Simple Cheeseburger Mac in the Instant Pot

Once upon a time, I had a genius idea to add seasoned hamburger meat to our Simple 10-Minute Instant Pot Mac and Cheese. This magically and beautifully turned into Simple Cheeseburger Mac in the Instant Pot. And once again, dinner is saved!

Mind you, this recipe is made even easier if I have “worked” ahead and have hamburger meat already pre-cooked and in the fridge ready to pull out as needed. And by “worked” I mean that I open several packs of hamburger meat (usually frozen) and plop it into my Instant Pot where it cooks all by itself for a few minutes, providing our family with several meals worth of pre-cooked meat to use easily in recipes as needed.

If you get an Instant Pot for no other reason, get it so that it will cook your hamburger meat for you. I usually cook 7-pounds at once, and it is such a time and energy saver!

Simple Cheeseburger Mac in the Instant Pot

Ingredients
  • 1 pound cooked hamburger meat
  • ½ teaspoon garlic powder
  • ½ teaspoon chili powder
  • 16-ounces whole grain pasta (any shape)
  • 4 cups water
  • 4 Tablespoons butter
  • 2 teaspoons sea salt
  • 1 cup heavy whipping cream
  • 3 cups shredded cheese (we love Colby jack)
Instructions
  1. Cook hamburger meat and season with garlic powder and chili powder.
  2. Stir meat, uncooked pasta, water, butter, and salt in your instant pot.
  3. Seal and cook on manual, high pressure for 4 minutes.
  4. Quick release the pressure.
  5. Open the pot and stir in the cream and cheese until melted and creamy.

This recipe is incredibly easy to make, and it is a huge hit with the family! Any time I can make pasta without actually boiling pasta is a win in my book. Fewer dirty dishes, less time in the kitchen, and a delicious meal too!

Not even including the thoughts we must think about what we will feed our families for breakfasts and lunches every day, if we all run a household for 50 years, and we multiply those years by the 365 days we must figure out what to put on the table for dinner each night – the total, painful number of meal planning days is (gasp, sob):

Meals. That we have to plan. In our life. Not counting breakfast.

Oh, but should we count breakfast and lunch too, just for fun? (Laura’s idea of fun is weird and not actually fun.)

Total meals. That must come out of our heads, through our hard-working hands, and onto our bountiful tables.

Now listen. I know we all realize that we are a blessed group of people and that whining about meal planning is ridiculous and petty. After all, are we not thankful for the families we get to feed and for the food we have in abundance in which to feed them?! Yes. We are. We are very, very thankful.

But we also have to remember to buy toilet paper and make it to the appointments and sign the documents and get to all the places on time. So while we are grateful for our lives, we also recognize the truth that trying to think of what food to prepare and feed our families each day is a…

VERY BIG JOB, AMEN.

There now. I have now given us all permission to feel what we feel about food. It sure tastes good, and we sure are thankful for it. But it doesn’t appear on the table without someone thinking ahead about it, buying it, preparing it, cleaning up after it, and then doing it all again for 18,250 tomorrows.

But we do it because:

  • We love our families.
  • We want our families to be healthy.
  • And eating isn’t something that we can’t avoid.

Other jobs that we don’t like we can just ignore, you know? (I’m looking at you – baseboards that need to be dusted.) But figuring out what to feed our families every day – we have to do it whether we like it or not.

So here is my number one, very best suggestion for you…

If you hate meal planning, do this:

Figure out what you will make for dinner each night IN THE MORNING.

Do not, I repeat, DO NOT wait until dinner time to plan dinner. At that time, you are hungry and tired. Your family is hungry and tired. The food is probably still frozen. And ain’t nobody happy.

If you are in the habit of waiting until it’s almost time to eat to figure out what you are going to eat – you are going to run into frustration almost every time. Or, you’re likely to fall back on unhealthy and expensive habits like grabbing take-out or ordering pizza. Those fun options should be reserved for our extra busy days or special occasions – not for the five days a week you failed to plan ahead, again.

And so, in the morning before work or school or before moving forward with whatever it is that keeps you busy each day – figure out what you are going to make for dinner. Then, put that thing in the crock pot, in the fridge, or on a list. Your entire day will go more smoothly, knowing that your evening meal is figured out and can be executed quickly at dinner time.

Simple Seasoned Potato Wedges

If these Simple Seasoned Potato Wedges are healthy to eat, they must be free of fat and flavor, right? Otherwise they couldn’t possibly be healthy, right? Wrong. It’s time to pull out the fryer, my friends.

I love that when made with good oils, fried food can be healthy. I mean, fried food tastes sooo good!

(Let’s be real. Don’t tell me you prefer fresh broccoli over fresh French fries. Okay then.)

No doubt, we need balance, and plenty of fresh green veggies too. But how sad to think we have to avoid chicken strips and French fries simply because they are fried.

Obviously, not all fried food is created equally – and many fried foods are unhealthy for our bodies. But the only thing that makes them unhealthy is the oil that they’re fried in. IF you fry your food in Coconut Oil or Palm Shortening/Oil – oils that can withstand high frying temperatures without compromising their health quality – you can enjoy fried food without guilt.

And I do mean enjoy. C’mon now, fresh French fries?? There’s almost nothing better.

If you don’t have a fryer, you can brush these Simple Seasoned Potato Wedges with oil and bake them in the oven, as they are super tasty that way too! I have and use this fryer, given to me by my men for Christmas several years ago. But either cooking method works great!

Make as many or as few as you would like, generally about one potato per person.

Ingredients
  • Yukon gold potatoes (any potato variety works, but these taste much better!)
  • Refined coconut oil or palm shortening
  • Seasoned salt
Instructions
  1. Wash and cut potatoes into 8-10 wedges each.
  2. Fry in hot oil for 6-10 minutes or until wedges are as crispy as you prefer.
  3. Remove from oil and sprinkle liberally with seasoned salt.
  4. OVEN METHOD:
  5. Melt coconut oil or palm shortening (about 1 Tablespoon per potato).
  6. Cut potatoes into wedges and spread them out in a single layer on a cookie sheet.
  7. Brush melted oil over each wedge.
  8. Sprinkle liberally with seasoned salt.
  9. Bake in a 425 degree oven for about 25 minutes or until potatoes are golden brown and crispy

A Summer Lunch You Can Make in 5 Minutes (Plus 40+ Lunch Ideas)

5-Minute Summer Lunch

It’s no secret that our family loves chips and dips. We eat them as meals and as side dishes, and of course, as snacks! This dip has become one of our favorites to eat as a meal. We can put it together in 5-minutes, and it is delicious! It’s filled with good protein, and the flavor is fabulous!

This recipe includes only 3 simple, real food ingredients. Blend them together quickly to enjoy for a fast lunch. Eat it along with fresh fruit, and truly, this is an awesome summer lunch!

Simple Bean and Cheese Salsa Dip

Ingredients
  • 16-ounces salsa (any variety)
  • 8-ounces softened cream cheese
  • 15-ounce can refried beans or pinto beans

  1. Blend ingredients together until smooth.

Let’s get started with suggestions for your Simple Summer Lunch:

We’ll begin with fruits and veggies because instead of thinking of them second, let’s start thinking of them first!

Fruits and veggies that can be pulled from the fridge and served immediately with little to no prep (beyond washing):

  • Baby carrots (I like the petite carrots – they are sweeter and easier to eat!)
  • Grape tomatoes
  • Mini sweet peppers
  • Sugar snap peas
  • Strawberries
  • Blueberries
  • Blackberries
  • Raspberries
  • Unsweetened Applesauce
  • Bananas
  • Grapes
  • Oranges
  • Clementines
  • Fresh Spinach or Mixed Greens

Fruits and veggies that take a few minutes of prep but are still super simple:

  • Sliced apples
  • Sliced peaches or nectarines
  • Steamed peas (frozen peas cook very quickly!)
  • Sliced cucumbers
  • Sliced sweet peppers
  • Raw broccoli “trees”
  • Cut cantaloupe
  • Watermelon wedges
  • Sliced pears
  • Pineapple chunks
  • Steamed green beans (frozen green beans take just a few minutes, but can cook themselves while you get the remainder of lunch ready)

If you have Homemade Ranch Dip or Hummus on hand, these can be thrown onto the table quickly to help get the veggies down!

Simple Lunches that can be made ahead of time and warmed up quickly:

  • Bean and Cheese Burritos
  • Meat and Cheese Burritos
  • Black Bean Salsa (No need to warm this up! Just take a few minutes to put this together, refrigerate, then pull it out and serve!)
  • Cheesy Salsa Enchiladas (These only take about 15 minutes to put together from start to finish. Make them ahead and bake as needed.)
  • Chicken Salad
  • Tuna Salad
  • Corndogs
  • Sloppy Joes
  • Taco Salad
  • Simple Chicken Cheeseballs with a Kick

Simple Lunches that can be thrown together with little prep time:

  • Black Bean Chicken Nachos
  • Homemade Pizza (I’ve been buying ready-made whole wheat pizza crusts from Azure Standard and they are awesome! I can make Homemade Pizza Crusts to keep in the freezer, but I don’t have time right now, so purchased crusts for the win!)
  • Quesadillas
  • Easy Cheesy Bean Dip
  • Pizza Boats
  • Creamy Mac and Cheese
  • Beanie Weanies
  • Guacamole
  • Simple Last Minute Nacho Plate
  • Sliced Ham
  • Simple Crock Pot Pizza Casserole (take 5 minutes to put this together in your crock pot during breakfast; then serve it at lunchtime!)
  • Turkey and Cheese Melts (use leftover bread or buns, top them with lunch meat and cheese, then melt them under a broiler for 2-3 minutes)

Simple Lunches that are flexible and can be eaten in more than one way:

  • Chili (served on baked potatoes, hot dogs, or in a bowl by itself!)
  • Baked Potatoes in the Crock Pot (serve with chili, taco toppings, ham and cheese, or plain ol’ butter and sour cream!)
  • Real Food “Velveeta” and Rotel Dip (serve with chips, then serve the leftovers over pastaor baked potatoes)

Easy Whole Grain Chocolate Pancakes

This recipe is so easy I’m not sure why we haven’t been making this for years and years. Not to spoil the punch-line, but it is a fact that we can make Whole Grain Chocolate Pancakes simply by whisking some unsweetened cocoa powder into our pancake batter. Yup, it’s that easy!

I’ve always loved fresh berries and whipped cream on my pancakes, but on Chocolate Pancakes? Be still my heart.

Or on another day, I might spread homemade peanut butter over my chocolate pancake for a fabulous chocolate peanut butter combo. You know, for the added protein. Yes, that’s why I do it. ;)

The topping possibilities for these Easy Whole Grain Chocolate Pancakes are endless, and I love the fun and ease of turning regular pancakes into a chocolate surprise.

I always have a big container of Homemade Pancake Mix on hand, so making a batch of these pancakes is even easier! Here’s how I make these:

Ingredients
  • 1 cup whole grain flour (I use freshly ground hard white wheat)
  • ½ teaspoon baking powder
  • ½ teaspoon sea salt
  • OR 1 Cup Pancake Mix**
  • 3 Tablespoons unsweetened cocoa powder
  • 1 cup cultured buttermilk or regular milk
  • 1 egg
  • 3 Tablespoons melted butter (or oil)
Instructions
  1. Whisk together the ingredients until the batter is smooth.
  2. Cook pancakes on a well buttered, hot skillet or griddle, flipping once bubbles begin to form.
  3. Serve with real maple syrup, applesauce, jelly, fresh fruit, or any of your favorite pancake toppings.

Simple Creamy Pasta in the Instant Pot

Introducing what has become my very favorite pasta meal to prepare: Simple Creamy Pasta in the Instant Pot!

This is one of those recipes you’ll want to keep in your hip pocket for days you have no time to cook. Because guess what? Making this takes less time than it takes to run through a drive through to pick up take-out!

As you know, I love having hamburger meat cooked ahead of time to pull out and use as needed for super quick meals. You can read here about how I cook 5-7 pounds of frozen hamburger meat in 30-minutes in my Instant Pot. It’s a HUGE time saver!

This pasta recipe only takes 10-15 minutes from start to finish!

If I already have meat cooked, I stir it into my Instant Pot with the other quick ingredients, turn on my pot, and have a meal after about 10 minutes. Total. It’s unreal!! (Meanwhile, I get out salad fixin’s and we’re ready to eat this nourishing, very tasty meal!)

If I don’t have meat already cooked, I quickly brown it in my Instant Pot before adding the other ingredients and I’ve only added a few minutes of prep to this dish.

Either way, you can see that this meal is incredibly fast to put together. And everyone in my family loves it. You can’t go wrong with cheesy, creamy pasta!!

Don’t have an Instant Pot?

I have this one and I absolutely love how much time it saves in the kitchen. So do consider investing! But if you prefer, you can mix the ingredients together in your crock pot and cook it on low for 4 hours. Simple Creamy Pasta in the Instant Pot

Ingredients
  • 1 pound ground beef, turkey, or venison
  • 2 Tablespoons minced onion
  • 1 pound whole grain pasta, any shape
  • 24-ounces spaghetti sauce
  • 3 cups water
  • Sea salt to taste
  • 1 cup parmesan cheese
  • 1½ cups heavy whipping cream
Instructions
  1. Cook ground meat and onion together until meat is no longer pink. (I usually have meat pre-cooked to stir into this recipe. But you can use the saute function on your instant pot to make this a one-dish meal.)
  2. Stir cooked meat and dry pasta into the instant pot.
  3. Salt liberally.
  4. Pour on spaghetti sauce and water, stirring until barely combined.
  5. Seal instant pot and cook on "hi" pressure, manual for 5 minutes.
  6. Do a quick release of pressure to open the lid.
  7. Stir in parmesan cheese and cream.
  8. Serve!

“Just Dump Some Sauce on Some Chicken!”

Frustrated about food, overwhelmed about feeding your family healthy meals, always feel like getting take out instead of cooking? And then are you feeling guilty that this is how you feel day after day? Ok then. I’m about to give you some simple cooking instructions that will change your life: “Just dump some sauce on some chicken.”

Where there is chicken and there is sauce, there is dinner. I know. Profound. No matter if you have boneless chicken, chicken legs, or a whole chicken. Grab you some chicken, grab you some sauce, and “Just dump some sauce on some chicken!”

Just dump some sauce on some chicken…

What kind of sauce, you ask? It matters not. I have been known to use salad dressing out of my fridge, or Teriyaki sauce, or Bbq sauce, or salsa, or anything in a jar or bottle that looks like it might possibly taste good on chicken. Sometimes I mix two or more sauces, which is possibly weird but always tasty. And as an added bonus, this helps me clear out random half-empty bottles hanging out at the back of my fridge.

This is about to become your stress-free go-to meal phrase.

Say it with me: “Just dump some sauce on some chicken!”

  • Not sure what to make tonight? “Just dump some sauce on some chicken!”
  • Tempted to go out to eat…again? “Just dump some sauce on some chicken!”
  • Hate cooking and use that as an excuse to eat poorly? No more. “Just dump some sauce on some chicken!”

Find you some chicken. Get out some sauce. Pour it right on and let it cook while you do something else you enjoy. THIS HAS TO BE THE EASIEST MEAL EVER.

I so badly want everyone to understand this. Making real, good food for our family does not have to be difficult. When all you have to do is open a package of chicken and pour on some sauce – wouldn’t you agree with me that cooking good food really can be easy?

Also? Chicken cooked in sauce tastes incredibly good.

Let me walk you through this step by step

The Crock Pot Chicken/Sauce Meal:

  1. Get a package of boneless chicken, chicken legs, or a whole chicken out of the fridge or freezer.
  2. Put the chicken into a crock pot.
  3. Get out whatever sauce you have available. Barbecue. Italian Dressing. Sweet and Sour. Teriyaki. A mixture of this and that because you are collecting all the mostly empty bottles of sauce out of the fridge.
  4. Dump the sauce onto the chicken. (There’s no exact amount. “Just dump some sauce on some chicken!”)
  5. Put the lid on the crock pot.
  6. Cook the chicken on “low” for 6-8 hours. (A whole chicken may require 10 hours on low.)
  7. Eat the chicken.

The Oven Baked Chicken/Sauce Meal:

Shorter on time? Do this instead:

  1. Get a package of boneless chicken, chicken legs, or a whole chicken out of the fridge. (Thawed meat is best for this method.)
  2. Put the chicken into a 9×13 inch pan.
  3. Get out whatever sauce you have available.
  4. Dump the sauce onto the chicken. (There’s no exact amount. “Just dump some sauce on some chicken!”)
  5. Slide the pan into the oven and bake at 350 degrees for 25 minutes for boneless chicken, 50 minutes for chicken legs, or 1 1/2 hours.
  6. Eat the chicken.

What should you serve with your chicken?

Well that depends on how much time you have, what you have on hand, and what your energy level is.

If you have time to work ahead, I’d suggest making this incredible Stick of Butter Rice. Or these Instant Pot Mashed Potatoes.

Beyond that, I encourage you to pick a fruit and a veggie or three. Perhaps:

  • A tossed salad
  • A steamed vegetable (such as green beans, peas, broccoli, cauliflower)
  • A roasted vegetable
  • Buttered corn
  • Honey’d carrots
  • Baked beans

But if you don’t want to or have time to prepare or cook anything to go with your chicken, serve it with something like:

  • Sliced apples
  • Oranges
  • Canned pineapple
  • Baby carrots
  • Fresh berries

And if you need something more to round out your meal, you could grab something like this out of your fridge:

  • Cottage cheese
  • Sliced cheese
  • Bread and butter
  • Pickles
  • Olives

There now. You needed a meal for your family. You didn’t have time to cook. You needed a quick solution.

Simple Make-Ahead Parmesan Burgers

I’m not sure if you’re keeping track or not, but this is the third variation I’ve shared in two weeks using the exact same recipe. Woohoo for easy versatility! Today we’re taking our Simple Make-Ahead Parmesan Meatball recipe and basically smashing the mixture into Simple Make-Ahead Parmesan Burgers. Are we smart or are we smart?

The idea came to me as I was working ahead to make a bunch of Parmesan Meatballs for the freezer. Either I got tired of scooping out meatballs, or I got a brilliant idea. It might have been both. After scooping out about 2 1/2 pounds of meatballs, I decided to abort my meatball endeavor. I took my remaining mixture and formed it into burger patties. I froze them, then we pulled them out to fry another day.

Fantabulous!

Might I recommend that you make these Simple Make-Ahead Parmesan Burgers with a side of Sweet Potato Fries or Simple Seasoned Potato Wedges?

Simple Make-Ahead Parmesan Burgers

Ingredients
  • 2 pounds ground beef or turkey
  • 2 eggs
  • 3 Tablespoons dried minced onion
  • ½ cup shredded (or grated) parmesan cheese
  • 1 teaspoon sea salt

  • ½ teaspoon garlic powder
Instructions
  1. Mix all ingredients together until well combined.
  2. Press together burger-sized patties.
  3. Fry in a skillet or on a grill for 8-12 minutes or until the meat is no longer pink.
  4. Serve right away, or refrigerate or freeze cooked burgers to easily reheat for a meal later.
  5. OR, freeze the prepared raw burgers, thaw as needed, and fry as directed.

Simple Saucy Parmesan Meatballs

If it seems too simple, that’s because it is. Today I am sharing what is so obvious, you probably already thought of it yourself. Still, it is worth taking the time to mention the idea to take the Simple Make-Ahead Parmesan Meatballs, add sauce, and make the meatballs into a brand new meal of Simple Saucy Parmesan Meatballs!

Oh how I love food that is versatile like this. When we can make one recipe, but turn it into whatever we need it to be – now THAT is a recipe to keep in our back pockets!

Like literally. Print this out and put it in your back pocket. Later, you’ll reach in and say, “Oh! I have something in my back pocket. Could it be a $5 bill I forgot about? No? It’s a recipe for Simple Make-Ahead Parmesan Meatballs? Well that’s even better than surprise cash!”

Yes, that is exactly the scenario that will happen when you put this recipe in your back pocket.

Now my friends, watch and see how easy it is to make a delightful (and ridiculously obvious) variation to our newly beloved Simple Make-Ahead Parmesan Meatballs. We shall now add sauce, serve them with our favorite pasta, and make everyone in our family very happy. But no one will quite be as happy as we are because we are the ones cooking the food and we are the happiest about the ease of this recipe idea!

  • 1-2 pounds of pre-made Parmesan Meatballs*
  • 16-ounces of our favorite pasta sauce (red or white!)
  • 12-ounces cooked pasta
Instructions
  1. Reheat or bake meatballs* as directed.
  2. Pour sauce over meatballs and simmer until heated through.
  3. Serve over your favorite prepared pasta. OR
  4. Serve with rice or potatoes if you like!

Who gets excited about something silly like Simple Make-Ahead Parmesan Meatballs? This girl. Indeed, I get very, very excited.

I like beef. I like meatballs. I like anything that can be made ahead of time. No. Scratch that. I LOVE anything that can be made ahead of time. And if it’s also made from beef, well, that makes me one happy girl!

You can make this recipe ahead and store the meatballs in the fridge or freezer UNBAKED. Or you can PRE-BAKE up a huge batch and pull out a few as needed to reheat quickly. This recipe is flexible to meet your family’s needs!

Simple Make-Ahead Parmesan Meatballs

Simple Make-Ahead Parmesan Meatballs

Serves: 16-20 meatballs
Ingredients
  • 2 pounds ground beef or turkey
  • 2 eggs
  • 3 Tablespoons dried minced onion
  • ½ cup shredded (or grated) parmesan cheese
  • 1 teaspoon sea salt
  • ¼ teaspoon ground pepper
  • ½ teaspoon garlic powder
Instructions
  1. Mix all ingredients together until well combined.
  2. Scoop any size balls out onto a cookie sheet (I use a large scoop).
  3. Bake in a 350 degree oven for 30-45 minutes or until the meat is no longer pink.
  4. Serve right away, or refrigerate or freeze baked meatballs to easily reheat for a meal later.
  5. OR, freeze the prepared meatballs UNBAKED, thaw as needed, and bake as directed.
