Simple Santa Brownies (Grain Free or Regular!)

I found this idea for Simple Santa Brownies and decided that surely I could make a healthier version of them. I was not wrong. I was very right. And come to find out, Santa is very, very delicious.

Now obviously, you can take this idea and go with it no matter if you’re using a boxed brownie mix or a healthier brownie recipe. But I loved the idea of using my Super Moist Flourless Brownie Muffin recipe for this! It turned out fabulously.

Finding good strawberries this time of year is a little bit tricky, I realize. But for the sake of creating these awesome treats, I think it’s worth your purchase.

It’s probably also worth noting that if I can make these, anyone can make these. I’m no decorator. I rarely try to make cute food because I know I’m not good at it. But whipped cream and strawberries win the prize on these. Who knew real food could be used to decorate a fun Christmas treat!

Flourless Brownie Muffins for Simple Santa Brownies

Simple Santa Brownies (Grain Free or Regular!)

Ingredients
  • 1½ cups (12-ounces) Peanut Butter or Almond Butter
  • ½ cup honey
  • ½ cup unsweetened cocoa powder
  • 2 eggs
  • ½ teaspoon baking soda
  • For Santas:
  • 9 strawberries, washed and with greens removed
  • 1½ cups heavy whipping cream
  • 5 drops liquid stevia or 1 Tablespoon sugar
Instructions
  1. Stir all ingredients together until well combined.
  2. Scoop batter into 9 paper-lined muffins cups.
  3. Bake in a 350 degree oven for 12-15 minutes. (Remove them from the oven when they are just slightly underdone so they come out moist!)
  4. Whip cream and stevia or sugar until stiff peaks form.
  5. Once brownie muffins have cooled, top them with whipped cream and a strawberry.
  6. Top the strawberry with a "snowball" of whipped cream.

Fun (and EASY) Christmas Crafts to Make with Peppermints

I originally shared this in 2015. Why am I sharing again? Because Thanksgiving break is my favorite time to make Christmas crafts. Just in case you’d like to play along, here are some fun and VERY EASY Christmas crafts to make with peppermints!

Easy Peppermint Candy Crafts

You may have seen the DIY Peppermint Candy Bowl tutorial floating around online. Usually, I see videos like that and I’m like, “How nice for you. You like to take twenty-seven steps to make a recipe or a craft. You turn out amazing-looking dishes/crafts. Your videos make it look easy for everyone (but me). I must now go back to making kiddie crafts and stirring together 5-ingredient recipes because I can’t handle more than 2 steps while making anything.”

But the Peppermint Candy Bowls were different. This craft idea is as easy as opening a bag of candy, melting it for a short time in the oven, and…hmmm. That’s it. That’s all you do. It’s really that easy.

This is why I purchased a bulk amount of round peppermint candies before Thanksgiving. I would have peppermint bowls – I would. People would be impressed. My house would look festive. I could do this!

And then I cheated. I turned the job over to a college girl who was staying at our house during Thanksgiving week. She made all the adorable Peppermint Candy Bowls and I cheered for her. In the meantime, I ironed tea bags and she cheered for me. (Not really, because my craft didn’t look like much at the time so nothing motivated her to say, “Wow, Laura, you sure can iron.”)

Nonetheless, while our friend made Peppermint Bowls, I turned out these Lavender Oatmeal Bath Teabags – the gift tags of which made us both cheer. Also, we watched a cheesy Hallmark Christmas movie while she was visiting because #sappymovies  #girlstuff  #absolutelynecessary

The boys got home from basketball practice before the movie was over. They immediately began making fun of every line and every situation and all the fake snow falling at just the right time. Just whatever, boys. I cater to you and watch your blow-up movies all the time and don’t make fun of your fake explosions and people with unrealistic abilities to climb buildings or throw large machines. #whyineedgirltime

So girlie stuff. Since the peppermint bowls were such a success, we talked about making more peppermint crafts. We bought more peppermint candies and put all the boys to work opening all of them and putting them into a bowl. (Why did I not get a picture of this?) It was our friend’s idea to fill an entire cookie sheet with peppermints and melt them down to make a tray. We never got around to it before the dorm opened up again, so lookie what I made all by myself!!!

If you look real close (please don’t) – you’ll see that I got distracted and let my peppermints stay in the oven about one minute too long which resulted in a few pepperminty bubbles. The trays are still adorable and now my house is filled with fun, festive decorations!

What you need to know about Christmas Crafts to make with Peppermints

1. Get all the detailed instructions here. But in short, you put peppermint candies on a cookie sheet lined with parchment paper (we found that a Silicone Baking Mat worked much better.) Bake in a 300° oven for 7-8 minutes.

2. Watch carefully the last few minutes of baking so as not to over-melt the peppermints. You want them just barely melted. Once they become shiny and runny, they become a peppermint disaster and you’ll have to throw out your oven and then you might as well move to another state. (I’ve obviously been watching an over-dramatic girlie movie.)

3. To make a peppermint bowl, turn the melted peppermints out over the bottom of a small glass or plastic bowl for easy shaping. We found it was best to wait about 30 seconds after the mints came out of the oven before shaping.

4. We found that it was best to make just one bowl at a time. These are a little bit time sensitive.

5. You need 19 peppermints for one bowl; 149 for a large tray (I did 6 rows of 14 alternated with 5 rows of 13); 17 peppermints for the tiny tray.

6. These are breakable. Do not bang these on a table or play soccer with them in the living room.

7. These are only barely sticky once completed. This makes them great for decorations or gifts. You probably don’t want to use the bowls for cereal and milk, though. I mean, you make the call.

Warning: These crafts are so much fun you’ll consider buying a warehouse full of peppermints so you can make an entire house of melted candy. You’ll want to experiment with other shapes and household items. You will become addicted to watching peppermints melt and become cute. The men in your life will wonder if you’ve lost your mind (again) as they dutifully take thousands of wrappers off peppermint candies as you have directed them to do.

16 Delicious Flourless Treats

I am a wheat eater and a gluten consumer. I use freshly ground flour several times each week. Even so, I love making Flourless Treats for a change of pace. After all, we all get plenty of grains in our diet. Making treats that are flourless is a great choice for all of us!

The beauty of this list of Flourless Treat recipes I’m sharing is that every single one of them tastes like something special. These recipes don’t include weird ingredients that make them seem “healthy.” Not that any of us are opposed to eating healthy, of course. It’s just that some healthy treat recipes are strange and awkward and leave the consumer wanting an actual cookie that isn’t made with banana paste and finely ground chicken feathers. Or some such.

So please, my friends. Enjoy the following delectable recipes that no one will suspect to be “out of the norm.” All will eat these and be delighted. They will share them with their friends, saying, “Hey, you’ve got to try this cake!” Meanwhile, over in the corner, you will be chuckling over the fact that once again, you pulled off the “I made treats without flour in them and nobody suspected” trick.

Not that we’re trying to be tricky. I mean, we can’t help it if our healthier food tastes just as good if not better than their less healthy counterparts. There’s nothing we can do about this. Making great food in healthy ways is simply what we do now. We can’t even help ourselves.

Why You Should Bake Your Turkey Ahead of Time

Did you know? You can bake your turkey ahead of time!

For me, this is the only way.

Now, of course, this means that at our house we don’t have a fancy “carve the turkey” tradition on Thanksgiving or Christmas day. But the trade-off is that I don’t have to walk into the kitchen and deal with a tepid, saggy turkey carcass after enjoying a special holiday meal. Worth it? A million times over.

Why should you bake your turkey ahead of time?

Let me count the reasons…

  1. Because of the tepid, saggy turkey carcass, but we’ve already been through that already.
  2. But speaking of the turkey carcass, when you make your turkey ahead of time, you’ll be able to save the said carcass and make incredibly Rich Broth and fantastic Turkey Gravy. So long live the turkey carcass (so to speak).
  3. Not only will your turkey be baked ahead of time, but you’ve also already made several gallons of broth too. And it’s not even Thursday yet.
  4. When you follow these methods of baking your turkey before the big day, your pre-cooked turkey will be perfectly moist, juicy, and tender at serving time.
  5. Instead of slaving over meal preparation on a holiday, YOU WILL GET TO ENJOY EATING THE ACTUAL HOLIDAY MEAL. That was me yelling to share the good news. I am so happy about this. Come one. Come all. Bake your turkey ahead of time!

How to Bake Your Turkey Ahead of Time

Why You Should Bake Your Turkey Ahead of Time

Ingredients
  • 1 Turkey
  • Seasonings of your choosing
  • 1 Large Roasting Pan
  • Foil if necessary
Instructions
  1. Place the turkey in the refrigerator for 3-4 days until thawed.
  2. Remove the bag of giblets from the inside of the turkey.
  3. Empty the giblets into your roasting pan as they help make a good, rich broth.
  4. Place the bird, breast side up, into a large baking pan or roaster.
  5. Season however you like.
  6. Cover with foil or with your roaster lid.
  7. Cook at 325° for 15-20 minutes per pound.
  8. You know your turkey is done cooking when the red thing pops up, or when the legs start to pull away from the body. It should be golden brown and slightly crisp looking.
  9. Be sure to save the broth that formed naturally!
  10. Allow the turkey to cool, then de-bone completely. Store meat in baggies or in covered pyrex dishes in the refrigerator.
  11. Save turkey carcass to make another round of broth for gravy, soup, and other nourishing meals.
  12. On serving day, drizzle a liberal amount of broth (one-two cups per 9x13 inch pan of meat) over turkey, cover and warm in 300°-350° oven for 30-45 minutes or until meat is hot and steamy.

Pumpkin Cheesecake Pie

Why yes I did take this Easy Pumpkin Cheesecake Bars recipe and turn it into a Pumpkin Cheesecake Pie. With Thanksgiving right around the corner, I thought we might need something extra special!

This recipe is just as easy as making the bars, and I hate to state the obvious, but here goes. Instead of baking this recipe into bars, bake it instead in a pie dish and it will suddenly turn into a pie. I know. It’s like we’re all geniuses.

But wait. There’s more.

There are chocolate chips involved in the making of this Pumpkin Cheesecake Pie.

Pour in the pumpkin layer. Spread on the cheesecake layer. Sprinkle generously with mini chocolate chips. Suddenly this Thanksgiving we find ourselves with even more to be thankful for.

Pumpkin Cheesecake Pie

Pumpkin Cheesecake Pie

Ingredients
  • 1 cup whole grain flour
  • ¼ cup brown sugar or sucanat
  • ¼ teaspoon baking powder
  • ¼ teaspoon sea salt
  • 1 teaspoon pumpkin pie spice*
  • 1 egg
  • 1 cup pumpkin puree
  • 2 Tablespoons melted coconut oil
  • Cream Cheese Marble Filling:
  • 8-ounces softened cream cheese
  • 1 egg
  • 2 Tablespoons real maple syrup
  • ½ teaspoon vanilla extract
  • ¼ cup mini chocolate chips
Instructions
  1. In a large mixing bowl, stir together flour, sucanat, salt, baking powder, and pumpkin pie spice.
  2. Mix in egg, pumpkin puree, and oil until well combined.
  3. Pour batter into a 9 inch pie plate. Set aside.
  4. Blend Cream Cheese Filling ingredients in a blender or with a hand mixer until smooth.
  5. Drizzle mixture over the unbaked pumpkin cake.
  6. Use a butter knife to swirl the filling throughout the cake batter.
  7. Sprinkle with chocolate chips.
  8. Bake in a 350° oven for 20-25 minutes or until a toothpick inserted in the middle comes out clean.

*Find the recipe for our Pumpkin Spice mix here. Or substitute 1 teaspoon ground cloves, 1 teaspoon cinnamon, and 1/2 teaspoon nutmeg in this recipe.

You might notice that the ingredients listed for this Pumpkin Cheesecake Pie recipe are exactly half of the ingredients listed in the Easy Pumpkin Cheesecake Bars recipe. Ready for me to state the obvious again?

If you want to make two pies, simply double the ingredients listed above. Or follow the recipe on this page as directed, except bake it in 2 pie pans. And don’t forget the chocolate chips. Never forget the chocolate chips.

Simple 5-Minute Cheesy Hamburger and Potatoes

Add this Simple 5-Minute Cheesy Hamburger and Potatoes recipe to the growing list of reasons it is awesome to have a stash of frozen hashbrowns waiting in the freezer!

Around here, we like our recipes to be both easy to prepare and made with real food. Why?

Therefore, we’re learning to do everything possible to keep our food as nourishing as possible, all while preparing it as quickly as possible. This frees up our time and energy to spend doing what God calls us to do each day.

Frozen Hashbrowns for the win!

I shared in this post about my happy hashbrown find and why I now rely on it for a healthy, convenient option. (In summary, Mr. Dells frozen hashbrowns has one ingredient: Potatoes. Beautiful!)

Since discovering these, I’ve come up with a variety of fun Hashbrown Casseroles that my family loves and that take only a few minutes to put together. Many can be made either in the oven or in the crock pot, which means I can make adjustments based on what we have going on each day!

Today we’re adding 5-Minute Cheesy Potatoes and Beef to the list! How can this be made in 5 minutes? Well, with our trusty frozen hashbrowns of course. And also, IF you follow this handy trick of cooking hamburger meat ahead of time, then all you have to do is pull out cooked meat, add it to your crock pot or baking dish with the other ingredients, and in 5 minutes, dinner is ready to bake!

Simple 5-Minute Cheesy Potatoes and Beef

Serves: 6-8
Ingredients
  • 1-2 pounds ground beef
  • 30-ounces frozen hashbrowns (or 5 medium potatoes sliced thinly)
  • 2 Tablespoons dried minced onion
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • 3 cups shredded cheese (we use Colby jack)
  • ½ cup chicken or beef broth
Instructions
  1. Brown hamburger meat in a skillet on the stove-top.
  2. In a large crock pot, layer ½ of the potatoes followed by ½ of the cooked meat.
  3. Sprinkle with 1 Tablespoon minced onion, ½ teaspoon paprika, ½ teaspoon garlic powder, ½ teaspoon sea salt, and 1½ cups shredded cheese.
  4. Repeat with another layer of potatoes, meat, seasonings, and cheese.
  5. Drizzle broth over the ingredients and put the lid on the crock pot.
  6. Cook on "Hi" for 4 hours.

Easy Pumpkin Cheesecake Bars

There’s a layer of Pumpkin Cake and a layer of Cheesecake in this treat. Together they make awesome Pumpkin Cheesecake Bars, the likes of which take hardly any effort to make!

This recipe is the result of me taking a moment to play with my Pumpkin Cheesecake Muffin recipe. Indeed, you can often find me playing with recipes at my house. Why play with toys when there are recipes lying around, am I right? Toy box. Recipe box. It’s all the same to me.

The beauty of playing with recipes is that one can easily turn one treat into a new treat, simply by tweaking a few ingredients and measurements. That is how the muffins turned into these Easy Pumpkin Cheesecake Bars.

As many of my recipes are, this one is delicious enough for dessert and healthy enough for breakfast. :)

Easy Pumpkin Cheesecake Bars

Easy Pumpkin Cheesecake Bars

Ingredients
  • 2 cups whole grain flour
  • ½ cup brown sugar or sucanat
  • ½ teaspoon baking powder
  • ½ teaspoon sea salt
  • 2 teaspoons pumpkin pie spice*
  • 2 eggs
  • 15-ounces pumpkin puree
  • ¼ cup melted coconut oil
  • Cream Cheese Marble Filling:
  • 16-ounces softened cream cheese
  • 2 eggs
  • 3 Tablespoons real maple syrup
  • 1 teaspoon vanilla extract
Instructions
  1. In a large mixing bowl, stir together flour, sucanat, salt, baking powder, and pumpkin pie spice.
  2. Mix in egg, pumpkin puree, and oil until well combined.
  3. Pour batter into a 9x13 inch baking dish. Set aside.
  4. Blend Cream Cheese Filling ingredients in a blender or with a hand mixer until smooth.
  5. Drizzle mixture over the unbaked pumpkin cake.
  6. Use a butter knife to spread the filling over the cake batter.
  7. Bake in a 350° oven for 20-25 minutes or until a toothpick inserted in the middle comes out clean.
  8. Allow bars to cool completely, then chill for at least two hours before cutting into bars and serving.

*Find the recipe for our Pumpkin Spice mix here. Or substitute 1 teaspoon ground cloves, 1 teaspoon cinnamon, and 1/2 teaspoon nutmeg in this recipe.
