Easy Whole Grain Chocolate Pancakes

This recipe is so easy I’m not sure why we haven’t been making this for years and years. Not to spoil the punch-line, but it is a fact that we can make Whole Grain Chocolate Pancakes simply by whisking some unsweetened cocoa powder into our pancake batter. Yup, it’s that easy!

I’ve always loved fresh berries and whipped cream on my pancakes, but on Chocolate Pancakes? Be still my heart.

Or on another day, I might spread homemade peanut butter over my chocolate pancake for a fabulous chocolate peanut butter combo. You know, for the added protein. Yes, that’s why I do it. ;)

The topping possibilities for these Easy Whole Grain Chocolate Pancakes are endless, and I love the fun and ease of turning regular pancakes into a chocolate surprise.

I always have a big container of Homemade Pancake Mix on hand, so making a batch of these pancakes is even easier! Here’s how I make these:

Easy Whole Grain Chocolate Pancakes

Serves: 4 servings
Ingredients
  • 1 cup whole grain flour (I use freshly ground hard white wheat)
  • ½ teaspoon baking powder
  • ½ teaspoon sea salt
  • OR 1 Cup Pancake Mix**
  • 3 Tablespoons unsweetened cocoa powder
  • 1 cup cultured buttermilk or regular milk
  • 1 egg
  • 3 Tablespoons melted butter (or oil)
Instructions
  1. Whisk together the ingredients until the batter is smooth.
  2. Cook pancakes on a well buttered, hot skillet or griddle, flipping once bubbles begin to form.
  3. Serve with real maple syrup, applesauce, jelly, fresh fruit, or any of your favorite pancake toppings.

Simple Whole Grain Lemon Muffins

With spring right around the corner, these Simple Whole Grain Lemon Muffins are practically perfect. It’s already spring, you say? I know. Technically it is. But it still feels a bit wintery where I live, with only the occasional hint of spring. We’re still inside baking to stay warm most days. :)

Our 5-year old Bonus Boy loves baking with me, and muffins are an easy favorite to put together. I keep a huge container of Homemade Muffin Mix on hand so that he and I can stir together any muffin variety we want. We recently experimented to make Lemon Muffins and the results are super tangy and fun!

Note how simple it is to make muffin variations! I simply subbed out some milk for lemon juice in my basic muffin recipe. Suddenly we went from Plain Muffins to Lemon Muffins, without any trouble at all!

Want to stir in some fresh lemon zest? Go for it! At this point in my life (adding a 5-year old to our home and caring for an infant), I tend to take every shortcut I can while still keeping our food as nourishing as possible. I use bottled 100% lemon juice in this recipe; therefore I have no lemon to zest. :)

Ingredients
  • 2 cups Muffin Mix** or...
  • 1½ cups whole grain flour
  • ⅓ cup brown sugar or sucanat
  • ½ teaspoon baking powder
  • ½ teaspoon sea salt
  • 1 egg
  • ¼ cup milk
  • ¼ cup lemon juice
  • ½ cup sour cream
  • ¼ cup melted coconut oil
Instructions
  1. Scoop Muffin Mix or measure dry ingredients together in a bowl.
  2. Add egg, sour cream, milk, lemon juice, and melted coconut oil, stirring until ingredients are combined.
  3. Scoop batter into 12-15 prepared muffin tins.
  4. Bake in a 400 degree oven for 18-22 minutes or until muffins are golden brown.

I love that these muffins are made with whole grain flour, but they are still wonderfully light and fluffy! This is because I use freshly ground soft white wheat (pastry flour). What a difference this makes! You can read more about whole grains and grain mills here.

Easy Chocolate Banana Bread

Two recipes ago, we shared something chocolate. One recipe ago, we shared about bananas. Today, we combine these two delights into a Chocolate Banana Bread!

There are a few secrets to making this Chocolate Banana Bread turn out fabulously. First, be sure to add sour cream or yogurt to the recipe. I’ve been doing this for years with my muffins, but for some reason, it took me a while to realize I should add this ingredient to my Banana Breads. One of my brilliant sisters-in-law reminded me of this need, which is a game changer for Banana Bread for all time! Add sour cream or yogurt = No more dry Banana Bread!

Next, I have learned that not all chocolate is created equal. Sure, you can use any ol’ unsweetened cocoa powder. But do yourself a favor and order any of the Unsweetened Cocoa Powders from Olive Nation. (And use the code home to get 20% off!) I can’t tell you what a wonderful difference these cocoa powders have made in my chocolate recipes. The quality is MUCH better, and they do not cost more than I was spending on the lesser varieties. Easy Chocolate Banana Bread

Ingredients
  • 1½ cups whole wheat flour (I use freshly ground soft white wheat)
  • ⅓ cup sugar, brown sugar, or sucanat
  • ⅓ cup cocoa powder
  • 1 teaspoon baking powder
  • ¼ teaspoon sea salt
  • 1 cup mashed over-ripe bananas (about 2-3 bananas)
  • ½ cup sour cream or plain yogurt
  • ⅓ cup melted coconut oil or butter
  • 2 eggs
Instructions
  1. In a large mixing bowl stir together flour, sugar, cocoa powder, baking powder, and salt.
  2. Add mashed bananas, oil, sour cream and eggs.
  3. Stir until ingredients are well combined.
  4. Pour mixture into a buttered bread pan.
  5. Bake in a 350 degree oven for one hour or until a toothpick inserted in the middle comes out clean.

Easy Low Sugar Peanut Butter Brownies

My first attempt at creating Low Sugar Peanut Butter Brownies actually turned out too sweet! This was shocking seeing as I had cut the sugar down tremendously from the original recipe I had found to give me the inspiration. I cut it down even more and voila. Peanut Butter Brownie perfection!

I love that cutting down sugar in recipes still turns out awesome treats. These are as simple as can be, perfectly moist (as long as you don’t overbake them), and made even more fabulous because of the peanut butter whipped frosting we spread over the top.

Make yourself a batch, pour yourself a glass of milk, sit back, and enjoy!

Easy Low Sugar Peanut Butter Brownies

Easy Low Sugar Peanut Butter Brownies

Serves: 12-15
Ingredients
  • ½ cup butter
  • 1 cup natural peanut butter*
  • ⅓ cup brown sugar or sucanat
  • ¼ teaspoon sea salt (leave this out if your peanut butter is already salted)
  • 2 eggs
  • 1 cup whole grain flour (I use freshly ground soft white wheat)
  • Frosting:
  • ¾ cup natural peanut butter
  • 1 cup heavy whipping cream
  • 10 drops liquid stevia
  • 2 teaspoons sugar or maple syrup
  • ½ teaspoon vanilla extract
Instructions
  1. In a small saucepan, heat butter and peanut butter until melted.
  2. Stir together melted butters and sugar in a mixing bowl.
  3. Add salt and eggs, mixing well.
  4. Fold in flour and stir until well combined.
  5. Spread batter into a 9x9 or 8x8 inch baking dish.
  6. Bake in a 350 degree oven for 20-25 minutes or until brownies are lightly browned.
  7. Allow brownies to cool completely before frosting.
  8. FROSTING:
  9. In a high power blender, or in a bowl with a hand mixer, whip frosting ingredients together until thick and smooth.
  10. Spread over Peanut Butter Brownies.
  11. Store in the refrigerator.

Easy Peanut Butter Chocolate Chip Cheesecake Muffins

Remember these Peanut Butter Chocolate Chip Muffins? It occurred to me that I had not yet turned that recipe into Peanut Butter Chocolate Chip Cheesecake Muffins. So I quickly remedied this over-sight and am so happy to present you with these delights!

Now, before we proceed, I will share that in case you need (and I do mean need) other variations of these fun Cheesecake Muffins, I’ll make it easy for you:

  • Easy Chocolate Cheesecake Muffins
  • Easy Banana Cheesecake Muffins
  • Easy Pumpkin Cheesecake Muffins
  • Easy Chocolate Chip Cheesecake Muffins

There’s something so fun and obviously delicious about topping your muffin with cheesecake. Eat them however you like, but I always follow these very important steps when eating any variety of Cheesecake Muffin:

  1. Gently, though eagerly, pull off the top part of the muffin and set it on the plate.
  2. Giggle quietly in anticipation.
  3. Eat the bottom portion of the muffin, enjoying every nibble but secretly looking forward to eating the cheesecake portion that is being saved for last.
  4. Start in on the top part of the muffin, smiling like a kid because every bite is filled with muffin, chocolate, and cheesecake, all at the same time, which is almost better than Christmas!!
  5. Sip coffee slowly throughout the entire process, because obviously.

Peanut Butter Chocolate Chip Cheesecake Muffins

Easy Peanut Butter Chocolate Chip Cheesecake Muffins

Serves: 12-15
Ingredients
  • 2 cups Muffin Mix** or...
  • 1½ cups whole grain flour
  • ⅓ cup brown sugar or sucanat
  • ½ teaspoon baking power
  • ½ teaspoon sea salt
  • 1 egg
  • ½ cup milk
  • ½ cup sour cream
  • ¼ cup melted butter
  • ½ cup natural peanut butter
  • ¼ cup mini chocolate chips
  • Cheesecake topping:
  • 8 ounces softened cream cheese
  • 1 egg
  • 2 Tablespoons real maple syrup
  • ½ teaspoon vanilla extract
  • ¼ cup mini chocolate chips
Instructions
  1. Scoop Muffin Mix or measure dry ingredients together in a bowl.
  2. Add egg, sour cream, milk, peanut butter, and melted butter, stirring until ingredients are combined.
  3. Fold in ¼ cup chocolate chips.
  4. Scoop batter into 12-15 prepared muffin tins.
  5. Prepare cheesecake topping by blending (in a blender or with a hand mixer) cream cheese, egg, maple syrup, and vanilla until smooth.
  6. Spoon 2-3 Tablespoons of cheesecake topping over each unbaked muffin.
  7. Sprinkle chocolate chips over the top of each.
  8. Bake in a 400 degree oven for 18-22 minutes or until muffins are golden brown.

Simple Whole Grain Chocolate Chip Muffins

When it comes to recipes, the simpler the better right? These Simple Whole Grain Chocolate Chip Muffins are fast and easy, and probably our very favorite. No one even realizes they are made with whole grains!

First, I must give a shout-out to the Muffin Mix in our Simple Mixes to Save the Day eBook. I use this muffin mix allllll the time as it is my very favorite. It seems silly to say that “this muffin mix saves me so much time!” because what does it really save me? Five minutes per batch of muffins? That, and brain energy, which is absolutely worth saving, is it not?

But truly, having the Muffin Mix on hand means all I have to do is scoop out two cups of mix, then quickly add liquid ingredients. It makes muffins come together very quickly and easily. For me, it feels huge as every minute saved in the kitchen allows for more minutes doing other more important tasks!

Below you’ll find the recipe you can use with or without the Muffin Mix. Note that there’s sour cream in these muffins. This makes the muffins moist and amazing!

Use any whole grain flour you choose. I use freshly ground soft white wheat in these muffins. It amazes me that using this flour for baking turns out products that taste surprisingly not whole grainy!

Amazing Whole Grain Chocolate Chip Muffins

Easy Peaches and Cream Muffins Recipe

Once upon a time I had a box full of fabulous peaches. So I used a few juicy peaches to make these Peaches and Cream Muffins and the family declared them to be delicious. Good talk.

Allow me to share a few secrets to making the most deliciously moist muffins – even if you are baking with whole grain flour!

  1. Use whole grain pastry flour. I grind soft white wheat, which turns into a lovely, fine, fluffy flour. I love that it acts like white flour while actually being whole wheat! (Read more about whole wheat pastry flour here.)
  2. Stir in some sour cream. This makes the muffins moist instead of dry and crumbly. So yum!

One of my favorite, favorite tricks to making these Peaches and Cream muffins even easier to whip up is to use the Muffin Mix recipe in this Simple Mixes to Save the Day eBook. Use 4 cups of Muffin Mix in place of all the dry ingredients in the recipe, and you’ve just cut out much of the work involved in stirring together these muffins. I LOVE having all those homemade mixes on hand!

This recipe is quite versatile! Sub out peaches for berries or apples. Stir in some cinnamon. This recipe is fun to play with!

Easy Peaches and Cream Muffins

Ingredients
  • 3 cups whole grain flour (I use freshly ground soft white wheat)
  • ½ cup sugar (sucanat, brown, white, or raw)
  • 1 teaspoon baking powder
  • 1 teaspoon sea salt (Or use 4 cups of Muffin Mix from Simple Mixes to Save the Day eBook instead of these dry ingredients!)
  • 1 cup sour cream
  • ¾ cup milk
  • 2 eggs
  • ½ cup melted coconut oil
  • 3 fresh peaches, pealed and diced
Instructions
  1. Stir together dry ingredients in a mixing bowl.
  2. Add sour cream, milk, eggs, and melted coconut oil and stir until just combined (do not over-stir).
  3. Fold in diced peaches.
  4. Scoop batter into 18-24 prepared muffin tins.
  5. Bake in a 400 degree oven for 18-25 minutes or until muffins are golden brown.

Stick of Butter Rice – AMAZING!

Now that I have discovered how to make this Stick of Butter Rice, I will never go back to making it “the regular way.” Wow, wow, and then some. It’s because of the butter, of course. Wait until you try this!

Some people be like, “Go easy on this rice because it’s so high in fat because of the butter!” But Laura be like, “What a great and delicious way to add good fat to a whole grain carb dish!”

I’m not a huge fan of empty carbs, which turn to sugar in our bodies, which offer little if any nourishment, and therefore can turn to fat in our bodies as they try to serve some sort of purpose for us. So if there’s any reason to go easy on this rice, it is because our bodies don’t need loads of carbohydrates or grains for nourishment (unless we are avid athletes with rigorous daily workouts).

As for me? I enjoy this wonderfully flavored, high fat rice in small quantities with a large side of veggies and a delightful portion of meat.

The flavor of this rice, though!!! Wow, you must try it. Between the broth, the onion, and the butter (the obvious MVP of this dish), I think you’ll be like me and decide to never go back to making plain rice again!

See how simple this Stick of Butter Rice is?

Measure uncooked rice and minced onion into a baking dish. Cut butter into pats and add to rice.

Add salt and chicken broth and stir.

Cover and bake in a 350 degree oven for one hour. Your job here is done.

We love serving some sort of shredded meat with this rice, such as:

  • Hawaiian Crock Pot Chicken
  • Simple Overnight Saucy Crock Pot Chicken
  • Simple Overnight Melt-in-Your-Mouth Beef Roast
  • Simple Barbecue Beef Roast
  • Simple Hawaiian Beef Roast
  • Simple Crock Pot Salsa Shredded Beef

Those are our favorites, though this Stick of Butter Rice makes a great side dish with just about any meal!

Ingredients
  • 2 cups brown rice (uncooked)
  • 4 cups beef or chicken broth
  • ¼ teaspoon sea salt
  • 2 Tablespoons dry minced onions
  • 1 stick of butter (1/2 cup)
Instructions
  1. Measure rice, broth, salt, and onions into a 9x13 inch baking dish and stir.
  2. Cut a stick of butter into 8ish "pats" and spread over the dish.
  3. Cover dish and bake in a 350 degree oven for 1 hour.

Simple Banana Pancakes (on a Simple Budget)

What is it that makes serving breakfast for dinner so much fun? These Simple Banana Pancakes are extra delicious at night. I don’t know why, they just are.

Also, it’s seems that pancakes taste better when cooked over an open fire while camping.

So let’s review. Pancakes taste better when cooked at night for dinner or when cooked over an open fire while camping. Why do we even think about making these in the morning for breakfast, anyway?

Well, because they taste great in the morning too. Okay, then. Pancakes taste amazing no matter when you make them and where you cook them. Pancakes are fabulous. Add banana to the pancakes and they become extra special.

Simple Banana Pancakes

Simple Banana Pancakes (on a Simple Budget)

Serves: 4-6 servings
Ingredients
  • 2 cups whole grain flour (I use freshly ground hard or soft white wheat)
  • 1 teaspoon baking powder
  • ½ teaspoon sea salt
  • 2 eggs
  • 1 ripe banana, mashed or pureed
  • 1½ cups milk
  • ¼ cup melted butter or coconut oil
Instructions
  1. Whisk all ingredients together until smooth.
  2. Cook on a hot griddle, turning once bubbly, about 2 minutes on each side.

Easy Chocolate Chip Cheesecake Muffins

It’s like we just can’t get enough of these cheesecake-topped muffins. We’re loving them at our house! Allow me to remind you of the others in this little series before I share the latest Easy Chocolate Chip Cheesecake Muffins:

I’m not sure why I saved these for last. Perhaps because most have declared them to be the best of them all? You be the judge. They are all amazing.

Easy Chocolate Chip Cheesecake Muffins

Easy Chocolate Chip Cheesecake Muffins

Serves: 12-15
Ingredients
  • 2 cups Muffin Mix** or...
  • 1½ cups whole grain flour
  • ⅓ cup brown sugar or sucanat
  • ½ teaspoon baking power
  • ½ teaspoon sea salt
  • 1 egg
  • ½ cup milk
  • ½ cup sour cream
  • ¼ cup melted butter
  • ¼ cup mini chocolate chips
  • Cheesecake topping:
  • 8 ounces softened cream cheese
  • 1 egg
  • 2 Tablespoons real maple syrup
  • ½ teaspoon vanilla extract
  • ¼ cup mini chocolate chips
Instructions
  1. Scoop Muffin Mix or measure dry ingredients together in a bowl.
  2. Add egg, sour cream, milk, and melted butter, stirring until ingredients are combined.
  3. Fold in ¼ cup chocolate chips.
  4. Scoop batter into 12-15 prepared muffin tins.
  5. Prepare cheesecake topping by blending (in a blender or with a hand mixer) cream cheese, egg, maple syrup, and vanilla until smooth.
  6. Spoon 2-3 Tablespoons of cheesecake topping over each unbaked muffin.
  7. Sprinkle chocolate chips over the top of each.
  8. Bake in a 400 degree oven for 18-22 minutes or until muffins are golden brown.
