Why Are There So Many People Now Who Can’t Tolerate Wheat?

February 20, 2015 by Laura 47 Comments

After reading my Do We Need to Be Eating So Much Bread post, a friend of mine sent me a link to this article called The Real Reason Wheat is Toxic. I found it to be a great read, especially because this is a question I’ve asked many times the past few years as more and more people are having to cut wheat out of their diets. Why?  Why is wheat, which has been consumed forever, suddenly giving so many people digestive trouble?

Read this and come back here to share your thoughts.

Wheat

If you can eat wheat and reading that article made you want to avoid conventionally grown grain forever and always, here are links to my favorite sources for chemical-free grain:

  • Azure Standard (If you have access to this co-op, you will love the savings and quality products.)
  • Amazon – I was glad to find this 37 pound box of chemical free hard white wheat (my fav).
  • If you live in a city, check stores specialty stores like Whole Foods or Natural Grocers.
  • If you live in a rural community, check with farmers around you to see if they grow chemical free wheat for you to purchase.

Grinding chemical-free wheat is easier than you think and incredibly tasty! Ever since we got a Nutrimill and began grinding our own wheat (and corn) – our whole grain breads and other baked goods are more delicious than ever. Here are all my posts on wheat and grain mills for your reading pleasure. :)

I also wanted to be sure you saw that it’s a free shipping weekend at Tropical Traditions! Use the code 15223 at check-out. You might check out their Einkorn Grain as it is fantastic quality. Also worth noting is their Natural Soaps and their Coconut Creams are buy-one-get-one-free, which is great since you can also get free shipping. (These links are my referral links.)

Honey Peanut Bars ~ Like a Healthy Payday Candy Bar

Ladies and um, other Ladies (although surely there is a gentleman or three around here too):  We have a winner! Honey Peanut Bars it is!

Thanks to all who put in their vote as to which of the new healthy snack recipes from our upcoming eBook we should reveal early. It was a pretty close call on several. I put Malachi to work making tally marks as votes came in (a great school project for him). He had a lot of fun with it…

counting votes

Here’s how my afternoon sounded:

“Pizza Muffins are in the lead. They’re going to win for sure!”
“Mom! Peanut Bars have a ton of votes. They caught up to Pizza Muffins.”
“I think Oyster Crackers are going to pull ahead!”
“It’s back to the Peanut Bars. Why is everyone choosing that one?”

Yeah, Malachi doesn’t like peanuts. ;)

When it was all said and done, the Honey Peanut Bars won by several votes. Not to worry though. Our 227 Healthy Snacks eBook is almost finished. Then you’ll have access to all the recipes forever! (Our goal is to have the book ready for you by Sunday night.)

I mixed up a batch of these Honey Peanut Bars tonight again, just because they sounded good. Our older boys will probably finish them all off once they get home from basketball practice. What a perfect post-workout/bedtime snack for them. (With apples and cheese and whatever else they get out because…do I really need to explain?)

You should be excited to know that it only took about five minutes for me to mix these up tonight. Their simplicity is of the many reasons I love them. :)

Hot Chocolate Souffle ~ A Recipe That Just So Happens To Naturally Be Grain Free and Dairy Free

October 2, 2014 by Laura 9 Comments

hot chocolate souffle 2

Elias, our 12 year old, is my cookbook buddy. Just like me, he enjoys looking through new recipes, getting food ideas, looking at the food pictures. He’s my right hand man when it comes to finding new recipe ideas to play with.

During our past few trips to the library, Elias and I have picked up different cookbooks to look through and get ideas from. This Hot Chocolate Soufflé is one he found recently. He liked the look of the dessert and figured we could adapt it with our healthier ingredients pretty easily. Obviously, he cares so much about using healthier ingredients, just like all normal 12 year old boys. Ha. Haha. Ha. Ha.  Well, at least he knows his mom cares, and he sort of understands why. Really, all he was concerned about was that this recipe looked like a yummy chocolate dessert. What else matters, right?

Here’s what’s fun about this Hot Chocolate Soufflé recipe:

  • It’s very easy to make
  • It only has 4 ingredients
  • It can be made for those who need to avoid gluten and/or dairy

Hot Chocolate SouffléYum

1/2 cup dark chocolate chips
1/3 cup sucanat powdered sugar
5 eggs, separated
pinch of sea salt

Separate eggs – whites and yolks – into two separate bowls. Stir sucanat powdered sugar into the egg yolks until smooth. In a small saucepan, melt the chocolate, stirring constantly and removing from heat immediately after chocolate has melted. Stir melted chocolate into egg yolks and sucanat mixture. Beat egg whites and sea salt until stiff peaks form. Fold chocolate mixture into the egg whites until barely mixed. Pour mixture into a 8×8 inch baking pan. Bake in a 400° oven for about 15 minutes or until done through and through.

Grain Free, Dairy Free Hot Chocolate Souffle

These would be great for your Make-Ahead Lunch Box. Also, I looked into where you can purchase allergy free dark chocolate chips. Here’s what I found:

Do you like looking through cookbooks and recipes? (Hope so – this site is full of ’em!)

Are Paleo, Gluten Free, Grain Free Diets a Fad? Healthy or Not Healthy? My Thoughts…

September 11, 2014 by Laura 31 Comments

This post may contain affiliate links. For more information, please see our disclosure policy.

I decided it would make perfect sense for me to post about My Favorite Whole Wheat Recipes, and then follow it up the next day with a post about avoiding wheat and/or grains altogether. I like keeping you on your toes.

Coconut_Flour_Muffin

Seeing as the Ultimate Healthy Living Bundle includes an entire section on Special Diets, I thought this might be a good time to address my thoughts on eating a gluten free, grain free, or paleo diet. Let’s chat, shall we?

A few weeks ago, I got this email from Deb:

I am just wondering what you think about all the gluten free, etc. rage? Some of my friends truly have celiac, but most just seem to be trying this as more of a fad, way to lose weight, etc. Don’t you think that the reason that they feel better is because they give up processed junk and sugar, not so much because of the actual gluten?

We just had a missionary stay with us from Australia, she is originally from Taiwan and has lived in Kenya as well. She says that Americans are the only ones who take supplements and vitamins and have all these food allergies. She thinks it is ridiculous to eat at McDonalds, then buy vitamins. She stayed with us 2 weeks and it was very interesting, even if she was out and about, she would NOT get fast food, she would go to the grocery and buy fresh meat and vegetables and come home and cook it, even though it costs more and was more time consuming. Also, a lot of my friends that are on these EXTREME diets cheat half the time anyway, so what is the point?

Ah yes. I too have watched people go from eating a basic diet of donuts, chips, fast food, and skittles – to eating a low fat or low-carb diet. They lose weight, feel better, and swear that the key is to cut out carbs, grains, gluten, eggs, beef, or butter.

Hey, hey, hey. Them’s fightin’ words to this girl. Nobody better be blaming my butter or beef on their poor health! Especially when we’re talking about the kind that comes from cows who are raised in a healthy environment. But enough about my beloved bovines. What is the healthiest way for all of us to eat?

annesfarm21

I hate to disappoint you, but I do not believe that there is a one-size-fits-all diet.  I believe real food, in balance, based on what your body can tolerate and thrive on is the right diet for you. Learn to listen to your body, and nourish it.

I love my beef, and in fact, I believe I personally need quite a bit of (grass fed, if possible) red meat in my diet in order to maintain a healthy level of iron in my body. You might not need much or any beef. You may not need much of any variety of meat. Okay by me – that means more cow for this girl. Learn to listen to your body, and nourish it.

While some can’t tolerate grains or gluten, I can. I can’t eat them in large amounts, and in fact, I believe most of us should cut back on the grains just to make more room in our diet for fruits and vegetables.  Learn to listen to your body, and nourish it.

Here are my Paleo, Gluten Free, and Grain Free thoughts in a nutshell:

  • When you give up processed foods and instead eat more wholesome, nourishing foods, you will feel better and look better. This has very little to do with the fact that the food might be gluten free, paleo, or grain free.
  • If you truly are allergic to a certain food or if a food makes you sick, by all means, you should not eat it.  You might want to check into NAET though. It is possible to re-program our bodies so that they no longer reject certain foods as allergens. My boys and I have experienced this, and it works. Where we used to have food allergies, we no longer do, praise God!
  • A Gluten Free label does not automatically make a food healthy.
  • Cutting down on grains is beneficial, especially if the majority of what you eat is grainy. Our bodies need a better balance, and grains can be difficult to digest. Bready foods should not be our main nourishment focus.
  • If we’re cutting down our grains, we should not replace them with loads of almond flour and coconut flour. I believe these flours are fantastic additions to our diets, and wonderful to use in baking – especially if your body can not tolerate grains. But to eat them by the pound every day? Well, what happened to balance?

Paleo, Gluten Free, and Grain Free diets can be healthy and beneficial. But if you’re focused on cutting out foods for the wrong reasons, and not focused on overall body nourishment – you’re right back where you started.

Share with me what you have found is best for you and your family when it comes to eating gluten and grains. Do you eat them? What grains are your favorites?

Coconut Fudge Bars

Whether it’s because I’m getting older or getting healthier, my body no longer handles sugar well. This is a great problem to have, obviously. I’m really quite grateful, as I used to eat wayyyyyyyy too much sugar. But what is a chocolate lover to do when she has a chocolate craving? Suck on a bar of unsweetened chocolate? Mmmm, no.

Chocolate Whipped Cream on Strawberries to the rescue. Also, last week I played with my Chewy Granola Bars recipe. I used to make them with chocolate chips – but that obviously adds extra sugar. This time, I came up with a dark chocolate variety that is only lightly sweet, super coconuty, and oh so chocolaty rich.

Coconut Fudge Bars

These store best in the fridge, otherwise they are melty and will get chocolate all over your hands and face. If this is not a problem for you, by all means, store them on the countertop. If you want to pack these in a lunch, I recommend wrapping them individually, freezing them, and sending a spoon or fork along to make them less messy for the consumer. If having chocolate all over your child’s hands and face at school is not a problem for you, by all means, send them without a utensil.

These are super rich and only barely sweet. Feel free to add more honey if you prefer.

So tell me:  Are you a dark chocolate fan?

Quick and Easy Crepes

May 6, 2014 by Laura 22 Comments

Welcome to a typical crepe conversation with my children:

Boy: What’s for breakfast?
Mom: Crepes.
Boy:  Is that it?
Mom:  Isn’t that enough?
Boy:  I’m gonna still be hungry.
Mom:  What’s new?
Boy:  Can’t we have something else too? I just don’t get full on grapes.

Every time.  You’d think I’d recognize the difficulty by now in hearing the difference between the words grape and crepe, but they rhyme and confuse the children. Then they confuse the mother. And then the entire conversation is confusing.

Crepes.  They are very different than grapes. They are easy, filling, and very tasty. My recipe has three simple, whole food ingredients. Crepes make a great breakfast, lunch, snack, or light dinner. We love crepes! (And grapes. But as I said before, we’re talking about crepes, not grapes. Okedokee.)

Ingredients
  • 6 eggs
  • 3 Tablespoons heavy whipping cream
  • 100% fruit jelly
Instructions
  1. In a bowl, whisk together the eggs and cream until well combined.
  2. Pour about ¼ cup of mixture into a well greased, hot skillet.
  3. I find that medium/high heat works best.
  4. Cook the crepe until it begins to bubble and thicken, then flip it to cook the reverse side until lightly browned.
  5. Remove from heat.
  6. Spread a little jelly on one flat side of the crepe, roll it up, and serve.
  7. Repeat process until all crepes have been cooked.
  8. Makes about 10 small crepes.

I usually double or triple this recipe to fill my family. Yes, sometimes we actually go through 18 eggs in one sitting. And sometimes we also eat grapes. But not usually at the same time as crepes. Although I should totally do that sometime – just to throw everyone off. Hmmm….

What’s your favorite kind of crepe filling?

P.S. I shared a recipe for our favorite Cream Cheese Crepe Filling here!

Easy Cheesy Bean Dip

April 15, 2014 by Laura 16 Comments

This post may contain affiliate links. For more information, please see our disclosure policy.

Need an easy and filling lunch, dinner, or snack?

No Laura, what we actually need is a complicated recipe filled with weird ingredients that our family will hate.

Okay, fine. The question above was rhetorical. Did you know that sometimes I like to be sarcastic? (also rhetorical)

Well anyway, my family loves this recipe and I think yours will too. It’s great to throw together at lunchtime and serve with organic corn chips and fresh fruit. Or, you could smear this dip in a whole wheat tortilla and wrap it up to take on the go. You could take it to serve at a party. You could make it for a game night. You could make it for a simple evening meal. You could make it for breakfast. Really? Well, sure, if you really want to. Would the breakfast police actually show up and arrest you for serving bean dip with your morning coffee? Don’t answer that. It’s rhetorical.

Easy Cheesy Bean Dip

Easy Cheesy Bean DipYum

1 (8 ounce) package cream cheese, softened
1 cup sour cream
4 cups refried beans
3 Tablespoons taco seasoning mix
3 cups cheddar cheese, shredded

Mix cream cheese and sour cream in a large bowl. Stir in refried beans and taco seasoning. Spread mixture into a 9×13 inch baking pan. Sprinkle cheese over the top. Bake in a 350° oven for 25-30 minutes or until cheese is melted and bubbly.

Serve with organic corn chips and salsa if you like.

What are your favorite quick meals to serve?  (I’d like you to answer that question. That one is not rhetorical.)

Easy Breakfast Casseroles ~ This Week’s Freezer Cooking Challege Begins

April 13, 2014 by Laura 5 Comments

This post may contain affiliate links. For more information, please see our disclosure policy.

Today for the Freezer Cooking Challenge, we’ll be making Easy Breakfast Casserole (x2). This is, for sure, one of the easiest make-ahead-meals to put together.

I save dirty dishes by cracking eggs directly into my casserole dishes. Then I add remaining ingredients, whisk it up, and it’s done. Super simple! If you have kids old enough to crack eggs, delegate that job to them while making these casseroles.

I made two of these casseroles last week with the help of my 12 year old. Once my casseroles were put together (it took 15 minutes, tops) – I put the lids on, and put one in the fridge to bake the following morning. The other, I labeled and put into the freezer, unbaked.

egg casseroles for freezer

To bake my frozen Breakfast Casserole, I’ll simply put it into the fridge overnight, then bake as directed the next morning. I may need to add a little extra baking time if it hasn’t thawed entirely.

You will love how easy it is to make this casserole ahead of time! This kind of freezer cooking is my favorite. It’s practically effortless, and makes putting healthy food on the table for breakfast a piece of cake. (casserole. whatever.)

Go thou into the kitchen and begin cracking eggs. Breakfast has never been easier.

Check out how easy it is to make these great casseroles!

Flourless Fudge Cookies

August 15, 2013 by Laura 30 Comments

flourless_fudge_cookies_3

You can’t go wrong with a recipe that has the word “fudge” in its name. These cookies are very easy to make and live up to their name. Mmm, fudgy cookies. Yes please.

Flourless Fudge CookiesYum

2 1/4 cups sucanat powdered sugar
1/4 teaspoon sea salt
1 cup cocoa powder
2 eggs
1 teaspoon vanilla extract

Put 2 1/4 cups of sucanat into a blender. Process until sugar has become powdered. (Here is a post with picture tutorial showing you how easy this is!)  In a bowl, mix sucanat powdered sugar with the remaining ingredients. Scoop teaspoon sized balls of batter onto a parchment paper lined cookie sheet (very important). Bake in a 350° oven for 8-10 minutes.  Allow the cookies to cool completely while on the cookie sheet.

If you bake them on a baking stone or try to remove them before they are completely cooled, you’ll end up with this:

flourless_fudge_cookies_2

See below, how the cookies sit patiently and cool on their parchment paper so that they will come off the pan nicely?

flourless_fudge_cookies_1
Ah yes, that is the way to do it. These cookies are worth the wait!

flourless_fudge_cookies_4
Have you ever made your own powdered sugar with sucanat?  It’s very easy – and these cookies are a great way to experiment with that idea!
