Low Sugar Chocolate Cookie Cutouts

Look at these fun and festive Low Sugar Chocolate Cookie Cutouts! What a fun way to make a Christmas treat you can feel good about eating!

These cookies are delightfully good with a cup of coffee or tea. And if you want the non-chocolate version (what is wrong with you, ha?!), you’ll find that here. It’s fun to make a batch of both so you can display them in a pretty way on a tray!

Low Sugar Chocolate Cookie Cutouts

Low Sugar Chocolate Cookie Cutouts

Serves: 20-30
Ingredients
  • 1 cup melted butter
  • ½ cup sucanat or raw sugar
  • ⅓ cup unsweetened cocoa powder
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 3½ cups of whole wheat flour (give or take)
Instructions
  1. Stir together melted butter, sugar, and cocoa.
  2. Add eggs, vanilla, and baking powder.
  3. Stir in flour until a solid ball of dough forms.
  4. Cover the bowl and place it in the refrigerator to chill for about an hour.
  5. Roll chilled dough on a well-floured surface and thin or thick as you like.
  6. Cut with cookie cutters and place them about a half inch apart on a baking sheet.
  7. Bake in a 350° oven for about 12 minutes or until cookies are lightly browned.
  8. Makes 20-30 cookies depending on the thickness and size.

Want to frost your Low Sugar Chocolate Cookie Cutouts? Here are some fun (and low sugar) options:

Stevia Sweetened Cream Cheese Frosting

8 ounces softened cream cheese
1 cup heavy whipping cream
1/2 teaspoon vanilla extract
Liquid stevia to taste (I use 2 droppers full)

Whip ingredients together until smooth. Frost cookies just before serving.

Low Sugar Chocolate Frosting

1/2 cup butter
4 Tablespoons cocoa powder
2 Tablespoons milk
2-4 Tablespoons honey (sweeten this to your taste)
1 teaspoon vanilla extract

In a small saucepan combine butter, cocoa, milk, and honey. Cook and stir over low heat until ingredients are well combined and mixture begins to thicken slightly. Removed from heat. Stir in vanilla. Spread over cooled cookies.

Easy Christmas Breakfast Casserole Recipes (That Can Be Made Ahead of Time)

Is there anything better than a Christmas Breakfast Casserole? YES. What’s better is a Christmas Breakfast Casserole that can be made ahead of time so you can wake up on Christmas morning and enjoy your family instead of working and cooking!

Today I will share my favorite Breakfast Casserole options, all of which are super fast and easy to make AND can be made with any variety of ingredients you want to put together. As an added bonus, these are both naturally gluten/grain free if that is a need for you!

(Why no bread in these recipes? What can I say? I don’t like soggy bread. Ha!)

First I will re-share my Easy Breakfast Casserole. Mix it up a day or two before Christmas and put it in the fridge. On Christmas morning, bake as directed!

Easy Christmas Breakfast Casserole

Easy Christmas Breakfast Casserole Recipes

Ingredients
  • 8 eggs
  • ½ cup heavy cream
  • ¼ teaspoon sea salt
  • 1 cup shredded cheese (I use white cheddar, but you can use whatever cheese you want!)
  • 1-2 cups of any variety of cooked breakfast meat, and veggies like onions, peppers, and mushrooms - per your family's preference
Instructions
  1. Whisk together eggs, cream, and salt.
  2. Pour the ingredients into a 9x13 inch casserole dish.
  3. Sprinkle in any "add in" ingredients you wish.
  4. Stir them around with a fork.
  5. Top casserole with cheese.
  6. Bake in a 350° oven for 30-40 minutes, or until the middle doesn't jiggle.

Christmas Gift Ideas for Teachers and Coaches

Here’s a post I shared last year full of great Christmas gift ideas for teachers and coaches. Seeing as it’s that time of year again, and we all have plenty of things like pie and fudge to think about, I thought it would be helpful if I reposted this!

You’ll especially enjoy that many of the ideas on this list came from teachers themselves! I trust their opinion on this one. ;)

Christmas Gift Ideas for Teachers and Coaches

1. Gift Cards

Do these seem impersonal? I guess they could. But write a kind and appreciative personal note, then slide in a gift card that will provide your teacher with free dinner, free ice cream, free coffee, free shopping, or free anything fun from around your community. I personally love receiving gift cards and never think them impersonal!

2. Movie Passes

Again, include a personal note of appreciation. Maybe a package of popcorn. Perfection. (I like that these come in a 3-pack!)

3. Supplies for the Classroom

When I asked for gift suggestions on my Facebook page, Stephanie said this, “I always ask the teachers if they have any classroom needs-supplies, games or activities for inside recess days, etc.” Brilliant gift idea! (These Sharpies are a great price right now! Do all teachers love Sharpies, or is it just me?)

4. Wrapping Paper and Scotch Tape

Who thinks of these things? Several on Facebook suggested that this was a hit. I love the idea!

5. Breakfast in the Break Room

Meredith shared this fabulous suggestion, “One year I brought in breakfast for the office staff of our elementary. We were newish to the school then, and I didn’t want to bring in homemade food that might make some uneasy, so I made up my own shortened (and with prices that fit in my budget per person) list of breakfast options from Panera and handed it out early with a date on it I needed to collect them. I brought in orange juice and iced coffee from the grocery dairy section and a chopped fruit bowl from the grocer (but bananas and oranges or apples would be good too, I was just really wanting everything to clearly be commercially prepared if that makes sense) to go with each person’s selections. Panera boxed all the other stuff up and I brought it in early before the kids arrived. It was about $6-7 per person and we have a small office staff. They really loved it!”

6. Maple Syrup, Honey, or Jelly and Homemade Bread

While I think it’s best to be cautious on the homemade food gifts we give teachers (they may be leery about eating it unless they know us well), a jar of homemade jam and a loaf of homemade bread is a real treat! Teresa suggested, “This year teachers will get a pint of maple syrup and a jar of strawberry jam from our farm. In the past I have done loaves of homemade cinnamon raisin bread, and those were well-received.”

Terra says, “I’m giving them local honey in little bears this year…helps with immune systems…so not the typical gift.” Kris makes homemade Biscotti. I love all these unique ideas for homemade goodies!

7. Jamicure in a Jar

We all know I love jars! While I’m pretty sure my sons’ male basketball coaches wouldn’t appreciate this gift of manicure items, any female teacher or coach surely would! My friend Joymakes and gives these and emailed me with, “I love mason jars for gifts! Fun to dress up and make fancy then useful afterwards. But you already know that because you’re queen of mason jars! I include the wraps or polish or both with a nail file or care kit, cotton balls, personal lotion and of course, a few chocolates!”

8. Family Ornament

Again, we should stay away from apple-shaped ornaments that say “#1 Teacher.” But April shared, “My favorite I ever did was a Christmas ornament with her family name on it.” Now this is a great idea!

9. Family Fun Night

Brittany suggested a Family Fun Night with, “Redbox gift certificate with popcorn and candy.” Brittany is a teacher, so I think this suggestion is definitely worth listening to!

10. Car Wash Tokens

As someone who constantly has a filthy vehicle, I like this idea very much!! Lyn said, “When the boys got into middle and high school and had so many teachers, I started getting gift cards for the local car wash (one or two washes each). Our local place runs a “20 for $100? special each year. It’s inexpensive, different and they love them!”

97 Real Food Dessert Recipes for the Holidays

Christmas time is the time we tend to “need” a few dessert recipes to choose from. Today, I’ll hand you 97 real food dessert recipes for the holidays!

This ol’ blog has been around for quite some time. Eleven years to be exact.

When I began writing and sharing recipes back in 2007, I was fairly new to the “real food” scene. I had in mind that if I substituted white flour for whole wheat, and white sugar for sucanat, I was healthifying a recipe. Oops.

You can’t help what you don’t know, and you can’t do better until you know better. And shucks, I still don’t know what I don’t know, so I’m sure to come back in the 2020’s to share how much I’ve learned since 2018!

But I thought it was worth a mention, and before I send you looking through all 97 of these recipes, you should know this: The earlier the post, the more sugar-loaded the recipe will be! Yowza. I’ve edited many of these through the years to cut out some of the high sugar content. But I haven’t caught them all. Anyway, you’ve been warned. Merry Christmas. ;)

Kim’s review: Even though this book is part of a series, you can jump right into this one without reading the others. The main character in this book, Hope, will have you laughing and rolling your eyes at the nonsensical truisms she dispenses. Heartwarming and kind, this book is a feel-good book. (PS- The rest of the series is good, too, but this one is my favorite.)

Healthy Peppermint Patties

Ingredients
  • 1 cup coconut oil, divided
  • 20 drops liquid stevia
  • ¼ teaspoon peppermint extract
  • 2 heaping Tablespoons cocoa powder
  • 3 teaspoons honey (give or take)
  • 3 Tablespoons butter
Instructions
  1. In a small saucepan, melt ½ cup coconut oil.
  2. Remove from heat and add stevia and peppermint extract.
  3. Pour mixture into 12 muffin cups.
  4. Place in the freezer for about 20 minutes or until this peppermint layer has hardened.
  5. Meanwhile, melt remaining ½ cup coconut oil in the saucepan with cocoa powder, butter, and honey.
  6. Allow the mixture to cool while waiting for the peppermint layer to freeze.
  7. Pour the chocolate mixture over the peppermint layer and freeze for 20 or more minutes until the patties have hardened.
  8. Store Peppermint Patties in the refrigerator.

Don’t let the word “healthy” in this title scare you into thinking that these won’t taste like a treat. And don’t let the stevia in this recipe scare you away either. In my experience, the honey in the chocolate layer overrides anything bitter from the stevia.

A Practical but Fun Way to Bless People in Need

I originally shared this idea back in 2015, but as God continues to show us more about loving others, I wanted to bring back the idea again this year. Truly this is a very practical but fun way to bless people in need this winter!

Here’s my original post from 2015:

I picked up several pairs of fun Christmas socks before Thanksgiving, so as expected, I bought some toothpaste and pencils to go with them. This is the obvious action to take when gifting Christmas socks. Everything I do is normal.

What actually happened is that I bought the fun Christmas socks with our adopted college students in mind. I figured I would package them up with some other goodies and put them in their campus mail. But then I came across the fun idea on Pinterest to fill the socks with treats and little gifts, and before I knew it (which really translates to several days and hours later) – I had six sets of these:

These gifts were terrifically fun to put together! I went with basic wool socks for our three male adopted students, as you’ll see below. Since I’d gotten so many pairs of fun girly Christmas socks on sale, I decided to mix theirs up a bit. While it looks like they’re receiving mis-matched pairs, I actually rolled up the second sock of each pair and stuck it down inside the toes. So the girls are getting two pairs of cute socks. Sorry boys – yours are much more practical!

Christmas Sock Gifts

Speaking of practical – I included a few other practical items inside the guy’s socks. What college student wants to actually spend money on toothpaste and soap? Not to worry, I’m here to help. Their socks included soap, toothpaste, pens, candy cane chapstick, a small flashlight, gum, and candy (because not everything must be practical and at least I included toothpaste to brush away the sugar).

The girl’s socks were a little more on the fru-fru side because my inner girl rarely gets to come out in this household of men and all that I’d been holding back exploded in the dazzling Christmas aisles at Walmart. I got the girls sparkly lip balm and glittery nail polish, Christmas nail files, snowman pencils, face scrub, gum, and candy.

Our family then worked together to come up with a punny gift tag idea to attach to our socks. Our gift tag creativity hadn’t woken up yet that morning, however, so all we came up with was “Hope your Christmas doesn’t sock.” (Get it? Don’t try too hard.) Since that idea didn’t come close to making the cut, I searched online and came up with this:

A great way to bless people in need!

Beyond using this idea as a fun gift option, consider using this idea to gift those around you who are less fortunate. Filling wool socks with practical items and turning them into fun gifts like this would surely be a blessing to recipients going through a tough time. In my town, we don’t have many homeless, but we do have many low-income individuals and families. I’m working on putting together packages for several people we’ve met and become friends with this year while volunteering at our local mission. I’ll write more about this experience sometime. :)

Peanut Butter Cup Whipped Cream

Peanut Butter Cup Whipped Cream? Please pass me a spoon. Maybe two spoons: one for each hand.

If you have a high power blender like a Blendtec, you can make this jewel of a treat in about 30 seconds. Otherwise, you can use a hand mixer to blend ingredients and whip the mixture in about 5 minutes. Either way, your life just got better in a very short amount of time!

The possibilities of ways to serve this Peanut Butter Cup Whipped Cream are practically endless. If all else fails, you must truly eat this all by itself, in a bowl, with a spoon. No need to defend this choice. You simply can’t help yourself.

Other more elaborate Peanut Butter Cup Whipped Cream options include serving it alongside or atop:

  • a sliced banana

Ingredients
  • 2 cups heavy whipping cream
  • ½ cup natural creamy peanut butter
  • 3 Tablespoons unsweetened cocoa powder
  • 3 Tablespoons sugar or 20 drops liquid stevia
Instructions
  1. Blend all ingredients together in a high power blender until thick and smooth.
  2. Or blend ingredients together in a bowl with a hand mixer until thick and smooth.

I like making homemade peanut butter to use in recipes like this:

  • Peanut Butter (just peanuts!)
  • Peanut Butter (super creamy – like Skippy or Jif)

This Peanut Butter Cup Whipped Cream will make a lovely holiday dessert or add on to your table of treats. Or if you’re like me, you might find yourself making some and eating it in the middle of August or March because there is no reason to hold back. :)

We never know the changes one year might bring. This time last year, I shared this “Timeless Toys You’ll Want to Keep Forever” list. I began that post by talking about how my four sons were all grown up and I was looking ahead to the empty nest years and eventual grandchildren.

Then God reminded me in a very big way that our plans are not always hardly ever His plans. God brought us a 4-year old foster son in April 2018, as well as several babies to care for here and there. This Christmas, our house is filled with a bit more wonder and awe as we are all enjoying the season with our newest little bonus boy. Wow, wow, wow. What a God we serve!

True to the original post shared, there are some toys that are of the highest quality and that are worth buying and saving forever. We proved that this year as we pulled out the few golden toys we’ve saved for 20 years so that our new kiddo could enjoy them.
