When You Adopt a Five Year Old and Start Teaching Him to Cook…

I taught all of his brothers. It was well worth the effort as now our 14, 17, 19, and 21-year-old sons are quite proficient in the kitchen. It only makes sense then that we would take our 5-year old Bonus Boy into the kitchen and start teaching him to cook.

About the time I started counting down to the empty nest years, as I joyfully started to say “that’s the last time I’ll ever need to XYZ for one of my kids,” while I was beginning to eagerly look into the very near future of life with no more intense parenting requirements, God showed me that He clearly had other, better plans. He provided for us a Bonus Boy. This one with chocolate brown eyes and a giggle that fills our entire house with laughter.

I’m learning to balance the needs of my adult and teen children with the needs of a little one. I find myself juggling two seasons at once, paying college bills with one hand while wiping a nose with the other. Somewhere in there, I’m squeezing in Government and History lessons with my high school and middle school aged sons.

Once again, I have found myself pulling up the stool in the kitchen for the little guy, showing him how to crack eggs without getting it all over the…oops. Too late. Let’s clean it up and try again. Meanwhile, my high schooler is scrambling his own eggs over at the stove. He used to be the one smashing eggs onto the countertop. Now he is capable and resourceful – and if I need him to, he’ll make an entire meal for the family.

I know this will be the outcome for our newest one too. So I patiently clean up the egg slime with Bonus Boy and we practice again cracking an egg without making a mess. I show him (again) how to stir the muffin batter without flinging the…oops. Let’s clean up the flour mess on the countertop and try again.

The messes? They are worth it. The effort and time and energy it takes to teach a child how to cook? My adult and teen sons prove that it absolutely is all worth it.

Here’s our Bonus Boy, getting in on the Homemade Applesauce action last fall!

I never thought I’d again be teaching a little one to cook, but well, never say never. God’s plans are much bigger, much wiser, and much better than ours. My chocolate-eyed boy proves this to me daily, filling me with wonder at what else God has in the works.

I’ve said it many times but I’ll say it again: Teach your kids to cook.

Even if it’s just the basics, give them the know-how they need to be comfortable in the kitchen. It’s good for them, but it’s even BETTER FOR YOU!!! With all the major changes in our lives (fostering and adopting kids!), if my big kids didn’t know how to cook, there would be days we would be scrambling to eat because my time is so limited right now.

We simply get to learn to trust and obey Him as we walk our daily journey with Him!

My Current Favorite Cheat Meal – and How I Make it Healthier

I have a new favorite cheat meal, and I don’t even feel bad about it.

It was about this time last year that I wrote my Beyond the Free Range Chicken post. In that post, I expressed that while I still love and desire to feed my family as healthy as possible, I’ve learned that it is more important to focus my time and energy outside the kitchen loving people. What’s more important?

  • Raw milk and organic produce? OR
  • Loving God and loving our neighbors?

I’m going to go with The Greatest Commandment.

Learning to Love

Little did I know what God was doing in our lives as He was teaching us to take hold of His commands and the promises of joy that came with them! He’s helping us learn to love better, to see people, and to share the hope He constantly provides. Meanwhile, He moved a 4-year old Bonus Boy into our house. He’s the son of one of the “neighbors we were loving on.” The 4-year old turned 5, and after a few months, it was decided that our family would adopt him.

The busy lives we had been living became much, much busier – but no matter because God has been in every part, perfectly providing everything we need. He’s been showing us during all of this how to let go of what isn’t important for His Kingdom and to fix our eyes more firmly on what He has to offer.

I could share thousands of words about all we are learning. But today, regarding food? Here’s a biggie I’ve learned: Who cares if you sometimes need to eat a less-than-perfect meal if the tradeoff is having more time to share Jesus’ love with others? Pray over the food, throw out the mixed greens or easy veggie to go with it, and trust that God is still providing His best for you.

This leads me to share my current favorite cheat meal. Don’t get too excited. It’s not even something to pass out over.

My Current Favorite Cheat Meal

It’s homemade-ish pizza.

Sure, I can make homemade pizza crust. Here’s the recipe for the days you have time. It’s fabulous. I recommend it. But you know what else I recommend for the days you don’t have time (because you’ve been sharing God’s love with people)?

Pre-made Pizza Crust. Organic…or not. Whole grain…or not. God is bigger, my friends. It’s just a pizza crust. This should not make us lose sleep. God’s purposes for our lives are bigger than the occasional serving of white flour.

I now regularly buy pre-made pizza crusts to keep in my freezer. About once every week, between foster care meetings and court dates and diapers and bottles and therapy appointments, I ask my big boys pull some out and top them as they please. This is our lunch or our dinner and it is so easy!

How do I make it healthier?

First, I don’t stress over it. A peaceful heart is great for one’s health. Second, we pull out mixed greens and eat salad with it. Often fresh fruit too. Again – SO EASY. It’s also fun and tasty, an added bonus.

And there you have it: My favorite cheat meal.

In the tug of war for all that demands our attention, loving people should win every time!

Simple Popcorn Chicken

There is no popcorn involved in the making of this Popcorn Chicken. You can simply pop it into your mouth as if it is popcorn, and it is definitely coated in butter. But otherwise, it is nothing like popcorn. So sorry for any confusion.

This Popcorn Chicken recipe was one of the very first I shared here back in 2009. I’m sharing it again today and adding it to our Simple Recipes list because this is one of those recipes we all need in our hip pocket!

You can make these ahead and freeze them. You can eat them in a variety of ways. They are super kid-friendly, which is a plus whether you have kids or not. (What? Some grown-ups really like kid-friendly recipes, am I right?)

This Simple Popcorn Chicken tastes good hot or cold. I do prefer it hot, but made ahead and packed cold in a lunch box? Still great!

We love eating this Popcorn Chicken as-is with a few fruits and veggies on the side. But it’s also amazing in a tossed salad!

Simple Popcorn Chicken

Simple Popcorn Chicken

Ingredients
  • 3-6 large boneless, skinless chicken thighs or breasts
  • ¾ cup whole grain flour (I use freshly ground white wheat, but you can use any flour you like!)
  • ½ teaspoon sea salt
  • ½ teaspoon garlic powder
  • butter
Instructions
  1. In a medium-sized bowl stir together flour, salt, and garlic powder.
  2. Using kitchen shears, cut chicken into tiny bite-sized pieces.
  3. Toss chicken in flour mixture to coat well.
  4. Smear a thick layer of butter on the bottom of a 9x13 inch baking dish.
  5. Pour coated chicken into the dish, spreading so that they are in a single layer.
  6. Bake at 350° for 10 minutes. Stir chicken and bake another 10 minutes.

Simple 5-Minute Shredded Chicken

Just in case you have forgotten this truth, here it is again: Cooking meals for our families does not have to be a difficult job. This Simple 5-Minute Shredded Chicken is going to drop-kick the “cooking is hard” lie straight out the window.

Even if you don’t enjoy cooking, you can make this. Even if you don’t have time to cook, you can make this. Even if you can’t afford to spend much on groceries, you can make this. Even if you forgot to thaw meat, you can make this. Even if the idea of making a homemade meal brings tears to your eyes – wipe your tears, find 5-minutes, and make this. Even if you’re allergic to poultry…oh wait. That one is for real. If that is the case, please don’t make this.

To sum up, unless you are allergic to birds, there is no reason you should not make this (overuse of negatives, anyone?). Just make the chicken.

Let’s take a moment to get excited together about why making this Simple 5-Minute Chicken is a fabulous idea:

  • It takes 5-minutes of “work.” This was obvious, but worth shouting about because no one can even go through a drive-thru in 5-minutes.
  • You can make several meals worth of this chicken at the same time, storing it in the fridge or freezer, then pulling it out to add to meals as needed. This means that if you make 3-meals worth of this chicken at once, your 5-minutes of effort turns out 1.6666-Minute Chicken. #mathintherealworld
  • If you have made this chicken ahead of time and you are storing it in your fridge, you now have ready-made chicken which has now become 0-Minute Chicken.
  • Simple 5-Minute Chicken tastes really good and it is real food. We can’t say that about all convenience food, now can we?

Please note that the following recipe is barely a recipe. I am here to make your real food cooking life EASY. Simply get out chicken and get out spices. Place in crock pot, sprinkle, plug in, walk away, enjoy.

Simple 5-Minute Shredded Chicken

Ingredients
  • 3-pounds boneless chicken thighs or breasts
  • Any seasonings you like (I use garlic powder, sea salt, paprika, and parsley flakes)
Instructions
  1. Place chicken in a crock pot and sprinkle with any herbs or spices you like.
  2. Cook on low for 4-5 hours.
  3. Shred chicken to use in any of your favorite recipes or to serve in tacos, or even as a main dish as-is!

It all started when our oldest was about 2-years old. Seeing as that little boy is almost a college graduate and God has started us on a brand new journey of raising and fostering children – we thought it was time to bring back the Scripture Memory Cards our family has been using for so long. But we also thought they needed a make-over! Look how beautiful!

There are 12 Scripture Memory Cards in all!

For years and years, we have used our family meal times for Bible reading and Scripture memory. When our boys were little, while we sat at the table for lunch or dinner, we started a practice that got dubbed “Repeat Afters.” Mom and Dad would speak a few lines of scripture, the kids would repeat after us, and we’d continue phrase-by-phrase until the verse was complete. Like this:

Dad: In the beginning…
Kids and Mom: In the beginning
Dad: God created…
Kids and Mom: God created
Dad: the heavens and the earth.
Kids and Mom: the heavens and the earth.

The kids and Mom all took turns leading “Repeat Afters” too. So when our first set of kids was little, we’d work together to recite six verses during each meal.

In no time at all, our little ones learned scripture after scripture in this way! The more they learned and the older they got, the more scripture we added to the repertoire. And as their understanding grew, we continued to add scriptures that helped us with parenting needs. Such as:

As far as it depends on you, live at peace with everyone. Romans 12:18

Siblings sometimes need to hear that one, am I right? ;)

Easy Low Sugar Peanut Butter Cheesecake Balls

I served these Low Sugar Peanut Butter Cheesecake Balls to a group of college kids, wondering what they would think since they were made with stevia. Five out of five college students were none the wiser, and declared this treat to be delicious. After all, how can we go wrong when cream cheese, peanut butter, and chocolate chips are the main ingredients?

I love having several jars of Homemade Peanut Butter on hand to use in quick recipes like this one. And of course, I like having several packages of cream cheese in the fridge, seeing as cream cheese makes everything better.

By the way, have you tried this Simple Cream Cheese Corn yet? Just when you think sweet corn can’t taste any better than it already does, you add cream cheese and it turns into a plate full of amazingness!

But back to the Peanut Butter Cheesecake Balls. Our 5-year old Bonus Boy and I were looking through Pinterest (a dangerous idea when you’re hungry) and found a recipe similar to this one. Since I had all the ingredients on hand to tweak it into a healthy treat for us, he and I got started mixing these up right away. Success! And according to college kids who didn’t know these were on the healthier side, no one can tell these are low in sugar. Double success!

Easy Low Sugar Peanut Butter Cheesecake Balls

Ingredients
  • 8-ounces softened cream cheese
  • 3 Tablespoons creamy natural peanut butter
  • 20 drops liquid stevia OR 2 Tablespoons honey
  • ½ cup mini chocolate chips
Instructions
  1. Stir cream cheese, peanut butter, and stevia together until well combined.
  2. Scoop out small balls of the mixture and roll the balls into a bowl of chocolate chips to coat them.
  3. Chill balls for at least one hour before serving.

What is it with me and frozen meat? Can I not get my act together and actually thaw the meat before cooking it? No, I cannot. I’ve come to terms with it. My chicken has come to terms with it. Gratefully, my Instant Pot has agreed to my terms. And that, my friends, is why we can cook a Frozen Whole Chicken in the Instant Pot in one hour or less! How incredible is it that we can take a frozen solid chicken from the freezer and have a great dinner an hour later!

I’ve been wanting to try this ever since I invested in an Instant Pot. A year and a half later, I finally gave it a go (no time like the present).

I love that my Instant Pot allows me to cook almost every variety of frozen meat! I cook several pounds of frozen hamburger meat in it (in just 30 minutes!). I cook frozen boneless chicken thighs in it. I even cook frozen beef roast in it. Now, introducing How to Cook a Frozen Whole Chicken in the Instant Pot!

Ingredients
  • 3-5 pound whole chicken
  • 1 cup chicken broth
  • Sea salt
  • Pepper
  • Parsley Flakes
  • Garlic Powder
Instructions
  1. Set trivet in the bottom of the Instant Pot.
  2. Pour 1 cup broth into the bottom.
  3. Set Chicken on the trivet.
  4. Sprinkle with your desired amount of herbs and spices.
  5. Seal and cook at hi pressure for 10-minutes PER POUND of chicken. (i.e. 3 pound chicken=30 minutes)
  6. Allow pressure to release naturally.

This chicken pairs great with Stick of Butter Rice. And of course, you can steam or roast a veggie or two and get out the salad fixin’s. Talk about a super good, super nourishing meal!

How We Get Our 5-Year Old to Eat Fruits and Vegetables

Ah yes. We’ve got a 5-year old in the house again. Slowly but surely, we’re adding more fruits and vegetables into his diet. Interestingly enough, his teenage brothers who were raised in this house from the beginning have become more of a struggle than the little one. I don’t want to talk about it.

It won’t be long now before our Bonus Boy will officially be a Coppinger and I can show you pictures! But for now, just imagine lots of cuteness behind some gorgeous brown eyes and a giggle that turns all of us into mush.

When he first moved in with us, I knew he loved hot dogs, and that was all I knew. Man (or boy) can not live on hot dogs alone, so we began doing some trial and error to see what he might like.

First fruit success: Applesauce Pouches

Where were these gems when my other boys were little?

Yes, they are more expensive than canned applesauce or homemade. Yes, I still make homemade applesauce when I have the chance. But seeing as life has taken a major turn toward the more busy side of things (we have an infant boy living with us now too!), splurging on Applesauce Pouches has been very much worth it! Bonus Boy loves them, the teenagers love them (so there), and as an added delight, they can be eaten without making a mess.

We get them from Aldi, Walmart, or Amazon; and when they’re on sale, I grab varieties that have veggies added too.

Second fruit and veggie success: “Milkshakes”

Everyone knows that Smoothies filled with fruits and greens are a great way to easily get kids to eat (or drink) nourishment. Indeed.

However, if we said, “Would you like a Smoothie??” our Bonus Boy turned up his nose. Inspired, I said, “How about a Milkshake?” Aha! He thought that sounded delicious.

Call it whatever works – we now make “Milkshakes” all the time. Bonus Boy makes them with me, and we’re not even hiding the fact that they are filled with goodness. HE PUTS THE FRESH SPINACH INTO THE BLENDER HIMSELF. Then he adds the strawberries and frozen banana chunks. I pour in milk and a little maple syrup. He pushes the button on the Blendtec.

Then he guzzles down two full cups with a lid and a straw. Milkshakes for the win. Smoothies though? He doesn’t like them. ;)

Third veggie success: Cheesy Taco (aka Green Salad with Shredded Cheese)

I don’t even remember how this came about. I think I had made Taco Salad for the rest of us that day and decided to see if he’d eat any or all of it. I knew he loved tacos, so I told him this was “sort of like a taco.” I tore mixed greens into his special bowl, tossed in plenty of cheese (his favorite food of all time), and stirred in homemade French Dressing (ketchup for the win). He ate it all with a spoon and asked for more.

None of my other little guys ever ate salad at this age, and here this kid is eating his and asking for seconds and thirds. Sweet!

Fourth veggie success: Orange French Fries

Our whole family has learned that Sweet Potato Fries are the best way to eat sweet potatoes. Bonus Boy discovered without any argument that Orange French Fries are pretty tasty dipped in ketchup! Nice!

Fifth veggie success: Yet to come

None of us likes everything, and we can’t expect little kids to love all the green food we know is good for us. Green beans are a no-go for Bonus Boy. Peas, not so much. Carrots, neither raw nor cooked nor when one is pretending to be a bunny. Broccoli “trees” are only fun to talk about, but are not fun for eating. So we’ll stick to what is working, and we’ll try new veggies as the months go by.

Fruit is mostly a winner

Not all fruit, but he does like clementines, apples, kiwi, bananas, frozen blueberries, and a few others – especially if the big boys are sitting at the table eating them too.

It’s important to remember that adding fruits and veggies to a kid’s diet is a process. I remember liking more and more as I got older; I bet you do too.

If your child struggles with eating many fruits or vegetables, don’t fret or give up. Keep experimenting to see what works. Find a new way to cut or serve it. Call it a milkshake instead of a smoothie. Enjoy the ride and know that any fruit or veggie nourishment is better than none at all. You’ll get there!
