Simple Creamy Chicken Soup for Crock Pot or Instant Pot

This Simple Creamy Chicken Soup is the definition of comfort food.

Hmmmm. Actually, the definition of comfort food (I just looked it up) is: food that provides consolation or a feeling of well-being, typically any with a high sugar or other carbohydrate content and associated with childhood or home cooking.

I believe I have just re-defined comfort food. No longer must it be associated with a high sugar or carb content. Certainly not in the case of this Creamy Chicken Soup. We can associate it with home cooking (because we will be at home, cooking it) and it is likely that your children will someday associate it with their childhood.

But there is no pasta or potato involved in the making of this soup to make it high in carbs. Add some if you like. I’m personally in it for the chicken and the cheese. I find it delightfully comforting.

Simple Creamy Chicken Soup

Simple Creamy Chicken Soup for Crock Pot or Instant Pot

Serves: 4-6
Ingredients
  • 1-2 pounds boneless chicken thighs or breasts
  • 10-ounce can Rotel
  • 32-ounces (4 cups) chicken broth
  • 1 teaspoon sea salt
  • 1 teaspoon paprika
  • 8-ounces softened cream cheese
  • 1 cup heavy whipping cream
  • 2 cups shredded Colby jack or cheddar cheese
Instructions
  1. Place chicken, Rotel, broth, salt, and paprika into an Instant Pot or Crock Pot
  2. For Instant Pot: Seal and cook on manual at high pressure for 15 minutes. Quick release.
  3. For Crock Pot: Cook ingredients on low for 6-8 hours or until chicken is no longer pink.
  4. Remove chicken from Crock Pot or Instant Pot. Shred it and put it back into the pot.
  5. Stir in cream cheese, cream, and shredded cheese until smooth.
  6. Serve with frozen corn sprinkled in if desired

I added a carb by sprinkling frozen corn into our soup to cool it and sweeten it. So I guess this meets the definition of comfort food after all!

Just when you thought my Waffle Iron kick had ended, you find that I am revisiting my obsession. Friends, today I present to you Simple Cornbread Waffles with Chili.

Aren’t they cute?

Simply scoop cornbread batter into your waffle iron, press and cook, then serve with your favorite chili and toppings. The cornbread waffle turns out crisp and tasty. The chili on top is warm and hearty. And we’ve got ourselves yet another Simple Meal on a Simple Budget!

Simple Cornbread Waffles with Chili

Today, I don’t have new recipes to share. Instead, I will point you to favorite Cornbread and Chili recipes already posted here at Heavenly Homemakers.

  • You can keep your costs for this Simple Meal to a minimum when you make this Lentil Chili.
  • This Hearty Chili is meatless, but feel free to cook hamburger or ground turkey to add more protein.
  • My new favorite way to make Cornbread is to stir together a set of these Homemade Jiffy Cornbread Mixes to keep on hand.
  • If I’m out of my Homemade Cornbread Mix, I stir together this tried and true Cornbread Recipe. So good!

Great Waffle Iron Hacks

It’s super fun to see all you can make in a waffle iron! I have a very simple Belgian Waffle Iron that is inexpensive and practical. I highly recommend buttering your waffle iron well before cooking Cornbread Waffles. This will keep them from sticking!

Simple Oven Fried Chicken

Oh look. It’s another post about chicken. It’s like we just can’t get enough.

My men-filled family loves fried chicken. Who doesn’t?

I used to stand at my electric skillet every couple of weeks frying a bunch of chicken legs, and I’d make a pot of mashed potatoes, use the chicken drippings to make gravy…oh I’d go all out. I did it because my family loved it and I love them.

It’s not that my family doesn’t still love fried chicken and it most certainly isn’t that I don’t still love my family. But at this point in my life, spending over an hour cooking one messy meal just isn’t something I can do. We’ve missed the fried chicken, for sure. But we all like it when Mama can use her nice words, so in a joint effort to keep me sane, no one has complained too much.

I finally decided to experiment with Oven Fried Chicken, though I didn’t see how it could possibly be as good as “actual” fried chicken. My family all agrees that it’s not...quite as good as actual fried chicken. But when the alternative is NO fried chicken, all six of us rally behind this and appreciate its simplicity and goodness.

Simple Oven Fried Chicken

Simple Oven Fried Chicken

Ingredients
  • 8-10 bone-in chicken pieces
  • 1 cup flour (any grain you like)
  • 1 teaspoon garlic powder
  • ½ teaspoon sea salt
  • ½ teaspoon parsley flakes
  • ½ teaspoon paprika
  • ½ cup butter (1 stick)
Instructions
  1. Place butter in a 9x13 inch baking dish.
  2. Put dish in oven as it preheats to 400 degrees. The butter will melt as the oven preheats.
  3. In the meantime, mix flour, garlic powder, salt, parsley, and paprika in a gallon-sized ziplock bag. Shake to mix.
  4. Put chicken pieces into the bag, seal, and shake until the chicken is well coated.
  5. Place prepared chicken in the dish of melted butter, giving each piece plenty of space for more even cooking.
  6. Bake, uncovered, for 50 minutes, turning chicken after the first 25 minutes of bake time.

You might be wondering, as you look at the pictures above, “WHERE are the mashed potatoes??!” Where, indeed. But we went through all this a few days ago when I admitted that I’d broken up with mashed potatoes after years of happiness. We’ve agreed to remain friends, but for now, when I make this Simple Oven Fried Chicken, I stick with simple sides that take no effort. (I mean, if I don’t have time to make fried chicken, I surely don’t have time to make mashed potatoes.)

I guess it could be said that now that I’ve discovered this Oven Fried Chicken recipe, I’ve also broken up with “real” Fried Chicken. (Don’t worry Fat Bombs. I’ll love you forever. XOXO.) But at least this Oven Fried Chicken is the next best thing so we can keep our kitchen life simple and eat our chicken too.

Hamburger Pot Pie Recipe – Nourishing Comfort Food

Oh comfort food. You are so…comforting.

If you love Chicken Pot Pie, you will love this Hamburger Pot Pie. I actually think I like this one even better. (No surprise there. I’m a beef-loving girl.) Pin this recipe so you can use it to keep yourself warm all winter long.

For the record, if you need to eat gluten free – or if you’re like me and you’re more into meat and veggies than bread – you can skip the topping on this and just eat it in a bowl like Hamburger Soup.

Serves: 8-10
Ingredients
  • 1 pound hamburger meat
  • 1 small chopped onion
  • 6 cups beef broth
  • 4 large carrots, peeled and cut into bite sized pieces
  • 6 medium potatoes, peeled and cut into bite sized pieces
  • 2 cups frozen peas
  • Sea salt and pepper to taste
  • ⅓ cup cold water
  • 2 Tablespoons organic corn starch, arrowroot powder, or wheat flour
  • 1 cup milk
  • 1 cup mayonnaise (I use Hain Safflower Mayonnaise)
  • 1 cup whole wheat flour (I use freshly ground flour from hard white wheat)
Instructions
  1. In a large cooking pot, brown hamburger and onion together.
  2. Stir in broth and prepared veggies.
  3. Cook until veggies are tender.
  4. Mix cornstarch with water until smooth. Stir mixture into the broth/veggies, cooking for about one minute on the stove to help the mixture thicken.
  5. Pour contents into a 9×13 inch baking dish.
  6. In a separate bowl, stir together milk, mayo, and flour.
  7. Spread mixture over the veggies in the baking dish.
  8. Bake in a 350° oven for about 45 minutes or until the crust is golden brown.
