From Burrito Bar to Casserole – a 5 Minute Way to Use Leftovers!

Allow me to tell you about two of my favorite new Simple Meals tricks! From Burrito Bar to Casserole, here are two meals that go together super easily!

The first favorite Simple Meals trick is this: Any time I’ve been privileged to feed a large crowd lately, I have been setting up a Burrito Bar. I fed Asa’s soccer team this way (35+ college male athletes, phew!). I fed Matt’s soccer team this way (20+ college women athletes – Matt’s their assistant coach).

It is important, yet frustrating, to note that I took no pictures of either meal because I always get too busy with the food and the fellowship and I forget to take a picture. I regret this every time. But moving on…

What is great about setting up a Burrito Bar is that each person can build a burrito (or three) to his or her liking. And best yet, those who have food allergies can still eat this meal! (My gluten free friends skip the tortilla but can eat everything else. My dairy free friends can skip the cheese and sour cream and eat everything else. It’s so simple!)

Burrito Bar Fixin’s

  • Salsa Chicken
  • Seasoned Hamburger Meat (cooked in the Instant Pot because it’s so easy!)
  • Brown Rice (seasoned with chili powder, garlic powder, salt, and a splash of lime juice)
  • Black Beans and or Pinto Beans
  • Salsa
  • Guacamole
  • Sauted onions and peppers
  • Mixed Greens or Spinach
  • Shredded Cheese
  • Tomatoes
  • Olives
  • Corn
  • Sour Cream
  • Tortillas

And now for my second favorite Simple Meals trick! After I’m finished serving the Burrito Bar, I stir together the leftovers and spread it into a casserole dish. This makes it super easy to put away leftovers! And it makes for a very delicious meal on another day, which takes zero effort!

I fully admit that this doesn’t look super appetizing. For shame. Something so delicious should not look so…blah.

I will now attempt to give you an idea of measurements so that you, too, can stir together Burrito Bar leftovers and create a new meal of…what shall we call it? Burrito Bar Casserole? Cheesy Mexican Rice? Mom’s Night Off? Yes, let’s call it that.

From Burrito Bar to Casserole - a 5 Minute Way to Use Leftovers!

Serves: 6-8
Ingredients
  • Leftover cooked chicken or hamburger (1-2 pounds)
  • Leftover cooked rice (2-3 cups)
  • Leftover beans (up to 2 cups)
  • Salsa (2-3 cups)
  • Sour Cream (2-3 cups)
  • Shredded cheese (1-3 cups, optional)
Instructions
  1. Stir these leftovers together, not worrying much about the measurements!
  2. Spread the mixture into a 9x13 inch casserole dish.
  3. Top it with cheese (optional).
  4. Cover and refrigerate until ready to warm and serve. Or cover and freeze for up to two months.
  5. When you are ready to serve this meal, cover it with foil and slide it into a cold oven.
  6. Bake a refrigerated casserole at 350 degrees for about 45 minutes. Bake a frozen casserole at 275 degrees for 2-3 hours or until hot and bubbly.

From Burrito to Casserole - a 5 minute way to use leftovers

Do not get stuck on the measurements for this “casserole.” Simply stir the leftovers together until it looks right for your family. Then your kids might do what mine did, take one bite, and say, “This is actually pretty good.”

Actually?

Yes, because it’s so shocking that my food would taste good. (Okay, but in their defense, it didn’t look super tasty, right?)

Company is Coming This Weekend! Here’s What We’ll be Eating…

I super love when people come to visit us! I love planning the meals and preparing the meals and serving the meals and doing all the food up right in an effort to bless our guests while we visit. And of course, I love to visit with our guests.

In summary: Would one of you please come clean my house for me?

Man, I do not like to clean. I do like my house to be clean, but the act of cleaning is low on my fun list. Actually, it’s not even on my fun list. It’s on my do it because it has to be done so get over it list.

Hiring regular cleaning help is not in the budget right now, but I’m seriously thinking about seeing who might want to trade cooking for cleaning. Some people like to clean but not cook, right? Yes, I hear that this is true.

My boys are very helpful with their assigned cleaning chores, which is another reason I’ve not wanted to outsource this task to hired help. But sometimes my idea of clean differs from my boys’ idea of clean. (I probably don’t need to explain this.)

Well anyway. All this talk about cleaning is starting to make me upset. Let’s talk about food!!!! Aaaaahhh yes. Now I’m happy again. :) :) :) :)

Family is coming to town this weekend for our York College Homecoming festivities. I can’t wait to feed see them! This is always a wonderful weekend with people we don’t get to see often enough.

In order to enjoy my guests and avoid having to talk very much while I cook (this is a serious problem for me) – I’m making most of the food ahead of time or at least planning very simple, no-brainer dishes (like this Stir-and-Pour Bread).

Whole Wheat No-Knead Bread

Here are the meals we’ll be having:

Breakfast Foods

  • Bacon Cheesy Eggs
  • Banana Bread
  • Applesauce Bread
  • Chocolate Chocolate Chip Muffins
  • Lots of Fruit (apples, pears, grapes, raspberries, blueberries, cantaloupe, plums)
  • Donuts (My dad almost always brings a box to share. It’s a Papa thing and we love it.)

  • Potato Soup
  • Chili (with Fritos – yes really – and shredded cheese)
  • Sub Sandwich Bar
  • Veggie Platter (carrots, cucumbers, sweet peppers, olives, pickles)

  • Creamy Salsa Enchilada Casserole from Lesson 2 of the Let’s Do This! eCourse, with tossed salad, spicy avocado dip and chips, fruit
  • Crock Pot Roast Beef from Eat Right Away: Slow Cooker Beef Edition, cheesy mashed potatoes, green beans, cantaloupe, stir-and-pour bread

(The Crock Pot Roast Beef recipe was originally written to be used for Roast Beef and Melted Cheese Sandwiches, but we love the flavor of this one so much, and it only takes about 30 seconds to prepare {seriously!!!!}, so we make it frequently to eat as a main dish without the cheese and buns.)

35 Minutes ~ 6 Winner Winner Chicken Dinners

Hows that for a dumb title? Well, you too will feel like saying silly things and maybe even doing the chicken dance after you spend such a short amount of time creating so many delicious meals for your family. Plus, I just had a great cup of coffee so my typing fingers are under the influence of caffeine.

Last week – using ugly meat pictures – I showed you how I used my Eat Right Away: Beef Edition packet to make 6 Beef Meals in only 45 minutes. I promised you that I would do the same with the Chicken Edition. So here I am. But this time – I’m excited to report that it only took 35 minutes of work time to crank out 6 meals. We have big eaters at our house, so the only way I was able to turn 8 pounds of meat into only 6 meals for us is that I’ll be adding several fruit/veggie sides along with potatoes, tortillas, rice, or pasta to stretch that chicken. If your family is smaller than mine – you could do the same amount of work and end up with more than 6 meals!

Eat Right Away Chicken Edition 22

I’m really, really excited about this. One of my biggest goals here is to emphasize that it really doesn’t have to be difficult or time consuming to feed your family healthy, real food meals. Here is the run-down of my 35 minute date with 8 pounds of chicken.

On Friday, I picked up my Bountiful Basket meat order (the first one to come to our town!). I got 24 pounds of nitrite-free bacon and 24 pounds of nicely raised boneless/skinless chicken. I put 8 pounds of chicken in the fridge to thaw.

On Saturday, I got to work making four out of five of the recipes included in the Chicken Edition packet. (I didn’t make the Teriyaki Chicken and Veggie Kabobs because while I had plenty of chicken, the other ingredients needed were not on sale. No need to pay full price – I’ll make a triple batch of those another time!)

These are the recipes I worked on:

  • Easy Apricot Chicken
  • Sloppy Salsa Chicken
  • Mexi-Chicken Pasta
  • Chicken Tostadas

First I put 2 pounds of chicken into a pot with the Apricot Chicken ingredients, put a lid on the pot, and started it cooking on low. It was an exhausting five minutes. Thank you for your compassion.

Next, I used kitchen shears (the best way to cut chicken, if you ask me) to cut 4 pounds of chicken into pieces for the Mexi-Chicken Pasta and Chicken Tostadas. Want to know what’s great? You use the same ingredients to cook the chicken for both of those recipes so this is super efficient!

There it is. Seasoned and ready to cook. Prep took about 15 minutes. Onto the stove it went.

I put the remaining 2 pounds of chicken into a third pot along with the Sloppy Salsa Chicken ingredients. Two minutes later, it was cooking on the stove. Are you grasping how easy this is? I burn complicated recipes in my fireplace. I like simple foods.

While all three pots of chicken cooked, I ate lunch with my family. (Tuna casserole, green beans, and raspberries – thanks for asking.) I stirred the chicken from time to time while our older boys shared about their week at camp. (They’d just gotten home a couple hours before lunch.)

After lunch, the Mexi-Chicken Pasta and Chicken Tostada meat was finished – so I set it aside to cool.

The Apricot Chicken was finished to I used a fork and knife to kind of shred it. I say kind of because it’s not completely shredded. I got to a point where I was like, eh good enough.

Same thing on the Sloppy Salsa Chicken. I shredded it until it was at the “good enough” stage. It’ll pull apart more when we rewarm and serve.

At this point, I let all three pots sit out to cool. Later, I filled five freezer bags: 2 with Sloppy Salsa Chicken, 2 with Apricot Chicken, and 1 with chicken for Mexi-Chicken Pasta. The remaining chicken was left in the pan to quickly rewarm after church Sunday for Tostadas. Lunch within five minutes of getting home from church? Yes please!

Those five bags of food joined the 6 beef meals from last week.

I’m going with your suggestions on which packets to work on next – focusing on meatless and slow cooker recipes. It is too much fun and oh so helpful to learn these new recipes.

I love how easy it is now to pull out these prepared foods to serve to my family. Tuesday we put baked potatoes in the crock pot, set out a bag of frozen Apricot Chicken, then went to the swimming pool. We got home, warmed up the meat, cooked some green beans, cut up a cantaloupe, and had our meal. Crazy easy. Plus, all my men raved about how good the Apricot Chicken was. Bonus!

Meals to Feed to a Large Crowd

Have a large crowd to feed? We have over 39 great ideas to help you keep it simple!

I frequently feed crowds of 20 or more. I’ve truly gotten to a place where I can say, “Oh, it’s easy.” How? I keep these meals very simple! And my best tip of all:

The side dishes I serve are made up of fresh fruits and vegetables. Nothing fancy or difficult! I simply wash strawberries and put them in a big bowl. I dump baby carrots onto a tray, slice some cucumbers, and set out some ranch dip. I steam several pounds of frozen green beans, peas, or corn.

My buffets always look so pretty and inviting because of these fruits and veggies! People love this! But I’ve gone to very little trouble. It’s a great win-win!

Tips for Feeding a Large Crowd

  • Do as much food prep ahead of time as possible. Here are my best tips about working ahead before company arrives.
  • Don’t be afraid to say yes to help! If someone asks, “What can I do to help?” give them a job!
  • Create a menu with one simple main dish (ideas below) and as mentioned above, set out simple fruit and veggie side dishes to accompany the meal.
  • Watch for French and Italian bread on the mark-down trays at your grocery stores. Slice them in half length-wise, butter them, and warm them in the oven for an additional, filling simple side dish.
  • If you’re going to make mashed potatoes (for a crowd or just for your family) you must follow this simple mashed potato making method!
  • Serve water. Other fun drinks are great if you have time. But when I have a houseful of teens or college students, I usually set out jars of water and a stack of solo cups. It’s easy and well, spilled water isn’t a concern like spilled grape juice. Oy!
  • Smile often. Smile while you prepare the food and while you’re serving it. Let your guests know you are glad they are there!
  • Good home design can also play a factor in making your kitchen more functional for large groups. If you are building a home or remodeling your current kitchen, consider an open plan with an island or plenty of countertop space for buffet-style entertaining. Meals to Feed to a Large Crowd

Setting up a buffet in which people line up and fix their plate according to their preference is the easiest all the way around. This also ensures that people with food allergies or those who are picky can fill their plate the way they need and like. Here are my best ideas for simple main dishes that can be made in bulk and fed easily to a large crowd:

  1. Build-Your-Own Burrito Bar
  2. Breakfast Burrito Buffet (great any time of the day!)
  3. Nacho or Taco Bar (This meaty cheese dip recipe is our favorite! It’s easy to make in bulk and is always a crowd pleaser.)
  4. Baked Potato Bar (Bake potatoes in a crock pot or large roaster to make it easy. Set out diced meat or chili, grated cheese, chopped veggies, sour cream, and olives for toppings.)
  5. Sub Sandwich Bar (Set out hoagie rolls, a variety of lunch meat and sliced cheese, mayo, mustard, lettuce, tomatoes, sliced cucumbers, olives, and any other favorite sandwich fixins.)
  6. Chef Salad Bar
  7. Pasta Salad Bar
  8. Simple Spanish Rice Bowls
  9. Sloppy Joes
  10. Chili (served with toppings like Fritos, shredded cheese, sour cream, and olives)
  11. Burgers and Dogs on the Grill (great for spring and summer!)
  12. Simple Grilled Chicken

How about casseroles that are easy to make in bulk to feed to a large crowd?

After all, if you’re going to make one, you might as well make…more than one. Each of these feeds 8-12, so double or quadruple accordingly!

  1. Lasagna (Use this method to make it easy to build several Lasagnas at once. This is always a huge crowd pleaser!)
  2. Easy Breakfast Casserole (served with a variety of homemade muffins – recipes below – and fresh fruit)
  3. Simple Crock Pot Taco Pasta
  4. Simple Pizza Chicken Bake
  5. Simple Lasagna Casserole (For Instant Pot or Crock Pot)
  6. Simple Hashbrown Casserole (For Instant Pot, Crock Pot or Oven!)
