We’ve worked and we’ve wrapped and we’ve traveled and we’ve prepared and we’ve baked and we’ve cleaned. We made all the fun treats and the special dishes and the favorite meals. If you’re anything like me, you’ve enjoyed a wonderful Christmas holiday and from now until January 2, you simply want to sit back and enjoy a break.

mug overflow (1)

Here’s what I want to do right now. I want to play all the new games we got for Christmas. I want to watch too many movies. I want to sit under a blanket and sip coffee. I want to relish the fact that my oldest is home from college and we are all together again for a few short days. I want to fully enjoy the fact that there are no Geometry lessons or English papers or school deadlines right now.

easy-nacho-plate

Take a Break After Christmas!

And as much as I love to cook, right now I do not want to cook. I most certainly do not want to clean my kitchen. These days are considered days of rest and I fully intend to find refreshment with my family right now.

Who else feels this way? Surely none of you are working on projects or cleaning or organizing while I talk smack with my family around a board game? Tell me you’re taking a break right now too!!!

Well, even though we certainly want to enjoy some downtime, it is a fact that we all still need to eat. So today, I’m posting 36 recipes that take just a few minutes to put together. Hooray for Simple Recipes! Hooray even bigger for Simple Meals, which takes all the brain work out of our menu planning, telling us what to make and what to buy, giving us permission to get out of the kitchen and enjoy our families!

Simple Baked Garlic Parmesan Chicken Legs

November 12, 2017 by Laura 7 Comments

Today I must begin by apologizing to all the chicken legs. I have underestimated how amazing these gems could taste. I truly had no idea these humble pieces could possibly be so spectacular. Now that I’ve discovered this Simple Baked Garlic Parmesan Chicken Legs recipe, the leg of a chicken will forever rise to the top of my meat choices. Move over Prime Rib. The Chicken Leg is where it’s at.

garlic chicken 5

See, we all know that Prime Rib is delicious because its price tag tells us so. But Chicken Legs? They are so budget friendly. In fact, I watch for mark-downs and get them for less than a buck per pound. Incredible! So obviously I almost always leave behind the rib and go for the leg. There is no other way.

But now we will all learn that this very inexpensive meat selection has turned out to be one of the most delicious items on the menu. Perhaps it is the garlic and the Parmesan we use in this recipe. It likely has something to do with the butter, because obviously, chicken and all of life is better with butter.

Mix all these wonders together and pour them over the infamous chicken leg, and you may just pass out on your plate at first taste. You have been warned. I am not responsible for your medical bills if you fail to brace yourself for this. I have done my part by providing your joy in the form of a leg of a chicken slathered in the most delicious sauce you’ve ever eaten.

Easy Chocolate Cheesecake Muffins

Allow me to share with you the story of day these Easy Chocolate Cheesecake Muffins were born.

chocolate cheesecake muffin11

One day I thought to myself, “What if I mixed up chocolate muffins as usual? Then what if I poured cheesecake topping on them before I baked them? What if?”

I did all of that, but then I one-upped my idea by sprinkling mini-chocolate chips on top just before sliding them into the oven. This, of course, completed the recipe as if I was baking perfection itself.

chocolate cheesecake muffin22

Upon the birth of these delicious chocolate cheesecake babies, I began to consider other cheesecake-topped muffin options and lo, their little muffin siblings were born into the world. Coming soon to a Heavenly Homemakers blog near you:

  • Pumpkin Cheesecake Muffins
  • Banana Cheesecake Muffins
  • Chocolate Chip Cheesecake Muffins

You see, once I started, I simply couldn’t stop. This resulted in 48 muffins atop my kitchen counter (and a significant number of dirty mixing bowls in my sink). Therefore, I had no choice but to invite approximately half the college campus to come over and eat muffins. I made for them a huge jar of Iced Coffee with which to wash them down.

And behold, it was good.

Additional Cheesecake Muffin recipes coming soon!

It is a fact that I was able to crank out 48 muffins in one setting because I had a container full of Muffin Mix just begging to be used. This made it so easy that I just kept scooping, mixing, playing, and creating.

simple mixes

I said it before. I’ll say it again. These Simple Mixes are my new super power.

chocolate chip cheesecake muffin11

I now present to you the first of the series of cheesecake muffin recipes. And if I’m you, I’d take advantage of the Simple Mixes that Save the Day eBook offer so that you, too, will be given this Super Power. Then we can all make all these muffins as quickly as possible and also we can teleport. What? If I’m going to have a Muffin Mix Super Power, I would also like to teleport. A girl can dream.

Super Moist Sour Cream Pumpkin Bread

Your fall is now complete because of this Super Moist Sour Cream Pumpkin Bread.

pumpkin bread11

Now, before I share this recipe, I will acknowledge the fact that some people do not like the word “moist.” Some hear a phrase such as “this towel got a little moist” or “I just stepped on something moist” and suddenly their skin is crawling as if someone scratched their fingernails across a chalkboard. Indeed, the word “moist” makes some people shudder, and because of this, my sons think it is fun to use this word way more often than is needed. They wear this shirt with pride —>

moist shirt

Why? Because they are gentlemen who care about the feelings of others.

But now let’s talk about the word “moist” in the context of a baked good. I believe this gives it a wonderful and good meaning. After all, who doesn’t like their cake or quick bread to be perfectly moist? Especially when the alternative is that the cake or quick bread is dry and crumbly? Shouldn’t we, even those of us who don’t like the word “moist,” want our baked goods to be moist? Of course we should.

Rest assured, this bread is moist because of the sour cream, which makes it delicious and that’s all there is to it.

Honey Sweetened No-Bake Cookies – Prepare To Be Amazed!

October 5, 2017 by Laura 11 Comments

When you no longer eat much sugar, but you want to enjoy your childhood favorite No-Bake Cookies…you make the cookies with a little bit of honey to see if you can pull it off. They turn out so delicious you start dancing in the living room.

no bake cookies 11

What? Of course you can dance about cookies. Delicious No-Bake Cookies made with honey are worth dancing over.

no bake cookies 22
For the record, I don’t dance in public. There is good reason for this as my feet and my head don’t always play nice together. My head knows where my feet should go and gives directions accordingly. But then my feet are like, “Are you kidding me right now?” then my head is like, “That is not at all what I told you to do; what are you actually thinking?” and my feet say, “You aren’t the boss of me, I’ll do what I want.” So then my brain gives up and says, “Forget it. At least I’m good at making cookies.”

My friend Kim sent me this recipe idea, then I tweaked it just a bit to make it my own. I guess we could say that it’s Kim’s fault that I was dancing in the living room. She can be glad I didn’t invite her over to watch. Though I probably should thank her with a cookie sometime.

Simple Lasagna Casserole (Instructions for Instant Pot or Crock Pot!)

September 3, 2017 by Laura 14 Comments

This Simple Lasagna Casserole makes it possible for me to offer this proclamation: If life gets any easier, we will all have to find new hobbies.

lasagna casserole1

Just kidding. No doubt we all have plenty to fill our days. It’s just that all these Simple Meals take so little time and energy to prepare, we are all shocking ourselves with how quickly we can put a delicious, real food meal on the table!

Prep time for this Simple Lasagna Casserole recipe takes a tiny 5 minutes. Cook time in the Instant Pot takes another 5 minutes. Good grief, I barely have time to get out salad fixings, plates, and forks before my Instant Pot beeps to tell me that dinner is ready.

On the other hand, sometimes it’s nice to start dinner ahead of time, leave, and come back to it a few hours later. That’s where the Crock Pot comes in. I can start this casserole cooking in my crock pot (which also takes only 5 minutes of effort), walk away, do a load of laundry, answer a dozen emails, leave the house, scream for my boys at a soccer game, and come home to a ready-made dinner.

lasagna casserole2

NOTE: One of the tricks to making this meal so fast and easy to put together is having Cooked Hamburger Meat already prepared and ready to stir into this dish. If you have an Instant Pot, I highly recommend cooking it this way to get ahead on your hamburger. If you don’t have an Instant Pot, I still recommend cooking hamburger meat ahead of time on the stove-top, then freezing it in meal size portions to make dinner prep easier!

Master List of Simple Lunch Ideas

For everyone who is home with a family to feed during lunchtime every day, this List of Simple Lunch Ideas is for you! These lunches are all made with simple, real foods. (Coming soon: A list of great simple, real food lunches to pack and take to work and school.)

Keep Lunch Simple

As a brand new school year approaches and I am praying away the scheduling craze that is trying to creep in along with the turning of the calendar pages, I’ve decided to put together Master Lists of food and recipes and ideas to make lunches, breakfasts, snacks, and lunchbox options as simple as possible each day. Today’s list:

The Master List of Simple Lunch Ideas

But Laura! You home school and work from home so you’re home all day. Why is it difficult to get food on the table?

{And Laura falls on the floor laughing and crying and kicking the chairs in her path while throwing couch pillows.}

Dear friends. Homeschooling only means that our books and software live in the house and our school is operated out of the home instead of a classroom. We are on the run a significant amount of time between music lessons, college classes, field trips, service opportunities, athletic events, church activities, library runs, and the like.

For our family, homeschooling and working from home has offered us the coolest, most wonderful, and fabulously flexible opportunity and we are extremely grateful for the relationships we have with our kids and with the community because of it. But it also lends itself to extremely full days with little down time. So in the name of sanity…

This mama needs a Master Simple Lunch List.

And a Master Breakfast List. And a Master Snack List. Watch for those lists, coming very soon. (Subscribe here so you don’t miss them!)

Where’s the list of Simple Dinners? This is already taken care of with our Simple Meals plans. I follow those, so our evening meals hit the table very quickly. I am so, so thankful for this!

Why not eat sandwiches every day for lunch?

The short answer is that it would cost my family too much money. The other short answer is that we prefer more variety of nutrients and less carb-heavy meals.

No matter what though, I recommend that we always, always…

Eat a fruit and a veggie with each lunch.

This is easier than you think. I’ll tell you how! I think it’s time for the list, don’t you? (To make this much easier, you can download this entire, beautiful Master Simple Lunch List here.)

We’ll begin with fruits and veggies because instead of thinking of them second, let’s start thinking of them first!

Fruits and veggies that can be pulled from the fridge and served immediately with little to no prep (beyond washing):

  • Baby carrots (I like the petite carrots – they are sweeter and easier to eat!)
  • Grape tomatoes
  • Mini sweet peppers
  • Sugar snap peas
  • Strawberries
  • Blueberries
  • Blackberries
  • Raspberries
  • Unsweetened Applesauce
  • Bananas
  • Grapes
  • Oranges
  • Clementines
  • Fresh Spinach or Mixed Greens

Fruits and veggies that take a few minutes of prep but are still super simple:

  • Sliced apples
  • Sliced peaches or nectarines
  • Steamed peas (frozen peas cook very quickly!)
  • Sliced cucumbers
  • Sliced sweet peppers
  • Raw broccoli “trees”
  • Cut cantaloupe
  • Watermelon wedges
  • Sliced pears
  • Pineapple chunks
  • Steamed green beans (frozen green beans take just a few minutes, but can cook themselves while you get the remainder of lunch ready)

If you have Homemade Ranch Dip or Hummus on hand, these can be thrown onto the table quickly to help get the veggies down!

orange

Simple Lunches that can be made ahead of time and warmed up quickly:

  • Bean and Cheese Burritos
  • Meat and Cheese Burritos
  • Black Bean Salsa (No need to warm this up! Just take a few minutes to put this together, refrigerate, then pull it out and serve!)
  • Cheesy Salsa Enchiladas (These only take about 15 minutes to put together from start to finish. Make them ahead and bake as needed.)
  • Chicken Salad
  • Tuna Salad
  • Corndogs
  • Sloppy Joes
  • Taco Salad
  • Simple Chicken Cheeseballs with a Kick

Simple Lunches that can be thrown together with little prep time:

  • Black Bean Chicken Nachos
  • Homemade Pizza (I’ve been buying ready-made whole wheat pizza crusts from Azure Standard and they are awesome! I can make Homemade Pizza Crusts to keep in the freezer, but I don’t have time right now, so purchased crusts for the win!)
  • Quesadillas
  • Easy Cheesy Bean Dip
  • Pizza Boats
  • Creamy Mac and Cheese
  • Beanie Weanies
  • Guacamole
  • Simple Last Minute Nacho Plate
  • Sliced Ham
  • Simple Crock Pot Pizza Casserole (take 5 minutes to put this together in your crock pot during breakfast; then serve it at lunchtime!)
  • Turkey and Cheese Melts (use leftover bread or buns, top them with lunch meat and cheese, then melt them under a broiler for 2-3 minutes)

strawberry

Simple Lunches that are flexible and can be eaten in more than one way:

  • Chili (served on baked potatoes, hot dogs, or in a bowl by itself!)
  • Baked Potatoes in the Crock Pot (serve with chili, taco toppings, ham and cheese, or plain ol’ butter and sour cream!)
  • Real Food “Velveeta” and Rotel Dip (serve with chips, then serve the leftovers over pasta or baked potatoes)
