Easy Chocolate Banana Bread

Two recipes ago, we shared something chocolate. One recipe ago, we shared about bananas. Today, we combine these two delights into a Chocolate Banana Bread!

There are a few secrets to making this Chocolate Banana Bread turn out fabulously. First, be sure to add sour cream or yogurt to the recipe. I’ve been doing this for years with my muffins, but for some reason, it took me a while to realize I should add this ingredient to my Banana Breads. One of my brilliant sisters-in-law reminded me of this need, which is a game changer for Banana Bread for all time! Add sour cream or yogurt = No more dry Banana Bread!

Next, I have learned that not all chocolate is created equal. Sure, you can use any ol’ unsweetened cocoa powder. But do yourself a favor and order any of the Unsweetened Cocoa Powders from Olive Nation. (And use the code home to get 20% off!) I can’t tell you what a wonderful difference these cocoa powders have made in my chocolate recipes. The quality is MUCH better, and they do not cost more than I was spending on the lesser varieties. Easy Chocolate Banana Bread

Easy Chocolate Banana Bread

Serves: 1 loaf
Ingredients
  • 1½ cups whole wheat flour (I use freshly ground soft white wheat)
  • ⅓ cup sugar, brown sugar, or sucanat
  • ⅓ cup cocoa powder
  • 1 teaspoon baking powder
  • ¼ teaspoon sea salt
  • 1 cup mashed over-ripe bananas (about 2-3 bananas)
  • ½ cup sour cream or plain yogurt
  • ⅓ cup melted coconut oil or butter
  • 2 eggs
Instructions
  1. In a large mixing bowl stir together flour, sugar, cocoa powder, baking powder, and salt.
  2. Add mashed bananas, oil, sour cream and eggs.
  3. Stir until ingredients are well combined.
  4. Pour mixture into a buttered bread pan.
  5. Bake in a 350 degree oven for one hour or until a toothpick inserted in the middle comes out clean.

Real Food, Real Easy Banana Pudding Recipe

Need a fun Banana Pudding Story before reading the recipe? Of course you do.

Our 5-year old Bonus Boy has some speech challenges, which have been coming along quite nicely during the past few months. He works hard to make improvements and we make speech practice into a fun game. We found that he was capable of making bigger strides, but he continued to say some of his words and sentences in a lazy way, like when he asked for a banana. If he wanted a banana, he would say, “I nana.” Communication was established, but we knew he could do better.

So we’d stop and make him ask in a full sentence. And we practiced and practiced on the word ba-na-na. Over and over, we tapped it out and had him say all the syllables. He got it rather quickly, but now he still breaks up all the syllables as if that is the correct way to say ba-na-na. It’s extremely adorable, and he’s 5, so we’re letting it go for now.

All this to say: When making and eating this Banana Pudding, you must say it like we now say it at our house. Ba-na-na Pudding. Then you have to grin very proudly because you said ba-na-na correctly. Yay you!

Easy Banana Pudding

Real Food, Real Easy, Banana Pudding Recipe

Ingredients
  • 2½ cups milk
  • 3 egg yolks
  • ¼-1/2 cup real maple syrup
  • 4 Tablespoons arrowroot powder or cornstarch
  • ¼ teaspoon sea salt
  • 1 teaspoon vanilla
  • 2 bananas, sliced into "coins"
Instructions
  1. In a medium saucepan, whisk together milk, egg yolks, maple syrup, arrowroot powder, and salt. Cook over medium heat, whisking/stirring CONSTANTLY until pudding begins to thicken.
  2. Stir over the heat for about 15 more seconds.
  3. Remove immediately from the heat, and continue to stir until pudding is creamy.
  4. Add vanilla and continue to stir until mixed.
  5. Pour into serving dishes, layering the pudding with sliced bananas.
  6. Chill for two hours before serving.
  7. Serve with vanilla wafers if you like.

Easy White Chocolate Chip Muffins

My Chocolate Chocolate Chip Muffin recipe has been a family favorite at our house for years and years. One day I decided to make them extra special by subbing regular chocolate chips for white chocolate chips. It’s a simple, genius idea, taking these muffins from something special to something even more special! Ahh, life’s simple pleasures. Get ready to give these Easy White Chocolate Chip Muffins a try!

Not all white chocolate chips are created equal. Some are full of hydrogenated oils, so I avoid those. Allllll of them are full of sugar. That’s what makes them taste good. That and the cocoa butter. Therefore, just don’t eat the whole batch of muffins by yourself and all will be well! :)

I like to order my White Chocolate Chips in bulk from Olive Nation. (By the way, use the code home and they’ll give us a 20% discount!) The white chocolate chips freeze well, so I keep them on hand and pull them out to use as needed. (Yes, because white chocolate is apparently a need. It ranks up there with coffee and other essentials.)

Ingredients
  • 2 cups Muffin Mix** or...
  • 1½ cups whole grain flour
  • ⅓ cup brown sugar or sucanat
  • ⅓ cup unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ½ teaspoon sea salt
  • 1 egg
  • ½ cup milk
  • ½ cup sour cream
  • ¼ cup melted coconut oil
  • ½ cup white chocolate chips
Instructions
  1. Scoop Muffin Mix or measure dry ingredients together in a bowl.
  2. Add egg, sour cream, milk, and melted coconut oil, stirring until ingredients are combined.
  3. Fold in chocolate chips.
  4. Scoop batter into 12 prepared muffin tins.
  5. Bake in a 400 degree oven for 20-25 minutes or until a toothpick inserted in the middle comes out clean.

Simple Cheeseburger Noodle Crock Pot Dinner

Ready for a deliciously easy Crock Pot meal? This Simple Cheeseburger Noodle Crock Pot Dinner is a hit for everyone at our table. But mostly it is a hit with me because it’s so very easy to make!

The more I put my mind to learning simple, real food cooking methods, the better my kitchen life has become! I’ve stopped peeling potatoes (Yukon Gold, baby). I’ve quit thawing meat (I’ve stopped trying to remember). And if at all possible, I’ve stopped boiling noodles (life’s too short). What kind of lazy cook have I become, anyway? Ah, no. I prefer to call it being a smart cook!

I think it is delightful to drop dried pasta into my crock pot along with a few other ingredients, then come back a few hours later to a dinner that’s ready to be served. The creaminess of this recipe is what makes it so popular. And if you want to save a few dollars, skip the meat in this recipe. It’s delicious either way!

Simple Cheeseburger Noodle Crock Pot Dinner

Simple Cheeseburger Noodle Crock Pot Dinner

Ingredients
  • 1 pound hamburger meat
  • 1 small chopped onion OR 3 Tablespoons dried minced onion
  • 12-ounces UNCOOKED whole grain egg noodles
  • 2 cups sour cream
  • 30-ounces tomato sauce (2 cans)
  • 1 cup water
  • Sea salt and pepper to taste
  • ½ teaspoon garlic powder
  • 1 teaspoon parsley flakes
  • 2 cups shredded cheese (we like cheddar or Colby jack)
Instructions
  1. In a skillet, cook hamburger and onion together until meat is no longer pink. Drain if necessary.
  2. Stir cooked meat along with all other ingredients into a crock pot.
  3. Cover and cook on low for 3-4 hours.

Delicious Low Sugar Chocolate Bundt Cake with Chocolate Glaze

Because I am your friend, I am sharing this Delicious Low Sugar Chocolate Bundt Cake with Chocolate Glaze just in time for Valentine’s Day. See, you can make this cake any time, any day. But Valentine’s Day is sort of an excuse to eat chocolate. So this cake recipe comes to you just in time!

Does the recipe look familiar? It should. I originally created and shared this recipe a few years ago, baking it in a regular cake pan. It remains my all-time favorite cake recipe, and I usually spread Low Sugar Cream Cheese Frosting over the top.

But sometimes it’s fun to mix things up a little by, you know, pouring your cake batter into a pan of a different shape. Do I know how to party or what?

Ingredients
  • 1 cup melted coconut oil
  • 1 cup water
  • 4 Tablespoons unsweetened cocoa powder
  • 2 cups whole wheat pastry flour
  • ½ cup sucanat or brown sugar
  • dash of sea salt
  • 1 teaspoon baking soda
  • ½ cup sour cream
  • 2 eggs
  • CHOCOLATE GLAZE:
  • ½ cup butter
  • 4 Tablespoons cocoa powder
  • 2 Tablespoons milk
  • 2-4 Tablespoons honey (sweeten this to your taste)
  • 1 teaspoon vanilla extract
Instructions
  1. In a large mixing bowl, stir together flour, sucanat, salt, and baking soda.
  2. Set aside. In a saucepan, bring oil, water, and cocoa to a boil.
  3. Pour liquid mixture into the bowl with the dry ingredient mixture.
  4. Stir well.
  5. Add sour cream and eggs, mixing well.
  6. Pour batter into a buttered bundt pan.
  7. Bake in a 350° oven for 30-35 minutes or until a toothpick inserted in the middle comes out clean.
  8. Allow cake to cool completely before drizzling chocolate glaze over the top.
  9. For CHOCOLATE GLAZE:
  10. In a small saucepan combine butter, cocoa, milk, and honey.
  11. Cook and stir over low heat until ingredients are well combined and mixture begins to thicken slightly.
  12. Remove from heat.
  13. Stir in vanilla.
  14. Drizzle over cooled cake.

My favorite part is that they are mostly black and white, so you can print in “grayscale” if you want to so that they don’t use much printer ink! Then you can glue them onto colored paper if you want, or have your kids color them, which makes these cards more personal and more fun!

Our new-to-us 5-year old son LOVES projects of all kinds. He loves to be busy, loves to play, loves to sing, loves to help us with projects around the house. It is incredibly sweet, and also a little bit challenging as we sometimes have big-kid and adult-sized projects that a 5-year old can’t help with. We’re working to train him to play on his own or to work quietly at a table by himself sometimes. This is tough for any 5-year old, but maybe a little more challenging for this one.

Anyway, we’re getting there! We created these Simple Valentine Cards for him to color and get ready to deliver to his friends. Then we’ll work together to make some Valentine treats to go with them. Yep, he loves to bake with us too! (Phew, he’s keeping us young…and on our toes!)

Simple (Mostly Real Food) Tator Tot Casserole

Is it possible? Am I actually going to present you with a Tator Tot Casserole? Yes, and I feel no shame. I have purchased the tator tots and I have put them onto a casserole and I am sharing the recipe with you here today.

I was able to simply adapt the original recipe I was given many years ago to turn it into a mostly “real food recipe.” No cream of mushroom soup here! Still just as delicious. Everything in this casserole is wholesome and good. But the tator tots on top? I dumped them right out of the bag and I ignored the ingredient list and well, that is all. I just did.

Remember that one time I experimented and came up with a way to make Homemade Tator Tots? Who even was that girl anyway? She sure was ambitious! And fun and creative. But now? Well, I just don’t spend my time making tedious recipes anymore. And typically I don’t use packaged ingredients in recipes. But I got a hankering for my childhood favorite Tator Tot Casserole and I just went for it!

Tator tots aside, everything else in this recipe is created from whole foods and great ingredients. They are likely ingredients you already have on hand, which makes this a simple and fun meal to serve your family.

This recipe freezes well, so while you’re making one Tator Tot Casserole, you might as well make two or three. Then you can freeze the extras for a meal on a busy day!

Simple Tator Tot Casserole

Simple (Mostly Real Food) Tator Tot Casserole

Serves: 6-8
Ingredients
  • 1½ - 2 pounds hamburger meat
  • 1 medium onion or 3 Tablespoons dried minced onion
  • 1 teaspoon garlic powder
  • Sea salt to taste (we find it takes quite a lot of this good salt to provide good flavor in this meal!)
  • 4 cups cooked green beans
  • 3 cups sour cream
  • 3 cups shredded cheese (we use Colby jack)
  • 3 cups tator tots
Instructions
  1. Brown hamburger meat with onion, garlic, and salt.
  2. Mix cooked meat with green beans and sour cream and spread mixture into a 9x13 inch casserole dish.
  3. Spread shredded cheese over the mixture.
  4. Top with frozen tator tots.
  5. Bake in a 425 degree oven for 30-40 minutes or until bubbly.

Easy 4-Ingredient Peanut Butter Truffles for Valentine’s Day

Not that we can’t make a treat like this any day of the year. It’s just that these Peanut Butter Truffles seem best served as a special Valentine’s Day treat. Perhaps we should make a trial batch here in January though? And maybe remind ourselves how to make them sometime next April? Then again in August. All that to say, who am I to tell you when to make these truffles? I totally and completely support your truffle-making choices.

I love how easy these are to make. I love that the only sugar in them is what is already in the chocolate chips. I love the peanut butter-chocolate combo. I love…well, love. So see? These are perfect to make for Valentine’s Day!

Serves: 18-24
Ingredients
  • 2 cups milk chocolate chips
  • ½ cup heavy cream
  • 2 Tablespoons butter
  • ½ cup natural peanut butter (I used homemade peanut butter*)
  • ⅛ cup unsweetened cocoa powder (optional)
Instructions
  1. In a saucepan stir together chocolate chips, cream, and butter over medium heat.
  2. Just as the chocolate chips have almost melted, add peanut butter and stir until smooth.
  3. Spread mixture into a pie pan and chill for about two hours.
  4. Cut and roll mixture into 1 inch balls.
  5. Dip balls into cocoa powder if you like.
  6. Place on parchment paper and chill until set.

*I use homemade peanut butter from one of the following recipes:

  • Peanut Butter (just peanuts!)
  • Peanut Butter (super creamy – like Skippy or Jif)

Roll these truffles in powdered sugar for a fun variety. And place them into holiday colored mini-muffin liners to make them festive!

Simple Cheesy Salsa Chicken – 2 Minute Prep!

What has kept me from thinking of this idea Simple Cheesy Salsa Chicken before? After all, I’ve been on a grand mission to use the same basic, real food ingredients in all different ways to create a variety of easy-to-throw-together meals. And yet, it never occurred to me to put chicken and salsa together, then stir in some cheese?

It’s like the idea was too simple to even become an idea. But aha! We have thought of it, it has become a wonderful idea, and now we can put dinner together with 2-minutes of “work.”

You may recall the Simple Crock Pot Salsa Shredded Beef idea, in which we put a frozen (yes, frozen!) roast into the crockpot and dump salsa on top. It cooks itself, falls apart like magic, and tastes amazing in tacos, burritos, salads, or simply on a fork. Now let’s take that same idea and use chicken instead.

Frozen chicken, to be exact. Unless you are the type to actually remember to thaw your meat. Thawed meat works well too. Some of us are underachievers who cannot handle thinking of and walking to the freezer hours before meal prep time. We feel ridiculous about this weakness, but it is what it is. Dinner arrives at the table just the same because we have learned ways to compensate for our lack of meat-thawing skills. We have accepted that thawing meat is not our gift. We have moved on.

Therefore, we take frozen, boneless chicken and put cook it with salsa until it falls apart. We eat it with joy, and because of this, we are never motivated to remember to thaw meat again.

Simple Cheesy Salsa Chicken - 2 Minute Prep!

Serves: 4-6
Ingredients
  • 2 pounds boneless chicken thighs or breasts
  • 2 cups salsa
  • 1 cup shredded cheese (we like Colby jack best, but any will work!)
Instructions
  1. Place chicken and salsa into a Crockpot, Instant Pot, or cooking pot.
  2. Crockpot: Cook on low for 7 hours.
  3. Instant Pot: Seal and cook on manual at high pressure for 10 minutes.
  4. Stove Top: Cover and cook over low heat for 20-30 minutes or until chicken is cooked thoroughly and shreds easily.
  5. Once meat is cooked, shred or cut into chunks and serve with cheese on top.
  6. Serve over cooked rice or tortilla chips or a bed of lettuce.
