the bus. This is tough because they leave the house at 7:05. But it’s worth the extra effort in the morning.
  • I focus on protein and fresh fruit at home before sending them off for the day. If I can get some eggs or sausage on their plates and tummies, I feel so much better about whatever else they might choose to eat or drink at school. Before rushing out the door, I know they have some good nourishment in them.

Some high protein at-home breakfast ideas:

Here are a few of the menu items I’ve given my kids before sending them off. Keep in mind they only have about 10-minutes to eat before leaving to meet the bus (because I let them sleep as late as possible). So the portions are small and easy to eat (and I don’t allow any chattering between bites because oh my goodness that…sloooowwwwws…themmmm…dowwwwwnnnn).

  • Fruit. Any Fruit. Just pick one and eat it. Then I give them something like:
  • Scrambled Cheesy Eggs
  • Apple Slices and Peanut Butter (this gives them both their fruit and their protein!)
  • Apple Slices and Cheese
  • Banana with Peanut Butter
  • Sausage Patties or Links
  • Peanut Butter Toast
  • Bagel with Cream Cheese
  • Fried Slices of Ham
  • Ham on Toast
  • Sausage Sandwich
  • Egg Sandwich
  • Summer Sausage and Cheese

It’s actually been pretty fun to come up with ideas for this. One day I thawed six pounds of meat and made a huge batch of Homemade Sausage.

I froze the patties, uncooked, on paper plates separated with parchment paper. These have been great to pull out and fry quickly while the kids are waking up and getting ready.

Get my Homemade Sausage recipe here. The recipe calls for ground turkey, but I use other ground meats too! Also, you’ll save time making Homemade Sausage if you follow this great recipe for making Sausage Seasoning. I keep a big jar of it, then just stir it into a large batch of meat!

The Easiest Apple Pie

How lovely that the Easiest Apple Pie is also The Tastiest!

Once upon a time, I made all of our food from scratch. I took great pride in this and I worked for hours in the kitchen every day to put all of our meals and snacks on the table.

Then God taught me more about loving people. He continues to bring more children into our home and shucks if I haven’t made a homemade pie crust in years.

It’s hard to roll out pie crust whilst holding a chubbo sweetheart.

Do I still love homemade pie crust? Oh yes, very much. Might many of you still make homemade pie crust while loving on all the people God has put in your path? Very much, yes.

But as for me and my house, we shall buy the crust from the freezer section of the grocery store. And we will order it through Walmart Pick-up so that we don’t even have to go into the store because grocery shopping isn’t a thing we can do very easily right now.

So now you know the truth.

I buy pre-made pie crusts. And I simply don’t read the ingredient list on the package. I’ve decided that if I don’t know what’s in it, it can’t hurt us. Heh.

I can’t believe I’m doing this, but shucks if I’m not putting together a bullet list of store-bought pie crust tips for all of us right now. If we’re going to do this, we should do it the best way, am I right?

My Best Store-Bought Pie Crust Tips

  • I like to buy the deep-dish variety instead of the regular (go big or go home)
  • I like to buy several 2-packs and keep them in my freezer to pull out and use as needed (because apparently, I’ve decided that pies are a need)
  • I pull out my frozen crusts to put together quick pies or quiches for desserts or meals (easy peasy pumpkin squeezy)
  • Sometimes we eat Pumpkin Pie for breakfast because this is a vegetable-eating opportunity (and healthier than donuts or fruit loops)

Bonus Tip: Do you know how quickly you can grab out pre-made crusts, whip up Pumpkin Pie Filling, and bake pumpkin pies? So quickly. You should do this.

So now, let’s talk about the Easiest Apple Pie.

I suppose the actual easiest way to make apple pie is to buy a can of apple pie filling and pour it into a pre-made crust. But that would not be the tastiest. So we’re going to work for about ten minutes to make both the Easiest and the Tastiest Apple Pie.

Here’s how to make and freeze Apple Pie Filling:

1. Wash, core, and slice apples into a large bowl. I leave the peeling on to save a step.
2. Stir in 1/4 cup sucanat or brown sugar plus 1 teaspoon cinnamon per every 5-6 apples.
3. Transfer mixture to quart-sized freezer bags, 3-4 cups of apple pie filling per bag.
4. Label the bag and freeze it for up to a year.

Here’s how to make an easy Crumb Topping:

1/2 cup rolled oats
1/3 cup sucanat or brown sugar
1/4 cup whole wheat flour
1/4 teaspoon cinnamon (optional)
1/4 cup butter (MELTED, if you recall)
1/4 cup chopped nuts or coconut flakes (also optional)

Mix together oats, sucanat, flour and cinnamon. Stir in melted butter and joy upon joy, it creates crumbs with little to no effort. Add nuts or coconut flakes. Triple the recipe to keep this crumb topping on hand for making the Easiest Apple Pies!

If you have frozen apple pie filling and frozen pre-made pie crusts, all you have to do is:

  1. Thaw your apple pie filling and your crust.
  2. Pour the filling into the crust.
  3. Top with Crumb Topping.
  4. Bake in a 350-degree oven for about 45 minutes to an hour or until apples are tender and juicy.

My Favorite Way to Eat an Apple

I’m afraid I’ve never shared my favorite way to eat an apple. You’ve been missing out! Come, let me tell you my ways…

You know me. I’m all about simple food, simple cooking, and simple meals. So this idea is as simple as the rest, but it does, in fact, involve a somewhat gourmet food item. Fancy much, Laura? Well, only when I eat apples.

This specialty item is this amazing little square of delight called Gjetost, and it is a game-changer when eating apples.

I’m linking it to Amazon so you can see it and read about it. But please don’t buy it from Amazon. It’s not nearly that expensive in stores!!!

What is Gjetost?

Gjetost (please don’t ask me how to say it) is a Norwegian cheese, and it tastes amazingly like caramel. How does it taste like caramel when it is in fact made from whey, cream, and milk? I do not know. I am not in charge of making Gjetost, nor have I ever been to Norway. But oh my goodness, this cheese! It is amazing!

But only with Apples

At least that is my personal preference. I’m not a fan of Gjetost by itself and a stand-alone cheese snack. It has a strong flavor, and when paired with apples, it is incredible! Most people in my house agree – Gjetost is amazing with sliced apples, but not really by itself. But then again, my very picky five-year-old likes chunks of this cheese without apples – who can predict the ways of a picky child?

How to Eat Apples and Gjetost

Our favorite way to enjoy apples and Gjetost is to slice apples into thin slices. Then we cut very thin slices of Gjetost. We make little apple and Gjetost sandwiches and we smile and eat and smile some more. I slice and slice and we can barely keep up because of all the slicing and the smiling and eating. Pink Ladies are our favorite variety of apple to eat with this cheese.

Where to Get Gjetost

I am unable to find this wonderful cheese in a regular grocery store. But then again, I live in a small town. When I’m in Lincoln, I can find it at Whole Foods or Hyvee. My guess for all of you who live wherever you live is that if you have a large-chain grocery store in your area that has a specialty cheese section, you are likely to find it there. Look for the little red wrapped cube of delicious cheese and give it a try!

The Easiest School Morning Breakfasts

I can barely get my kids dressed on school mornings. So breakfast? Good luck. School morning breakfasts have to be the easiest of the easy.

Last year I shared a basic plan for how to make breakfasts simple on school mornings (no matter if your kids school at home or away). I’m reworking these ideas and reposting them because these ideas come in so handy!

Basically, to save me from having to think too hard, I have created a basic breakdown of what I now make or serve each weekday:

Monday – Muffins
Tuesday  – Toast
Wednesday – Oatmeal
Thursday – Eggs
Friday – Granola or Cereal
WHEN ALL ELSE FAILS – Protein Bars (because some days there’s no time to stop and eat so I have to send the kids out the door with one of these)

With this skeleton plan, I can now make fun adaptations each weekday to keep our menu fresh and fun! (I save pancakes or waffles or other special breakfast ideas for Saturdays.) :) And now I will give you more specifics about how this works for us…

The Easiest School Morning Breakfasts

Monday – Muffins

I can choose from these 40 recipes so that Mondays are never boring. I shall call this “Muffin Monday” because cuteness in the kitchen is underrated.

Tuesday – Toast

Let’s hear it for “Toast Tuesday.” Though now I have to admit, my cute names for days of the week have now run out. Anyway though, we can make this Stir and Pour Bread (or buy bread from the store, can I get an amen?) and then top it however we like. Peanut butter and honey is a favorite for most of us. Bagels fit into this category too and a toasted bagel with cream cheese is perfection.

Wednesday – Oatmeal

I try to keep this Homemade Instant Oatmeal on hand, but I often now splurge and buy these too. Either way, this makes for a fast breakfast!

Thursday – Eggs

We mostly prefer scrambled cheesy eggs, but occasionally we’ll fry them. I love how easy eggs are to make. And all my kids love them and eat them so well. Try them in a Make-Ahead Breakfast Sandwiches. Make Eggs in a Nest. Make Warm Chocolate Soother, Warm Pumpkin Custard, Warm Vanilla Soother – all of these include eggs.

Friday – Granola or Cereal

We like different kinds of homemade granola like:

  • Dark Chocolate Almond Granola
  • Easy Basic Homemade Granola
  • Granola ~ 5-Minute Stop-Top Version
  • Peanut Butter Honey Granola

Or, I can make these Homemade Chewy Granola Bars for a fun change of pace. Or I buy granola or cereal at Costco to keep on hand for quick breakfasts. If I have these Giant Breakfast Cookies in the freezer, even better! See also: Breakfast Cookie Cups.

Always serve fruit

Fruit at breakfast is a given at our house. So with all of the above day-of-the-week breakfast ideas, everyone can choose what fruit they like best. I try to keep a variety on hand, depending on what is in season. Our favorites for breakfast are:

  • Applesauce
  • Blueberries
  • Apples
  • Oranges/Clementines
  • Bananas
  • Pears
  • Strawberries

School Morning Routine – One Way I CHEAT!

I’m about to tell you a big way that I cheat on our school morning routine. Think you can handle this truth I’m about to share?

I’m new at this “send your kids to school” thing. We homeschooled our kids for 17+ years. But now here I am, getting kids up and out the door for school every morning.

Early. After being up with a baby at night for feedings.

If you’d like, I can keep giving you more reasons to justify this lovely way I cheat in order to get my kids out the door to meet the bus on time. But none of us really needs reasons and excuses, right? Because getting kids ready for school on time IS A THING, am I right?

Or is it just me?

Are my kids the only ones who stare with dull eyes at the sink when I say, “Please hurry and get those teeth brushed!”

Blank. Stare. 

“Please hurry and go get your shoes on!”

Walks. Slowly. Tooooo. Theeeee. Shooooooooes.

What in the actual world?

Why do I even use the word hurry? WHY?

I try not to say the word “hurry” anymore when giving instructions to my kids because it seems so pointless. But shucks if I don’t find myself saying it every time anyway. I am holding onto a nugget of hope that maybe one day it will work? They’ll be like, “OH!!! I was going to freeze myself by this closet door and not get out the backpack I obviously get out every single morning. But Mom told me to hurry! So I’d better go fast!!”

Hurry is not a word that helps the children find speed. Mom sheds a tear.

Perhaps your kids get up early, dress themselves, eat a full breakfast, fix their hair, brush their teeth, gather their school belongings, and have so much time to spare that they read a book until it’s time to go. If so, please know how happy I am for you. The rest of us are over here just trying to help our kids remember that their shoes are right where they left them last night and that said shoes are to be put onto their actual feet.

School Morning Routine – One Way I CHEAT!

Yes, we put shoes and backpacks by the door each night. Yes, we eat a simple breakfast. Yes, coats and jackets and teacher notes and homework is all taken care of before we go to bed the night before. So what else is there?

This:

My children sleep in their school clothes.

Allow me to explain.

My school children are currently 5 and 7 years old. They are slow to get dressed, which makes me appreciate dealing with this need at night before bed instead of in the morning when the bus is almost here and the word HURRY isn’t helpful.

They don’t wear fancy clothes. My children and their clothes are always clean and fresh. Nothing is wrinkled in the morning when the kids roll out of bed because my 5 and 7-year-olds wear non-wrinkly clothes like joggers or leggings and pullover shirts.

At night while we brush teeth, potty, make sure shoes and backpacks are ready by the door – we also choose and put on our “tomorrow clothes.” This includes clean underwear, and the entire process also often includes a bath. So they are nice and clean, they put on clean underwear and clothes, then we finish our bedtime routine and head to bed. Wearing tomorrow’s clothes.

The Next Morning

I wake up the kids and would you look at that?? They are already dressed for the day!

This is a beautiful thing because instead of telling my kids to hurry and get dressed, I can say hurry and do all the other things because we aren’t spending a solid ten minutes staring at the tags in our shirts instead of putting them over our heads – for the love of my sanity.

This is because he doesn’t have to leave tomorrow morning.
Brayden though. See how he’s wearing tomorrow’s shirt?
Though I just noticed that it’s on backward. Here’s hoping we fixed that.

Do you think I’m a weirdo? I mean, well, yeah. But I mean about this new weird thing I just told you about.

I used to do this with my older boys on Sunday mornings when they were little. They’d bathe on Saturday nights, put on their church clothes, go to bed, then roll out on Sunday mornings with a polo and khakis already on their cute little bodies.

I’m telling you, it’s an amazing time and stress saver if you have little ones to get out the door for school or for anything you need to get out the door for in the mornings.

The Easiest Way to Make Steak Gravy

Have some leftover steak? Here’s the easiest way to make steak gravy!

Did you see my recent post about making biscuits with one hand? It’s by far the easiest way to make biscuits! Very little mess!

That day, while I was only interested in the biscuits so that I could slather on the butter, I knew that Matt and our big boys would be looking around for some gravy to put on them. (Seems that I should write a book called “If You Give a Boy a Biscuit”…)

I remembered that I had some leftover grilled steak that we needed to use up. And so, I used it to make Steak Gravy.

No one complained. No, not one.

The Easiest Way to Make Steak GravyYum

The Easiest Way to Make Steak Gravy
 
Save Print

Serves: 2-3 servings
Ingredients
  • 2 leftover cooked steaks
  • ¼ cup butter
  • 3-4 Tablespoons cornstarch or flour
  • 2 cups of milk (more if your gravy seems too thick)
Instructions
  1. Cut leftover steak into small bites. (I use kitchen shears to make this easier!)
  2. Put the bites into a skillet.
  3. Add butter.
  4. Melt the butter while heating the steak.
  5. Sprinkle in cornstarch or flour to make a paste.
  6. Add milk.
  7. Cook and stir over medium to high heat until mixture is thick and bubbly.
  8. Salt and pepper per your preference.
  9. Serve over biscuits

If your gravy fails to thicken, mix a “paste” of 2 Tablespoons flour with 3 Tablespoons of water. Stir the mixture into your gravy, little bits at a time until the gravy thickens to desired consistency. Do NOT sprinkle flour directly into the gravy. That’s how lumpy gravy is made. :)

TIP: I’ve been making smoothies almost daily this summer with lots of fresh greens in them like this. Matt and I love drinking our salad this way! But the kids? They don’t like them with as many greens as we grown-ups do. BUT! The kids will drink them with some greens. So I make a separate batch for the kids with more fruit, some yogurt, and a couple of small handfuls of fresh spinach. They drink them right up!

TIP: If I put the kids’ smoothies in cups like this, they aren’t turned off by the color created by blending in spinach. Mwuhaha. I have my ways. :)

TIP: However, my kids are onto me. So I don’t try to sneak the spinach into the blender. I have them wash their hands and help me put the leaves in themselves. That way they feel proud of the spinach in their smoothies. Mwuhahaha, again.

Instant Pot Bacon Chicken Pasta

Want to know what my husband said when eating Instant Pot Bacon Chicken Pasta for the first time?

“People pay big bucks for food like this at a restaurant!”

What went through my mind all at the same time when he said that is:

  • Aww, shucks.
  • But this didn’t cost big bucks to make.
  • Why eat out when we can make this at home in 30 minutes, start to finish? 
  • Instead of paying $15/plate, this cost less than $15 for all of us!
  • I pretty much threw this together last minute.
  • My husband likes me more than Olive Garden.

But out loud, I simply said…

Ok, I totally said almost all of that out loud in one sentence without taking a breath and with additional thoughts and twenty to forty more words.

What can I say? I’m home with a bunch of small children all day, which means that for around 10 hours every day my conversations consist of saying things like, “Come over here so I can change your diaper” and “Please don’t let Sissy put that in her mouth.” By the end of the day, I HAVE A LOT OF WORDS LEFT and I love it when they have more to do with grown-up subjects instead of choo-choo trains and wet wipes.

Ultimately though, when Matt said, “People pay big bucks for food like this at a restaurant!” I knew I’d found a winner. It’s so, so true. This meal is restaurant quality for a sweet at-home price. It’s perfect for company and completely easy to make.

And now, it’s time to get out the simple ingredients that you likely already have on hand and make this awesome “restaurant food.”

Instant Pot Bacon Chicken PastaYum

Instant Pot Bacon Chicken Pasta

Serves: 6-8
Ingredients
  • 2 Tablespoons olive oil
  • 1 pound boneless skinless chicken thighs or breasts
  • 3 Tablespoons homemade dry Ranch Dressing mix
  • 16-ounces pasta, any shape, uncooked
  • 4 cups (32-ounces) chicken broth
  • 1 cup shredded cheese (Colby jack is our favorite)
  • 8 ounces softened cream cheese
  • 3-4 handfuls of baby fresh spinach
  • 8 slices cooked bacon, made into bacon bits
Instructions
  1. Use kitchen shears to cut chicken directly into your Instant Pot.
  2. Saute chicken in olive oil for a few minutes until chicken is no longer pink.
  3. Add ranch dressing, pasta, and chicken broth. Do not stir.
  4. Put lid on Instant pot and seal.
  5. Cook on Manual, High Pressure for four minutes.
  6. Quick release the pressure (I usually hold a towel a few inches above the valve to keep steam from spraying all over my kitchen.)
  7. Open the lid and add cream cheese, shredded cheese, spinach leaves, and bacon bits.
  8. Stir until creamy.
  9. Serve!
