Bake Strawberry Shortcake in the Crock Pot

Want to learn how to bake strawberry shortcake in the crock pot? It’s an awesome method!

A few weeks ago, I shared how to bake cake in a crock pot. Why would we do this?? After all, it doesn’t save time!

Why it’s nice to know how to bake a cake in the crock pot:

  1. If it’s hot outside and you want to avoid using the oven, this is a great option!
  2. If you don’t have an oven for some reason, it’s fun to know that you can still do some baking in non-traditional ways!

Since this worked, I decided to use the same idea and try making my Strawberry Shortcake Recipe in my crock pot. It turned out amazing!!

After it cools:

After you’ve eaten a good lunch. This is the rule at our house:

Strawberry Shortcake made in a crock pot is just as delicious, if not more delicious, than cake made in an oven. Try this!!

Ingredients
  • 2⅔ cups whole wheat flour (I use freshly ground whole wheat)
  • 1 teaspoon baking powder
  • 4 eggs
  • ½ cup honey or 1 cup sugar
  • ⅔ cup oil (I use coconut oil)
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 4-5 cups of fresh, sliced strawberries
  • Whipped cream (fresh cream whipped to form soft peaks, with a bit of stevia added for sweetness)
Instructions
  1. Mix together flour and baking powder.
  2. Add in eggs, honey, oil, vanilla and milk.
  3. Stir well (or mix well with mixer).
  4. Pour into a well buttered7-8 quart crock pot.
  5. Lay paper towels to cover the top of the crock.
  6. Place a wooden spoon between the paper towels and the crock pot lid to allow for venting.
  7. Cook on Hi for two hours or until a toothpick inserted in the middle comes out clean.
  8. Once completely cooled, gently work the cake out of the crock with a spatula.
  9. Allow cake to cool completely. Top with fresh strawberries and whipped cream.

I have two crock pots; this one is my favorite. I’m loving the ways we can bake in the crock pot and avoid heating up the house!

Quick Crock Pot Spicy Pasta Dinner

This Quick Crock Pot Spicy Pasta Dinner came about on a day I was cleaning out leftovers. Therefore, this recipe is a winner that happened by accident!

Have you made my Cream Cheese Salsa Dip? It’s incredible, super easy, and our entire family loves it!

However, one of the recent times I made the dip, it somehow got shoved to the back of the fridge and forgotten. I’d just gotten back from a big grocery run, so I was in major “make lunch with whatever food I find tucked away” so that I could make room for all the fresh food.

And there I found Cream Cheese Salsa Dip.

Aha, thought I. This is going to somehow turn into our lunch.

I was just about ready to take our littles out for a long walk, so I dumped some pasta and this dip into the crock pot to see what would happen while we were gone. Sure enough, the results were just like I’d imagined. The pasta was soft and ready to eat in just three hours without any effort from me! I added a shot of cream and stirred in some cooked meat, and we had our meal!

Here’s the easy recipe:

Ingredients
  • 10-ounces uncooked pasta, any variety
  • 8-ounces softened cream cheese
  • 32-ounces salsa
  • ½ cup heavy whipping cream
  • 1 pound cubed ham or cooked hamburger meat (optional)
Instructions
  1. Empty package of uncooked pasta into a crock pot.
  2. In a blender, whip together cream cheese and salsa until smooth.
  3. Pour salsa mixture over the pasta in the crock pot.
  4. Cook on low heat for 3 hours.
  5. Stir in heavy whipping cream and meat if desired.
  6. Serve.

The Easiest Spicy Ham and Potato Soup (Crock Pot Recipe)

I wanted to call this easy Spicy Ham and Potato Soup “Dump Soup.” But that didn’t sound appealing. So I took out the “dump” – good call, right? Still, you should know that all we have to do to make this soup is “dump” the ingredients into the crockpot. SO EASY.

This Spicy Ham and Potato Soup is basically this soup remade. I cut out some steps and made it in the crockpot. You’ll love how much easier the revisions make this recipe!

Also, you should know that I’m obsessed with this soup. I almost never eat seconds of any meal. But when I make this soup, I eat thirds. Aren’t you proud?

Ingredients
  • 8-ounces cream cheese
  • 16-ounces pepper jack cheese
  • ¾ cup sour cream
  • 1 cup half-and-half or whole milk
  • 10-ounce can Rotel (diced tomatoes and green chilies)
  • 1 pound ham, diced or cut into small bites
  • 3-4 cups frozen hashbrown potatoes
  • 32-ounces chicken, beef, or vegetable broth
Instructions
  1. Put all ingredients into a crock pot.
  2. Cook on low for 8 hours or on high for 4 hours.
  3. Occasionally, stir the soup to help distribute the cheeses.
  4. Just before serving, use a whisk to smooth the melted cheese.

I love eating this soup just as it is. Some in my family love to added shredded cheese and fritos. The pepper jack cheese in this soup gives it a nice, spicy kick that is so amazing!

If you make this soup with frozen hashbrowns (I like Mr. Dells brand as it contains only potatoes) it is extra easy to put together!

It’s time for me to get organized. Back to school at our house means much more than “get your pencils sharpened.” I usually consider this time of year “Back-to-Soccer” season and brace myself for the crazy that comes with it. Matt coaches our York College women’s team so usually in August I smile at him and say something like, “Whelp, see ya in November.”

Elias (who moved into the college dorm over the weekend; I’m not ready to talk about it, ha) will be playing on the YC men’s team. Malachi (15) will referee as many rec-league and club team games as he can. And Brayden (6) will play on a rec-league team. I try to pack everyone up and go to as many home YC games as I can, plus of course, I’ll be Brayden’s biggest cheerleader.

Awwww. There’s Malachi, back in his baby-soccer days. Now here we are again with our new set of Littles!

I’ve done this soccer-mom-wife life for so many years now that I know full well what it’ll be like. And as much as I know that it will be challenging as it always is (especially now that we’ve got so many little ones again!), may I just say this very loudly:

I AM SO THANKFUL SCHOOL IS STARTING and that WE GET TO HAVE A SOCCER SEASON!!!!

Last spring, we weren’t sure, you know? In early March, we sent all of our beloved college students home with barely a good-bye. We trudged through quarantine like so many of you did, wondering when or if life would ever be back to normal.

I’m not sure we can call everything “normal” yet, but praise God, students are moving back and soccer season is happening.

So as I celebrate this and also get ready for a very busy season, I’m putting these Crock Pot Dinner Ideas in my back pocket to make our mealtimes easier! These 10 ideas are the recipes I tend to fall back on first…

Simple Cheeseburger Noodle Crock Pot Dinner

Ready for a deliciously easy Crock Pot meal? This Simple Cheeseburger Noodle Crock Pot Dinner is a hit for everyone at our table. But mostly it is a hit with me because it’s so very easy to make!

The more I put my mind to learning simple, real food cooking methods, the better my kitchen life has become! I’ve stopped peeling potatoes (Yukon Gold, baby). I’ve quit thawing meat (I’ve stopped trying to remember). And if at all possible, I’ve stopped boiling noodles (life’s too short). What kind of lazy cook have I become, anyway? Ah, no. I prefer to call it being a smart cook!

I think it is delightful to drop dried pasta into my crock pot along with a few other ingredients, then come back a few hours later to a dinner that’s ready to be served. The creaminess of this recipe is what makes it so popular. And if you want to save a few dollars, skip the meat in this recipe. It’s delicious either way!

Ingredients
  • 1 pound hamburger meat
  • 1 small chopped onion OR 3 Tablespoons dried minced onion
  • 12-ounces UNCOOKED whole grain egg noodles
  • 2 cups sour cream
  • 30-ounces tomato sauce (2 cans)
  • 1 cup water
  • Sea salt and pepper to taste
  • ½ teaspoon garlic powder
  • 1 teaspoon parsley flakes
  • 2 cups shredded cheese (we like cheddar or Colby jack)
Instructions
  1. In a skillet, cook hamburger and onion together until meat is no longer pink. Drain if necessary.
  2. Stir cooked meat along with all other ingredients into a crock pot.
  3. Cover and cook on low for 3-4 hours.

My favorite meals to make are the meals I can dump into the crock pot and forget about until dinner time. This Simple Crock Pot Applesauce BBQ Chicken is one of those meals. It turns out juicy, flavorful chicken with no effort!

While I like cooking my chicken in the crock pot, I’ve started always cooking my rice in my Instant Pot. What did I ever do without my Instant Pot!?

Grab out some greens, steam a veggie, and this meal is perfection on a plate with very little effort!

Ingredients
  • 2 pounds boneless chicken thighs or breasts
  • ⅔ cup natural applesauce
  • ⅔ cup BBQ sauce
  • Sea salt to taste
  • Chili powder to taste
Instructions
  1. Place chicken pieces at the bottom of a crock pot.
  2. Sprinkle salt and chili powder over chicken.
  3. Drizzle on applesauce and bbq sauce.
  4. Cover and cook on low for 5 hours.
  5. Serve over rice or potatoes.

This is one of those recipes in which you quickly place ingredients into a pot then walk away and let it make dinner for you. Is this a perfect recipe for a busy holiday season? Oh yes. Let’s enjoy our holiday season while our crock pot cooks dinner for us, shall we?

Call this White Chicken Chili, or actually, let’s just call it A Night Off. This is one of those rare times we can simply open cans of prepared food and dump them into a pot. We can feel great knowing that it’s all still real food and it’s still healthy and nourishing for our families!

The Simplest White Chicken Chili

Serves: 6-8
Ingredients
  • 1-2 pounds boneless Chicken thighs or breasts
  • 2 15-ounce cans Black Beans (drained)
  • 2 10-ounce cans Rotel (Diced Tomatoes and Green Chiles)
  • 2 cups Frozen Corn
  • 3 Tablespoons Ranch Dressing Mix*
  • 1 Tablespoon Chili Powder
  • 2 8-ounce packages Cream Cheese
Instructions
  1. Place chicken (frozen or thawed) in the bottom of a crock pot.
  2. Add beans, Rotel, corn, and seasonings over the chicken and stir.
  3. Place cream cheese on top of the mixture.
  4. Cook on low for 7-8 hours or on high for 3-4 hours.
  5. Remove chicken and shred, then stir it back into the soup.

Complete this meal by pulling salad fixin’s out of the fridge and washing some fresh fruit.

Simple Crock Pot Creamy Stew Meat (with Rice, Potatoes, or Pasta)

Did you know that life is terribly unfair? It’s not fair that we let our youngest son go to camp by himself at age 11 but we made his brothers wait until they were 12. It’s not fair that one boy got more ice cream than his brothers. And it’s not fair that our entire family had to smell this Stew Meat cooking all day but couldn’t eat it until the evening came.

Torture. Smelling this meat cooking all day is torture, I tell you.

Honestly, it doesn’t look like much in the picture. But the flavor of this meat is incredible because of the simple seasonings you sprinkle on. The crock pot does the work of cooking this slow and low so that the meat becomes tender and juicy. Then you add cream at the end to finish it off to perfection.

Having Ranch Dressing Mix and Onion Soup Mix on hand makes putting this meal into the crock pot very quick. As you probably expected, I didn’t thaw my stew meat ahead of time. I just pulled it from the freezer and put it directly into the crock pot. Easy, easy, easy!

Simple Crock Pot Creamy Stew Meat (with Rice or Pasta)

Ingredients
  • 2-3 pounds beef stew meat
  • 3 Tablespoons Ranch Dressing Mix
  • 2 Tablespoons Onion Soup Mix
  • ½ cup water
  • ½ cup butter
  • 2 cups heavy whipping cream
Instructions
  1. In a crock pot, stir together stew meat, seasoning mixes, and water.
  2. Put a stick of butter on top.
  3. Place lid on crock pot and cook on low for 6-7 hours.
  4. Add cream and heat for another 10 minutes.
  5. Serve over rice or pasta

Simple Crock Pot Creamy Stew Meat

We really loved this stew meat over steamed brown rice. But it would be equally wonderful served over mashed or baked potatoes, or even whole grain pasta!

Keep in mind that if you do make mashed potatoes to go with this meat, you must make them in the simplest way possible! (I suppose this would require that you have two crock pots though. Hmm…)

Simple Hawaiian Beef Roast (5 Minute Prep!)

I first attempted this Simple Hawaiian Beef Roast recipe about a month ago on a busy night in which I was feeding out of town guests who had come to watch our youngest son, Malachi, perform in our local Children’s Theater production.

Malachi is the first of all our kids to choose to be involved in theater. It is a gross understatement to say that before this summer, I knew nothing about being a theater mom.

I kept calling the costumes “uniforms” because I have been a sports mom for so many, many years. But more difficult than this is the fact that I volunteered to help create said costumes. What in the world was I thinking?

Well, I’ll tell you what I was thinking. I was thinking that since all parents needed to be involved in some way with helping to pull off a huge 50-kid theater production, volunteering to help with costumes would be a better choice for me than volunteering to put on stage make-up. No way, no how should I be allowed to attempt to paint a child’s face.

I showed up to the first costume meeting where about 10 talented moms joined to talk to the director about all the costume needs. For two entire hours, everyone sat and discussed costumes – in German. Thoroughly lost while hearing all the words I didn’t understand, I eventually asked the director a question. He kindly said, and I quote, “Blah, blah, blah, stuff, stuff, blah. Does that make sense?” [DEER IN HEADLIGHTS]

I wanted to exit back stage left. Please someone tell me where I can sign up to bake cookies!!! Deliver me from trying to understand how to put together uniforms! I mean costumes.

As it turned out, the other moms did a marvelous job creating fabulously impressive costumes. The make-up moms transformed kids’ faces so that they actually looked like daisies and rabbits and mice.

In the meantime, I used my talent to write actors’ names on Wal-mart bags with a sharpie so we could keep track of each character’s gloves, socks, and shoes. Rock on.

When all was said and done, I had so much fun meeting theater parents and kids from our community that I would join the costume committee again next year if I’m “needed.” I might even remember to stop calling them “uniforms.”

So this roast recipe. It’s so simple you can throw it into the crock pot to cook all day without exerting any effort. You can set out plates and direct your guests to help themselves to the roast as you head out the door to go help 30 sweet girl actors between the ages of 7-17 don their hedgehog, cook, queen, and daisy costumes as you pretend with all your might that you actually know what you’re doing.

Ingredients
  • 3-4 pound beef roast (frozen or thawed!)
  • 1 cup barbecue sauce
  • 20-ounce can of pineapple, drained (or 2 cups fresh or frozen pineapple)
Instructions
  1. Place roast in crock pot.
  2. Pour barbecue sauce over the top.
  3. Add pineapple.
  4. Cook on low for 10 hours if roast is frozen and 8 hours is roast is thawed.
