Low Sugar Chocolate Cookie Cutouts

Look at these fun and festive Low Sugar Chocolate Cookie Cutouts! What a fun way to make a Christmas treat you can feel good about eating!

These cookies are delightfully good with a cup of coffee or tea. And if you want the non-chocolate version (what is wrong with you, ha?!), you’ll find that here. It’s fun to make a batch of both so you can display them in a pretty way on a tray!

Low Sugar Chocolate Cookie Cutouts

Low Sugar Chocolate Cookie Cutouts

Serves: 20-30
Ingredients
  • 1 cup melted butter
  • ½ cup sucanat or raw sugar
  • ⅓ cup unsweetened cocoa powder
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 3½ cups of whole wheat flour (give or take)
Instructions
  1. Stir together melted butter, sugar, and cocoa.
  2. Add eggs, vanilla, and baking powder.
  3. Stir in flour until a solid ball of dough forms.
  4. Cover the bowl and place it in the refrigerator to chill for about an hour.
  5. Roll chilled dough on a well-floured surface and thin or thick as you like.
  6. Cut with cookie cutters and place them about a half inch apart on a baking sheet.
  7. Bake in a 350° oven for about 12 minutes or until cookies are lightly browned.
  8. Makes 20-30 cookies depending on the thickness and size.

Want to frost your Low Sugar Chocolate Cookie Cutouts? Here are some fun (and low sugar) options:

Stevia Sweetened Cream Cheese Frosting

8 ounces softened cream cheese
1 cup heavy whipping cream
1/2 teaspoon vanilla extract
Liquid stevia to taste (I use 2 droppers full)

Whip ingredients together until smooth. Frost cookies just before serving.

Low Sugar Chocolate Frosting

1/2 cup butter
4 Tablespoons cocoa powder
2 Tablespoons milk
2-4 Tablespoons honey (sweeten this to your taste)
1 teaspoon vanilla extract

In a small saucepan combine butter, cocoa, milk, and honey. Cook and stir over low heat until ingredients are well combined and mixture begins to thicken slightly. Removed from heat. Stir in vanilla. Spread over cooled cookies.

Christmas time is the time we tend to “need” a few dessert recipes to choose from. Today, I’ll hand you 97 real food dessert recipes for the holidays!

This ol’ blog has been around for quite some time. Eleven years to be exact.

When I began writing and sharing recipes back in 2007, I was fairly new to the “real food” scene. I had in mind that if I substituted white flour for whole wheat, and white sugar for sucanat, I was healthifying a recipe. Oops.

You can’t help what you don’t know, and you can’t do better until you know better. And shucks, I still don’t know what I don’t know, so I’m sure to come back in the 2020’s to share how much I’ve learned since 2018!

But I thought it was worth a mention, and before I send you looking through all 97 of these recipes, you should know this: The earlier the post, the more sugar-loaded the recipe will be! Yowza. I’ve edited many of these through the years to cut out some of the high sugar content. But I haven’t caught them all. Anyway, you’ve been warned. Merry Christmas. ;)

Healthy Peppermint Patties

Ingredients
  • 1 cup coconut oil, divided
  • 20 drops liquid stevia
  • ¼ teaspoon peppermint extract
  • 2 heaping Tablespoons cocoa powder
  • 3 teaspoons honey (give or take)
  • 3 Tablespoons butter
Instructions
  1. In a small saucepan, melt ½ cup coconut oil.
  2. Remove from heat and add stevia and peppermint extract.
  3. Pour mixture into 12 muffin cups.
  4. Place in the freezer for about 20 minutes or until this peppermint layer has hardened.
  5. Meanwhile, melt remaining ½ cup coconut oil in the saucepan with cocoa powder, butter, and honey.
  6. Allow the mixture to cool while waiting for the peppermint layer to freeze.
  7. Pour the chocolate mixture over the peppermint layer and freeze for 20 or more minutes until the patties have hardened.
  8. Store Peppermint Patties in the refrigerator.

Don’t let the word “healthy” in this title scare you into thinking that these won’t taste like a treat. And don’t let the stevia in this recipe scare you away either. In my experience, the honey in the chocolate layer overrides anything bitter from the stevia.

Peanut Butter Cup Whipped Cream

Peanut Butter Cup Whipped Cream? Please pass me a spoon. Maybe two spoons: one for each hand.

If you have a high power blender like a Blendtec, you can make this jewel of a treat in about 30 seconds. Otherwise, you can use a hand mixer to blend ingredients and whip the mixture in about 5 minutes. Either way, your life just got better in a very short amount of time!

The possibilities of ways to serve this Peanut Butter Cup Whipped Cream are practically endless. If all else fails, you must truly eat this all by itself, in a bowl, with a spoon. No need to defend this choice. You simply can’t help yourself.

Simple Santa Brownies (Grain Free or Regular!)

I found this idea for Simple Santa Brownies and decided that surely I could make a healthier version of them. I was not wrong. I was very right. And come to find out, Santa is very, very delicious.

Now obviously, you can take this idea and go with it no matter if you’re using a boxed brownie mix or a healthier brownie recipe. But I loved the idea of using my Super Moist Flourless Brownie Muffin recipe for this! It turned out fabulously.

Finding good strawberries this time of year is a little bit tricky, I realize. But for the sake of creating these awesome treats, I think it’s worth your purchase.

It’s probably also worth noting that if I can make these, anyone can make these. I’m no decorator. I rarely try to make cute food because I know I’m not good at it. But whipped cream and strawberries win the prize on these. Who knew real food could be used to decorate a fun Christmas treat!

Flourless Brownie Muffins for Simple Santa Brownies

Simple Santa Brownies (Grain Free or Regular!)

Ingredients
  • 1½ cups (12-ounces) Peanut Butter or Almond Butter
  • ½ cup honey
  • ½ cup unsweetened cocoa powder
  • 2 eggs
  • ½ teaspoon baking soda
  • For Santas:
  • 9 strawberries, washed and with greens removed
  • 1½ cups heavy whipping cream
  • 5 drops liquid stevia or 1 Tablespoon sugar
Instructions
  1. Stir all ingredients together until well combined.
  2. Scoop batter into 9 paper-lined muffins cups.
  3. Bake in a 350 degree oven for 12-15 minutes. (Remove them from the oven when they are just slightly underdone so they come out moist!)
  4. Whip cream and stevia or sugar until stiff peaks form.
  5. Once brownie muffins have cooled, top them with whipped cream and a strawberry.
  6. Top the strawberry with a "snowball" of whipped cream.

16 Delicious Flourless Treats

I am a wheat eater and a gluten consumer. I use freshly ground flour several times each week. Even so, I love making Flourless Treats for a change of pace. After all, we all get plenty of grains in our diet. Making treats that are flourless is a great choice for all of us!

The beauty of this list of Flourless Treat recipes I’m sharing is that every single one of them tastes like something special. These recipes don’t include weird ingredients that make them seem “healthy.” Not that any of us are opposed to eating healthy, of course. It’s just that some healthy treat recipes are strange and awkward and leave the consumer wanting an actual cookie that isn’t made with banana paste and finely ground chicken feathers. Or some such.

So please, my friends. Enjoy the following delectable recipes that no one will suspect to be “out of the norm.” All will eat these and be delighted. They will share them with their friends, saying, “Hey, you’ve got to try this cake!” Meanwhile, over in the corner, you will be chuckling over the fact that once again, you pulled off the “I made treats without flour in them and nobody suspected” trick.

Pumpkin Cheesecake Pie

Why yes I did take this Easy Pumpkin Cheesecake Bars recipe and turn it into a Pumpkin Cheesecake Pie. With Thanksgiving right around the corner, I thought we might need something extra special!

This recipe is just as easy as making the bars, and I hate to state the obvious, but here goes. Instead of baking this recipe into bars, bake it instead in a pie dish and it will suddenly turn into a pie. I know. It’s like we’re all geniuses.

But wait. There’s more.

There are chocolate chips involved in the making of this Pumpkin Cheesecake Pie.

Pour in the pumpkin layer. Spread on the cheesecake layer. Sprinkle generously with mini chocolate chips. Suddenly this Thanksgiving we find ourselves with even more to be thankful for.

Pumpkin Cheesecake Pie

Pumpkin Cheesecake Pie

Ingredients
  • 1 cup whole grain flour
  • ¼ cup brown sugar or sucanat
  • ¼ teaspoon baking powder
  • ¼ teaspoon sea salt
  • 1 teaspoon pumpkin pie spice*
  • 1 egg
  • 1 cup pumpkin puree
  • 2 Tablespoons melted coconut oil
  • Cream Cheese Marble Filling:
  • 8-ounces softened cream cheese
  • 1 egg
  • 2 Tablespoons real maple syrup
  • ½ teaspoon vanilla extract
  • ¼ cup mini chocolate chips
Instructions
  1. In a large mixing bowl, stir together flour, sucanat, salt, baking powder, and pumpkin pie spice.
  2. Mix in egg, pumpkin puree, and oil until well combined.
  3. Pour batter into a 9 inch pie plate. Set aside.
  4. Blend Cream Cheese Filling ingredients in a blender or with a hand mixer until smooth.
  5. Drizzle mixture over the unbaked pumpkin cake.
  6. Use a butter knife to swirl the filling throughout the cake batter.
  7. Sprinkle with chocolate chips.
  8. Bake in a 350° oven for 20-25 minutes or until a toothpick inserted in the middle comes out clean.

You might notice that the ingredients listed for this Pumpkin Cheesecake Pie recipe are exactly half of the ingredients listed in the Easy Pumpkin Cheesecake Bars recipe. Ready for me to state the obvious again?

If you want to make two pies, simply double the ingredients listed above. Or follow the recipe on this page as directed, except bake it in 2 pie pans. And don’t forget the chocolate chips. Never forget the chocolate chips.

Don’t you love that the holidays give us an excuse to eat pie? And chocolate? Truly, so much to be thankful for. ;)

Easy Pumpkin Cheesecake Bars

There’s a layer of Pumpkin Cake and a layer of Cheesecake in this treat. Together they make awesome Pumpkin Cheesecake Bars, the likes of which take hardly any effort to make!

This recipe is the result of me taking a moment to play with my Pumpkin Cheesecake Muffin recipe. Indeed, you can often find me playing with recipes at my house. Why play with toys when there are recipes lying around, am I right? Toy box. Recipe box. It’s all the same to me.

The beauty of playing with recipes is that one can easily turn one treat into a new treat, simply by tweaking a few ingredients and measurements. That is how the muffins turned into these Easy Pumpkin Cheesecake Bars.

As many of my recipes are, this one is delicious enough for dessert and healthy enough for breakfast. :)

Easy Pumpkin Cheesecake Bars

  4. Blend Cream Cheese Filling ingredients in a blender or with a hand mixer until smooth.
  5. Drizzle mixture over the unbaked pumpkin cake.
  6. Use a butter knife to spread the filling over the cake batter.
  7. Bake in a 350° oven for 20-25 minutes or until a toothpick inserted in the middle comes out clean.

Easy Chocolate Chip Cookie Pie

This Easy Chocolate Chip Cookie Pie is basically one giant cookie baked in a pie pan. So say my children who would love to eat the entire thing saying, “What? I only ate one cookie…”

What is it about using a normal recipe but baking it in a new way that suddenly makes it taste better? This is the Chocolate Chip Cookie recipe I’ve been using since I was a 3rd grader (with the exception that I now use real butter and freshly ground whole wheat flour). I have always baked them as regular cookies or in a pan to make bar cookies.

But recently I decided to half the recipe, press the dough into a pie pan, and bake it as a thick cookie pie. The household was excited. My 16-year old drove to the store to buy ice cream to top it. (Hmm, I wonder if he would have run so eagerly to the store to buy mixed greens or broccoli had that been my request? Ha!)

This Chocolate Chip Cookie Pie, fresh out of the oven and topped with vanilla ice cream is a huge hit and a fun variation to boring ol’ cookies. As if there’s anything boring about homemade cookies.

Ingredients
  • ½ cup melted or softened butter (1 stick)
  • ½ cup brown sugar or sucanat
  • ½ teaspoon baking soda
  • ¼ teaspoon sea salt
  • ¼ teaspoon vanilla extract
  • 1 egg
  • 1¼ cups whole grain flour (more or less to create desired dough consistency; I use freshly ground soft white wheat)
  • 1 cup chocolate chips
Instructions
  1. Cream together butter and sugar.
  2. Add baking soda, salt, vanilla, and eggs and mix well.
  3. Stir in flour until well combined.
  4. Fold in chocolate chips.
  5. Spread mixture into a 9 inch pie plate.
  6. Bake in a 350 degree oven for 20-25 minutes or until golden brown.

I would imagine this Cookie Pie idea would work great with just about any cookie recipe. Hmmm, challenge accepted.

Easy Chocolate Cream Cheese Marble Cake (Low Sugar, Whole Grain)

Not too sweet, but still sweet enough: That’s what my taste-tester husband had to say when he first dug into this Easy Chocolate Cream Cheese Marble Cake.

Oh, and did I mention that he dug into said cake before I’d had a chance to take a picture of it for you? The nerve! ;) Here I’ve been blogging for almost 11 years and everyone in the house knows to say, “Can I eat this or do you need a picture first?” Somehow, the cake looked too good. It was much too tempting. That and the poor dear was too tired and hungry to consider my picture-taking needs.

So there he was, spooning bites into his mouth while my jaw dropped to the floor and I mumbled something like, “oooohhh, I was going to take a picture of that…” Oops {sheepish grin through a mouthful of cake}.

Seeing as the world didn’t end – not even a little bit – I told him he might as well grab himself a second piece. Which he happily did. And then he gave the cake a glowing review, which I told him I would share with all of you….AFTER I threw him under the bus for ruining my picture. Ha.

So Matt’s praise of the Easy Chocolate Cream Cheese Marble Cake is this: “I love that it tastes so good, but that it isn’t super sweet! The cheesecake fits in perfectly with the chocolate cake and you should definitely make this again. Also Laura, you are so beautiful and practically perfect in every way.” (There’s a small chance I don’t remember his exact quote so I embellished as I saw fit. It is my blog after all, and Matt ate my cake before I had a chance to take a picture.)

Trust me when I say that this cake, in its whole form is super pretty with its cheesecake marbling through the chocolate. I agree with Matt that it is the perfect level of not-too-sweet-but-just-sweet-enough. And it’s cheesecake and chocolate together, so basically that is perfection in a pan.

Easy Chocolate Cream Cheese Marble Cake (Low Sugar, Whole Grain)

Ingredients
  • 1 cup melted coconut oil
  • 1 cup water
  • 4 Tablespoons unsweetened cocoa powder
  • 2 cups whole wheat pastry flour
  • ½ cup sucanat or brown sugar
  • dash of sea salt
  • 1 teaspoon baking soda
  • ½ cup sour cream
  • 2 eggs
  • Cream Cheese Marble Filling:
  • 16-ounces softened cream cheese
  • 2 eggs
  • 3 Tablespoons real maple syrup
  • 1 teaspoon vanilla extract
Instructions
  1. In a large mixing bowl, stir together flour, sucanat, salt, and baking soda.
  2. Set aside. In a saucepan, bring oil, water, and cocoa to a boil.
  3. Pour liquid mixture into the bowl with the dry ingredient mixture.
  4. Stir well.
  5. Add sour cream and eggs, mixing well.
  6. Pour batter into a 9x13 inch baking pan.
  7. Blend Cream Cheese Filling ingredients in a blender or with a hand mixer until smooth.
  8. Drizzle mixture over the unbaked chocolate cake.
  9. Use a butter knife to swirl the filling throughout the cake batter.
  10. Bake in a 350° oven for 20-25 minutes or until a toothpick inserted in the middle comes out clean.

For the record, I took my Low Sugar Super Moist Chocolate Cake recipe and mixed it with my Mini Crustless Cheesecake recipe to make this Easy Chocolate Cream Cheese Marble Cake.
